Savoury – Potato Waffle (NEW)<br />

❖ A practical potato waffle with a flat face, which allows for a<br />

multitu<strong>de</strong> of uses and variations: as a si<strong>de</strong> dish, as a filling in<br />

sandwiches, in a brunch selection or even in a savory cocktail buffet.<br />

❖ A waffle ma<strong>de</strong> with a potato base (40%) and a short list of selected<br />

ingredients including a balanced seasoning (chives, salt and pepper).<br />

The San Sebastian cheesecake was created in the traditional way with only 9 ingredients, including 35% of cream cheese! Unlike a classic<br />

cheesecake, the San Sebastian cheesecake does not have a crumble base. It is ma<strong>de</strong> almost entirely with dairy ingredients: Fresh Britany cheese,<br />

cream and mascarpone. It is the perfect <strong>de</strong>ssert, combining greediness thanks to its caramelized surface, and creaminess, melting to perfection.<br />

→ The San Sebastian cheesecake comes from Spanish Basque<br />

town of “Saint-Sébastien”, at the French bor<strong>de</strong>r.<br />

→ Created in 1990 by the chef of the restaurant La Viña, it is<br />

characterized by a very caramelized, almost burnt surface, a<br />

particularly creamy center and does not have a cookie base<br />
