Naomi wasan extraordinary cook and overthe years I have been reallyspoilt in this respect.Still am come to think of it,the food here is very good.With the passage of timeNaomi’s eyesight is not what itused to be and her time in thekitchen is pretty well over, so thecooking is now myr e s p o n s i b i l i t y.I have to admit I am a big fanof MasterChef Australia on TVand am filled with admirationfor what these kids dish up tothe judges. I don’t understandtoo much of the culinaryAdventures inthe kitchenREFLECTIONSCharles Beningfieldterminology but what comes offthose gas burners is trulyamazing.So, imbued with a quest forfine home-cooked cuisine, Istarted slowly like trying myhand at simple bread-making,following the recipes to the teebut while I was as chuffed todiscover the power of flour asAlexander Fleming must havebeen when he discoveredpenicillin, the bread, goldenbrown and crispy on theoutside, was mostly soggy in themiddle.But the green shoots ofimprovement slowly emergedand what came next were easyto-followrecipes and makingthings like tuna fritters, bananafritters pumpkin fritters, fritterscoming out of your ears anddiscovering a hundred ways ofcooking potatoes and excitingmethods of preparing porridge.But I must tell you, I haveactually produced one or twoox-tail stews which wouldknock your socks off!Last week in Weyer’sButchery I spied a slab of tripe.“A h a ,” I said, “we’ll have ago at that!”Big mistake.A web search revealed arecipe for tripe and onionswhich issued instructions to cutthe tripe into little strips, placein a slow cooker, cover withcold water and cook for fivehours on low.To keep my finger out in themeantime, I was directed toprepare a white sauce using a❝The kitchen is an areaI have studiouslyavoided duringthe course of nearly60 years of marriageto Naomidiced onion, some butter, whiteflour, three cups of milk and acup of chopped parsley forgarnishing. When the time wasup I was told to drain the waterfrom the tripe, return it to thecooker and stir in the mixture asabove and let simmer for afurther two hours.After this I could, if I wished,season the concoction with theparsley and salt and pepper andserve ladled over thick slices oftoasted sour bread.Well, to cut a long storyshort were I to have presentedthis stodgy mess to theMasterChef judges, I wouldhave been given a tight-lippeddismissal along the lines of:“Don’t phone us, we’ll phoneyo u .”One of a number ofaccomplished cooks we havehere at Berea Gardens is JoanGroom, grandmother of nuggetylittle scrumhalf and formerStormers and Lions player NicGroom who was recently plyinghis trade with the London Irish.Older East Londoners mayremember Joan’s brother,musician Neville Shelton, aclassy saxophonist and herhusband, Brian, a bass playerwho used to entertain diners atvarious venues around the city.“You did WHAT?” askedJoan, her eyes wide withincredulity when I related mylittle encounter with the entrailsof a butchered animal.“Seven hours for a simpletripe dish?
