05 QUINOA<br />

This little pseudograin from South<br />

America is a perfect food to include on a<br />

gluten-free diet because it has a superb<br />

nutritional profile and a great flavor.<br />

Quinoa is not a cereal grain<br />

(a grass) but the seed of a<br />

member of the beet family.<br />

Along with amaranth and<br />

buckwheat, it is sometimes<br />

termed a “pseudocereal”—<br />

a product that looks like<br />

and can replace a true<br />

cereal in the diet.<br />

Quinoa is one of the few “complete protein” plant foods, meaning<br />

it contains all nine essential amino acids. It’s a particularly good<br />

plant source of lysine, which helps us absorb calcium and make<br />

hormones. Calcium is especially concentrated in quinoa—it<br />

contains more than twice the amount found in wheat. The seeds<br />

are rich in antioxidant compounds, including immune-boosting<br />

quercetin and anti-inflammatory kaempferol. Unlike other grain<br />

foods, quinoa is a good source of healthy fats. One-quarter is oleic<br />

acid (a heart-healthy fat) and it also contains alpha-linolenic acid<br />

(ALA), the omega-3 fat that can help reduce high cholesterol and<br />

blood pressure. Quinoa is also one of the easiest grains to digest,<br />

making it particularly useful for anyone with digestive problems.<br />

1 small banana, thinly sliced<br />

½ crisp, red-skinned apple,<br />

such as Pippin, thinly sliced<br />

2 teaspoons pumpkin seeds<br />

honey, for drizzling<br />

Greek yogurt, to serve (optional)<br />

Method<br />

1 Put the puffed quinoa into a serving bowl. Stir in the apple juice,<br />

making sure the puffs are submerged. Let stand for a few minutes.<br />

2 Arrange the banana slices and apple slices on top of the quinoa.<br />

3 Sprinkle with the pumpkin seeds and drizzle with a little honey.<br />

Serve immediately with yogurt, if using.<br />

Boil quinoa seeds in water until tender. For a nuttier flavor, dry roast<br />

or dry-pan fry for 5 minutes before boiling. Combine cooked, chilled<br />

quinoa with chopped vegetables, salads, beans, and herbs or<br />

spices for a healthy meal. Use instead of wheat in tabbouleh. You<br />

can buy quinoa noodles and flour as a healthy subsitute for wheat<br />

grains in your baked goods. Quinoa is easy to sprout or puff (follow<br />

the directions on the package) or buy already sprouted or puffed.<br />

lightly crushed<br />

Cut 8 orange slices and 8 lemon slices, reserving the remaining fruit.<br />

Rinse the monksh llets under cold running water and pat dry with<br />

kitchen paper. Place 1 llet from each monksh tail, cut-side up, on a<br />

work surface and divide the citrus slices between them. Top with the<br />

lemon thyme. Reassemble the tails and tie them securely together at<br />

intervals with kitchen string or trussing thread. Place the tails in a large,<br />

shallow, non-metallic dish.<br />

Squeeze the juice from the remaining fruit and mix with the olive oil in<br />

a jug. Season to taste with salt, then spoon the mixture over the sh.<br />

Cover with clinglm and leave to marinate in the refrigerator for up to 1<br />

hour, spooning the marinade over the sh tails once or twice.<br />

Preheat the barbecue. Drain the monksh tails, reserving the marinade.<br />

Sprinkle the crushed green peppercorns over the sh, pressing them<br />

in with your ngers. Cook the monksh over medium hot coals, turning<br />

and brushing frequently with the reserved marinade, for 20–25 minutes.<br />

Transfer to a chopping board, remove and discard the string and cut<br />

the monksh tails into slices. Serve immediately, garnished with orange<br />

and lemon wedges.<br />

1 small onion, finely chopped<br />

Top and tail the beans, but leave them whole. Cook for<br />

3–4 minutes in salted boiling water. Drain well, run under the<br />

cold tap to refresh and drain again. Put into a mixing bowl and<br />

add the onion, garlic and cheese.<br />

2 tbsp chopped walnuts or almonds,<br />

Place the dressing ingredients in a jar with a screw-top lid. Shake<br />

well. Pour the dressing over the salad and toss gently to coat.<br />

Cover with clingfi lm and chill for at least 30 minutes. Remove the<br />

beans from the refrigerator 10 minutes before serving. Give them<br />

a quick stir and transfer to attractive serving dishes.<br />

Toast the nuts in a dry frying pan over a medium heat for<br />

2 minutes, or until they begin to brown. Sprinkle the toasted<br />

nuts over the beans to garnish before serving.<br />

juice of two medium oranges 1. Place the mango on a chopping board and cut lengthways through<br />

1 Place the quinoa in a medium saucepan and then<br />

and mint to mix thoroughly.<br />

a wide, deep bowl. Place the vegetable oil in a medium<br />

frying pan over a medium heat. Roll the chickpeas in<br />

the spiced flour then fry gently in the pan, stirring<br />

frequently, for 2–3 minutes, allowing the chickpeas<br />

to brown in patches.<br />

4 Stir the warm chickpeas into the quinoa mixture and<br />

quickly stir in the lemon-oil dressing. Serve warm<br />

method<br />

1 Preheat the oven to 180°C/350°F/Gas Mark 4.<br />

2 Heat the oil in a large frying pan over a medium heat.<br />

Fry the onion, garlic and green pepper for 5 minutes,<br />

or until the onions are softened and translucent. Stir in<br />

the tomato purée, chilli paste and black beans and<br />

cook for a further 5 minutes. Stir in the chopped<br />

tomatoes and immediately remove from the heat.<br />

3 Place the taco shells upside down on a baking sheet<br />

and warm in the preheated oven for 3 minutes.<br />

4 Mix the lettuce and avocado together in a small bowl.<br />

Divide the mixture between the taco shells. Reheat the<br />

bean mixture if necessary and divide the mixture<br />

between the warmed tacos. Serve immediately.

SCOTLAND<br />

To truly appreciate a good scotch, a man must have<br />

an understanding of its rich history and process.<br />

All countries have icons, none more so than<br />

Scotland. Within its rich cultural heritage, whisky<br />

has a proud place. The country and the drink are<br />

synonymous.<br />

This is hardly surprising as Scotland has become<br />

known as the home of whisky. Its damp and cool<br />

climate may not always be welcoming, but it is ideal<br />

for producing two things that contribute to great<br />

whisky: barley and peat.<br />

It is no longer the only place that you can get<br />

great whisky, and some people contend that<br />

the Irish may have beaten Scots to the punch in<br />

distilling it. However history is written by the winners<br />

and it’s hard to dispute that whisky has delivered this<br />

small country in Northern Europe a winning hand.<br />

Exports of Scotch whisky were worth a record<br />

£4.3 billion in 2012 and contributed about £1<br />

billion to the UK Exchequer in taxes. Scotch<br />

accounts for a quarter of UK food and drink exports<br />

with 140 million cases exported worldwide to 200<br />

different countries. A further 20 million casks lie<br />

maturing in warehouses in Scotland.<br />

There are 108 distilleries licensed to produce<br />

Scotch whisky, employing 10,000<br />

people directly and 35,000<br />

indirectly across the UK. Whatever<br />

way you look at it, Scotch whisky is a<br />

massive success.<br />

It’s no surprise then that the<br />

description ‘Scotch whisky’ is<br />

jealously guarded, and refers only to whisky that<br />

has been made and matured in Scotland under<br />

strictly defined conditions. Although Scotch whisky<br />

has been produced for hundreds of years, the<br />

actual definition of what constitutes Scotch is only<br />

just over one hundred years old and dates back<br />

to a court case in Islington London. The case was<br />

brought by the local borough against two wine<br />

and spirit merchants for selling a ‘Fine Old Scotch<br />

Whisky’ that was “not of the nature, substance and<br />

quality demanded” by the provisions<br />

of the 1875 Food & Drugs Act. At a<br />

time when grain whisky was in the<br />

ascendant, the drink was composed<br />

of 90% grain and 10% malt whisky.<br />

Glenfarclas<br />

Glenfarclas is one of the few distilleries left that are<br />

still family-owned and still have family members<br />

working within the business. The Distillery has been<br />

in the Grant family ( not to William Grant of Balvenie/<br />

Glenfiddich) ownership for nearly 150 years and<br />

despite numerous attempts by bigger companies<br />

to purchase the distillery they remain fiercely<br />

independent. They uphold an unfaltering big rich<br />

house-style, very rarely stray from their traditional<br />

roots and currently produce around 3.5 million litres<br />

of spirit in some of the largest stills in Scotland.<br />

The distillery has long been famous for its heavily<br />

sherried house style of whisky. Only a small handful<br />

of distilleries are as committed to this style these days<br />

and even fewer deliver it as flawlessly. Two main<br />

types of Sherry cask cask are filled at Glenfarclas ex<br />

Oloroso and Fino both from Seveille in Spain. But<br />

even with a very traditional style of whisky Glenfarclas<br />

are still capable of innovation, in 1968 they were the<br />

very first distillery to commercially release a whisky at<br />

cask strength.<br />

The core range consists of 10, 15, 21, 25, 30, 40<br />

years old. There’s also the 105 cask strength, a 17<br />

year old which is available in the U.S and Japan and<br />

an 18 year old available in travel retail<br />

Very few distilleries have a core-range that can show<br />

off their spirit right through from 10yo to 40yo, with<br />

almost every age in between. But their range doesn’t<br />

stop there, Glenfarclas have another series called the<br />

Family Casks. The Family Casks series is unique and<br />

can show off some of the distilleries oldest whisky, with<br />

bottlings available from every year between 1952 and<br />

1996,all bottled as single casks and at cask strength.<br />

Add to this range a string of anniversary bottlings and<br />

the occasional limited release and you have the most<br />

incredible range of any distillery in the world.<br />

This wealth of maturing stock is unique and you<br />

won’t find this library of bottlings from any other<br />

distillery. Independent bottlings have been available<br />

in the past but they aren’t easy to come by, especially<br />

as they’re usually under a different name and won’t<br />

carry Glenfarclas anywhere on the label.<br />

Soft and silky but not without a little bite, notes of sweet spicy fruit and<br />

butter-scotch combine with red grape and a hint of peat.<br />

onto your palate it grows with sweetness<br />

Cut a piece of patterned fabric to<br />
