PERÚMinisteriode SaludInstitutoNacional de SaludCentro Nacionalde Alimentación y Nutrición4 racionesCUBIERTO DE COLIFLORIngredientes- 1 ½ taza de arroz.- 4 trozos grandes de coliflor.- 3 huevos.- ½ taza de harina sin preparar.- ¼ taza de aceite vegetal.- ½ kg de papa blanca.- ½ cebolla.- 1 diente de ajo.- ¼ lata grande de lecheevaporada.- 3 tajadas de queso fresco.- 2 cucharadas de ají panca.- Huacatay, orégano, sal yodadaal gusto.Preparación1. Limpiar, lavar, sancochar, trozar la coliflor y reservar.2. Para preparar las torrejas, batir los huevos, agregar la harina,agua en cantidad necesaria y la sal al gusto, mezclar con lostrozos de coliflor y freír.3. Para la salsa preparar un aderezo en aceite vegetal, freír lacebolla picada en cuadraditos, los ajos, el ají colorado molido,el queso en cuadraditos y la sal.4. Disolver la harina con la leche y agregar a la preparaciónanterior. Mezclar, adicionar el huacatay y cocinar.5. Servir las torrejas cubiertas con la salsa acompañado de lapapa sancochada y arroz graneado.
