05 QUINOA
This little pseudograin from South
America is a perfect food to include on a
gluten-free diet because it has a superb
nutritional profile and a great flavor.
DID YOU KNOW?
Quinoa is not a cereal grain
(a grass) but the seed of a
member of the beet family.
Along with amaranth and
buckwheat, it is sometimes
termed a “pseudocereal”—
a product that looks like
and can replace a true
cereal in the diet.
Quinoa is one of the few “complete protein” plant foods, meaning
it contains all nine essential amino acids. It’s a particularly good
plant source of lysine, which helps us absorb calcium and make
hormones. Calcium is especially concentrated in quinoa—it
contains more than twice the amount found in wheat. The seeds
are rich in antioxidant compounds, including immune-boosting
quercetin and anti-inflammatory kaempferol. Unlike other grain
foods, quinoa is a good source of healthy fats. One-quarter is oleic
acid (a heart-healthy fat) and it also contains alpha-linolenic acid
(ALA), the omega-3 fat that can help reduce high cholesterol and
blood pressure. Quinoa is also one of the easiest grains to digest,
making it particularly useful for anyone with digestive problems.
Fruity puffed quinoa
SERVES 1
C F V D N
½ cup puffed quinoa
½ cup apple juice
1 small banana, thinly sliced
½ crisp, red-skinned apple,
such as Pippin, thinly sliced
2 teaspoons pumpkin seeds
honey, for drizzling
Greek yogurt, to serve (optional)
Method
1 Put the puffed quinoa into a serving bowl. Stir in the apple juice,
making sure the puffs are submerged. Let stand for a few minutes.
2 Arrange the banana slices and apple slices on top of the quinoa.
3 Sprinkle with the pumpkin seeds and drizzle with a little honey.
Serve immediately with yogurt, if using.
• A complete source of protein.
• A useful source of calcium, antioxidants, and healthy fats.
• A good source of potassium, iron, magnesium, and zinc.
• A good source of the B-vitamin group, especially folate and B1.
Practical tips:
Boil quinoa seeds in water until tender. For a nuttier flavor, dry roast
or dry-pan fry for 5 minutes before boiling. Combine cooked, chilled
quinoa with chopped vegetables, salads, beans, and herbs or
spices for a healthy meal. Use instead of wheat in tabbouleh. You
can buy quinoa noodles and flour as a healthy subsitute for wheat
grains in your baked goods. Quinoa is easy to sprout or puff (follow
the directions on the package) or buy already sprouted or puffed.
serves 2
ingredients
450 g/1 lb green beans
1 small onion, finely chopped
Top and tail the beans, but leave them whole. Cook for
3–4 minutes in salted boiling water. Drain well, run under the
cold tap to refresh and drain again. Put into a mixing bowl and
add the onion, garlic and cheese.
1 garlic clove, chopped
4 tbsp freshly grated Parmesan cheese
2 tbsp chopped walnuts or almonds,
to garnish
for the dressing
6 tbsp olive oil
2 tbsp white wine vinegar
salt and pepper
2 tsp chopped fresh tarragon
Place the dressing ingredients in a jar with a screw-top lid. Shake
well. Pour the dressing over the salad and toss gently to coat.
Cover with clingfi lm and chill for at least 30 minutes. Remove the
beans from the refrigerator 10 minutes before serving. Give them
a quick stir and transfer to attractive serving dishes.
Toast the nuts in a dry frying pan over a medium heat for
2 minutes, or until they begin to brown. Sprinkle the toasted
nuts over the beans to garnish before serving.
raspberries
Raspberries have one of the highest antioxidant
content of any fruit, with a high
vitamin C and proanthocyanidin content.
Raspberries are packed with the red/purple antioxidants
proanthocyanidins, found in all berries and apples. These
antioxidants work with vitamin C and may help memory function,
heart, vein and skin health, as well as promote healthy hair growth.
Studies suggest that raspberries may help prevent Alzheimer’s
disease and other dementia conditions, and have positive effects
on mood and concentration. Raspberries have the highest food
content of ellagic acid, another antioxidant that, along with fibre,
helps the liver to get rid of damaging and ageing toxin build-up.
• Ellagic acid moves bile through the liver, helping to regulate
cholesterol and prevent gallstone formation.
• Low starch and high fibre content also helps to regulate blood
sugar, making raspberries a perfect energy-sustaining foodstuff.
• High antioxidant capacity comes from substances such as
quercetin, catechins, gallic acid and salycilic acid.
Practical tips:
Raspberries can be used in the blender to make smoothies
straight from the freezer. They have been less adulterated by
breeding methods than most fruit and have a naturally lower sugar
content, as their tart taste suggests. Buy from local growers for the
highest nutrient content and choose the darkest colours for the
highest proanthocyanidin content if you pick them yourself.
Jedes Gramm Fett liefert neun Kilokalorien, man sollte
Ob Sie also abnehmen wollen oder
auf Anweisung des Arztes weniger Fett essen sollen oder
einfach nur sich und Ihre Familie gesünder zu
ernähren wünschen: Dieses Buch hilft Ihnen
dabei in jeder Hinsicht.
SCOTLAND
To truly appreciate a good scotch, a man must have
an understanding of its rich history and process.
All countries have icons, none more so than
Scotland. Within its rich cultural heritage, whisky
has a proud place. The country and the drink are
synonymous.
This is hardly surprising as Scotland has become
known as the home of whisky. Its damp and cool
climate may not always be welcoming, but it is ideal
for producing two things that contribute to great
whisky: barley and peat.
It is no longer the only place that you can get
great whisky, and some people contend that
the Irish may have beaten Scots to the punch in
distilling it. However history is written by the winners
and it’s hard to dispute that whisky has delivered this
small country in Northern Europe a winning hand.
Exports of Scotch whisky were worth a record
£4.3 billion in 2012 and contributed about £1
billion to the UK Exchequer in taxes. Scotch
accounts for a quarter of UK food and drink exports
with 140 million cases exported worldwide to 200
different countries. A further 20 million casks lie
maturing in warehouses in Scotland.
There are 108 distilleries licensed to produce
Scotch whisky, employing 10,000
people directly and 35,000
indirectly across the UK. Whatever
way you look at it, Scotch whisky is a
massive success.
It’s no surprise then that the
description ‘Scotch whisky’ is
jealously guarded, and refers only to whisky that
has been made and matured in Scotland under
strictly defined conditions. Although Scotch whisky
has been produced for hundreds of years, the
actual definition of what constitutes Scotch is only
just over one hundred years old and dates back
to a court case in Islington London. The case was
brought by the local borough against two wine
and spirit merchants for selling a ‘Fine Old Scotch
Whisky’ that was “not of the nature, substance and
quality demanded” by the provisions
of the 1875 Food & Drugs Act. At a
time when grain whisky was in the
ascendant, the drink was composed
of 90% grain and 10% malt whisky.
Islington won the case despite the
Glenfarclas
Glenfarclas is one of the few distilleries left that are
still family-owned and still have family members
working within the business. The Distillery has been
in the Grant family ( not to William Grant of Balvenie/
Glenfiddich) ownership for nearly 150 years and
despite numerous attempts by bigger companies
to purchase the distillery they remain fiercely
independent. They uphold an unfaltering big rich
house-style, very rarely stray from their traditional
roots and currently produce around 3.5 million litres
of spirit in some of the largest stills in Scotland.
The distillery has long been famous for its heavily
sherried house style of whisky. Only a small handful
of distilleries are as committed to this style these days
and even fewer deliver it as flawlessly. Two main
types of Sherry cask cask are filled at Glenfarclas ex
Oloroso and Fino both from Seveille in Spain. But
even with a very traditional style of whisky Glenfarclas
are still capable of innovation, in 1968 they were the
very first distillery to commercially release a whisky at
cask strength.
The core range consists of 10, 15, 21, 25, 30, 40
years old. There’s also the 105 cask strength, a 17
year old which is available in the U.S and Japan and
an 18 year old available in travel retail
Very few distilleries have a core-range that can show
off their spirit right through from 10yo to 40yo, with
almost every age in between. But their range doesn’t
stop there, Glenfarclas have another series called the
Family Casks. The Family Casks series is unique and
can show off some of the distilleries oldest whisky, with
bottlings available from every year between 1952 and
1996,all bottled as single casks and at cask strength.
Add to this range a string of anniversary bottlings and
the occasional limited release and you have the most
incredible range of any distillery in the world.
This wealth of maturing stock is unique and you
won’t find this library of bottlings from any other
distillery. Independent bottlings have been available
in the past but they aren’t easy to come by, especially
as they’re usually under a different name and won’t
carry Glenfarclas anywhere on the label.
The science bit…
When you swallow food or drink, you also swallow air.
It gets inside you and has to come out… and that’s what
a fart is. It’s also the build-up of gas in your stomach
caused by bacteria.
behind farting
A fart is gas escaping from your body.
Sometimes you can control it, but often you can’t!
The noise depends on how
fast the fa rt leaves your
bottom. The ripping sound is
a vibration
from your bum!
paaarrrrpppppp!
1%
of a fart
contains
sulphide gas.
this is what makes
farts really stink.
WARNING:
Stuff your face with fatty food
and red meat and you might
find yourself brewing up
a real stinker!
Food has
a massive effect on
the smell of your fart.
Some foods just refuse
to digest properly.
Did you know?
Most people fart between
Look Inside a Bone
Bones may be hard, but they aren’t made
of stone! They are alive, like the rest of you.
Bones are made up of several layers.
Yellow bone marrow
is a store of fat inside
your bones.
Yuk! It’s all
soft and squidgy
in here!
The outer layer
of a bone is
very hard.
Let’s go inside a bone to explore!
It looks like a
sponge, but it’s
hard, not soft!
Bones are full of
blood vessels—
tubes that carry
blood in and out.
Red bone marrow has
a very important job.
It makes new blood
cells and sends them
out into your blood to
replace old, dead ones.
Spongy holes
make your bones
strong, without
being too heavy.
Red blood cell
Your Skeleton
All your bones join together to make up your
skeleton. You can’t see your skeleton because
it’s covered by skin and muscle, so take a quick
peek at all those bones below!
The red bone
marrow inside your
bones makes more
than two million
blood cells
every second!
Triassic tourist
Your time machine has taken you back over 200 million
years to a period of time called the Triassic. The very first
dinosaurs date back to this time. But what was the world
like back then?
It’s hot and dry. Tall trees fill
the forest, with ferns battling
for space between them.
Giant insects buzz in the heat. There
are no flowers, grass, or birds.
Dragonfly
But there are dinosaurs! It’s early in
the time of the dinosaurs—there are
not many different types, and they’re
not as big as they will become later.
The dinosaurs share
the land with many
other animals,
including reptiles.
as long as your forearm. See if
you can spot 10 in this scene.
Dinosaur
dinnertime
Some dinosaurs were meat-eaters (carnivores),
while others ate plants (herbivores).
Discover what these
dinosaurs ate, by finding
a route that takes each
one to its dinner.
Procompsognathus ate
insects and small lizards.
A small meat-eating dinosaur
like this couldn’t manage
a Plateosaurus! But it did
eat giant dragonflies.
Start
Triassic ferns were
much like the ferns
we see today.
Finish
Plateosaurus was a large
plant-eater. Its hard beak
easily snapped through
tough plant stems.
Start
Start
Liliensternus wants to eat Plateosaurus.
Many large meat-eating dinosaurs
ate other dinosaurs.
Finish
This giant dragonfly can grow to
25 inches across—that’s as big
as a medium-sized modern bird!
