safranrisotto mit lakritzpulver | zutaten für 4 Personen<br />
Für die safran-reduktion<br />
190 ml Gemüsebrühe<br />
4 g safranpulver<br />
Den Safran in heißer Brühe auflösen. Köcheln lassen, bis die Flüssigkeit<br />
auf ein drittel reduziert ist.<br />
Für das risotto<br />
2 l Geflügelbrühe<br />
320 g carnaroli-Reis<br />
80 g geriebener Parmesan<br />
70 ml trockener weißwein<br />
60 g butter<br />
50 ml safran-Reduktion<br />
15 g weiße Zwiebeln, fein gehackt<br />
12 ml natives Olivenöl extra<br />
5 ml frischer Zitronensaft<br />
4 g dunkles lakritzpulver<br />
1 g safranfäden<br />
eine Prise salz + etwas streuzucker<br />
zubereitung<br />
den Reis in einem großen topf mit dem olivenöl und den Zwiebeln anrösten.<br />
Mit weißwein löschen und einreduzieren. salz und safranfäden hinzugeben<br />
und weiter köcheln lassen. 30 Milliliter der safran-Reduktion hinzufügen und<br />
nach und nach die brühe schöpfkellenweise dazugeben. aufkochen lassen,<br />
vom herd nehmen und die butter, den Parmesan und den Zitronensaft kräftig<br />
einrühren. abschließend etwas brühe einrühren. das Risotto mit einem<br />
Löffel auf flache Teller geben und etwas daran rütteln, so dass es sich gleichmäßig<br />
verteilt. Mit lakritzpulver bestreuen und mit einigen tropfen und Pinselstrichen<br />
der safran-Reduktion garnieren.<br />
tipp<br />
die safran- und lakritzmenge kann je nach gewünschter Geschmacksintensität<br />
variiert werden.<br />
Variationen<br />
Risotto wie oben beschrieben zubereiten. nach dem Kochen zusätzlich frisch<br />
geriebene orangenschale und Petersilie einrühren. anstelle des lakritzpulvers<br />
kann das Risotto auch mit einigen tropfen blutorangen-Reduktion garniert<br />
werden.<br />

for the saffron reduction<br />
190 gr. hen broth<br />
4 gr. saffron powder<br />
Dissolve saffron in hot hen broth. Simmer until reduced to a third<br />
for the risotto<br />
2 lt. hen broth<br />
329 gr. Carnaroli rice<br />
80 gr. grated parmigiano<br />
70 gr. dry white wine<br />
60 gr. butter<br />
50 gr. saffron reduction<br />
15 gr. white onion, minced<br />
12 gr. extra virgin olive oil<br />
5 gr. fresh lemon juice<br />
4 gr. dark liquorice powder<br />
1 gr. saffron threads<br />
pinch of salt + hint of castor sugar<br />
preparation<br />
toast rice in wide pot with extra virgin and onion, add wine and evaporate. Add<br />
salt and saffron threads, continue cooking, adding 30 gr. of saffron reduction<br />
and then vegetable gelatin broth, a ladle at a time. once cooked, remove from<br />
heat and energetically stir in butter, parmigiano and lemon juice. emulsify with<br />
a little vegetable gelatin broth and ladle onto a flat plate, allowing risotto to<br />
spread. sprinkle with liquorice powder and garnish with a few drops and brush<br />
strokes of the saffron reduction<br />
