Did You Know?
Only about 10% of the fossil fuel
energy used in the world's food
system is used in production; the
other 90% goes into packaging,
transportation, and marketing.
RECIPE OF THE WEEK
Honey Glazed Squash & Apples
In large sauté pan, melt 4 T Butter. Add 1 C GNFF Squash and 1 C
GNFF Apples, peeled, seeded, and cubed. Cook until tender, about 5-
7 mintues. Add ¼ C OJ, ¼ C GNFF Apricot Preserves, 1 T GNFF
Honey, ½ C local Pecan Halves, toasted. Season with Salt and
Pepper to taste. Stir in 2 T GNFF Milk to finish. Heat through before
serving.
Crop Update: The season has come to an end for watermelons, peaches and corn. The
cucumbers and peppers should be back to full supply. Look for Baby Bok Choy and
Green and Red Leaf Lettuce in about a week. It has not been a good year for Missouri
Apple growers. The hard winds have damaged many trees and some orchards have lost
trees in the recent storms, which will affect apple harvest for years. We are working on
sourcing local Missouri pecans in the shell. Missouri pecans are higher in oil and
sweeter than other pecans.
Good Natured Family Farm Alliance Members
Eickhoff, Goossen, Obbink and Rice Families Dan Rice
IT’S ABOUT MORE THAN MILK.
When Good Natured Family Farms asked Dan Rice to supply them with all natural dairy products, we knew it would be a
perfect partnership. Firth, Nebraska is where this dairy is located about 40 minutes from the Kansas border. The dairy was
created when the Eickhoff, Goossen, Obbink, and Rice family farms joined together as one.
Our mission was to create a new kind of dairy: one that was sustainable, open and transparent; one that served people,
cows, and the planet. That’s why we’re proud to supply our milk to Good Natured Family Farms. When you buy our milk
you join us in this effort to better our environment, economy, and community. Not only do you get great tasting, all natural
diary at a fair price, you get a little taste of the ‘good ‘ol days’ when food was simpler and grown by people you knew and
trusted.
On behalf of Al, Harvey, Bill, Mike, Andy, Cliff, Dave, and myself, we hope you enjoy our milk and dairy foods. Come see
us on the farm – we’re happy to show you exactly where your milk comes from, and why that makes a world of difference!
LLLLLLLLLL
You all know Mike Hoey as the man who arrives each week with a full load of fresh produce and local artisan products for
you to enjoy. He is a vital part to making sure that all of those goods complete their journey to you, which began all the
way back at the farms.
Mike began his packing and delivery work moving furniture in San Diego, California for a number of years before coming
to Kansas City five years ago. Here he sought to become more involved in sustainability and urban planning initiatives,
taking advantage of burgeoning movements in the Kansas City area. Mike’s interest in the area led him to take a
backpacking tour through Europe to learn more about sustainability practices, and he regards that experience as
formative in continuing his work in the states.
Mike has been with Good Natured Family Farm for two summers now as a commercial truck driver, assembling and
delivering CSA bags as well as regularly delivering other orders that GNFF receives. He very much enjoys taking part in
the provision of good food to many in the Kansas City community, and he hopes that his work has a noteworthy effect.
Now you’ll know a little more about Mike when you next see him at this week’s CSA pick-up. As always, he’s looking
forward to serving you there!
BOK CHOY BABY!
Grown in China for 6000 years, bok choy is traditionally associated with Chinese cooking. This vegetable, which is also
known as pak-choi or Chinese cabbage, adds crunch and flavor to stir-fries, salads and other dishes. It's also good for
you--low in fat and calories, but packed with nutrients.
Markets sell both bok choy and baby bok choy--a younger, smaller, slightly more tender version of the plant. Look for
heads of bok choy that have bright, fresh green leaves with no brown spots or wilting. You can keep bok choy in a plastic
bag in your refrigerator for up to one week.
Bok choy is a significant source of vitamins A and C. Eat 1 cup of shredded bok choy and you'll get 60 percent of your
recommended daily value of vitamin A. That same cup of bok choy also provides half your recommended daily value of
vitamin C. Bok choy is also rich in folate.
How to cook boy choy: wash the baby bok choy and cut about ½ to 1 in. of the end off; stir frying in oil in a wok or skillet.
Remove when leaves are wilted and tender, which will take just a few minutes over high heat.
