<strong>RECIPE</strong> <strong>OF</strong> <strong>THE</strong> <strong>WEEK</strong><br />
Honey Glazed Squash & Apples<br />
In large sauté pan, melt 4 T Butter. Add 1 C GNFF Squash and 1 C<br />
GNFF Apples, peeled, seeded, and cubed. Cook until tender, about 5-<br />
7 mintues. Add ¼ C OJ, ¼ C GNFF Apricot Preserves, 1 T GNFF<br />
Honey, ½ C local Pecan Halves, toasted. Season with Salt and<br />
Pepper to taste. Stir in 2 T GNFF Milk to finish. Heat through before<br />
serving.<br />
Crop Update: The season has come to an end for watermelons, peaches and corn. The<br />
cucumbers and peppers should be back to full supply. Look for Baby Bok Choy and<br />
Green and Red Leaf Lettuce in about a week. It has not been a good year for Missouri<br />
Apple growers. The hard winds have damaged many trees and some orchards have lost<br />
trees in the recent storms, which will affect apple harvest for years. We are working on<br />
sourcing local Missouri pecans in the shell. Missouri pecans are higher in oil and<br />
sweeter than other pecans.<br />

created when the Eickhoff, Goossen, Obbink, and Rice family farms joined together as one.<br />

You all know Mike Hoey as the man who arrives each week with a full load of fresh produce and local artisan products for<br />
you to enjoy. He is a vital part to making sure that all of those goods complete their journey to you, which began all the<br />
way back at the farms.<br />
Mike began his packing and delivery work moving furniture in San Diego, California for a number of years before coming<br />
to Kansas City five years ago. Here he sought to become more involved in sustainability and urban planning initiatives,<br />
taking advantage of burgeoning movements in the Kansas City area. Mike’s interest in the area led him to take a<br />
backpacking tour through Europe to learn more about sustainability practices, and he regards that experience as<br />
formative in continuing his work in the states.<br />
Mike has been with <strong>Good</strong> <strong>Natured</strong> <strong>Family</strong> Farm for two summers now as a commercial truck driver, assembling and<br />
delivering CSA bags as well as regularly delivering other orders that GNFF receives. He very much enjoys taking part in<br />
the provision of good food to many in the Kansas City community, and he hopes that his work has a noteworthy effect.<br />
Now you’ll know a little more about Mike when you next see him at this week’s CSA pick-up. As always, he’s looking<br />
forward to serving you there!<br />
BOK CHOY BABY!<br />
Grown in China for 6000 years, bok choy is traditionally associated with Chinese cooking. This vegetable, which is also<br />
known as pak-choi or Chinese cabbage, adds crunch and flavor to stir-fries, salads and other dishes. It's also good for<br />
you--low in fat and calories, but packed with nutrients.<br />
Markets sell both bok choy and baby bok choy--a younger, smaller, slightly more tender version of the plant. Look for<br />
heads of bok choy that have bright, fresh green leaves with no brown spots or wilting. You can keep bok choy in a plastic<br />
bag in your refrigerator for up to one week.<br />
Bok choy is a significant source of vitamins A and C. Eat 1 cup of shredded bok choy and you'll get 60 percent of your<br />
recommended daily value of vitamin A. That same cup of bok choy also provides half your recommended daily value of<br />
vitamin C. Bok choy is also rich in folate.<br />
How to cook boy choy: wash the baby bok choy and cut about ½ to 1 in. of the end off; stir frying in oil in a wok or skillet.<br />
Remove when leaves are wilted and tender, which will take just a few minutes over high heat.<br />

Store squash in a cool, dry area away from extreme temperatures and sunlight. Sweet Dumpling squash can stay fresh<br />
for up to 3 months.<br />
