POWER MEAL<br />
<strong>Souffle</strong> <strong>Pancake</strong><br />
INGREDIENTS<br />
(makes approx. 4-5 pancakes)<br />
2 large eggs (60g egg)<br />
25g <strong>Power</strong> <strong>Meal</strong><br />
20g plain flour<br />
30ml milk of your choice<br />
2g baking powder<br />
17g brown sugar<br />
1/2 teaspoon lemon/lime juice<br />
METHOD<br />
1. Separate eggs, yolks in one bowl, whites in another.<br />
2. In yolks bowl, whisk milk, flour, baking powder,<br />
2/3 of the sugar, and <strong>Power</strong> <strong>Meal</strong>.<br />
3. In whites bowl, add the remaining sugar, lemon/<br />
lime juice and mix with mixer until stiff peaks form.<br />
4. Preheat a pan over low heat and oil it.<br />
5. Fold a quarter of whites mixture into the yolks<br />
mixture until well combined.<br />
6. Gently fold the remaining whites mixture into the<br />
yolks mixture to form the batter.<br />
7. Spoon batter onto pan, add a teaspoon of water<br />
to help the pancake set, cover with a lid and<br />
cook for 3-5 minutes.<br />
8. Flip and cook for another 3-5 minutes.<br />
Add water for steam. Close the lid and watch it rise.<br />
9. Serve with your favourite toppings like fruits,<br />
honey, or maple syrup. Enjoy!
