Foreword<br />

THE CONDITIONS described <strong>in</strong> this bullet<strong>in</strong> were true at the time the manuscript<br />

was completed <strong>in</strong> 1941. S<strong>in</strong>ce that time the war has prevented the importation<br />

<strong>of</strong> foodstuffs from the Philipp<strong>in</strong>es and has caused some changes <strong>in</strong> the employment<br />

<strong>of</strong> <strong>Filip<strong>in</strong>os</strong> <strong>in</strong> <strong>Hawaii</strong>. However, s<strong>in</strong>ce the war has not materially altered<br />

the food habits and the health <strong>of</strong> the <strong>Filip<strong>in</strong>os</strong> <strong>in</strong> <strong>Hawaii</strong>, the manuscript has<br />

not been revised.<br />

The bullet<strong>in</strong> was written primarily for the use <strong>of</strong> teachers, extension agents,<br />

public health nurses, dietitians, and others <strong>in</strong>terested <strong>in</strong> the welfare <strong>of</strong> <strong>Filip<strong>in</strong>os</strong><br />

<strong>in</strong> <strong>Hawaii</strong>. Parts <strong>of</strong> it should also be <strong>of</strong> help and <strong>in</strong>terest to Filip<strong>in</strong>o students<br />

<strong>in</strong> <strong>in</strong>termediate and high schools, who can <strong>in</strong>terpret the f<strong>in</strong>d<strong>in</strong>gs and recommendations<br />

to those parents who cannot read English.<br />

We studied chiefly the foods and dietary habits <strong>of</strong> <strong>Filip<strong>in</strong>os</strong> whose <strong>in</strong>comes<br />

were low, rather than those <strong>of</strong> <strong>Filip<strong>in</strong>os</strong> <strong>in</strong> the educated, well-to-do group.<br />

However, the bullet<strong>in</strong> should also apply to those who are f<strong>in</strong>ancially well situated,<br />

s<strong>in</strong>ce among <strong>Filip<strong>in</strong>os</strong>, as among all other racial groups, undernourished<br />

children and unwise expenditures for food and other wants may be found <strong>in</strong><br />

families with higher <strong>in</strong>comes.<br />

The abbreviation I., T., or V. after Filip<strong>in</strong>o words <strong>in</strong>dicates to which dialect<br />

the word belongs-Ilocano (I.), Tagalog (T.), and Visayan (V.).<br />

Mr. G. A. Labrador, Honolulu, supplied the samples <strong>of</strong> dried anchovies and<br />

bagoong for chemical analysis and vitam<strong>in</strong> assays.<br />
