QUERÉTARO HISTORY
During the first decades of the colonial
period Querétaro was one of the most
opulent and important cities of the New
Spain, since it marked the limit of what they
called the civilized world for the colonizers
and further north there was barbarism,
Therefore, they considered it necessary to
found temples and convents in the town to
strengthen the spirit of the laity and
religious, so Franciscans, Discalced
Carmelites, Jesuits and Dominicans arrived
in Querétaro to begin the spiritual conquest
of the region, known as Tierra Dentro (Land
Within).
Although the state was once again the
scene of great battles during the Revolution,
its buildings and monuments did not suffer
as much damage as in the last century,
thanks to which, today we can still enjoy its
beauty.
Knowing a little more about our Queretaro,
here are some curious facts that will leave
you open-mouthed.

Peace and harmony
Founded in 1531, the ancient and mysterious city of
Santiago de Querétaro seeks to preserve the original
indigenous core and winding streets, while there is a
combination with the Spaniards, which is a mixture of
both cultures and spice it up. This is a clear reflection of
how the Otomi, Tarascans, Chichimecs and Spaniards
coexisted peacefully in this city.

Clean and devein the chilies. In a comal,
grill on both sides, taking care that they do
not burn to avoid making the sauce bitter.
Once roasted, put them in a pot with enough
boiling water, let soak for 20 minutes to
soften. Since they are soft, liquefy and
reserve. Boil tomato, onion and garlic in
another pot.
In a frying pan with enough vegetable oil,
brown the thickeners of the pasta: raisins,
pumpkin seeds, peanuts, almonds, the
tortilla cut into quarters, the bolillo in slices
and sliced plantain. Since they are burned,
blend together with the cinnamon, cloves,
anise, pepper, sesame and gradually add
water until a homogeneous mixture is
obtained.
In a casserole (preferably earthenware) add
vegetable oil, the chocolate bar, the
piloncillo and the vegetable consommé
tablets; move constantly until they fall
apart. Once the consistency is liquid, add

using a strainer. Mix the three parts very
well and constantly. Season one more time if
necessary. Do not stop stirring for a few
minutes until it comes to the first boil over
low heat. (preferably use a wooden scoop).
