entier): Deep bright red. Fresh raspberry, red cherry and sweet oak on the nose, with a<br />

spicy accent. Sweet and creamy on the palate, but with nicely integrated acidity giving<br />

the wine good definition and freshness. The flavor of sour cherry carries through onto<br />

the finish, which features fine-grained tannins and very good lift. This will need time in<br />

bottle to gain in nuance.”<br />

Aging 19 months in barrels with 20% new oak. One racking just before the bottling.<br />

Bottling without fining or filtration. All the aging operations are carried out with reference<br />

to the lunar calendar.<br />

ginger, wasabi and cardamom; strong torrefaction notes emerge with air. Silky and pure<br />

on entry, then very intense but not yet especially complex in the middle palate, with<br />

lovely definition to the flavors of red berries and sweet spices. Spreads out impressively<br />

on the very firm finish. With its powerful tannin/acid spine, this wine is likely to require<br />

a good decade of bottle aging.”<br />

firmly tannic back end. This wonderfully precise wine is likely to require extended<br />
