giugno; viene essiccato, messo sotto sale, ed infine<br />
pressato in appositi contenitori. Altri piatti<br />
conosciuti sono i filetti <strong>di</strong> pesce persico col risotto,<br />
i lavarelli e le piccole alborelle fritte. Ottimi i<br />
formaggi che vengono prodotti negli alpeggi<br />
locali come la “semuda”, lo “zincarlin” e il formaggio<br />
magro d’alpe. Disponibile presso gli uffici<br />
I.A.T. la lista dei ristoranti ed informazione<br />
sulle varie sagre gastronomiche.<br />
Les restaurants de la Tremezzina et Val <strong>Menaggio</strong><br />
offrent nombreux plats typiques tra<strong>di</strong>tionelles sur<br />
leurs menus; spécialités du lac avec son protagoniste<br />
naturel : le poisson et plats de la cuisine des vallées,<br />
centrée sur la « polenta », gibier et fromage.<br />
On doit sûrement essayer le plat local : le “missoltino”,<br />
c’est à <strong>di</strong>re l’alose feinte, pêchée uniquement<br />
au mois de juin, qui vient desséchée,mis sous sel et<br />
enfin vient pressée dans des récipients spéciaux.<br />
Autres spécialités sont les filets de perche avec le<br />
Risotto, les lavarets et les petites ablettes frittes. Très<br />
bons sont les fromages, qui viennent produits <strong>di</strong>rectement<br />
dans les alpages locaux, comme par exemple<br />
la “semuda”, le “zincarlin”, et le fromage maigre<br />

Dieses Köstlichkeit besteht aus „Maifisch“, der<br />
im Juni gefischt und gedörrt wird, dann in Salz eingelegt<br />
und zum Schluss Blechdosen gepresst wird.<br />
Andere bekannte Gerichte sind <strong>Bar</strong>schfilet mit<br />
Risotto, Felchen und kleine gebackene Ukeleien. Sehr<br />
gut ist auch der Käse, der im heimischen Gebirge hergestellt<br />
