L’histoire du Château d’<strong>Estoublon</strong> se confond avec l’histoire de la Vallée<br />
des Baux-de-Provence dont il est l’un des sites les plus remarquables.<br />
Racheté en janvier 1999 par la famille Schneider, ce domaine au cœur<br />
des Alpilles Sud est entré dans le troisième millénaire sous le signe de la<br />
renaissance et de l’élégance.<br />
Depuis le rachat de la propriété en 1999, nous avons entrepris une<br />
réorganisation et restructuration importantes du vignoble et des chais.<br />
« Je voulais des <strong>vins</strong> qui ressemblent à la terre d’<strong>Estoublon</strong>, même si cela<br />
devait nous éloigner du cahier des charges et de certains standards de<br />
l’appellation Baux-de-Provence. Ainsi, Grenache noir, Mourvèdre, Syrah et<br />
Cabernet-Sauvignon seront plantés. Quant aux blancs, nous opterons pour<br />

Let the vines express the terroir<br />
The history of Château d’<strong>Estoublon</strong> is intimately linked with the Vallée<br />
des Baux-de-Provence, of which it is one of the most remarkable sites.<br />
This estate in the heart of the southern Alpilles was purchased in 1999 by<br />
the Schneider family, and made its entry into the third millennium with<br />
something of a renaissance.<br />
Since we took ownership of the property in 1999, we have undertaken major<br />
reorganisation and restructuring of the vineyards and cellars. “I wanted wines<br />
that evoked the land and soil of the <strong>Estoublon</strong> estate, even if that meant<br />
moving away from certain aspects of the specifications and standards of the<br />
Baux-de-Provence appellation. So we planted Grenache Noir, Mourvèdre,<br />
Syrah and Cabernet-Sauvignon grapes. For our white wines, we opted for<br />
Marsanne, Roussane and Grenache Blanc.’’ Rémy Reboul.<br />

sont définis aussi bien par la<br />
typicité de leur terroir, unique et multiple,<br />
que par le choix des hommes.<br />
Rassemblés en association (Organisme<br />
de Défense et de Gestion) et<br />
reconnus depuis 1995 par une Appellation<br />
d’Origine Protégée, les Vignerons<br />
des Baux-de-Provence sont unis<br />
depuis leurs premiers ceps par la<br />
volonté commune de préserver<br />
leur terre intacte, naturellement<br />
protégée et séchée<br />
par le mistral. Le souci de<br />
l’environnement est au coeur<br />
de la démarche des vignerons<br />
fondateurs des grands domaines<br />
de la Vallée des Baux. Aujourd’hui,<br />
l’AOP Les Baux-de-Provence a la particularité<br />
d’être cultivée en agriculture<br />
biologique ou biodynamie sur 85 %<br />
de son aire géographique. La majorité<br />
des vignerons réclame, depuis plus<br />
de dix ans, d’intégrer cette spécificité<br />
aux décrets de leur appellation. Nous<br />
avons opté pour une agriculture utilisant<br />
du cuivre et du souffre en quantité<br />
limitée. Les résultats très satisfaisants<br />
de cette démarche confirment<br />
notre engagement en faveur d’une<br />
agriculture plus respectueuse de l’environnement.<br />
Protected designation<br />
of origin. The wines<br />
of Les Baux-de-Provence are defined<br />
both by the distinctive features of<br />
their terroir, unique yet multiple, and<br />
by the choices made by people. The<br />
winemakers of les Baux-de-Provence<br />
came together as an association (the<br />
Defence and Management Agency)<br />
in 1995 and are recognised by an<br />
AOP. Since their first vine stock, they<br />
have been united by the common<br />
desire to preserve their land<br />
intact, keeping it naturally<br />
protected and dried by the<br />
mistral wind. Concern for<br />
the environment is central to<br />
these founding winemakers<br />
of the major estates in the Vallée<br />
des Baux. Today, the Les Baux-de-<br />
Provence AOP has the distinction of<br />
being organically or biodynamically<br />
grown over 85% of its geographical<br />
area. For over ten years the majority<br />
of growers have been willing to include<br />
this specific feature into the<br />
decrees of their appellation. Two<br />
years ago we opted for an alternative<br />
form of agriculture using copper<br />
and sulphur in very limited quantities.<br />
The very satisfactory results of this<br />
new approach confirm our commitment<br />
to an environmentally-friendly<br />
form of agriculture.<br />

Élevage 6 mois cépage par cépage en cuves inox et quelques barriques.<br />
Une jolie robe rose pâle, brillante, très réussi avec un nez droit, intense et<br />
une grande fraîcheur. Les parfums se mêlent en un ensemble harmonieux<br />
d’agrumes, de fruits rouges cassis et fraises, et de bonbons anglais.<br />
Belle attaque fraîche et vive, particulièrement savoureuse qui exprime<br />
pleinement le terroir d’<strong>Estoublon</strong>. Des arômes fruités accompagnés d’un<br />
léger gras proposent une belle complexité nous laissant découvrir une<br />
finale longue et fraîche.<br />
Matured for 6 months in barrels and stainless-steel vats.<br />
A highly attractive, brilliant pale pink, with a direct, intense, fresh nose.<br />
The scents mingle in a harmonious ensemble of citrus fruits, red berries<br />
(blackcurrant and strawberry) and boiled sweets. A fresh, lively and<br />
flavoursome attack that beautifully expresses the terroir of <strong>Estoublon</strong>.<br />
Fruity aromas with a hint of butter provide a fine complexity, leading to<br />
a long, cool, enjoyable finish.<br />

Monocépage<br />
Cette volonté de concevoir des <strong>vins</strong> uniques qui identifient clairement le<br />
goût de chaque variété, est en adéquation totale avec la philosophie du<br />
Domaine. Il s’agit d’une rupture totale de style. Les <strong>vins</strong> monocépages sont<br />
plus compliqués à réaliser. J’ai été motivé dans cette longue recherche<br />
par la volonté de faire découvrir des goûts nobles et différents, qui sont<br />
l’image d’un terroir singulier et d’une vinification particulière. Il faut savoir<br />
oser et prendre des risques ! Nous donnons ainsi la possibilité à nos clients<br />
de déguster des <strong>vins</strong> nouveaux et surprenants. Ces choix se font chaque<br />
année, en fonction des vendanges, et de la qualité de chaque cépage. Tout<br />
est mis en œuvre pour souligner la pureté de produits naturels et uniques<br />
qui sont le reflet d’une nature généreuse et d’un lieu exceptionnel.<br />
Single-varietal wine<br />
This desire to create unique wines that clearly show off the flavours of each<br />
variety fits in perfectly with the estate’s philosophy. It’s a complete change in<br />
style, moving from blends to single-varietal wines. Single-varietal wines are<br />
more complicated to produce. I was driven in this long search by the desire<br />
to make these noble, different flavours – the image of a particular terroir and<br />
vinification process – more widely known. It means being bold and willing<br />
to take risks! We want to offer all our customers the opportunity to taste<br />
new and surprising wines. These choices concerning these wines are made<br />
each year, according to the quality of each variety. Every effort is made to<br />
emphasise the purity of these natural and unique products that reflect the<br />
generosity of an exceptional terroir.<br />

traitements de synthèse. Jusqu’au 8<br />
mars 2012, un vin portant le label AB<br />
garantissait la méthode de viticulture,<br />
par le talent du vigneron ou la<br />
qualité de la vinification.<br />
Depuis le 8 mars 2012, le<br />
règlement No 203/2012,<br />
paru au Journal Officiel du<br />
9 mars 2012 accorde aussi<br />
une certification pour la<br />
vinification (notamment un dosage<br />

2012. Depuis 2012, tous nos <strong>vins</strong><br />
proviennent de raisins qui ont subi<br />

d’<strong>Estoublon</strong> since 1999.<br />
To obtain the organic farming<br />
certification (AB label), vines must<br />
be raised according to precises<br />
pecifications: chemical weed control<br />
and the use of synthetic treatment<br />
substances are prohibited. Two years<br />
ago we opted for an alternative form<br />
of agriculture using no copper and<br />
half the usual dose of sulphur. Until<br />
March 8th 2012, a wine labelled<br />
AB guaranteed the winegrowing<br />
method by<br />
virtue of the winemaker’s<br />
talent or the quality of<br />
the winemaking. Since<br />
March 8th, 2012, regulation<br />
No.203/2012, published in the<br />
Official Journal of March 9th 2012,<br />
has also provided certification for<br />
winemaking (including a reduced<br />
sulphite content). The application<br />
became effective on August 1st, 2012.<br />
All our wines have been made from<br />
grapes using organic winemaking<br />

LE DOMAINE<br />
Situé dans le sud de la France, au<br />
cœur de la Provence et aux portes<br />
de Fontvieille, sur le versant Sud<br />
des Alpilles, le Château d’<strong>Estoublon</strong><br />
s’étend sur près de 200 ha dont 105<br />
ha d’oliviers et 19 ha de vignes. Les<br />
vergers d’oliviers sont classés en<br />
Appellation d’Origine<br />

Château d’<strong>Estoublon</strong> is located<br />
in south of France, in the heart<br />
of Provence at the gateway to Fontvieille,<br />
on the southern slopes of the<br />
Alpilles. It covers nearly 200 hectares<br />
including 105 hectares of olive trees<br />
and 19 hectares of vines. The olive<br />

drainés, argileux sur les terres situées<br />
en bas du domaine. À moyen terme,<br />
le vignoble d’<strong>Estoublon</strong> remontera<br />
progressivement vers<br />
les Alpilles, sur des terres<br />
plus calcaires. Le calcaire<br />
actif est peu présent<br />
comparé au reste de<br />

deep, well-drained clay soils toward<br />
the bottom of the estate. In the midterm,<br />
the vineyards at <strong>Estoublon</strong> will<br />
be gradually planted toward the Alpilles,<br />
on chalkier soils. Compared<br />
with the other soils in<br />
the appellation, there is very<br />
