POWER MEAL<br />

<strong>Hearty</strong> <strong>Muffins</strong><br />

INGREDIENTS<br />

(makes approx. 10-12 muffins)<br />

90g <strong>Power</strong> <strong>Meal</strong><br />

240g plain flour<br />

20g baking powder<br />

3g salt<br />

120g brown sugar<br />

110ml coconut oil<br />

125ml greek yogurt<br />

120ml plant-based milk<br />

2 large eggs (60g per egg)<br />

For Fillings:<br />

100g blueberries<br />

1 large banana (chopped)<br />

20g walnuts<br />

METHOD<br />

1. Preheat your oven to 180°C and prepare your<br />

muffin tin.<br />

2. In one bowl, whisk together flour, <strong>Power</strong> <strong>Meal</strong>,<br />

baking powder, and salt.<br />

3. In another bowl, mix coconut oil, sugar, eggs,<br />

greek yogurt, and milk until smooth.<br />

4. Combine the wet and dry ingredients, and<br />

mix well.<br />

5. Fill the muffin cups one-third full with batter,<br />

add fillings (blueberries or walnuts), then top<br />

with more batter until two-thirds full. Sprinkle<br />

a few blueberries or walnut pieces on top for<br />

extra flavour.<br />

6. Bake for 20-25 minutes until a toothpick<br />

comes out clean.<br />

7. Let them cool before serving. Enjoy!
