The kitchen – there is more to the subject than the<br />
room itself.<br />
More profound contemplation on the topic of kitchens<br />
leads in many different directions. There is the<br />
continuing examination of our products, which we<br />
have developed specifically for the kitchen. Here<br />
research and further development takes place.<br />
Decisive improvements or perhaps only careful updates<br />
are made. Things which are technologically<br />
possible are implemented. New design vocabularies<br />
and materials are applied.<br />
Time and again, more profound contemplation on<br />
the topic of kitchens draws us out of the development<br />
departments, manufacturing and the internal<br />
meeting rooms. Into the private kitchen of the “la<br />
vie” star chef Thomas Bühner, for example, from<br />
whom we wanted to know in an interview what was<br />
really important in a good “private kitchen”. You<br />
can read his answers starting on page 046.<br />
I was especially moved <strong>by</strong> another topic, which in<br />
principle is also domiciled in the kitchen. Which is<br />
why I also want to draw attention to it here, in the<br />
current issue of “the SPIRITof WATER / kitchen”.<br />
It is about the fact that according to WHO, the<br />
World Health Organization, now every fifth child is<br />
overweight. This is a rising trend. The lack of exercise<br />
is not the only cause – the complete ignorance<br />
about nutrition also plays a significant role. In the<br />
essay “Learning to eat” the author Michael Kröger,<br />
who until now was more likely to write about alternative<br />
educational models and reform pedagogues,<br />
approached the idea of a – in the eyes of many –<br />
long overdue mandatory school subject: Nutrition.<br />
With alarming numbers and a few concrete proposals.<br />

In the last issue, we already reported on “The Farm<br />
Project”, an installation Mike Meiré developed for<br />
the Salone del Mobile in Milan within<br />
the framwork of the Dornbracht Edges series. You<br />
can now read an excerpt from the essay “In the<br />
Intermediate Zone – Interior as an Experience<br />
in Aesthetic Tolerance” <strong>by</strong> the design journalist<br />
<strong>Claudia</strong> <strong>Neumann</strong>. There are several additional<br />
essays, originally written for the 248 page book<br />
about the Farm Project which will be available in<br />
the summer from the publishing house Verlag der<br />
Buchhandlung Walther König.<br />
By the way: We have been invited <strong>by</strong> Kasper König,<br />
curator of the sculpture projects muenster 07. “The<br />
Farm Project” will be one of the hosts for this<br />
event. It will stage what is <strong>by</strong> now, after Milan and<br />
Cologne (for the Furniture Fair in January 2007)<br />
the third presentation of the idea of “the kitchen as<br />
the stage of life”. As was already mentioned at the<br />
beginning: More profound contemplation on the<br />
topic of kitchens leads in many different directions.<br />
This is a good thing.<br />

La cucina – il tema è più grande del locale.<br />
La riflessione sempre più profonda sul tema cucina<br />
apre le strade più diverse. Si tratta del confronto<br />
costante con i nostri prodotti, che abbiamo concepito<br />
appositamente per la cucina. In questo<br />
campo la ricerca e la progettazione sono continue,<br />
apportando miglioramenti decisivi o anche solo<br />
procedendo con cauti aggiornamenti. Si realizzano<br />
cose rese possibili dalla tecnica. Si introducono linguaggi<br />
formali e materiali nuovi.<br />
La riflessione sempre più profonda sul tema cucina<br />
ci induce però ad uscire dai reparti di progettazione,<br />
dalle linee di produzione e dalle sale riunioni<br />
aziendali. Ad esempio nella cucina privata del<br />
celebre chef di “la vie”, Thomas Bühner, a cui<br />
abbiamo chiesto in un’intervista quali debbano<br />
essere veramente le caratteristiche di una buona<br />
“cucina privata”. Le sue risposte si possono leggere<br />
da pagina 046.<br />
Un altro tema, anch’esso sostanzialmente di casa<br />
in cucina, mi ha toccato particolarmente. Per<br />
questo desidero accennarne anche in questa sede,<br />
nel numero attuale di “theSPIRITofWATER /<br />
kitchen”. Si tratta del fatto che secondo l’OMS,<br />
l’Organizzazione Mondiale della Sanità, ormai un<br />
bambino su cinque è sovrappeso. La tendenza è in<br />
aumento. La responsabilità non è solo riconducibile<br />
alla mancanza di movimento – ma anche, in<br />
misura notevole, alla totale ignoranza in materia<br />
di alimentazione. Nel saggio “Learning to eat”<br />
l’autore Michael Kröger, che finora aveva scritto<br />
prevalentemente testi su modelli scolastici alternativi<br />
e pedagoghi riformatori, affronta quella che – a<br />
parere di molti – dovrebbe essere già da lungo<br />
tempo una materia scolastica ufficiale: l’alimentazione.<br />
Con cifre allarmanti e un paio di proposte<br />

Già nell’ultimo numero si è trattato di “The Farm<br />
Project”, un’installazione ideata da Mike Meiré<br />
nell’ambito della serie “Dornbracht Edges” per il<br />
Salone del Mobile di Milano. A pagina 008 e seguenti<br />
è possibile leggere un estratto dal saggio “Nella<br />
zona intermedia – L’interno come esperienza di tolleranza<br />
estetica”, della giornalista di design<br />
<strong>Claudia</strong> <strong>Neumann</strong>. Oltre ad alcuni saggi ulteriori,<br />
realizzati in origine per il volume di 248 pagine<br />
dedicato al Farm Project, che esce in estate per le<br />
edizioni Verlag der Buchhandlung Walther König.<br />
A proposito: siamo stati invitati da Kasper König,<br />
curatore di skulptur projekte münster 07. “The<br />
Farm Project” svolgerà in quella sede un ruolo da<br />
padrone di casa. Dopo Milano e Colonia (per il<br />
Salone del Mobile di gennaio 2007), la terza sede<br />
in cui presentare l’idea “la cucina palcoscenico<br />
della vita”. Come menzionato all’inizio: la riflessione<br />
sempre più profonda sul tema cucina apre le<br />
strade più diverse … E va bene così.<br />

La cocina – el tema es más amplio que el espacio.<br />
La preocupación por el tema cocina nos hace tomar<br />
las direcciones más variadas. De ahí nuestra continua<br />
confrontación con los productos que hemos<br />
desarrollado especialmente para la cocina. Aquí<br />
se investiga y se sigue desarrollando, se realizan<br />
mejoras decisivas o prudentes actualizaciones. Se<br />
aplica lo que técnicamente es posible. Se incorporan<br />
nuevos lenguajes de formas y materiales.<br />
Pero la preocupación por el tema cocina también<br />
nos lleva una y otra vez fuera de los departamentos<br />
de desarrollo, de producción y de las salas de<br />
reuniones internas. Nos lleva, por ejemplo, a la<br />
cocina privada del galardonado cocinero de “la vie”<br />
Thomas Bühner, a quien preguntamos en la entrevista<br />
qué es lo que realmente hace que una “cocina<br />
privada” sea buena. Se pueden leer sus respuestas a<br />
partir de la página 046.<br />
Otro tema asociado con la cocina me ha impresionado<br />
especialmente. Por eso lo quiero comentar<br />
también en la edición actual de “the SPIRITof<br />
WATER / kitchen”. Se trata del hecho de que según<br />
la OMS, la Organización Mundial de la Salud,<br />
actualmente uno de cada cinco niños sufre sobrepeso.<br />
Y la tendencia va en aumento. La causa no es<br />
sólo la falta de ejercicio, sino también, en gran<br />
medida, el total desconocimiento sobre la alimentación.<br />

Project”, una instalación que ha creado Mike Meiré,<br />
en el marco de la serie Edges de Dornbracht para el<br />
Salone del Mobile en Milán. A partir de la página<br />

zona intermedia – El interior como experiencia<br />
de tolerancia estética” de la periodista especializada<br />
en diseño <strong>Claudia</strong> <strong>Neumann</strong>. Junto a algunos<br />

THE ARRIVAL<br />
THE FULL LIFE, IMPROVISED<br />
You hear the place even before you can see it. It is the first evening of the<br />
Cologne Furniture Fair in January of 2007. Soft folk music floats through<br />
the air. Did a rooster just crow? Aromas join in: of fresh hay, of steaming manure,<br />
of live animals. Only then does the tangible place come into view –<br />
warm light flickers behind white sheets. Then one steps through the membrane,<br />
steps inside, and there, behind the protective wall of the tent, it stands:<br />
a small house, sort of a shack, whose exterior facade is composed out of a<br />
patchwork of plates using a variety of materials. The Farm Project is an oasis<br />
in the urban backyard, a penetration of the city <strong>by</strong> the village, a model project<br />
of new aesthetic experiences – and a testing ground for current designs.<br />
Then one steps inside. Sudden overabundance. Inventory, animals, food and<br />
strolling families jostle in only a few square metres – simply put: a whole lot<br />
of life. Minimalism is not at home here in this exemplary project about the<br />
kitchen. More so a form of maximalism, which approves of kitsch and cult,<br />
celebrates the kitchen as a place to come together, raises openness to the level<br />
of a principle and in exchange relinquishes the idea of perfect order. The<br />
curator Mike Meiré has interpreted the farm as archetype and designed it as<br />
the home of nostalgic longing for social togetherness. Memories rise up from<br />
the gloom: that good design has always come from the accurate observation<br />
of usage habits, that the design of things and spaces should primarily follow<br />
the structure of individual habits.<br />
And since the kitchen, according to Mike Meiré’s vision, is a place were the<br />
corporeal and sensual is at home, the Farm Project is also a place where thousands<br />
of associations resonate. By no means does it lack design, yet it is more<br />
of a room-object collage with an inclination towards improvisation as a cool<br />
design concept. It is in particular a place where the past has a place beside<br />
the present, and where completely new, contemporary visual forms emerge<br />
out of the unusual with-and-beside-each-other. “I wanted to awaken a new<br />
enthusiasm for diversity”, says Mike Meiré. And furthermore: “How can we<br />
free ourselves from our prejudices towards, for example, what is reputed to<br />
be kitsch or profane?”<br />
The cupboard and the easy chair<br />
THE CULTURE OF TRANSFORMATION<br />
WHAT ONE SEES In the wooden glass cabinet – so-called “style furniture”<br />
– one has a clear view of what’s inside: a lot of porcelain with bold<br />
ornamentation. Only the silver skull, which is stuck into this down-to-earth<br />
environment like a foreign object, does not fit in the setting; an ornament<br />
from recent grunge history. A bizarre table lamp is placed on the cabinet. Its<br />
base is formed out of part of an antler, and the shade is also decorated with<br />
stag motives. An armchair stands in front of the glass cabinet. It is the type<br />
we know from numerous American feature films – the prototypical midwest<br />
veranda chair. Mike Meiré bought it for 10 euros from the junk dealer around<br />
the corner. He put grey varnish on it, and the mouse-grey merges fluidly into<br />
anthracite in places.<br />
THOUGHTS The skull is a source of irritation in the glass cabinet. Or<br />
maybe not, since it confronts one with its own recent history or at least with<br />
a well-known cultural code. Can one laugh about it? Mike Meiré says: “I<br />
want to put the visitor in a sort of intermediate zone. Maybe at the end they<br />
will think that the glass cabinet and dishes are also sort of modern, based<br />
on observation of the skull.” That’s what it’s about: about transformation,<br />

about a culture of transformation. Through change, old, dusty things become<br />
contemporary again, and even so: Who defines what is old and dusty?<br />
The barn<br />
IT’S A MATTER OF SURVIVAL<br />
WHAT ONE SEES Behind the barriers there are real little pigs and sheep,<br />
very much alive and very likeable. Hay is heaped up, and the habitat for livestock<br />
is designed to be appropriate to the species or at least generously proportioned<br />
so that enough room is available to move around in. The barrier<br />
itself is not made from wood, but from an orange “plastic fence”, the same<br />
kind used to block off construction sites and which ultimately comes in rolls<br />
at the building supply store. Insofar the fence marks an architectural quote.<br />
Stuffed animals on the walls complement the “image” of the barn. A “country”<br />
feeling takes hold, a whiff of adventure, an archaic momentum. It should<br />
smell. And it does smell!<br />
THOUGHTS Naturally, the idea here is not to depict a nostalgic barn.<br />
The point is the idea of a barn. To make it clear where food comes from. It<br />
is not about a plea for living animals in the kitchen, but a reference to the<br />
fact that the kitchen has a relation to survival scenarios. After all, eating is<br />
related to hunting, to the fight for survival, to killing. And where the everpresent<br />
global fight for survival today is about architecture, where media<br />

and the internet convey images from disaster areas, it becomes apparent<br />
how quickly the question of aesthetics becomes obsolete: One reverts back to<br />
what is there. To sheets, plastic bags, fence barriers from the roll; basic and<br />
noble things stand side <strong>by</strong> side, collages out of copper, plastic and scrap<br />
metal take form.<br />

BEAUTY BY CHANCE OR LIFE ITSELF MUST NOT BE<br />
A SOURCE OF IRRITATION IN THE DESIGN CONCEPT<br />
WHAT ONE SEES The generously dimensioned counter was also designed<br />
specifically for the Farm Project. The centre of the room is dominated <strong>by</strong> this<br />
piece of furniture. Its surface is divided in two. The topic “Washing” takes<br />
place in the centre, and the “Herb Garden” is located right beside it. The<br />
herbs stand in a stainless steel container, which Mike Meiré wheedled from<br />
a chippy. It is logical and practical that they reside directly beside the fitting.<br />
Thus they can be watered easily. The cooker is located on the right side, the<br />
left side serves as a generously proportioned storage space. A sort of railing<br />
runs all the way around the counter: Chequered brown-white towels and<br />
simple supermarket bags used as garbage bags hang on the metal frame. A<br />
rack used to store bags of potatoes and carrots is found underneath the<br />
counter. A plain, standard wooden ladder is mounted high above the workstation,<br />
it floats above the scene. We are familiar with this setup from the<br />

butcher’s shop: All sorts of things are hung from the ladder <strong>by</strong> hooks, such as<br />
whole sausages, ham, cheese, dead animals, as well as cast iron and copper<br />
pots. One is automatically reminded of still-life paintings <strong>by</strong> Flemish painters.<br />
THOUGHTS Mike Meiré says: “I want to regain a feel for ‘naturalness’, for<br />
what is simple, logical and self-evident.” Furthermore it’s about finds and<br />
heirlooms, and about their improvised use. Having a fund also means having<br />
wealth. There is the traditional almost kitschy cake tray on the shelf, and the<br />
eggs are presented in a little basket with straw: The idea of quickly throwing<br />
an egg in the pan is simply closer at hand this way. Mike Meiré is convinced<br />
that such trifles change the behaviour towards the things.<br />
This kitchen is the opposite of what is currently happening in kitchen design:<br />
the wide-ranging locking up of as many things as possible behind the largest<br />
possible surfaces. Rather, as much detail as possible was looked at during<br />
the deliberation on the Farm Project: how people use their kitchens, how<br />
they use the things in them. And so this project really emerged from the<br />
detailed observation of utilisation and application habits, sort of like a miniempirical<br />
project. Only that Mike Meiré did not convert these observations<br />
into mass production. Instead he created a room, a context, within which<br />
a “normal” life could develop, in which archaic, already existing things could<br />
find a home. Mike Meiré: “Minimalism in the kitchen is a strategy which<br />
leaves life outside. But what takes place in the kitchen is structured chaos,<br />
a feast of life. In the kitchen, minimalism is nothing but an intellectual<br />
mental exercise. In the end the new designs look good in the showroom, but<br />

not at home. In such a kitchen even an expresso cup which is not in its right<br />
place becomes a source of irritation.”<br />

THE AESTHETICS OF UGLY<br />
WHAT ONE SEES The fitting was varnished in an umber which reminds<br />
one of calluses. It was designed with this artificial, strange colour on purpose.<br />
With this special colouring a chrome product of industry is brought<br />
back into this country world of brown-beige which, interrupted <strong>by</strong> garish<br />
accents, prevails in the Farm Project. Cheap, toxic yellow sponges and pastel<br />
colanders in tired yellow and blue lie beside it on the washstand. The dishwashing<br />
station stands across from the large counter; here pre-washing and<br />
rinsing takes place, then the dishes are cleaned in the built-in dishwasher.<br />
To the right of the washing station two additional basins are installed above<br />
each other; they came from a takeaway. Here one can pre-wash and soak<br />
the dishes before putting them in the dishwasher, if they are very dirty. A side<br />
door is located beside the dishwashing station; it is open, but screened off<br />
with one of those chain curtains which we are more familiar with from<br />
campers. Once again, Mike Meiré went to the building supply store and<br />
made this curtain himself together with his wife. The idea? “From Max Bill<br />
to Max Bahr (German building supply store)”, says Mike Meiré.<br />
THOUGHTS A word on the colours: The revival of folk music, the success<br />
of films such as Brokeback Mountain, the nostalgia for a country house<br />
lifestyle of one kind or another, all that has a lot to do with the longing<br />
for a kind of simplicity. And as a rule this, collectively stored, is related<br />
to what Mike Meiré calls this “certain country colour”. With this he means<br />
the cited spectrum of brown-beige colours. On the one hand this spectrum<br />
is served in the Farm Project – it comes about on its own through the<br />
integration of numerous “old” objects – on the other hand it is combined with<br />
strange “acid colours” which have a cheap appearance or with mixed pastel<br />
colours, which really aren’t chic. Or yet again? Mike Meiré calls the blend<br />
“contemporary”. An additional aspect of this concept is that money does not<br />
play a role. Ultimately it is a call to: Go to your attics! Go into your<br />
basements, look what is there and haul it all out! Google something together<br />
for yourself! Go into the second hand stores! And lastly: Start to curate<br />
your surroundings!<br />

L’ARRIVO<br />
LA VITA PIENA, IMPROVVISATA<br />
Ancor prima di vedere il luogo, lo si sente. È la prima sera al Salone del<br />
Mobile di Colonia del gennaio 2007. La musica folk si irradia lievemente<br />
nell’aria. Si è sentito anche un gallo cantare? Si insinuano degli odori: di<br />
fieno appena tagliato, di letame umido, di animali vivi. Solo in un secondo<br />
momento lo sguardo abbraccia il luogo materiale – una luce calda tremola<br />
dietro una pellicola bianca. Poi si attraversa la membrana, si entra, ed ecco<br />
ciò che si cela dietro la parete protettiva della tenda: una casetta, una<br />
specie di baracca di legno la cui facciata esterna è costituita da un patchwork<br />
di piastre dei materiali più diversi. Il Farm Project è un’oasi in un<br />
cortile urbano, l’intrusione del villaggio nella città, il modello progettuale<br />

di una nuova esperienza estetica – e un banco di prova per la realtà attuale<br />

Poi si entra. Improvvisamente la pienezza assoluta. In solo pochi metri quadri<br />
si concentrano mobili, animali, generi alimentari, famiglie che passeggiano<br />
– in poche parole: tanta vita. Qui il minimalismo non è di casa, in questo<br />
progetto sperimentale sulla cucina. Si assiste piuttosto a una specie di massimalismo,<br />
un inno al kitsch e al cult, che celebra la cucina come luogo del riunirsi,<br />
che assurge a principio l’apertura degli spazi e che quindi abbandona<br />
l’idea di un ordine perfetto. Il curatore Mike Meiré ha interpretato la fattoria<br />
come archetipo e l’ha concepita come dimora della malinconia nostalgica di<br />
una comunione sociale. Le tenebre confondono il ricordo: che il buon design<br />
ha sempre avuto origine dall’osservazione precisa delle abitudini d’uso e che<br />
la creazione delle cose e degli spazi dovrebbe conformarsi soprattutto alla<br />
creazione individuale delle abitudini di vita.<br />
E poiché secondo la visione di Mike Meiré la cucina è un luogo in cui dimorano<br />
il corpo e i sensi, il Farm Project è anche una cassa di risonanza di 1000<br />
associazioni. Non è affatto privo di forma, ma è piuttosto un collage di spazi<br />
e oggetti con tendenza all’improvvisazione e non l’asettica concezione di un<br />
design. Soprattutto un luogo in cui il passato ha lo stesso spazio del presente<br />
e in cui mescolanze e accostamenti inusuali generano codici visivi completamente<br />
nuovi e moderni. “Volevo risvegliare un nuovo entusiasmo per la<br />
varietà”, afferma Mike Meiré. E ancora: “Come possiamo liberarci dai nostri<br />
pregiudizi, per esempio rispetto al presunto kitsch o al profano?”<br />

La credenza e la poltrona<br />
CULTURA DELLA TRASFORMAZIONE<br />
COSA SI VEDE Nella vetrina in legno – un cosiddetto “mobile in stile” –<br />
la vista è libera su ciò che si trova all’interno: un’infinità di porcellana<br />
con audacia per la decorazione. Il teschio in argento, che in questo spazio<br />
tradizionale è collocato come un corpo estraneo, risalta sullo sfondo; un<br />
ornamento di un recente passato grunge. Sull’armadio c’è una lampada<br />
bizzarra. La base è realizzata in parti di corna di cervo e anche il paralume<br />
è decorato con motivi a cervo. Davanti alla vetrina si trova una poltrona, che<br />
ricorda quelle viste in numerosi film americani – il prototipo della poltrona<br />
da veranda del Midwest. Mike Meiré l’ha acquistata per 10 euro da un<br />
rigattiere sotto casa e l’ha verniciata di grigio, con un grigio topo che qua e<br />
là si trasforma progressivamente in antracite.<br />
RIFLESSIONI Il teschio è un elemento di disturbo nella vetrina. O forse<br />
no, se messo a confronto con il proprio recente passato o perlomeno con<br />
un codice culturale riconosciuto. Bisogna riderne? Mike Meiré dice:<br />
“Voglio collocare i visitatori in una specie di zona intermedia. Alla fine forse<br />
penseranno, dopo aver osservato il teschio, che la vetrina e le stoviglie sono<br />
in qualche modo anche moderne.” Si tratta di questo: di trasformazione,<br />
di una cultura della trasformazione. Attraverso i cambiamenti ciò che è<br />
vecchio e antiquato diventa attuale, ma poi: chi definisce ciò che è vecchio<br />
e antiquato?<br />

La stalla<br />
È IN GIOCO LA SOPRAVVIVENZA<br />
COSA SI VEDE Dietro la transenna si trovano pecore e maialini veri, molto<br />
vivaci e simpaticissimi. È stato distribuito il fieno, l’habitat degli animali<br />
è stato ricreato in modo adeguato o almeno tanto generosamente da disporre<br />
di spazio a sufficienza per scorrazzare. Gli sbarramenti stessi non sono<br />
realizzati in stecche di legno, ma consistono in un “recinto in plastica”<br />
arancione, come quello utilizzato per transennare i cantieri e anche quello<br />
alla fine proviene da un rotolo di un centro per il bricolage. In questo modo<br />
il recinto contrassegna una citazione architettonica. Animali impagliati alle<br />
pareti integrano la “immagine” della stalla. Si crea un effetto “country”, il<br />
profumo dell’avventura, un momento arcaico. Il profumo si deve sentire.<br />
E si sente!<br />
RIFLESSIONI Naturalmente qui non si tratta di ricreare una stalla nostalgica.<br />
Si tratta dell’idea di una stalla. Di chiarire da dove provengono gli alimenti.<br />
Non si tratta di un invito a tenere animali vivi in cucina, ma un rimando<br />
agli scenari di sopravvivenza con cui la cucina ha a che fare. Il cibo ora ha si<br />
associa di nuovo alla caccia, alla lotta per la sopravvivenza, ai morti. E dove<br />
oggi nella lotta globale e onnipresente per la sopravvivenza c’entra l’architettura,<br />
dove i media e Internet trasmettono le immagini di territori colpiti da<br />
catastrofi, diventa evidente quanto rapidamente la questione estetica perda di<br />
validità: si attinge a ciò che è a portata di mano. Pellicole, sacchetti di plasti-<br />
ca, il recinto da un rotolo; materiali nobili e non nobili convivono insieme, i<br />
collage sono realizzati in rame, plastica, sfridi di metallo.<br />
La grande stazione di lavoro (nel centro della stanza)<br />
LA BELLEZZA DEL CASO OVVERO LA VITA NON DEVE ESSERE<br />
UN FATTORE DI DISTURBO NELLA CONCEZIONE DEL DESIGN<br />
COSA SI VEDE Anche il banco di lavoro dalle dimensioni notevoli è stato<br />
realizzato appositamente per il Farm Project. Il centro della stanza è dominato<br />
da questo mobile. La superficie è divisa in due parti. La parte centrale è<br />
dedicata al il tema “lavaggio”, accanto ad essa si trova il “giardino delle<br />
erbe”. Le erbe sono in un contenitore in acciaio inossidabile che Mike Meiré<br />
ha preso in un chiosco di patate fritte e che ha piazzato direttamente accanto<br />
al rubinetto, una soluzione logica e pratica: Così possono essere bagnate<br />
semplicemente. Sul lato destro si trovano i fornelli, il sinistro serve da grande<br />
piano d’appoggio. Tutto intorno al banco di lavoro corre una specie di corrimano:<br />
alla cornice di metallo sono appesi strofinacci a quadri bianchi e<br />
marroni e semplici buste di plastica del supermercato che servono alla raccolta<br />
dell’immondizie. Sotto il banco di lavoro si trova una griglia su cui sono<br />
depositati sacchi di patate e sacchi di carote. Al di sopra della postazione di<br />
lavoro è collocata una semplice e comune scala di legno che si libra sulla<br />
scena. L’ambientazione sembra tratta da una macelleria: dai ganci appesi alla<br />
scala penzola ogni genere di cose, interi salami, prosciutti, formaggi, animali<br />
morti, pentole in ghisa e in rame. Istintivamente tornano alla mente le<br />
nature morte dei pittori fiamminghi.<br />
RIFLESSIONI Mike Meiré dice: “Desidero recuperare un senso di ‘naturalezza’<br />
per ciò che è semplice, logico e ovvio.” Inoltre si tratta anche di<br />
oggetti ritrovati ed ereditati e del loro utilizzo improvvisato. Avere una proprietà<br />
significa anche ricchezza. Sul piano di lavoro c’è l’alzata per torte,<br />
tradizionale e quasi kitsch, e le uova sono presentate in un contenitore con<br />
la paglia: l’idea di cuocersi in un attimo un uovo in padella è immediata.<br />
Queste piccolezze, Mike Meiré ne è convinto, modificano l’atteggiamento<br />
nei confronti delle cose.<br />
Questa cucina è l’opposto di quella che viene rappresentata attualmente<br />
nelle cucine da design, in cui il maggior numero possibile di oggetti viene<br />
nascosto dietro superfici dalle dimensioni più grandi possibile. La riflessione<br />
sul Farm Project ha acuito ulteriormente il senso di osservazione: sugli uomini<br />
e le loro cucine, sul modo in cui questi utilizzano gli oggetti. E così questo<br />
progetto è scaturito effettivamente dall’osservazione precisa delle abitudini<br />
d’uso e di consumo, per così dire un progetto empirico in miniatura.<br />
Mike Meiré non ha però trasposto queste osservazioni in prodotti di serie, ma<br />
all’interno di uno spazio, di un contesto, in cui è possibile svolgere una vita<br />
“normale”, in cui gli elementi arcaici, le cose già esistenti, ritrovano la loro<br />
collocazione. Mike Meiré: “Il minimalismo in cucina è una strategia per lasciare<br />
la vita all’esterno. Ciò che avviene in cucina è invece caos strutturato,<br />
una festa della vita. In cucina il minimalismo resta un mero gioco intellettuale.<br />
Alla fine i nuovi progetti sono belli in uno showroom, ma non a casa. In<br />
cucine di questo tipo persino una tazzina da caffè che non si trovi perfettamente<br />
al suo posto si trasforma in un elemento di disturbo.”<br />
La zona lavello<br />
ESTETICA DEL BRUTTO<br />
COSA SI VEDE La rubinetteria è stata laccata in terra d’ombra, che può<br />
ricordare solo pelle avvizzita. È stata volutamente creata in questa strana<br />

tonalità artificiale. Con questa coloritura speciale un prodotto industriale<br />
cromato viene riportato in questo mondo country marrone e beige, che predomina<br />
nel Farm Project, spezzato da interventi con sfumature accese.<br />
Accanto al lavello si trovano banali spugne di un giallo violento, colini<br />
color pastello in tristi tonalità gialle e blu. La stazione di lavaggio si trova<br />
di fronte al grande banco di lavoro; qui si fa un prelavaggio, si sciacqua e le<br />
stoviglie vengono poi lavate nella lavastoviglie incorporata. A destra della<br />
stazione di lavaggio sono stati collocati altri due lavelli, posti verticalmente<br />
uno sull’altro; provengono da una tavola calda. Se le stoviglie sono molto<br />
sporche o grasse, qui è possibile sciacquarle e lasciarle in acqua, prima di<br />
metterle nella lavastoviglie. Accanto alla stazione di lavaggio c’è la porta<br />
laterale; è aperta, ma la stanza è comunque separata da una tenda a fili che<br />
ricordano quelle dei camper. Mike Meiré è andato di nuovo in un centro<br />
per il bricolage e, insieme a sua moglie, ha realizzato questa tenda. L’idea?<br />
“From Max Bill to Max Bahr (catena tedesca di centri per il bricolage)”,<br />
dichiara Mike Meiré.<br />
RIFLESSIONI Una parola sui colori: il revival della musica folk, il successo<br />
di film come Brokeback Mountain, la nostalgia per un qualche stile<br />
campestre, tutto questo evoca molto una nostalgia per una certa forma di<br />
semplicità. E a questo si associa in genere, nella memoria collettiva, ciò che<br />
Mike Meiré chiama una “certa tonalità country”. Con questo intende lo<br />
spettro menzionato di colori dal marrone al beige. Nel Farm Project questo<br />
spettro da un lato viene realizzato – deriva in modo immediato dall’integrazione<br />
di numerosi oggetti “vecchi” – dall’altro però si combina a “colo-<br />

ri acidi” insoliti, dall’effetto sgradevole o a mescolanze di color pastello,<br />
che comunque non sono eleganti. O lo sono di nuovo? Mike Meiré definisce<br />
questa mescolanza “contemporary”. Un aspetto di questa concezione<br />
è inoltre che in essa il denaro non riveste alcun ruolo. L’invito è quindi:<br />
andate nelle vostre soffitte! Andate in cantina, guardate cosa c’è e tirate<br />
fuori tutto! Create i vostri abbinamenti! Andate nei negozi dell’usato! E infine:<br />
iniziate a occuparvi dell’ambiente in cui vivete!<br />

LA LLEGADA<br />
LA VIDA PLENA, IMPROVISADA<br />
Ya antes de ver el lugar, uno lo oye. Es la primera noche de la Feria del<br />
Mueble de Colonia en enero de 2007. Suavemente, la música folk impregna<br />
el ambiente. ¿Ha cantado un gallo? Y además el aroma: a heno fresco, a<br />
vapores de estiércol, a animados animales. Sólo entonces se hace visible el<br />
lugar en sí, el destello de una luz cálida tras la lámina blanca. Entonces atraviesa<br />
uno la membrana, entra y tras el tabique protector aparece: una pequeña<br />
casa, una especie de cabina con una fachada exterior de un patchwork<br />
hecho de placas con los más diversos materiales. El Farm Project es un<br />
oasis en patio urbano, una irrupción de un pueblo en la ciudad, un proyecto<br />
modelo de una nueva experiencia estética, y un lugar de prueba para<br />
el diseño actual.<br />
Entonces, uno entra. De repente, una intensa plenitud. En tan sólo unos<br />
metros cuadrados se apretujan enseres, animales, alimentos, familias que<br />
pasean; sencillamente: una gran cantidad de vida. El minimalismo está aquí,<br />
en este proyecto modelo acerca de la cocina, no en casa. Más bien una especie<br />
de maximalismo, que reafirma el kitsch y el culto, celebra la cocina como<br />
lugar de reunión y eleva a principio el carácter abierto, abandonando así la<br />
idea del orden perfecto. El comisario Mike Meiré ha interpretado la granja<br />
como arquetipo y la ha concebido como hogar para la nostalgia de la convivencia.<br />
Poco a poca se intensifica el recuerdo de que el buen diseño tiene<br />
su origen, casi siempre, en la observación precisa de las costumbres de<br />
empleo, y que la presentación de las cosas y los espacios debe orientarse<br />
primariamente hacia la presentación individual de los hábitos.<br />
Y puesto que la cocina para Mike Meiré es un lugar en el que se encuentran<br />
lo físico y lo sensual, el Farm Project es también un espacio de acogida para<br />
1000 asociaciones. No está en absoluto desestructurado, sino que más bien es<br />
un collage entre cuarto y objetos con tendencia a la improvisación que un<br />
concepto moderno de diseño actual. Ante todo es un lugar en el que también<br />
tiene cabida el pasado, al igual que el presente, y en el que de las insólitas<br />
combinaciones surgen modernos códigos visuales. “Quería despertar un<br />
nuevo entusiasmo por la variedad”, declaró Mike Meiré. Y además: “¿Cómo<br />
podemos liberarnos de nuestros prejuicios, por ejemplo frente a lo presuntamente<br />
kitsch o profano?“<br />
El armario para la vajilla y la poltrona<br />
CULTURA DE LA TRANSFORMACIÓN<br />
LO QUE SE VE En el armario de madera con vitrina, un llamado “mueble<br />
de estilo”, se controla con toda libertad la visión de lo que hay: mucha por-<br />

celana con profusión de adornos. Sólo la calavera plateada, colocada en este<br />
entorno estable como un cuerpo extraño, se sale del marco; un objeto decorativo<br />
del reciente pasado grunge. Sobre el armario hay una extraña lámpara<br />
de mesa. Los pies están hechos de trozos de asta de ciervo, y la pantalla también<br />
está decorada con motivos de ciervos. Delante del armario con vitrina<br />
hay una butaca conocida de muchas películas americanas, la típica butaca de<br />
un porche del Medio Oeste. Mike Meiré la ha comprado por 10 euros en el<br />
chatarrero de la esquina y la ha lacado en gris; un gris ceniciento que se<br />
convierte en antracita aquí y allá.<br />
PENSAMIENTOS La calavera es un factor perturbador en el armario con<br />
vitrina. O tal vez no, se confronta con su propio pasado reciente o al menos con<br />
un código cultural conocido. ¿Se puede reír uno de eso? Mike Meiré declaró:<br />
“Quiero colocar al visitante en una especie de zona intermedia. Al final tal vez<br />
piensen, al contemplar el cráneo, que el armario con vitrina y la vajilla también<br />
son modernos de algún modo.” Se trata de transformación, de una cultura<br />
de la transformación. Gracias a los cambios, lo antiguo, lo anticuado vuelve<br />
a ser moderno, y en realidad: ¿Quién define lo que es viejo y anticuado?<br />
El establo<br />
SE TRATA DE SUPERVIVENCIA<br />
LO QUE SE VE Detrás de la valla hay cerditos y ovejas de verdad, muy animados<br />
y muy simpáticos. Se ha terraplenado el heno, se ha adecuado el espacio<br />
vital para los animales o al menos se han creado dimensiones lo suficientemente<br />
generosas. La barrera en sí no está hecha de tablillas de madera, sino que<br />
está compuesta por una “valla de plástico” de color naranja, como si estuviera<br />
colocada para cercar una obra y tal cual sale del rollo en la tienda de bricolaje.<br />
En este sentido, la valla marca una cita arquitectónica. Los animales disecados<br />
de las paredes completan el “cuadro” del establo. Se crea un “country-feeling”,<br />
el aroma de la aventura, un momento arcaico. Debe olerse. ¡Y se huele!<br />
PENSAMIENTOS Naturalmente aquí no se trata de reproducir un establo<br />
nostálgico. Se trata de la idea de establo. Para dejar claro de dónde vienen los<br />
alimentos. No se trata de abogar por los animales vivos en la cocina, sino de<br />
una advertencia sobre lo que tiene que ver la cocina con un escenario de<br />
supervivencia. Al fin y al cabo, la comida tiene que ver con la caza, con la<br />
lucha por la supervivencia, con la muerte. Y allí donde la omnipresente lucha<br />
global por la supervivencia hoy trata de arquitectura, allí donde los medios e<br />
Internet transmiten las imágenes de zonas de catástrofes, se ve claramente<br />
lo rápido que caduca la demanda de estética: Uno recurre a lo que encuentra.<br />
Al celofán, a las bolsas de plástico, a la valla en rollo; lo noble y lo innoble<br />
coexisten, surgen collages de cobre, plástico, chatarra metálica.<br />
La gran estación de trabajo (en el centro de la estancia)<br />
LA BELLEZA DEL AZAR O LA VIDA NO PUEDE SER UN<br />
FACTOR PERTURBADOR EN EL CONCEPTO DE DISEÑO<br />
LO QUE SE VE El banco de trabajo de dimensiones generosas también se<br />
ha diseñado para el Farm Project. El centro del espacio está dominado por<br />
este mueble. Su superficie está partida en dos. En el centro tiene lugar el<br />
tema “lavado”, y justo al lado se encuentra el “jardín de hortalizas”. Las hortalizas<br />
están en un recipiente de acero fino, que Mike Meiré ha sacado de un<br />
puesto de frituras, asentado directamente junto a la grifería. Es lógico y práctico:<br />
así se pueden regar simplemente. En el lado derecho está el fogón, el<br />
izquierdo sirve como estante de grandes dimensiones. Alrededor del banco<br />
de trabajo hay una especie de barandilla que lo rodea totalmente: Del marco<br />

bolsas de supermercado que sirven para tirar la basura. Debajo del banco de<br />
trabajo hay una rejilla en la que se guardan sacos de patatas y de zanahorias.<br />
Encima de la estación de trabajo hay una escalera de madera corriente,<br />
simple, que flota sobre la escena. Uno conoce esta escena de la carnicería:<br />
En los ganchos colgados de la escalera se balancean todo tipo de cosas, toda<br />
clase de salchichas, jamón, quesos, animales muertos, ollas de hierro colado<br />
y cobre. Instintivamente uno recuerda la naturaleza muerta de los pintores<br />
flamencos.<br />
PENSAMIENTOS Mike Meiré declaró: “Quisiera volver a lograr una sensación<br />
de “naturalidad”, una sensación de para lo que es simple, lógico y<br />
natural.” Más aún, se trata de objetos encontrados y heredados, y de su utilización<br />
improvisada. Tener objetos significa también riqueza. Está el soporte<br />
de tartas tradicional, casi kitsch, en el estante, y los huevos se presentan en<br />
una canastilla con paja: la idea de batir rápidamente un huevo y echarlo a la<br />
sartén se evoca fácilmente. Detalles como estos cambian la actitud hacia<br />
las cosas, de eso Mike Meiré está convencido.<br />
Esta cocina es lo contrario de lo que se ha dado durante algún tiempo en el<br />
diseño de cocinas: guardar de forma espaciosa la mayor cantidad de objetos<br />
posible tras las superficies más grandes posibles. Al reflexionar sobre el Farm<br />
Project se ha mirado otro aspecto con detenimiento: cómo utiliza el hombre<br />
su cocina y los objetos que hay en ella. Realmente este proyecto tiene su<br />
origen en la observación precisa de las costumbres de uso, un proyecto miniempírico,<br />
por decirlo así. Sólo que Mike Meiré no ha traducido estas ob-<br />

servaciones en productos en serie, sino en un espacio, un contexto, en el que<br />
se puede desarrollar una vida “normal”, en el que los objetos arcaicos, objetos<br />
ya existentes, vuelven a encontrar su sitio. Mike Meiré: “El minimalismo<br />
en la cocina es una estrategia para ignorar la vida. Al fin y al cabo, lo que<br />
tiene lugar en la cocina es un caos estructurado, una celebración de la vida.<br />
El minimalismo en la cocina se queda en un juego de ideas intelectual. Al<br />
final los nuevos diseños se ven bien en la sala de exposiciones, pero no en<br />
casa. En ese tipo de cocinas una taza de café fuera de sitio se convierte en un<br />
factor perturbador.”<br />
La zona de lavado<br />
LA ESTÉTICA DE LO FEO<br />
LO QUE SE VE La grifería se ha lacado en sombra de Venecia, lo que<br />
puede recordar a una córnea. Está creada deliberadamente en este artístico y<br />
extraño colorido. Con la coloración especial se recupera un producto industrial<br />
de cromo en este mundo campesino de marrón-beige que predomina en<br />
el Farm Project, dándole toques de vida. Al lado, en el fregadero, hay unas<br />
esponjas baratas de color amarillo chillón y coladores de color pastel en amarillo<br />
y azul apagados. La estación de lavado está frente al enorme banco<br />
de trabajo; aquí se enjuagan los platos y después se lavan en el lavavajillas<br />
integrado. A la derecha de la estación de lavado hay también dos pilas colocadas<br />
una sobre otra en vertical; proceden de un puesto de comidas. Aquí se<br />

pueden enjuagar o dejar en remojo los platos, si están muy sucios o muy<br />
grasosos, antes de meterlos en el lavavajillas. Junto a la estación de lavado<br />
hay una puerta lateral; está abierta, pero separada por esa típica cortina de<br />
cadenas de autocaravana. Mike Meiré ha vuelto a la tienda de bricolaje y,<br />
junto con su mujer, ha confeccionado él mismo esta cortina. ¿La idea? “From<br />
Max Bill to Max Bahr“, dice Mike Meiré.<br />
PENSAMIENTOS Una palabra sobre los colores: La reactivación de la<br />
música folk, el éxito de películas como Brokeback Mountain, la nostalgia de<br />
un estilo de casa de campo de siempre, todo tiene mucho que ver con el deseo<br />
de una especie de sencillez. Y así se reúne generalmente, guardado en la<br />
memoria colectiva, lo que Mike Meiré llama esta “especie de colorido campesino”.<br />
Con ello se refiere al citado espectro de colores marrón-beige. Por<br />
un lado, en el Farm Project, se maneja este espectro, que se consigue mediante<br />
la integración de muchos objetos “antiguos”, y por otro, se combina con<br />
mezclas de colores extrañas y de apariencia barata de colores “ácidos” o<br />
pastel que a decir verdad no son elegantes. ¿O lo vuelven a ser? Mike Meiré<br />
llama a la mezcla “contemporary”. Un aspecto de este concepto es, además,<br />
la poca importancia que tiene el dinero en él. La convocatoria es la siguiente:<br />
¡Salid de vuestros desvanes! ¡Entrad en vuestros sótanos, mirad lo que hay<br />
dentro y sacadlo! ¡Conseguid algo en Google! ¡Entrad en tiendas de segunda<br />
mano! Y por último: ¡Empezad a diseñar vuestro entorno!<br />

There are many reasons to pick ELIO. And in<br />
the truest sense of the word. Because ELIO can<br />
be used in diverse applications due to the large<br />

Cooking is back in fashion, but it has to be uncomplicated.<br />
For a quick snack just as much as<br />
for festive meals, as conviviality takes centre stage.<br />
A trend taken up, in many aspects, <strong>by</strong> the ELIO.<br />
In developing the design particular attention was<br />
paid to ergonomic movement being guaranteed in<br />
everyday life. And so a spray is incorporated in<br />
the spout of the fitting which can be pulled out as<br />
required. Pressing lightly in the perfectly integrated<br />
operation button changes the extensible spray<br />
from normal bubble jet to a more powerful jet.<br />

The opening from the kitchen into the living area<br />
is more and more becoming the central theme in<br />
planning. If not in terms of space, then in terms<br />
of the decoration which was originally preserved<br />
for the living area. Panelled walls, high-quality<br />
wooden floors, utensils that only appear when<br />
required and the worktop hardly distinguishable<br />
from a sideboard in the living room. What you see<br />
is what you need. Everything else remains in its<br />
place in the storage area hidden from view. The<br />
fitting always remains in view. It should therefore,<br />
like the ELIO, be incorporated harmoniously as an<br />
object into this ambience.<br />

La cucina che si apre verso il soggiorno diventa<br />
sempre più frequentemente il tema centrale nella<br />
progettazione, se non dal punto di vista spaziale,<br />
almeno nella configurazione, riprendendo quegli<br />
elementi riservati in origine al soggiorno:<br />
pareti pannellate, pavimenti in legno di qualità<br />
elevata, attrezzature da cucina che compaiono<br />
solo all’occorrenza e il piano di lavoro appena<br />
distinguibile dal mobile del soggiorno. Ciò che si<br />
usa è a vista. Tutto il resto rimane nascosto al proprio<br />
posto. Il rubinetto è invece sempre in evidenza.<br />
Per questo, come ELIO, dovrebbe essere inserito<br />
nell’ambiente in modo armonico come un<br />

y la mesa de trabajo, por lo demás, apenas se<br />
distinguen de un aparador en el salón. Se muestra<br />

When trying to start at the very beginning, thus with the formation of water,<br />
one has to look very far back. Over 14 billion years, to the so-called Big<br />
Bang, the beginning of time and space. It is also essential to delve a bit into<br />
the details (of the natural sciences).<br />
What has happened up to now (a scientific theory):<br />
The basic building blocks of matter, protons and neutrons, formed out of the<br />
amorphous “primordial mass”. In turn, these protons and neutrons coalesced<br />
into the so-called “light atomic nuclei”. A bit later, after the temperature had<br />
dropped from the initial 1,000,000,000,000,000,000 (10 18 ) degrees Celsius to<br />
the relatively cool 4,000 degrees Celsius were the atomic nuclei able to attract<br />
and bind free-floating electrons thanks to their electrical force of attraction.<br />
This is how the first “light chemical elements” formed. And specifically:<br />
hydrogen gas out of one proton and one electron, and helium gas out of two<br />
protons, neutrons and electrons. In the beginning these two elements made up<br />
99% of the entire matter in the universe. Then the clouds of matter formed<br />
stars in which the individual hydrogen and helium molecules combined to<br />
form larger molecules, the so-called “heavy chemical elements”. These were<br />
primarily carbon and oxygen. Long before the seething “primordial soup”<br />
clumped together into today’s heavenly bodies, the fusion of hydrogen and<br />
oxygen formed: water.<br />
The first to think about themselves and the world.<br />
When Man began to search for explanations for the creation of the world, his<br />
questions led him to religion first. He created higher beings for himself:<br />
the gods. He tried to fathom their plans and intentions through oracles, and<br />
to influence their actions through rites and oblations. This cleared things up<br />
for a while. But not for everyone: There may not have been any Big Bang<br />
theory (see above) around 625 – 547 BC, but there was the philosopher<br />
Thales of Miletus and, according to lore, the following statement made <strong>by</strong><br />
him: “Water is the principle of all things…”. In his deliberations Thales was<br />
considering the question of the very basis of all being and everything that<br />
happens. Since he thought that he saw a cycle of creation, the sought-after<br />
primordial substance had to be not only prevalent, but also versatile. Water<br />
seems to fulfil these demands perfectly… Thales was already considered to<br />
be the founder of philosophy, science and astronomy in the time of Plato and<br />
Aristotle. A philosopher who acquired his knowledge through detailed observation<br />
of nature. Thales himself did not leave any writings to the ensuing<br />
ages. The few source fragments which try to list what he knew come mostly<br />
from the portrayals of the philosophers Aristotle and Plato. And it was<br />
Aristotle who – building on Thales’ theories – improved on the four-element<br />
theory of the philosopher Empedocles: All being is composed of the four<br />
basic elements fire, water, air and earth. The five-element theory, a taoistic<br />
theory of nature, is often considered to be the Chinese equivalent of the<br />
Occidental four-element theory. This theory is based on the assumed basic<br />
elements wood, fire, earth, metal and water. The interaction of these elements<br />
starts a process chain, which is applied in many different sequences in the<br />
organic realm. In the human body, in character lore, or in astrology, for example.<br />
The common factor between the two theories is that they can be traced<br />
back to the archaic, conscious examination of Man’s relation with nature.<br />

Today, reams of information later:<br />
“The ocean of knowledge”, “the flow of time”, “the fountain of truth”…<br />
A fundamental reference to water and its power (beyond the purely physical)<br />
is maintained in many metaphors. At the same time, water is one of today’s<br />
most prevalent social and global topics. If you enter the term “water” in the<br />
Google search engine, you get several million hits. On the other hand, if you<br />
enter the term “water” in the free internet encyclopaedia Wikipedia, you get<br />
all the basics: “… The largest part of the world’s surface (71%) is covered<br />
with water, which is the case especially on the southern hemisphere and is<br />
illustrated to the extreme on the water hemisphere. The worldwide occurrence<br />
of water amounts to approx. 1.386 billion cubic kilometres, 1.338 billion<br />
cubic kilometres (96.5%) of which are found as salt water in the world’s oceans<br />
which have an average depth of around 3,730 metres. Only 48 million<br />
cubic kilometres (3.5%) of terrestrial water is in the form of freshwater…”<br />
On the other hand one also learns that: “One of the biggest challenges facing<br />
humanity over the next few decades is the still unavailable or insufficient supply<br />
of hygienically and toxicologically harmless drinking water as well as a<br />
sufficient amount of process water for a large part of the world’s population.”<br />
Or as Gérard Mestrallet, head of the international water corporation Suez-<br />
Ondéo, said: “God provided the water, but not the pipes.”<br />
Nel tentativo di iniziare dal principio, quindi con l’origine dell’acqua,<br />
occorre tornare con lo sguardo molto indietro. A oltre 14 miliardi di anni,<br />
fino al cosiddetto big bang, all’inizio dello spazio e del tempo. Inoltre è<br />
imprescindibile scendere un po’ nel dettaglio (naturalistico).<br />
Cosa è accaduto finora (un’ipotesi scientifica).<br />
Dall’amorfa “massa originaria” hanno avuto origine protoni e neutroni, gli<br />
elementi basilari della materia. I protoni e i neutroni si sono poi fusi nuovamente<br />
nei cosiddetti “nuclei atomici leggeri”. Quando in seguito la temperatura<br />
si abbasso, quasi raffreddandosi, dagli iniziali 1.000.000.000.000.000.000<br />
(10 18 ) gradi Celsius a 4000 gradi, i nuclei atomici poterono attrarre elettroni<br />
liberi grazie alla loro forza di attrazione elettrica e unirli a sé. Così ebbero<br />
origine i primi “elementi chimici leggeri”. E precisamente: da un protone e<br />
un elettrone il gas idrogeno, da due protoni, due neutroni e due elettroni il gas<br />
elio. Agli inizi questi due elementi costituivano il 99% di tutta la materia<br />
dell’universo. Le nuvole di materia si addensarono poi in stelle, in cui le singole<br />
molecole di idrogeno e di elio si trasformarono in formazioni più grandi,<br />
i primi cosiddetti “elementi chimici pesanti”. Si trattava soprattutto di carbonio<br />
e ossigeno. Molto prima che il ribollente “brodo primordiale” si addensasse<br />
negli attuali corpi celesti, dall’unione di idrogeno e ossigeno ebbe origine<br />
un altro elemento: l’acqua.<br />
I primi ad aver riflettuto su di sé e sul mondo.<br />
Quando l’uomo iniziò a cercare spiegazioni dell’origine del mondo, le sue<br />
domande lo condussero inizialmente alla religione. Creò esseri superiori: gli<br />
dei. Cercò di decifrare i loro piani e le loro intenzioni attraverso gli oracoli,<br />

di influenzare il loro agire tramite riti e sacrifici. In un primo momento la<br />
questione fu quindi chiarita in questo modo. Ma non per tutti: negli anni<br />
625 – 547 a.C. non era certo ancora diffusa nessuna teoria del big bang (vedi<br />
sopra), ma c’era il filosofo Talete di Mileto e, secondo la tradizione, questa<br />
sua affermazione: “Il principio di tutte le cose è l’acqua…”. Nelle sue riflessioni<br />
Talete andò alla ricerca della questione del fondamento originario di<br />
tutto l’essere e di tutta la realtà. Poiché ritenne di riconoscere un circolo<br />
nell’evoluzione, la materia originaria cercata doveva essere non soltanto una<br />
materia comunemente diffusa ma anche soggetta a trasformazione. L’acqua<br />
sembrò soddisfare perfettamente queste esigenze… Già ai tempi di Platone e<br />
di Aristotele Talete era considerato il fondatore della filosofia, della scienza<br />
e dell’astronomia. Un filosofo che attraverso l’osservazione precisa della<br />
natura giunse alle sue conclusioni. Talete stesso non lasciò ai posteri nulla di<br />
scritto. I pochi frammenti delle fonti che ci possono illuminare sulle conoscenze<br />
da lui acquisite, derivano prevalentemente dalle descrizioni dei filosofi<br />
Aristotele e Platone. Aristotele fu anche colui che – basandosi sulle<br />
teorie di Talete – approfondì la dottrina dei quattro elementi del filosofo<br />
Empedocle. Tutto l’essere è costituito da quattro elementi fondamentali:<br />
fuoco, acqua, aria e terra. Quale equivalente cinese della dottrina occidentale<br />
dei quattro elementi viene spesso menzionata la dottrina dei cinque elementi,<br />
una teoria taoista di descrizione della natura. Questa dottrina si basa<br />
sul ritenere elementi fondamentali il legno, il fuoco, la terra, il metallo e l’acqua.<br />
L’interazione di questi elementi genera un processo che viene applicato<br />
ai cicli più disparati del mondo organico. Ad esempio nel corpo umano, nella<br />
caratterologia o nell’astrologia. Ciò che accomuna entrambe le teorie è il loro<br />
risalire a un confronto arcaico e consapevole dell’uomo con la natura.<br />
Oggi, infinite informazioni più tardi:<br />
“Il mare della conoscenza”, “il fiume del tempo”, “la fonte della verità”…<br />
In molte metafore è rimasto un riferimento fondamentale all’acqua e alla sua<br />
forza (al di là della dimensione fisica). Al tempo stesso l’acqua oggi è uno<br />
dei grandi temi sociali trattati a livello mondiale. Se con il motore di ricerca<br />
Google si lancia il termine acqua, si ottengono alcuni milioni di risultati. Se<br />
in Wikipedia, l’enciclopedia libera di Internet, si immette la parola acqua, si<br />
viene subito a sapere tutto l’essenziale. “… La maggior parte della superficie<br />
terrestre (71%) è ricoperta d’acqua, sebbene questo riguardi soprattutto<br />
l’emisfero australe, per il quale l’idrosfera indica i valori estremi. Il volume<br />
di acqua presente sulla terra è pari a circa 1,386 miliardi di metri cubi, di cui<br />
ben 1,338 miliardi di metri cubi (96,5%) sono rappresentati dall’acqua salata<br />
dei mari, che mediamente sono profondi circa 3730 m. Solo 48 milioni di<br />
metri cubi (3,5%) dell’acqua della terra sono costituiti da acqua dolce…”<br />

Ma si viene a sapere anche altro: “Per gran parte della popolazione mondiale<br />
la distribuzione finora assente o insufficiente di acqua potabile, sicura<br />
sotto il profilo igienico e tossicologico, e di una quantità adeguata di acqua<br />
per uso industriale rappresenta per i prossimi decenni una delle sfide maggiori<br />
dell’umanità.”<br />
O, come ha detto Gérard Mestrallet, Presidente della società internazionale<br />
dell’acqua Suez-Ondéo: “Dio ha fornito l’acqua, ma non le tubazioni.”<br />
En un intento de empezar por el principio de todo, es decir, con el nacimiento<br />
del agua, debemos remontarnos muy atrás. Hace más de 14 mil millones<br />
de años, desde el llamado Big Bang, el inicio del espacio y el tiempo.<br />
Además es indispensable entrar un poco en detalle (desde el punto de vista<br />
de las ciencias naturales).<br />
Lo que ha sucedido hasta ahora (una hipótesis científica):<br />
En la “masa original” amorfa tienen su origen protones y neutrones, las partes<br />
fundamentales de la materia. Estos protones y neutrones se funden para<br />
formar los llamados “núcleos atómicos ligeros”. Cuando algo más tarde la<br />
temperatura descendió de los 1.000.000.000.000.000.000 (10 18 ) grados centígrados<br />
iniciales hasta los casi fríos 4.000 grados, los núcleos atómicos, gracias<br />
a su atracción nuclear eléctrica, pudieron atraer electrones libres que<br />
revoloteaban alrededor y unirse a ellos. Así se originaron los primeros “elementos<br />
químicos ligeros”: de un protón y un electrón, el hidrógeno; de dos<br />
protones, neutrones y electrones, el helio. En un principio, estos dos elementos<br />
conforman el 99% de la materia total del universo. Entonces las nubes de<br />
materia se agruparon en estrellas en las que las moléculas de hidrógeno y<br />
helio se convirtieron en formaciones más grandes, los primeros “elementos<br />
químicos pesados”. Fueron principalmente carbono y oxígeno. Mucho antes<br />
de que el borboteante “caldo primordial” se apelmazó en las estrellas de hoy<br />
se formó, gracias a la unión de hidrógeno y oxígeno, el agua.<br />
Los primeros que han reflexionado sobre sí mismos y el mundo.<br />
Cuando el hombre empezó a buscar explicaciones al nacimiento del mundo,<br />
dirigió sus preguntas en principio a la religión. Creó seres superiores: los dioses.<br />
Intentaba consultar sus planes y proyectos al oráculo y influir sus actos<br />
por ritos y ofrendas. Así quedaba todo explicado. Pero no para todos: aunque<br />
en los años 625 – 547 a. C ya no había ninguna teoría sobre el Big Bang (ver<br />
arriba), pero estaba el filósofo Tales de Mileto, quien, según las crónicas anti-<br />

guas, afirmó lo siguiente: “El principio de todas las cosas es el agua…”. En<br />
sus reflexiones, Tales partía de la pregunta sobre el origen de todo ser y de<br />
todo lo que sucede. Como creía reconocer en ello un ciclo del origen, el elemento<br />
buscado no debía ser sólo una sustancia muy frecuente en la naturaleza,<br />
sino que también debía poder transformarse. El agua parecía satisfacer<br />
a la perfección estas exigencias… Tales era considerado, ya en tiempos de<br />
Platón y Aristóteles, como el fundador de la filosofía, la ciencia y la astronomía.<br />
Un filósofo que llega a sus conocimientos a través de la observación<br />
precisa de la naturaleza. El propio Tales no legó ningún escrito a la posteridad.<br />
Los pocos fragmentos de fuentes sobre los conocimientos planteados<br />
por él proceden en su mayoría de las versiones de los filósofos Aristóteles<br />
y Platón. Aristóteles fue también quien, basándose en las teorías de Tales,<br />
profundizó en la doctrina de los cuatro elementos del filósofo Empédocles:<br />
Todo ser está compuesto de los cuatro elementos básicos: fuego, agua, aire y<br />
tierra. Como correspondencia china a la doctrina occidental de los cuatro<br />
elementos se designa con frecuencia la doctrina de los cinco elementos, una<br />
teoría daoísta para la descripción de la naturaleza. La doctrina se basa en los<br />
elementos básicos madera, fuego, tierra, metal y agua. La interacción de estos<br />
elementos desencadena una secuencia de procesos que se aplica en las más<br />
variadas funciones en el ámbito de lo orgánico. Por ejemplo en el cuerpo<br />
humano, en la caracteriología o en la astrología. Ambas teorías coinciden en<br />
que se pueden atribuir a la confrontación arcaica consciente del hombre con<br />
la naturaleza.<br />

Hoy en día, con muchísima más información:<br />
“El mar del conocimiento”, “El fluir del tiempo”, “La fuente de la verdad”…<br />
Muchas metáforas guardan una relación fundamental con el agua y su fuerza<br />
(más allá de lo físico). Al mismo tiempo, el agua es uno de los grandes temas<br />
sociales que se tratan en todo el mundo. Si escribimos “agua" en el buscador<br />
Google, encontraremos un par de millones de coincidencias. Si escribimos<br />
“agua" en Wikipedia, la enciclopedia gratis de Internet, aprenderemos todo<br />
lo básico: ”… El agua cubre la mayor parte de la superficie del planeta Tierra<br />
(71%), especialmente en el hemisferio sur y se muestra inmensa en el hemisferio<br />
acuático. La cantidad de agua de la Tierra es aproximadamente de 1.386<br />
millones de kilómetros cúbicos, de los cuales 1.338 millones (96,5%) son de<br />
agua salada de océanos que tienen una media de unos 3.730 m de profundidad.<br />
Sólo 48 millones de kilómetros cúbicos (3,5%) del agua de la Tierra son<br />

Por otro lado, se aprende también que: “La falta de provisión o la provisión<br />
insuficiente hasta la fecha para una gran parte de la población mundial de<br />
agua potable higiénica y sin problemas toxicológicos, así como de una cantidad<br />
suficiente de agua para uso general, constituye uno de los más grandes<br />
desafíos de la humanidad en las próximas décadas.”<br />

The kitchen is subject to constant change. In the<br />
course of modernity starting in the 1920’s, it<br />
moved away from being a central place in<br />
the house and first became a machine room<br />
designed for efficiency. Starting in the 1980’s,<br />
the kitchen played a greater role as a place<br />
for the shared preparation of food. Since then<br />
it has been organised in the image of the professional<br />
kitchen. How will the kitchen develop<br />
in the future?<br />
From my childhood, I can still vividly recall that<br />
the kitchen had a completely different level of<br />
importance. When my parents were building their<br />
own home, the kitchen was almost the smallest<br />
room in the house. It was separated and poorly<br />
visible from the other rooms. In addition, it had a<br />
high window so that one could not look in from<br />
the outside. This has changed completely. Today<br />
the kitchen is a social gathering place.<br />
Privately, are you more likely to cook for yourself<br />
or together with friends?<br />
Nothing is more horrible than cooking solely for<br />
oneself. We get together with friends in the kitchen<br />
and cook together with them. That is social and<br />
communicative. This is also what I am familiar<br />
with from my friends. They have a TV in the<br />
kitchen as well as great furniture and tools.<br />
What kind of design elements does a kitchen need?<br />
The kitchen has taken a great leap in the last few<br />
years. It has become a prestigious object, like the<br />
car. Nowadays it is not uncommon for someone to<br />
spend 50,000 to 100,000 euros on a kitchen.<br />
Although few people actually cook in these kitchens,<br />
they are superbly equipped. This is similar<br />
to people buying a sports car but never driving it<br />
at its limits, but only using it for shopping or to<br />
cruise on Sunday afternoons.<br />
What kind of kitchen do you prefer?<br />
I expect that the kitchen be properly equipped –<br />
that’s what it’s also like in my home. This should include<br />
a corresponding oven, if possible a steamer.<br />
I like to have a plate warmer to keep things warm.<br />
Before I would invest a lot in a coffee maker, I<br />
would prefer to have a large induction burner, and<br />
a gas burner as well. That belongs in a kitchen. In<br />
addition, the kitchen has to be properly laid out<br />
so that one can work well in it. Here one should<br />
pay special attention to the proper working heights.<br />
The configuration of drawers and storage spaces<br />
also plays a role here. In addition, we have picke<br />
a wine cooler for ourselves, because that is important<br />
to us. A proper fridge which keeps things<br />
fresh, without the cheese tasting like strawberries<br />
and vice versa: These are the sort of things that are<br />
important to me in a kitchen.<br />
As a cook, what do you wish for in the kitchen of<br />
the future?<br />
I don’t expect a lot of futuristic innovations there.<br />
First we have to get a handle on the small details.<br />
For example?<br />
We had a new fitting installed recently. The tap<br />
forms a really high arch. Not only does this look<br />
good, it is also very practical. In addition, it has<br />
a spray head. If one installs it very close to the<br />
cooker one can fill even large pots directly on the<br />
cooker, which is a great relief.<br />
How could the water supply change in the future?<br />
The idea that one can also drink the water from the<br />
tap has been completely forgotten. Maybe this<br />
could be emphasised more through new technical<br />
and design solutions. One could purify the water<br />
directly at the fitting and carbonate it, for example.<br />
One could also have a water supply which is<br />
optimised for the functional demands of working<br />
and cooking.<br />
What role does the design of a kitchen play for you?<br />
We just got a new kitchen with orange-coloured<br />
fronts. It is located in a 600 year old building. That<br />
can stand a bit more colour. We selected a stone<br />
countertop for it which is very functional. Colour<br />
and light create a strong vibrant effect in the room.<br />
I want to get away from the image of the kitchen<br />
as being a room in which one works. The kitchen<br />
should be a beautiful room where you like to sit<br />
and eat. We do in fact still have a dining room as<br />
well. But initially we always get together in the<br />
kitchen. Well, that won't come as a surprise in<br />
our case.<br />
How should the ideal water supply in the kitchen<br />
of the future be built?<br />
I can’t say much about that. Ultimately all of us<br />
only use water to cook!<br />

helps to accomplish what one is currently planning<br />
to do. It supports the aims of its user like a<br />
good host. It knows what you might need even<br />
before you do.” Alain de Botton, London philosopher<br />

La cucina è soggetta a una continua trasformazione.<br />
A partire del 1920, con le nuove tendenze<br />
della modernità, si evolve, da luogo centrale della<br />
casa, innanzitutto in un locale di elettrodomestici<br />
costruito in modo efficiente. Dagli anni<br />
Ottanta in poi la cucina ha svolto un ruolo più<br />
importante come luogo di preparazione collettiva<br />
dei pasti. E da allora è organizzata sul modello<br />
della cucina professionale. La cucina di evolverà<br />
ulteriormente?<br />
Iho ancora un ricordo nitido della mia infanzia,<br />
dove la cucina aveva un valore completamente<br />
diverso. Quando i miei genitori fecero costruire<br />
la casa, si può dire che la cucina fosse la stanza<br />
più piccola. Era separata dalle altre camere e poco<br />
visibile. Inoltre aveva una finestra molto alta,<br />
in modo che anche dall’esterno non si potesse<br />
vedere dentro. La situazione è cambiata radicalmente.<br />
Oggi la cucina è un luogo d’incontro<br />
sociale.<br />
In privato cucina prevalentemente da solo o piuttosto<br />
insieme agli amici?<br />
Nulla è più terribile che cucinare da solo. Ci troviamo<br />
in cucina con gli amici ed elaboriamo i<br />
piatti con loro. È un’opportunità per socializzare e<br />
comunicare. Anche i miei amici fanno così. Hanno<br />
un televisore in cucina e c’è un fantastico allestimento<br />
di elettrodomestici e mobili.<br />
Di quali ingredienti artistici necessita una buona<br />
cucina?<br />
Negli ultimi anni la cucina ha vissuto un salto<br />
concettuale. Analogamente all’automobile è divenuta<br />
un oggetto di prestigio. Oggi non è più un<br />
caso raro che qualcuno spenda da 50000 a<br />
100000 euro per una cucina. E sebbene quelle<br />
usate per lo scopo previsto – cucinare – siano una<br />
minoranza, sono allestite in modo eccellente. È<br />
come quando la gente si compra l’auto sportiva,<br />
ma non la sfrutta fino in fondo, limitandosi a<br />
usarla per lo shopping o per le gite fuori porta la<br />
domenica pomeriggio.<br />
Che tipo di cucina predilige?<br />
Mi aspetto – e a casa mia è così – che la cucina sia<br />
attrezzata come si deve. Ci deve essere un forno<br />
adeguato con la possibilità di cuocere a vapore.<br />
Mi fa piacere uno scaldavivande per tenere in<br />
caldo qualcosa. Prima di investire molto in una<br />
macchina del caffè, preferirei delle belle piastre a<br />
induzione e in aggiunta una fiamma a gas. Questi<br />
sono gli elementi essenziali di una cucina. Poi<br />
deve essere progettata bene, in modo che vi si<br />

possa lavorare secondo una logica. Occorre soprattutto<br />
prestare attenzione alla giusta altezza dei<br />
piani di lavoro. Anche la disposizione dei cassetti<br />
e delle dispense è importante. Noi poi ci siamo<br />
scelti un frigorifero studiato appositamente per i<br />
vini, perché a casa nostra anche questo è un argomento<br />
importante. Un buon frigorifero che mantiene<br />
le cose fresche senza che il formaggio sappia<br />
di fragole e viceversa: per me sono queste le cose<br />
importanti per una cucina.<br />
Cosa vorrebbe come cuoco dalla cucina del futuro?<br />
Mi aspetto meno innovazioni futuristiche. Dobbiamo<br />
occuparci innanzitutto delle piccole cose.<br />
Per esempio?<br />
Da poco abbiamo fatto installare una nuova rubinetteria.<br />
Il rubinetto fa un arco veramente alto,<br />
non solo bello da vedere, ma anche molto pratico.<br />
In più dispone di una doccetta. Se si piazza l'insieme<br />
vicino al fornello, si possono riempire direttamente<br />
le pentole che sono sul fuoco, e questa è<br />
una facilitazione non da poco.<br />
Come potrebbe cambiare in futuro il punto<br />
acqua?<br />
Il fatto che l'acqua che esce dal rubinetto si possa<br />
anche bere è caduto nel dimenticatoio. Forse lo si<br />
potrebbe accentuare con maggior enfasi mediante<br />
soluzioni tecniche e creative. Si potrebbe depurare<br />
l’acqua direttamente al rubinetto e ad esempio<br />
aggiungerci l'anidride carbonica. E in più ci<br />
potrebbe essere un punto acqua in accordo ottima-<br />
le con le necessità funzionali del lavoro e della<br />
cucina.<br />
Che ruolo svolge secondo lei la strutturazione di<br />
una cucina?<br />
Ci è appena stata consegnata una nuova cucina<br />
con i frontali arancioni ed è stata posata in un edificio<br />
di 600 anni che non disdegna un po’ di colore.<br />
Abbiamo scelto poi una piastra in pietra molto<br />
funzionale. Colore e luce illuminano molto l’ambiente.<br />
Io vorrei andarmene dalla stanza in cui<br />
svolgo il mio lavoro. La cucina deve essere una<br />
bella stanza, in cui si sta seduti e si mangia volentieri.<br />
E infatti a casa nostra c’è anche una sala da<br />
pranzo. Ma comunque ci si riunisce sempre in<br />
cucina. Lì naturalmente siamo anche un po’ compromessi.<br />
Come dovrebbe presentarsi il punto acqua ideale<br />
nella cucina del futuro?<br />
Non posso dire molto in proposito. In fondo cuciniamo<br />
tutto solo con l’acqua!<br />

Aiuta a realizzare ciò che si ha in mente.<br />
Supporta le intenzioni di chi la usa come un buon<br />
padrone di casa. Sa ancora prima di te, di cosa<br />

La cocina está sometida a un cambio continuo.A<br />
lo largo de la historia moderna, a partir de los<br />
años 20, pasó de ser el lugar central de la casa a<br />
convertirse en una sala de máquinas construida<br />
de manera eficiente. A partir de los años 80, la<br />
cocina desempeñó un papel fundamental como<br />
lugar de reunión para la preparación de las<br />
comidas. Desde entonces, se ha organizado<br />
siguiendo el ejemplo de los profesionales de la<br />
cocina. ¿Cuál va a ser la siguiente evolución de<br />
la cocina?<br />
Me acuerdo muy bien de mi infancia, cuando la<br />
cocina tenía un valor completamente distinto.<br />
Cuando mis padres construyeron su casa, la cocina<br />
era casi la habitación más pequeña de todas.<br />
Estaba separada, y desde el resto de las habitaciones<br />
apenas podía verse. Además, tenía una ventana<br />
alta para que tampoco se pudiera mirar desde<br />
fuera. Todo esto ha cambiado completamente. Hoy<br />
en día, la cocina es un punto de encuentro social.<br />
En privado, ¿cocina más bien solo o preferiblemente<br />
en común, con sus amigos?<br />
No hay nada más triste que cocinar solo para uno<br />
mismo. Nosotros nos reunimos con los amigos en<br />
la cocina y cocinamos con ellos. Es algo muy<br />
social y comunicativo. Mis amigos también opinan<br />
así. Tienen un televisor en la cocina y un estupendo<br />
equipamiento de aparatos y muebles.<br />
¿Qué ingredientes necesita el diseño de una<br />
buena cocina?<br />
La cocina ha dado un gran salto en los últimos<br />
años. Al igual que el automóvil, se ha convertido<br />
en un objeto de prestigio. En la actualidad, no es<br />
raro que la gente gaste de 50.000 a 100.000 euros<br />
en equipar su cocina. Aunque luego la mayoría no<br />
cocina en ellas, pero las tiene perfectamente equipadas.<br />
Sucede lo mismo que cuando alguien se<br />
compra un coche deportivo, pero nunca lo pone<br />
al límite, sino que lo utiliza para ir de compras o<br />
para dar un paseo el domingo por la tarde y enseñar<br />
el coche.<br />
¿Qué tipo de cocina prefiere?<br />
Yo espero, al igual que en el caso de mi casa, que<br />
la cocina esté equipada como es debido. Esto<br />
incluye un horno adecuado y, a ser posible también,<br />
un aparato de cocción al vapor. Me gusta<br />
tener un calientaplatos para mantener las cosas<br />
calientes. Antes de invertir mucho en una cafetera,<br />
prefiero una gran placa de inducción y además un<br />
fogón de gas. Esto es algo que debe tener la cocina.<br />
Además, la cocina debe estar bien planificada<br />
para que se pueda trabajar en ella razonablemente<br />
bien. Sobre todo, debe procurarse que las alturas<br />
de trabajo sean correctas. La disposición de los<br />
cajones y del espacio para accesorios también es<br />
importante. Además hemos escogido un armario<br />
refrigerador para vinos porque también es algo<br />
que valoramos. Una buena nevera que conserve<br />
las cosas frescas, sin que el queso tome el sabor de<br />
las fresas y viceversa: Estas son para mí las cosas<br />
importantes de la cocina.<br />
Como cocinero, ¿qué desea de la cocina del<br />
futuro?<br />
Espero que las novedades sean menos futuristas.<br />
Primero tenemos que dominar los pequeños<br />
detalles.<br />
¿Por ejemplo?<br />
Hace poco encargamos la instalación de una nueva<br />
grifería. El grifo del agua forma un arco muy<br />
alto, cosa que no sólo es bonita, sino que además<br />
es muy práctica. También tiene una ducha manual.<br />
Si se instala todo esto cerca de los fogones, se<br />
pueden llenar incluso las cazuelas altas directamente<br />
encima del fogón, y esto facilita mucho<br />
el trabajo.<br />
¿Cómo podría cambiar en el futuro el punto<br />
de agua?<br />
La gente se ha olvidado completamente de que<br />
el agua que sale del grifo también se puede beber.<br />
Quizá se podría acentuar más esto mediante<br />
nuevas soluciones técnicas y de diseño. Se podría<br />
tratar el agua directamente en la grifería y, por<br />
ejemplo, ponerle ácido carbónico para hacer agua<br />
con gas. Al lado podría haber un punto de agua<br />
adaptado de forma óptima a las necesidades funcionales<br />
del trabajo y de la cocina.<br />
¿Qué papel representa para usted el diseño de<br />
una cocina?<br />
Acabamos de instalar una cocina nueva con la<br />
parte frontal de los armarios de color naranja. Está<br />
en un edificio que tiene 600 años. Esto hace que<br />
tolere un poco más de color. Hemos elegido combinarla<br />
con una encimera de piedra, muy funcional.<br />
El color y la luz le dan a la estancia un carisma<br />
especial. No quiero entrar en una sala en la que<br />
se trabaja. La cocina debería ser una habitación<br />
bonita en la que uno puede sentarse y comer a<br />
gusto. Aunque nosotros también tenemos un<br />
comedor. Pero primero nos encontramos siempre<br />
en la cocina. Claro que en nuestro caso lo llevamos<br />
en la sangre.<br />
¿Cuál sería en el futuro el lugar de la cocina ideal<br />
para instalar el punto de agua?<br />
No hay mucho que decir al respecto. ¡Al fin y al<br />
cabo todos nosotros cocinamos sólo con agua!<br />

Minimising to the bare essentials is a trend which<br />
is evident in all areas of the kitchen. Quality is what<br />
counts. An excellent meal usually needs only a<br />
few but outstanding ingredients. Equally, all that is<br />
required are a few good kitchen knives and pots.<br />
And therefore even the META.02 variations, especially<br />
designed for working in the kitchen, dispense<br />
with all that is superfluous. The raised spout swivels,<br />
so large items can be washed comfortably. And<br />
there is also adequate space for cleaning vegetables<br />
and fruit or filling pots. Similarly, the long<br />
handle ensures optimum functionality; rinsing<br />

Life goes with the times, also in the kitchen. Not<br />
only through new cooking rituals and modern<br />

Forecasts are circulating on the<br />
internet which predict that every<br />
second adult will suffer from obesity<br />
in 40 years. Having taken a<br />
look at the playgrounds and<br />
schoolyards in neighbourhoods<br />
which are not necessarily the best<br />
but certainly common, one might<br />
suspect: this could happen.<br />
But it doesn’t have to. Because if one looks<br />
for the causes, one finds one primary reason<br />
beyond the oft-quoted lack of exercise and<br />
the constant advertisement of unhealthy or<br />
denatured food: a lack of information.<br />
This would seem to be the right time to<br />
establish “nutrition” as its own, standard<br />
school subject. Completely free from dry<br />
health-food presentations, but instead full<br />
of useful information and experiences. But<br />
above all: not limited to private schools or<br />
alternative school and education models,<br />
but as a subject for the entire public school<br />
sector. Thus for everybody and everyone.<br />
Ideally starting in grade one.<br />
The good selection of stores and supermarkets,<br />
reading labels, understanding<br />
and interpreting ingredients, evaluating<br />
fresh wares, assessing prices … all of this<br />
has to be learned. Because: there is no<br />
deliberate nutrition without deliberate<br />

(other than that they taste good)?<br />

Imagine that every child in the country<br />
has the chance to sample the healthy life,<br />
to find out how good it can taste.<br />
Regardless of where it comes from or what<br />
is eaten at home. (Tasting is an experience<br />
and therefore is probably much more convincing<br />
than every theoretical argument,<br />
no matter how well it is presented.)<br />
And what would also be good: learn to<br />
cook. Movements, techniques, ingredients<br />
and direction… here everything must be<br />
tried as well. Cooking, therefore. To this<br />

of fast food restaurants and snack bars.<br />

largest fast food restaurants and snack<br />
bars grew <strong>by</strong> 7.6 percent (the best result<br />

contrast to culinary impoverishment. How<br />
many children know about it <strong>by</strong> now?<br />
A chapter on “The Business of Nutrition”<br />
would also be interesting: The food industry<br />
is huge. It ensures the supply of basic<br />
provisions, invents new products on a daily<br />
basis, is an employer, receives tax money<br />
and experiences its own scandals on a<br />
regular basis. It wouldn’t hurt to know<br />
what the overall structures of the business<br />
are like. And what roll children and youth<br />
play in the whole thing.<br />
In addition, short expeditions into popular<br />
science could make the subject of “nutrition”<br />
a light-bulb moment. To, for example,<br />
understand how one can seriously write a<br />
whole chapter in a book about the preparation<br />
of a fried egg. Or to try if one can<br />
make lemonade oneself and also have it<br />
taste good.<br />
And not at least: the cultural significance<br />
of nutrition. Why do the Germans often eat<br />
potatoes, and the Lebanese eat chickpeas?<br />
Are kebabs really the national<br />
Turkish dish? Why don’t Muslims eat pork?<br />
Topics for many years. Sometimes profound<br />
– sometimes just yummy. With a little<br />
bit of imagination one can imagine that it<br />
is not only the little bodies that develop<br />
well, but also the corresponding minds.<br />
Incidentally, the costs for malnutrition and<br />
nutrition-related diseases is estimated to<br />
approx. 71 billion euros per year. That is<br />
1/3 of all health care costs, and the trend<br />
is increasing. And since WHO (the World<br />
Health Organization) also states that there<br />
are around one billion severely obese<br />

people and that every fifth child is too fat,<br />
politicians have also reacted and have<br />
been calling for education on nutrition in<br />
state schools. There are a lot of indications<br />
that having “nutrition” as a regular school<br />
subject is fundamentally not being questioned<br />
anymore. It is only a matter of time.<br />
In Internet circolano le previsioni<br />
che tra 40 anni un adulto su due<br />
soffrirà di obesità. Se una volta ci si<br />
guarda intorno nei parchi gioco o<br />
nei cortili delle scuole di quei quartieri<br />
non necessariamente migliori<br />
ma più comuni, si pensa: potrebbe<br />
accadere.<br />
Ma non è inevitabile. Perché se si cercano<br />
le cause, oltre alla spesso menzionata mancanza<br />
di movimento e alla continua pubblicità<br />
di generi alimentari non sani e<br />
denaturati, se ne incontra soprattutto una:<br />
la mancanza di informazione.<br />
I tempi sembrano maturi, per introdurre la<br />
“alimentazione” come materia scolastica<br />
regolare e autonoma. Senza più i sintetici<br />
opuscoletti dei negozi biologici, ma al loro<br />
posto informazioni ed esperienze assolutamente<br />
utili. Soprattutto però: materia non<br />
limitata alle scuole private o agli istituti con<br />
modelli pedagogici alternativi, ma destinata<br />
alle scuole statali di ogni ordine e<br />
grado. Quindi per tutti. Ancora meglio<br />
dalla prima elementare.<br />
Scegliere bene i negozi e i supermercati,<br />
decodificare le etichette, capire e interpretare<br />
le sostanze contenute, saper riconoscere<br />
la merce fresca, valutare i prezzi …<br />
tutto questo è da imparare. Perché: non<br />
esiste alimentazione consapevole senza<br />
saper comprare in modo consapevole.<br />
Quindi naturalmente: come intervengono<br />
il cibo e il bere nel mio corpo? Come mai<br />
le carote agiscono un po’ come una crema<br />
abbronzante? Perché troppo zucchero fa<br />
male? E per quale ragione il grasso in<br />
eccesso fa ammalare? O, in altre parole:<br />
cosa ottengo concretamente, se mangio<br />
frutta e verdura (oltre ad apprezzarne il<br />
sapore)? A proposito:<br />
Immaginate che ogni bambino del paese<br />
abbia l’opportunità di sperimentare una<br />
vita sana, per stabilire quanto possa piacergli.<br />
Indipendentemente da dove provenga<br />
e di cosa si mangi a casa. (Gustare<br />
il cibo è un’esperienza e perciò agisce probabilmente<br />
in modo molto più convincente<br />
di qualsiasi argomento intellettuale<br />
anche se ben presentato.)<br />
Sarebbe anche un bene: imparare a cucinare.<br />
Movimenti, tecniche, ingredienti,<br />
scuole … Anche in questo campo bisogna<br />
provare. Quindi cucinare. A tale scopo le<br />
scuole dovrebbero disporre di cucine funzionanti,<br />
esattamente come di aule di<br />
informatica. E i cuochi dovrebbero diventare<br />
insegnanti! In questo contesto: perché<br />
alcuni alimenti sono reperibili in determinati<br />
paesi solo in certi periodi? Perché ha<br />
senso (ed è più piacevole) mangiare questi<br />
alimenti proprio in quei paesi? Che<br />
cosa significa che una fragola venga<br />
importata da Israele? E qual è la differenza<br />
tra una serra e la natura? O non c’è<br />
nessuna differenza?<br />
E cenare al ristorante? Si può imparare?<br />
Potrebbe almeno essere comunicato il<br />
principio della varietà. In Germania la<br />
nuova lista delle 100 più grandi aziende<br />
di ristorazione è costituita quasi esclusivamente<br />
da catene di fast food e tavole<br />
calde.<br />
Mentre il resto del settore gastronomico<br />
langue, il fatturato dei cento maggiori fast<br />
food e tavole calde cresce del 7,6 percento<br />
(il risultato migliore dal 1995). Dall’altro<br />
lato cresce lo slow food, il movimento<br />
internazionale per la tutela del diritto al<br />
gusto, che offre un programma alternativo<br />
all’impoverimento culinario. Quanti bambini<br />
lo sanno già?<br />
Sarebbe interessante anche un capitolo<br />
“L’alimentazione come attività economica”.<br />
L’industria alimentare è gigantesca. Assicura<br />
l’approvvigionamento fondamentale,<br />
inventa ogni giorno nuovi prodotti, offre<br />
posti di lavoro, riceve incentivi ed è protagonista<br />
abituale di scandali. Non sarebbe<br />
male conoscere le strutture essenziali di<br />
questa attività economica. E il ruolo che<br />
i bambini e i giovani svolgono in tutta<br />
la faccenda.<br />
Brevi escursioni nella scienza popolare<br />
potrebbero rendere la materia “alimentazione”<br />
ancora più sorprendente. Ad esempio<br />
per capire perché si possa scrivere<br />
seriamente un capitolo di un libro sulla<br />
preparazione di un uovo al tegamino. O<br />
per verificare se si può preparare da soli<br />
una limonata che sia anche gustosa.<br />
E non da ultimo: il significato culturale<br />
dell’alimentazione. Perché i tedeschi mangiano<br />
spesso le patate e i libanesi i ceci?<br />
Il döner è davvero il piatto nazionale<br />
turco? Perché i musulmani non mangiano<br />
carne di maiale? Materiale a disposizione<br />
per molti anni. Più si approfondisce – più<br />
diventa piacevole. Con un po’ di immaginazione<br />
si può pensare che non solo i piccoli<br />
corpi avrebbero un buon sviluppo, ma<br />
anche le loro teste.<br />
I costi di un’alimentazione errata e di<br />
malattie nutrizionali sono stimati solo in<br />
Germania a circa 71 miliardi di euro l’anno.<br />
Questo corrisponde a 1/3 di tutte le<br />
spese per la sanità, e la tendenza è in<br />
aumento. Poiché inoltre secondo l’OMS,<br />
l’Organizzazione Mondiale della Sanità, in<br />
questo momento ci sono circa un miliardo<br />
di persone affette da grave obesità e che<br />
ormai un bambino su cinque è troppo<br />
grasso (sempre secondo l’OMS), da molto<br />
tempo anche i politici reagiscono con sovvenzioni<br />
per lezioni sull’alimentazione<br />
nelle scuole statali. Molti fattori inducono<br />
quindi a pensare che la “alimentazione”<br />
come materia regolare in tutte le scuole<br />
non sia più una questione di principio. Ma<br />
soltanto una questione di tempo.<br />

En Internet circulan pronósticos<br />
que dicen que en 40 años uno de<br />
cada dos adultos padecerá obesidad.<br />
Quien se asome alguna vez<br />
a los parques infantiles o los patios<br />
de escuela del barrio, no los mejores<br />
pero sí los que más hay: eso<br />
puede ser verdad.<br />
Pero no necesariamente. Porque si se buscan<br />
las causas, además de la muy citada<br />
falta de ejercicio y la constante publicidad<br />
de alimentos no sanos o no naturales, nos<br />
encontramos principalmente con una cuestión:<br />
la falta de información.<br />
Ya es hora de introducir la “alimentación”<br />
como una asignatura propia regular. Pero<br />
no a base de conferencias áridas sobre<br />
las tiendas de productos naturales, sino<br />
con información y experiencias útiles. Pero<br />
sobre todo: no limitado a las escuelas privadas<br />
o los modelos pedagógicos y escolares<br />
alternativos, sino como asignatura<br />
para todas las escuelas estatales. Es decir,<br />
para todos. Mejor si se empieza en el primer<br />
curso.<br />
Seleccionar bien tiendas y supermercados,<br />
descifrar las etiquetas, comprender y<br />
explicar los componentes, evaluar los productos<br />
frescos, estimar los precios … todo<br />
eso se debe aprender. Porque: no puede<br />
haber alimentación consciente sin una<br />
compra consciente.<br />
Y por supuesto: ¿Qué desencadena en<br />
realidad la comida y la bebida en mi<br />
cuerpo? ¿Por qué actúan las zanahorias<br />
un poco como la leche solar? ¿Por qué es<br />
malo demasiado azúcar? ¿Y por qué nos<br />
hace enfermar la grasa excesiva? O por el<br />
contrario: ¿Qué consigo concretamente<br />
cuando como fruta y verdura (además del<br />
buen sabor)? Por cierto:<br />
Imagínese que todos los niños tuvieran la<br />
oportunidad de llevar una vida sana para<br />
comprobar el buen sabor que puede<br />
tener. No importa de dónde venga ni qué<br />
se coma en casa. (El sabor es una vivencia<br />
y probablemente será mucho más<br />
convincente que cualquier argumento teórico<br />
expuesto, por bueno que sea.)<br />
También sería positivo: aprender a cocinar<br />
uno mismo. Movimientos, técnicas,<br />
ingredientes, tendencias … Aquí también<br />
se debe experimentar. Es decir, cocinar.<br />
Para ello deberían instalarse en las escuelas<br />
cocinas funcionales, igual que se instalan<br />
salas de ordenadores. ¡Y los cocineros<br />
deberían hacer de maestros! En este sentido:<br />
¿Por qué algunos alimentos sólo se<br />
pueden conseguir en determinadas épocas<br />
en determinados países? ¿Por qué<br />
tiene sentido (y es divertido) comer estos<br />
alimentos precisamente allí? ¿Qué implica<br />
que se importe la fresa de Israel? ¿Y cuál<br />
es la diferencia entre un invernadero y la<br />
naturaleza? ¿O no la hay?<br />
¿E ir a un restaurante? ¿Se puede aprender<br />
eso? Al menos podría transmitirse el<br />
principio de la variedad. La nueva lista<br />
de las 100 empresas de comida más<br />
grandes de Alemania está compuesta<br />
casi exclusivamente por cadenas de<br />
restaurantes de comida rápida. Mientras<br />
que el resto del sector gastronómico flaquea,<br />
el volumen de negocio de las cien<br />
cadenas de restaurantes de comida rápida<br />
más grandes crece en un 7,6% (el<br />
mejor resultado desde 1995). Por otro lado,<br />
prospera la Slow Food, el movimiento<br />
internacional de protección del derecho<br />
al disfrute, y ofrece el programa de contraste<br />
con la pobreza culinaria. ¿Cuántos<br />
niños lo conocen?<br />
Sería interesante también un capítulo de<br />
“Alimentación como negocio”: La industria<br />
de la alimentación es inmensa. Asegura<br />
el suministro básico, encuentra diariamente<br />
nuevos productos, da trabajo, recibe<br />
dinero público y con frecuencia experimenta<br />
escándalos. No está mal saber<br />
cómo son más o menos las estructuras de<br />
este negocio. Y qué papel tienen los niños<br />
y los jóvenes en el asunto.<br />
Breves incursiones al saber popular podrían<br />
hacer de la asignatura “alimentación”<br />
una experiencia reveladora. Por ejemplo,<br />
para entender por qué se puede escribir<br />
seriamente un capítulo de un libro sobre<br />

la preparación de un huevo frito. O para<br />
probar si uno mismo puede hacer una<br />
limonada que además esté buena.<br />
Y no en último término: El significado cultural<br />
de la alimentación. ¿Por qué los alemanes<br />
comen a menudo patatas y los<br />
libaneses garbanzos? ¿Es el kebab realmente<br />
el plato nacional turco? ¿Por qué<br />
los musulmanes no comen cerdo?<br />
Material para muchos años. Unas veces se<br />
come porque es saludable, otras veces<br />
simplemente porque sabe bien. Con un<br />
poco de fantasía se puede imaginar que<br />
los pequeños no sólo consiguen un buen<br />
desarrollo físico, sino también mental.<br />
El coste estimado como consecuencia de<br />
la mala alimentación y de las enfermedades<br />
alimentarias sólo en Alemania es de<br />
aproximadamente 71.000 millones de<br />
euros al año. Ello significa 1/3 del coste<br />
total sanitario, y la tendencia es ascendente.<br />
Como además, según la OMS, la<br />
Organización Mundial de la Salud, actualmente<br />
hay alrededor de mil millones de<br />
personas con mucho sobrepeso y uno de<br />
cada cinco niños está gordo (siempre<br />
según la OMS), los políticos reaccionan<br />
también desde hace tiempo solicitando<br />
a las escuelas estatales que enseñen a<br />
los niños sobre alimentación. Por tanto,<br />
muchos factores indican no se puede<br />
cuestionar la necesidad de introducir la<br />
“alimentación” como asignatura normal<br />
en todas las escuelas. Sino que es sólo<br />
cuestión de tiempo.<br />

For the discriminating kitchen-user a kitchen fitting<br />
is <strong>by</strong> no means merely a functional necessity,<br />
but rather an integral part of kitchen planning<br />
through which they can convey their aesthetic<br />
awareness. The archetypal forms of the TARA are<br />
an inspiration at first sight. At second glance its<br />
convenience concept for the kitchen – just as with<br />
the TARA pot filler – becomes apparent. Cooking<br />
is even more convenient with a tap directly next<br />
to the cooker: pots can be filled with water while<br />
cooking on the hotplate.<br />

The elegant MADISON fittings play with history,<br />
taking on quotations from the kitchens of around<br />

The origin of the Performances series which<br />
was initiated in Dornbracht in 2004 is the body<br />
as the physical, spiritual, and energy centre.<br />
Performance 2, “Wood on Wood”, took place<br />
September 2006 in the former Berlin Mitte post<br />
office after the dance performance of Mark<br />
Jarecke. Percussionist Dave Nuss from New York<br />
tested his physical limits with a drum performance.<br />
Performing solo for the first time, Nuss<br />
played until he was completely exhausted. Surrounded<br />
<strong>by</strong> the audience and a camera which constantly<br />
revolved around him. For the curator of the<br />
Performances series, Mike Meiré, the aim of the<br />
second performance was to not even attempt to<br />
avoid the risk of failure. To deliberately surrender<br />
to failure for once, to allow it, to accept it as a<br />
limitation and there<strong>by</strong> come clean with oneself. To<br />
create a situation where it is possible to overcome<br />
the permanent control of the intellect over the<br />
body, to awaken the body’s memory”.<br />
Percussionist Dave Nuss was born in 1971 in<br />
Corpus Christi, Texas. Raised in an Evangelical<br />
Christian environment, it has taken him many<br />
years to let go of those memories – first through<br />

the violence of heavy metal, and later through<br />
more subtle tactics of self-immolation. Nuss’music<br />
is about the twin-spirit dark/light world actualised<br />
in human ritual connection. He began his career in<br />
the thrash metal band Angkor Wat (Death<br />
Records) in the late 80s, moved to New York to<br />
experience the avant-garde of improvisation and<br />
expansive music. At the time of this performance,<br />
Dave Nuss was working with a social service mission<br />
called “ArtSpirit” that organises drumming<br />
groups for people who live on the streets.<br />
“The percussion solo is one of the most excessive,<br />
virtuosic events one can experience in music.<br />
Here the percussionist, who normally plays a hidden<br />
role in the rhythm department, stands in the<br />
limelight. The musician’s ego takes over control,<br />
works on an ideal technical virtuosity, while his<br />
head only serves the cause as a tool. Dave Nuss<br />
reduced the solo drums to a human machine of<br />
sound waves. He shows us the connection between<br />
gestures and sound, between the arc of musical<br />
composition and the rhythm of physical exertion.<br />
Instead of a non-stop variant which takes place on<br />
all the drums at the same time, Nuss limited him-<br />
self to specific patterns such as the repetition of an<br />
intermission, like what is often played between<br />
Metal songs.There are moments when you believe<br />
that Nuss does not have two arms and two legs,<br />
but twenty.”<br />

The “Into Me / Out of Me” exhibition, supported<br />
<strong>by</strong> the Dornbracht Culture Projects and first presented<br />
in the P.S.1 Contemporary Art Center in<br />
New York, represents a search through the art of<br />
performance starting in the 1960’s. At the time,<br />
many artists increasingly used their own bodies as<br />
subject and object of their artistic expressions –<br />
often in radical ways which reached the breaking<br />
point of what was physically possible and tasteful.<br />
In doing so, the artists did not subject only themselves<br />
to extreme experiences. The public was<br />
brought to the psychological limits as well <strong>by</strong>, for<br />
example, having individual attendee’s take part<br />
in a humiliating or dangerous activity which was<br />
targeted against the artist.<br />
The exhibition brings artistic points of view which<br />
put physical integrity in question together, be it as<br />
simple fantasy, as narration or as an actual performance<br />
act where something enters the body,<br />
pierces it or is expelled <strong>by</strong> it. “Into Me / Out of<br />
Me” presents three groups of the fundamental<br />
aspects through which the relationship between<br />
the inside and outside of the body is defined in<br />
an artistic way: metabolism (eating, drinking,<br />
voiding), reproduction (intercourse, conception,<br />
birth) and violence (shooting, piercing, perforating).<br />
The displayed works represent research and<br />
visualisation of these archaic processes and occupy<br />
themselves with the exterior and interior surfaces<br />
of the human body as well as with objects<br />
and subjects of the physical exchange between the<br />
human body and the surrounding material world.<br />
“Into Me / Out of Me” covers a time span of over<br />
40 years and displays works from selected international<br />
artists.<br />
The exhibition was created <strong>by</strong> the P.S.1 Contemporary<br />
Art Center in conjunction with the KW<br />
Institute for Contemporary Art, Berlin, and is<br />
curated <strong>by</strong> Klaus Biesenbach, head curator of the<br />
P.S.1, curator for the Museum of Modern Art<br />
(MoMA) film and media departments and founding<br />
director of the KW Institute for Contemporary<br />

La mostra “Into Me / Out of Me”, patrocinata<br />
dai Dornbracht Culture Projects e presentata per<br />
la prima volta al P.S.1 Contemporary Art Center<br />
di New York, rappresenta una ricostruzione<br />
dell’arte della performance a partire dagli anni<br />
Sessanta del XX secolo. Allora molti artisti iniziarono<br />
a utilizzare sempre più il proprio corpo<br />
come soggetto e oggetto della loro espressione<br />
artistica – spesso in modo così radicale da giungere<br />
ai limiti fisici ed estetici della resistenza. Gli<br />
artisti non solo sottoponevano se stessi a esperienze<br />
estreme, ma anche il pubblico veniva condotto<br />
fino ai limiti psichici, chiedendo ad esempio a singoli<br />
spettatori di partecipare ad azioni umilianti o<br />
pericolose rivolte contro l’artista.<br />
La mostra raccoglie contributi artistici in cui l’integrità<br />
fisica è messa in discussione, sia come<br />
mera rappresentazione, come descrizione o come<br />
effettiva performance, in cui qualcosa viene introdotto<br />
nel corpo, in esso viene mosso oppure espul-<br />
so. “Into Me / Out of Me” presenta in tre sezioni<br />
gli aspetti essenziali in cui si definiscono artisticamente<br />
i rapporti tra l’interno e l’esterno del corpo:<br />
metabolismo (mangiare, bere, espellere), riproduzione<br />
(rapporto sessuale, concepimento, nascita) e<br />
violenza (sparare, trafiggere, perforare). I lavori<br />
presentati costituiscono analisi e visualizzazioni di<br />
questi processi arcaici e si confrontano con le<br />
superfici esterne e interne del corpo umano e con<br />
gli oggetti e i soggetti dello scambio fisico tra il<br />
corpo umano e il mondo materiale che lo circonda.<br />
“Into Me / Out of Me” ricopre un periodo di oltre<br />
40 anni e mostra le opere di artisti internazionali<br />
selezionati.<br />
La mostra è nata in collaborazione del P.S.1<br />
Contemporary Art Center con i KW Institute for<br />
Contemporary Art, Berlino, ed è curata da Klaus<br />
Biesenbach, curatore capo del P.S.1, curatore del<br />
reparto film e media del Museum of Modern Art<br />
(MoMA) e direttore fondatore dei KW Institute<br />
for Contemporary Art, Berlino. La mostra è stata<br />
inaugurata nell’estate 2006 al P.S.1, New York, per<br />
poi trasferirsi nel novembre 2006 ai KW Institute<br />
for Contemporary Art di Berlino e dall’aprile al<br />
settembre 2007 si può visitare al MACRO Future<br />
di Roma.<br />
La exposición sostenida por Dornbracht Culture<br />
Projects “Into Me / Out of Me”, presentada por<br />
primera vez en el P.S.1 Contemporary Art Center<br />
de Nueva York, presenta una búsqueda de vestigios<br />
a través del arte de la performance a partir<br />
de los años sesenta del siglo XX. En aquella<br />
época muchos artistas empezaron a utilizar más<br />
sus propios cuerpos como sujetos y objetos de su<br />
expresión artística, a menudo de una forma radical<br />
que alcanzaba los límites corporales y del buen<br />
sabor. No sólo los artistas imponían experiencias<br />
extremas a sí mismos, sino que también se llevaba<br />
al público a áreas psíquicas límite en las que,<br />
por ejemplo, los asistentes eran invitados a participar<br />
en un acto humillante o peligroso contra el<br />
o la artista.<br />
La exposición reúne posturas artísticas en las que<br />
la integridad física se pone en duda, sea como<br />
simple concepto, como descripción o como representación<br />
real en la que se introduce algo en el<br />
cuerpo, algo que lo atravesa o es expulsado de él.<br />
“Into Me / Out of Me” presenta en tres apartados<br />
los aspectos básicos en los que se definen<br />
artísticamente las relaciones entre el interior y el<br />
exterior del cuerpo: Metabolismo (comer, beber,<br />
defecar), reproducción (relaciones sexuales,<br />
concepción, nacimiento) y violencia (disparar,<br />
apuñalar, acribillar). Las obras mostradas representan<br />
estudios y visualizaciones de estos procesos<br />
arcaicos, y se ocupan del exterior y del in-<br />

terior del cuerpo humano, así como de los objetos<br />
y los sujetos del intercambio físico entre el cuerpo<br />
humano y el mundo material a su alrededor. “Into<br />
Me / Out of Me” cubre un espacio de tiempo de<br />
más de 40 años y muestra obras de artistas internacionales<br />
seleccionados.<br />
La exposición surge de la colaboración del P.S.1<br />
Contemporary Art Center y los KW Institute for<br />
Contemporary Art, Berlín, y su comisario es<br />
Klaus Biesenbach, comisario jefe del P.S.1, comisario<br />
del departamento de cine y medios de comunicación<br />
del Museo de Arte Moderno (MoMA) y<br />
director fundador de los KW Institute for<br />
Contemporary Art, Berlín. La exposición se inauguró<br />
el verano de 2006 en el P.S.1, Nueva York, en<br />
noviembre de 2006 viajó a Berlín, a los KW<br />
Institute for Contemporary Art y desde abril hasta<br />
