Feasts for Families
For the Teriyaki Sauce:
• 2 tbsp soy
• 2 tbsp mirin
• 1 tsp honey
• 1 tsp chopped chilli
• 1 garlic clove crushed
• 1 tsp chopped ginger
• 1 tsp sesame oil
• 800g side of salmon or
4 individual fillets,
approx 175g each
• 200g fresh rice noodles
• 2 tsp sesame seeds
• 200g Tenderstem Broccoli
• 100g sugar snap peas
• 4 pak choi
• 5 spring onions (these can
be either chopped or
shredded)
• 1 chilli, chopped

everyone should try over the Easter break

Teriyaki Salmon, Noodle & Vegetable Traybake
Serves 4 Prep time: 5 mins Cooking time: 15 mins
We a l know that eating oily fish is good for you – it’s brain boosting food! Whether it’s the
smell, the flavour, the skin – or is it the bones that can sneak in no matter how careful you
are – many children (mine included) are resistant to eating fish. Trying children with mild
flavoured fish like cod is a good start (breadcrumb it into a goujon if necessary!) bu this was
my salmon breakthrough recipe. Cooked in Teriyaki Sauce and using a beautiful fillet with
no skin and no bones, served with noodles, it went down a treat.

Lay the salmon on a baking
sheet or in an ovenproof dish.
Mix together the Teriyaki sauce
ingredients and pour it over
the salmon. Marinate if you have
time. If you don’t, fear not!
Add the noodles to the tray and
si the salmon on top. Sprinkle
over the sesame seeds and roast in a
hot oven (220°C, 200°C, gas 7) for 12
mins, 7 mins if using individual fi lets.
Cook the green vegetables
according to your liking. I
simmer the broccoli spears for 2
mins, add the sugar snaps for 1 min
and then the pack choi for 1 min.
Drain the vegetables and toss with
the noodles around the salmon.
Top with the shredded or chopped
spring onions and some of the
chopped chi l if you like extra heat.

vegetables – it’s a lot of hard work, things often
go wrong, pests are everywhere, they’re cheaper
to buy… well, they are right. Some vegetables are hard to
grow (cauliflowers and Brussels sprouts go to the back of the
room and hang your button and curdy heads), there are pesky

pests lurking around waiting to picnic in your patch and, if
you added up all the time you spent out there, your precious
harvest might be equable to diamonds. Don’t let any of this
put you off. There are lots of really easy – and delicious crops
to grow too. I promise that it is worth it, but if you are new
to vegetable growing, start with the simpler things and build
from there. Nothing can beat the taste of fresh, homegrown
vegetables, garnished with a little pinch of triumph.
Plotting Ahead
You will need to assess how much space in your garden
that you want to give over to growing vegetables,
where that space will be and how much time you will
realistically have to care for them. Few crops thrive in
the shade, in exposed, windy conditions or poor soil,
so find a sunny, sheltered spot for your edibles.
It is totally possible to grow crops in pots, window boxes,
on balconies and patios, but you will need to take extra care
of them, feeding and watering – quite a lot. In general, most
will prefer to be planted out into enriched garden soil, as
vegetable plants tend to be fairly greedy. Raised beds will

make the whole process much easier and (in theory) tidier,
but many varieties can be grown in garden borders among
the flowers too. In fact, this is how our domestic gardens
came about in the first place, and a true cottage garden is
supposed to be a joyful jumble of flowers, fruit and vegetables.
The Soil, The Soil, The Soil
I would like to spend the rest of this piece talking about how
important the soil is, how little we know about the complex
relationships between the soil microbiome and the roots of
plants – and how the quality of the soil will dictate not just
the health of the soil, but how healthy and nutritious your
vegetables will be. For now I’ll just say look after your soil.
The best way to improve soil is to add organic matter
in the form of well-rotted manure, spent mushroom
compost, or your own (weed-free) compost. If the soil
in your garden is heavy (clay), you may need to add this
as a mulch in the autumn and let the soil organisms
incorporate it over the winter – and do the digging in for
you. If your soil is light, add the mulch in the spring to

Meet theHead
We’ve been getting to know Ashford School’s Mr Tiley-Nunn
What did you study at university?
Having known since as long as I can remember
that I wanted to be a primary school teacher, I
studied Primary Education at Canterbury Christ
Church University. My specialisms were PE,
Science and Inclusion.
Tell us a little bit about your career so far...
I started my career at Woodbridge School, in
Suffolk, splitting my time between the classroom
and Games fields, as well as taking on roles
leading ICT and assisting with boarding. I then
moved as part of the founding team to set up
Radnor House in Twickenham, where I was
Assistant Head (Pastoral) and SENCo across both
the Prep and Senior School. Next came a Deputy
Headship at The Old School Henstead back in
Suffolk. In this time, I also acted as a Regional
Lead in Mathematics for a large academy. Then
I took on my first headship at Norwich High
School for Girls, in a period of substantial success
where we were named Girls’ School of the Year
and shortlisted for Prep School of the Year. Since
September 2020, I have been at Ashford Prep
School and I have loved every minute of my three
years here so far.
What makes you proud to head up Ashford Prep?
We have an ethos at Ashford Prep School of
‘Always Be Caring’ and it is when I see our pupils
embodying this ethos on a daily basis that I am
most proud to be part of this amazing school.
We challenge our pupils to not only care for
themselves and others, but also to care deeply
about giving their best to everything that they do.
Can you tell us about a favourite teacher from
your own school days and how they shaped your
experience of school?
My favourite teacher was my physics teacher
who also happened to be my headteacher, Mr.
Cole. He always had time for everyone and you
knew that he truly cared for all of his pupils. I
still have a letter from him congratulating me for
my performance as Scarecrow in ‘The Wizard
of Oz’ aged 10. I went on to work for him at
Woodbridge School and he was just as inspiring
as a boss and is the reason why I wanted to
become a headmaster.
What’s been your most memorable moment in
your role at Ashford Prep so far?
There are so many to choose from, but if I
had to pick one it would be awarding our
first group of Year 6 pupils their Pre-Senior
Baccalaureate awards this year – these were
so special because they represented a huge
amount of work and dedication from our
pupils to become the most rounded young
people that they could possibly become.
What do you do to unwind after a busy week?
With two small children myself, unwinding can
be challenging at times. That being said, I am
at my happiest when outside with my family,
especially on walks with our Cocker Spaniel,
Maisie. Kent has such beautiful countryside and
coastlines to explore. Other than that, I love to
play hockey and cricket, as well as trying to stay
upright on the slopes as an enthusiastic skier.
You’re a published author – what is it about
primary maths that led you to start writing?
Being entirely honest it was my own fear
and disillusionment in the subject as a
pupil that made me want to write ‘How
to Teach Primary Maths’. It is such a vital
subject to get right and I believe that every
pupil should leave primary school with an
enjoyment and confidence in mathematics.
What are you looking forward to next year?
It is difficult to pin it down to one thing but I
would say that I am most looking forward to
our Creative and Performing Arts programme,
which has improved exponentially in the last
year. We have some seriously talented and
creative pupils at our school and seeing
them perform with such confidence and
enthusiasm is always a highlight for me.
Can you tell us your favourite
book, podcast and song?
The book is Humankind by Rutger Bregman,
podcast would be Tailenders and for the song, I’d
chose Islands by The xx.
