The
quinceañera
tradition
A quinceañera is a celebration that supposedly comes from the
Aztecs who held a celebration to prepare each village’s young
women for marriage and their new role in society.
The common thread is the gifts. Originally they were a dowry
or “bridewealth.” Now that concept is expressed in the special
ceremonial gifts and the lavish party.
Today’s celebration
comes from Mexican
history and is a mix of
Spanish and Catholic
traditions that creates
a unique celebration.
Shoes
The changing of shoes is a symbol of
the quinceañera's transition from
girlhood to womanhood.

Doll
The last doll is the last toy the
quinceañera will recieve from her
parents, as she will now be charged
with the responsabilities of an adult.
Crown
It is traditional for the headpiece worn
by the Quinceanera to be ceremoniously
replaced with the Tiara.
Vals
The father-daughter dance. Here the
father leads the Quinceanera in the first
dance of the evening – usually to a special
song like “De Niña a Mujer”.
Suprise Dance
A choreographed performance by the
Quinceanera and her Court of Honor.
Why does a
quinceañera look so
much like a wedding?
The reason it looks like so is because years
ago, when a girl turned fifteen, she would
prepare to leave home to become a wife
and mother. The wedding would bestow
upon her a new set of responsibilities.
Today’s Latina girls now celebrate their
fifteenth birthday with the idea that
they'll wake up the next morning with a
new set of responsibilities.
The Quince dress itself is meant
to symbolize womanhood.
For the birthday girl, it’s intended to
indicate that she’s ready to leave her
former childish ways - and “little girl”
clothing - and become a woman in an
elegant formal gown.
Originally, the dress was always white to
indicate the girl’s virginity because at the
time, a dress of any other color meant
that a girl had lost her virginity.
Now, Quince dresses
come in a rainbow
of colors, including
dramatic black.
In some families and social
groups, and especially because of
the influence of the Church, light pastel
colors are still strongly encouraged.

I really went all out for my quince because
I wanted it to be bien chingón. From
my tiara to my shoes, and even the
tablecloths at dinner were even more
extravagant than you would find at most
weddings.
Now, did I go out with a bang or come in
with a bang? Vaya, litterally, I entered with
firecrackers so I came in with a bang, but
I think in terms of una despedida de ser
muchacha, I went out with a bang.

Tacos
Beef Birria. Rich and flavorful
this beef birria tastes perfect
served as a stew topped with
onion, cilantro and a squeeze
of lime juice. Or chop up the
meat and fry up some crispy
quesabirria tacos!

Serves 8
Ingredients
• 7-8 cups hot water
• 4 lbs chuck roast
• 2 lbs short ribs
• 1 large white onion
• 1 garlic bulb
• 1 carrot
• 5 bay leaves
• 8 guajillo chiles
• 3 tbsp chicken boullion
• 1-2 tsp chili powder
• 1 tsp mexican oregano
• 1 tsp ground cumin
• 1 tsp salt
Quesabirria Tacos
• 14-16 white corn tortillas
• 2 cups quesadilla cheese
1. Combine Ingredients: In large pot add
meat, onion, garlic, carrots, bay leaves and
dried peppers. Cover with water.
2. Add Seasonings: Add chicken
bouillon, oregano, cumin and salt, stir to
combine. Bring to a boil.
3. Skim: After 30 minutes, skim the top
of the pot to remove impurities from the
bone cooking out.
4. Blend Peppers: Remove the peppers
(should be softened) and place in a
blender or food processor. Blend until
smooth, add up to 1/4 cup of broth if
needed to help get a smooth consistency.
5. Strain: Strain the peppers if needed to
remove bits of skin
6. Combine: Add the blended peppers
into the broth and stir to combine.
7. Season: Add in the chili powde
as desired to get a nice deep red
color tothe broth.
8. Simmer: Cover and continue to
simmer for about 3 hours or until meat is
tender and easily shredding on it’s own.
9. Reserve Grease: Skim the grease from
the top of the broth (SAVE THIS!) pour the
grease into a small skillet or saucepan, this
is used for making the tacos if desired.
10. Remove the onion, garlic, carrots,
and bay leaves from the broth. Save it for
an extra flavor on the side.
11. Serving: Remove the meat from
vvvvthe broth and cut into large chunks
for serving. Remove any bones.
Ingredients
• 1 1/2 cups frozen pineapple
• 1/4 cup ice
• 3/4 cup unsweetened pineapple juice
• 3/4 cup unsweetened coconut milk
• 1 to 3 tbsp brown sugar
1. Place frozen pineapple chunks and ice
in a blender.
2. Pour pineapple juice and coconut milk
over top. Add brown sugar, if using. Puree
until smooth. Taste to test the sweetness
and add more sugar, if needed.
3. Cocktail ingredients blended to
smooth, beige consistency in blender
4. Pour into glasses.

These are everything a
chocolate chip cookie should
be. Crispy and chewy. Doughy
yet fully baked. Perfectly
buttery and sweet.
Ingredients
• 1 cup salted butter
• 1 cup white sugar
• 1 cup light brown
sugar packed
• 2 tsp vanilla
• 2 large eggs
• 3 cups flour
• 1 tsp baking soda
• 1/2 tsp of
baking powder
• 2 cups of
chocolate chips
Serves 3
1. Preheat oven to 375 degrees F. Line a
baking pan with parchment paper.
2. In a separate bowl, mix flour, baking
soda, salt, baking powder.
3. Cream together butter and sugars in
mixing bowl until combined.
4. Beat in eggs and vanilla until fluffy.
5. Mix in the dry ingredients.
6. Add 12 oz package of chocolate
chips and mix well.
7. Roll 2-3 TBS (depending on how
large you like your cookies) of dough at
a time into balls and place them evenly
spaced on your prepared cookie sheets.
(alternately, use a small cookie scoop to
make your cookies).
8. Bake in preheated oven for
approximately 8-10 minutes. Take them
out when they are just BARELY starting
to turn brown.

pizza
This homemade pizza recipe
is perfect for parties! Everyone
loves pizza, and your guests
can customize their toppings
to suit their personal tastes.
Serves 2

Ingredients
• 16 ounce ball of dough
• 1 tablespoon olive oil
• 1 cup pizza sauce
• 8 ounces mozzarella
• 2.5 ounces pepperoni
• 2 tablespoons parmesan
1. Place a pizza stone in the bottom third of your
oven. (a rimmed baking sheet or a pizza pan if you
don't have a stone.)
2. Preheat your oven to 550º F. Let the stone
preheat for 30 minutes.
3. Prepare a work surface with oil or a light
dusting of flour.
4. Roll out the dough using your hands or a rolling
pin.Shape the edges into a thicker crust.
5. Transfer the dough to a square of parchment
paper. Make sure you stretch out the dough so that
it is about 12 inches.
6. Drizzle about a tablespoon of olive oil over
the top of your dough. This layer of oil helps it
cook more evenly.
7. Slide your pizza dough onto your flat baking sheet.
Pull the pizza dough and the parchment paper onto
the hot hot pizza stone or pan. Bake for 1-2 minutes,
until the dough is slightly puffed.
8. Transfer the half-baked dough back onto your
pizza peel. Poke down any large bubbles on your crust.
9. Add 1 cup of pizza sauce and 3 ounces of
thinly sliced mozzarella, topping with 5 ounces
of shredded mozzarella.
10. Add pepperoni and other toppings, sprinkling 2
tablespoons parmesan cheese over your toppings.
11. Bake the pizza for about 8-12 minutes. (See
note if you don't have a pizza stone*) Transfer the
pizza back onto the pizza stone (or pan), without the
parchment paper.
12. Remove your pizza from the oven onto a cooling
rack. Let cool a couple minutes, then transfer to a
cutting board and cut.
Notes: if you do not have a pizza stone, you
should dust whatever you are baking your pizza
on with cornmeal.
Ingredients
• 1 package dried
corn husks
• 6 cups masa
harina
• 2 teaspoons
Kosher salt
• 2 teaspoons
ground cumin
• 1 teaspoon baking
powder
• 6 cups chicken
stock
• 3/4 cup corn oil
• 2–3 cups filling
• 1 cup salsa
Tamales
A favorite for anyone. They
may be a little difficult to make,
but they are definitely worth it!
Enjoy this meal with some fresh
horchata or jamaica.
1. Soak the corn husks. Place the corn
husks in a stockpot and cover completely
with warm water. Soak for 30 minutes.
2. In the bowl, add masa, salt, cumin,
baking powder, and whisk. Add the oil and
mix slowly. Gradually add the stock, and
mix slowly for 10 minutes until fluffy. Cover
with a damp paper towel and refrigerate.
3. Lay the soaked corn husk on
any flat surface.
4. Spread your masa on the corn husk.
Use a spoon or your fingers to spread
it out into a rectangle large enough to
enclose your filling. (keep a little bowl of
water nearby to dip your fingers regularly,
which helps the masa from sticking).
5. Add your filling to the center of the
masa. Just a tablespoon or two will do.
6. Fold the corn husk in half vertically.
Then, very carefully, fold the corn husk
in half so that the masa wraps around
the filling. Wrap the corn husk into a little
burrito. Fold the top end down to enclose.
One end of the tamale will be exposed,
and the other will be folded over.
7. Tie the tamales together.
8. Add water to the bottom of a
stockpot. Fill a steamer basket with your
tamales, and steam until the tamales are
cooked through and the masa separates
easily from the corn husks.
9. Remove from the steamer and serve
immediately. Or refrigerate in a tightlysealed
ziplock bag for up to 3 days, or
freeze for up to 3 months.
