Oh how I love spring!!<br />

with rebirth, renewal<br />
and regrowth. It is my favorite<br />
time <strong>of</strong> <strong>the</strong> year with all <strong>the</strong> new<br />
flowers starting to bloom and<br />
fresh smells.<br />
It seems <strong>the</strong> spirit <strong>of</strong> spring<br />
has also brought to <strong>Cresta</strong> much<br />
renewal and breath <strong>of</strong> fresh air<br />
into its group <strong>of</strong> hotels. I will<br />
<strong>the</strong>refore take <strong>the</strong> liberty to share<br />
with you <strong>the</strong> exciting renewal<br />
and expansi<strong>on</strong> endavours that<br />

The <strong>Cresta</strong> Mowana Safari Resort & Spa has underg<strong>on</strong>e major<br />
renovati<strong>on</strong> and expansi<strong>on</strong>. This flagship property had added ultramodern<br />
and luxurious spa and wellness center to its line <strong>of</strong> services.<br />
The spa and wellness center overlooking <strong>the</strong> mighty chobe river<br />
<strong>of</strong>fers a range <strong>of</strong> Clarin’s facials, spa rituals and body treatment<br />
which are all based around an organic and holistic philosophy<br />
drawing <strong>on</strong> <strong>the</strong> richness <strong>of</strong> <strong>the</strong> tranquil envir<strong>on</strong>ment <strong>of</strong> Chobe.<br />

undergoing expansi<strong>on</strong> and renovati<strong>on</strong>. Its pre c<strong>on</strong>tract<br />
phase <strong>of</strong> <strong>the</strong> refurbishment and expansi<strong>on</strong> has started. The<br />
post c<strong>on</strong>tract phase, <strong>the</strong> c<strong>on</strong>structi<strong>on</strong>, is expected to start in<br />
<strong>the</strong> first half <strong>of</strong> 2013.<br />
Ano<strong>the</strong>r grand re-launch has also taken place at <strong>Cresta</strong>’s recently<br />
acquired property in Zambia. After <strong>the</strong> es<strong>the</strong>tic launch <strong>of</strong> <strong>the</strong> <strong>Cresta</strong><br />
Golfview in June, <strong>the</strong> <strong>Cresta</strong> brand c<strong>on</strong>tinues to make significant<br />
strides in Zambia and is well received.<br />

Following an early morning game drive, relax and enjoy<br />
an array <strong>of</strong> <strong>of</strong>ferings at Mowana Safari Resort & Spa,<br />
which is now open. Friday 31 August 2012 marked <strong>the</strong><br />
<strong>of</strong>ficial opening <strong>of</strong> <strong>the</strong> much anticipated <strong>Cresta</strong> Mowana Health<br />
and <strong>Beauty</strong> Spa. It was a notable experience as <strong>the</strong> Minister <strong>of</strong><br />
Envir<strong>on</strong>ment, Wildlife and Tourism, H<strong>on</strong>ourable Onkokame Kitso<br />
Mokaila, <strong>of</strong>ficially opened <strong>the</strong> new venture and presented a<br />
momentous speech to mark <strong>the</strong> occasi<strong>on</strong>.<br />
The Minister began by saying that: “It is moments such as <strong>the</strong>se<br />
when, as <strong>the</strong> Managing Director <strong>of</strong> <strong>Cresta</strong> Marakanelo Limited, I<br />
do not shy from blowing my own trumpet.” Mokaila c<strong>on</strong>tinued to<br />
say that <strong>the</strong> c<strong>on</strong>structi<strong>on</strong> <strong>on</strong> <strong>the</strong> Mowana Spa has been <strong>the</strong> most<br />
fulfilling undertaking and highlight <strong>of</strong> his career thus far.<br />
The opening <strong>of</strong> <strong>the</strong> Mowana Spa is tremendously<br />
significant for <strong>the</strong> enhancement <strong>of</strong> <strong>the</strong> <strong>Cresta</strong> Brand, as this<br />

<strong>Cresta</strong> Marakanelo participated in <strong>the</strong> 20km Orapa,<br />
Letlhakane and Damtshaa Mines General Managers<br />
sp<strong>on</strong>sored walk, held <strong>on</strong> 11th August 2012. Supporting<br />
Debswana, which is <strong>on</strong>e <strong>of</strong> our key accounts, will certainly take<br />
<strong>the</strong> relati<strong>on</strong>ship to greater heights, as it does not <strong>on</strong>ly cement<br />
<strong>the</strong> relati<strong>on</strong>ship between <strong>the</strong> two organizati<strong>on</strong>s, but also people<br />
<strong>of</strong> <strong>the</strong> Boteti Sub-District, which are <strong>the</strong> beneficiary <strong>the</strong> social<br />
investment. Over <strong>the</strong> years, <strong>the</strong> walk has generated an amount<br />
<strong>of</strong> BWP 500,000 and <strong>the</strong> involvement <strong>of</strong> <strong>Cresta</strong> Marakanelo this<br />
year is envisaged to produce quite a high figure.<br />
Government cannot succeed al<strong>on</strong>e in programmes <strong>of</strong> poverty<br />
eradicati<strong>on</strong> and hence we at <strong>Cresta</strong> Marakanelo saw it fit to<br />

Debswana Exco and management but also by Her Excellency<br />

Traveller Africa Expo<br />
The Business Traveller Africa EXPO and C<strong>on</strong>ference took<br />
place in Lagos, Nigeria and Johannesburg, South Africa<br />
<strong>on</strong> 6 and 7 September 2012. Hosted by <strong>the</strong> leading<br />
business travel medium, Business Traveller Africa, <strong>Cresta</strong> <strong>Hotels</strong><br />
attended this renowned EXPO as <strong>the</strong>y c<strong>on</strong>tinue to gain valuable<br />
informati<strong>on</strong> and insight about Africa’s business traveller.<br />
Business Traveller Africa EXPO and C<strong>on</strong>ference is a corporate<br />
travel indaba for <strong>the</strong> African business travel market. The goal <strong>of</strong> <strong>the</strong><br />
c<strong>on</strong>ference is to create an opportunity for travel buyers, corporate<br />
travel executives, hospitality groups, aviati<strong>on</strong> companies and<br />
general business travel service providers to all come toge<strong>the</strong>r.<br />
These corporate travel indabas for <strong>the</strong> African business travel<br />
market create an envir<strong>on</strong>ment in which hospitality groups and<br />
o<strong>the</strong>r travel service providers can meet and explore <strong>the</strong> potential<br />
that <strong>the</strong> African c<strong>on</strong>tinent has to <strong>of</strong>fer.<br />

<strong>Cresta</strong> Golfview<br />
in Lusaka Re-opened<br />
<strong>Cresta</strong> Golfview has been re-opened after <strong>the</strong> much<br />
anticipated refurbishment <strong>of</strong> <strong>the</strong> popular hotel. The<br />
occasi<strong>on</strong> was marked by an <strong>of</strong>ficial re-launch cerem<strong>on</strong>y<br />
held <strong>on</strong> 8 June 2012, where speeches were made by both<br />
<strong>Botswana</strong>’s Minister <strong>of</strong> Trade and Industry, Ms Dorcas Makgato<br />
Malesu, and Zambia‘s Deputy Minister <strong>of</strong> Commerce, Trade and<br />
Industry, Keith Mukata.<br />
In Malesu’s speech, she menti<strong>on</strong>ed that over 2.5 milli<strong>on</strong> USD was<br />
invested in <strong>Cresta</strong> Golfview and that <strong>Cresta</strong> Marakanelo’s giant leap<br />
to expand its footprints out <strong>of</strong> <strong>the</strong> borders <strong>of</strong> <strong>Botswana</strong> is testim<strong>on</strong>y<br />
to <strong>the</strong> company’s self-c<strong>on</strong>fidence and expertise in running hotels. For<br />
his part, Minister Mukata was very optimistic about <strong>the</strong> re-opening <strong>of</strong><br />
<strong>Cresta</strong> Golfview and hopes that <strong>the</strong> coming <strong>of</strong> <strong>Cresta</strong> Marakanelo<br />
marks <strong>the</strong> beginning <strong>of</strong> more regi<strong>on</strong>al investments in Zambia.<br />
This luxurious, and now completely renovated, <strong>Cresta</strong> Hotel is<br />

(BOCCIM) Nor<strong>the</strong>rn Trade Fair, which was held in Francistown<br />
from 24 - 27 May 2012. The trade fair is aimed at creating a<br />
platform for businesses to interact, network and create awareness<br />
about <strong>the</strong>ir products and services. <strong>Cresta</strong>’s sales manager, Neo<br />
Nkele, says: “For <strong>Cresta</strong> <strong>Hotels</strong> <strong>the</strong> fair is a window <strong>of</strong> opportunity<br />
and growth for <strong>the</strong> current investor and upcoming entrepreneurs.<br />

This year marked Boccim Nor<strong>the</strong>rn Trade Fair’s eighteenth year<br />
with <strong>the</strong> <strong>the</strong>me; ‘Seizing opportunities <strong>of</strong> ec<strong>on</strong>omic diversificati<strong>on</strong><br />
amidst a recessi<strong>on</strong>’. Touching <strong>on</strong> <strong>the</strong> <strong>the</strong>me <strong>of</strong> <strong>the</strong> trade fair, <strong>the</strong><br />
Director <strong>of</strong> Business Services at BOCCIM, Zoe Isaacs, said that<br />
<strong>the</strong> <strong>the</strong>me serves to remind <strong>the</strong> private sector to utilise opportunities<br />
availed by government such as <strong>the</strong> Ec<strong>on</strong>omic Diversificati<strong>on</strong> Drive<br />
(EDD), despite <strong>the</strong> effects <strong>of</strong> <strong>the</strong> global ec<strong>on</strong>omic crisis.: “This<br />
called for ‘out <strong>of</strong> <strong>the</strong> box’ thinking and strategising, which saw<br />
<strong>the</strong> <strong>Cresta</strong> Marakanelo Group stall scooping first prize under <strong>the</strong><br />
<strong>Hotels</strong> / Hospitality category, an achievement <strong>of</strong> which we are<br />
very proud,” Nkele c<strong>on</strong>cludes.<br />

was a huge success. A total <strong>of</strong> 185 guests attended <strong>the</strong> event and<br />
generously supported <strong>the</strong> charity for <strong>the</strong> day. An amazing R11 000<br />
was raised through raffle ticket sales and a fur<strong>the</strong>r R3 000 through<br />
pledges, bringing <strong>the</strong> total amount d<strong>on</strong>ated to R14 000.<br />
Overall, it was an event well supported as Creati<strong>on</strong> Wines<br />
generously sp<strong>on</strong>sored all <strong>the</strong> wine and Immanuel Castes did a<br />
fantastic job as <strong>the</strong> MC and entertainer for <strong>the</strong> day.<br />

Magogodi Ver<strong>on</strong>ica Dabutha is <strong>the</strong> guardian angel <strong>of</strong> many <strong>of</strong> <strong>Botswana</strong>’s disadvantaged and vulnerable children.<br />

Magogodi Ver<strong>on</strong>ica Dabutha regards every child as her<br />
own. Her interest in extending a helping hand to <strong>the</strong><br />
disadvantaged dates more than 30 years back to her<br />
sec<strong>on</strong>dary school years, when she joined a charity organisati<strong>on</strong><br />
that built houses for people with disabilities. Most <strong>the</strong> work was<br />
d<strong>on</strong>e in <strong>the</strong> poor neighbourhood <strong>of</strong> Naledi, in <strong>the</strong> outskirts <strong>of</strong><br />
<strong>Botswana</strong>’s capital Gabor<strong>on</strong>e, and she was touched by <strong>the</strong><br />
plight <strong>of</strong> people that society appeared to have forgotten about.<br />
Realising that this was her calling, Dabutha enrolled for a<br />
teaching course in order to teach children with disabilities. After<br />
working in a primary school in Thamaga, where she taught<br />
children with severe learning difficulties for six years, she was<br />
awarded a government scholarship to study special educati<strong>on</strong><br />
in Manchester, UK.<br />
When ano<strong>the</strong>r study opportunity came by, this time in<br />
Birmingham, Dabutha chose to specialise in child psychology<br />
as she had come across many cases <strong>of</strong> traumatised children due<br />
to different life experiences in Lobatse.<br />
Coming back home <strong>on</strong> completi<strong>on</strong> <strong>of</strong> her studies, Dabutha<br />
was redeployed to <strong>the</strong> Department <strong>of</strong> Social Services, where<br />
she headed <strong>the</strong> Child Welfare Divisi<strong>on</strong>. She found herself being<br />
assigned o<strong>the</strong>r resp<strong>on</strong>sibilities for <strong>the</strong> elderly and destitute.<br />
In 2009, she took a sabbatical from <strong>the</strong> public service and,<br />
through UNICEF, came to work at Masiela Trust Fund as a Child<br />
Welfare Specialist for what was initially thought would be two<br />
years. However, <strong>the</strong> positi<strong>on</strong> <strong>of</strong> Executive Director became<br />
vacant, and Dabutha was appointed in February 2011.<br />
The organisati<strong>on</strong> was established to resp<strong>on</strong>d to <strong>the</strong> plight<br />
<strong>of</strong> children orphaned by <strong>the</strong> HIV/AIDS pandemic. However,<br />
as <strong>the</strong> HIV/AIDS toll has eased somewhat due to various<br />
Government initiatives, and <strong>the</strong> death rate has also dropped<br />
drastically, <strong>the</strong> number <strong>of</strong> orphans not increasing at <strong>the</strong><br />
same rate it previously did. This is why Masiela Trust<br />
Fund has broadened its scope bey<strong>on</strong>d orphanage to<br />
include vulnerability.<br />
“We now serve orphaned and vulnerable children,”<br />
Dabutha explains. “Vulnerability could be due to various<br />
factors such as disability, poverty and abuse. In fact,<br />
children living in poverty or in child-headed households<br />
can be more vulnerable than orphans.”<br />
The most comm<strong>on</strong> problem am<strong>on</strong>g child-headed<br />
families is that <strong>the</strong> child who is <strong>of</strong>ten called up<strong>on</strong> to<br />
shoulder <strong>the</strong> task <strong>of</strong> raising <strong>the</strong> younger siblings assumes<br />
enormous resp<strong>on</strong>sibility before enjoying <strong>the</strong>ir childhood<br />
and adolescence. They are inexperienced and not ready<br />
for parenting.<br />
She states that <strong>the</strong>re are vulnerable children throughout<br />
<strong>the</strong> country, but <strong>the</strong> situati<strong>on</strong> is more severe in remote areas<br />
due to lack <strong>of</strong> facilities and resources, which are c<strong>on</strong>centrated<br />
around urban centres. Her experience is that even organisati<strong>on</strong>s<br />
that come forward to pledge assistance <strong>of</strong>ten prefer to direct<br />
<strong>the</strong>ir interventi<strong>on</strong>s to places mostly around Gabor<strong>on</strong>e. This<br />
leaves Masiela Trust Fund, which currently cares for over 15<br />
000 children countrywide, in a dicey situati<strong>on</strong>. D<strong>on</strong>ati<strong>on</strong>s from<br />
private companies have also trickled down due to <strong>the</strong> recent<br />
ec<strong>on</strong>omic slump.<br />
A major lifeline for Masiela Trust Fund is <strong>the</strong> regular d<strong>on</strong>ati<strong>on</strong><br />
from <strong>Cresta</strong> <strong>Hotels</strong>. The company has a unique arrangement<br />
through which it raises m<strong>on</strong>ey for <strong>the</strong> Trust Fund. Since <strong>the</strong><br />
incepti<strong>on</strong> <strong>of</strong> Masiela Trust Fund, <strong>Cresta</strong> has had a standing<br />
policy that for every bed night spent, P1. 00 (One Pula) is<br />
d<strong>on</strong>ated to <strong>the</strong> trust. The d<strong>on</strong>ati<strong>on</strong>s are made quarterly and,<br />
depending <strong>on</strong> bed occupancy, an average quarterly d<strong>on</strong>ati<strong>on</strong><br />

The Head <strong>of</strong> Marketing and Sales at <strong>Cresta</strong> Marakanelo, <strong>the</strong><br />

Chivese, explains that while <strong>the</strong> company’s commitment to<br />
Masiela Trust Fund is in line with <strong>Botswana</strong>’s l<strong>on</strong>g-term visi<strong>on</strong><br />

Shupai Marware<br />
Shupai Marware re-joined <strong>Cresta</strong> <strong>Hotels</strong> in June 2012 as<br />
Group Sales Executive based in <strong>the</strong> Johannesburg <strong>of</strong>fice.<br />
He joins <strong>the</strong> <strong>Cresta</strong> Sales and Marketing Teams to drive<br />
revenues into <strong>Botswana</strong>, Zimbabwe and Zambia <strong>Hotels</strong>.<br />
Born <strong>on</strong> 2 July 1976, Shupai has 11 years <strong>of</strong> managerial<br />
experience in Sales and Marketing , new business projects, business<br />
development, hotel operati<strong>on</strong>s and business strategy. He holds a<br />
Masters In Business Leadership (Unisa 2011), Degree in Marketing<br />
Communicati<strong>on</strong>s (IMM RSA 2007), DipFM Finance Management(<br />
ACCA-UK 2005), and H<strong>on</strong>s Degree In Tourism and Hospitality<br />
Management (University Of Zimbabwe 1999). He brings back to<br />
<strong>the</strong> <strong>Cresta</strong> family a wealth <strong>of</strong> commercial experience with a local<br />

Shupai’s career in <strong>the</strong> Hospitality industry started in 1998 as an<br />

majestic countries. It has also maintained <strong>on</strong>e <strong>of</strong> <strong>the</strong> world’s<br />
highest ec<strong>on</strong>omic growth rates, making its ec<strong>on</strong>omy<br />
<strong>on</strong>e <strong>of</strong> <strong>the</strong> most robust <strong>on</strong> <strong>the</strong> African c<strong>on</strong>tinent. Ec<strong>on</strong>omically<br />
dominated by diam<strong>on</strong>d mining and filled with abundant wildlife,<br />
<strong>Botswana</strong> is a unique country that is equally as intriguing as it is<br />
impressive. Wildlife parks comprise nearly <strong>on</strong>e-fifth <strong>of</strong> <strong>the</strong> country,<br />

hundred meters l<strong>on</strong>g. A mid-sized country <strong>of</strong> just over two milli<strong>on</strong><br />
people, <strong>Botswana</strong> is <strong>on</strong>e <strong>of</strong> <strong>the</strong> most sparsely populated countries in<br />
<strong>the</strong> world. <strong>Botswana</strong> was also <strong>on</strong>e <strong>of</strong> <strong>the</strong> poorest countries in Africa<br />
when it first gained independence from <strong>the</strong> United Kingdom in 1966<br />
but has since transformed itself to become <strong>on</strong>e <strong>of</strong> <strong>the</strong> fastest-growing<br />
emerging ec<strong>on</strong>omies in <strong>the</strong> world.<br />
<strong>Botswana</strong>’s ec<strong>on</strong>omy<br />
Since independence, <strong>Botswana</strong> has had <strong>on</strong>e <strong>of</strong> <strong>the</strong> fastest<br />
growth rates in per capita income in <strong>the</strong> world. Through fiscal<br />
discipline and sound management, <strong>Botswana</strong> has transformed<br />
itself from <strong>on</strong>e <strong>of</strong> <strong>the</strong> poorest countries in <strong>the</strong> world to that <strong>of</strong> a<br />
middle-income country. By <strong>on</strong>e estimate, it has <strong>the</strong> fourth highest<br />
gross nati<strong>on</strong>al income and purchasing power equivalence in<br />
Africa, giving it a standard <strong>of</strong> living around that <strong>of</strong> Mexico<br />
and Turkey.<br />
According to <strong>the</strong> Internati<strong>on</strong>al M<strong>on</strong>etary Fund, ec<strong>on</strong>omic<br />
growth averaged over 9% per year from 1966 to 1999. The<br />
government managed to maintain a sound financial policy, despite<br />
c<strong>on</strong>secutive budget deficits in 2002 and 2003, and a negligible<br />
level <strong>of</strong> foreign debt. It earned <strong>the</strong> highest sovereign credit<br />
rating in Africa and has stockpiled foreign exchange reserves<br />
amounting to almost two and a half years <strong>of</strong> current imports. In
additi<strong>on</strong>, <strong>Botswana</strong> also boasts a high level <strong>of</strong> ec<strong>on</strong>omic freedom<br />
compared to that <strong>of</strong> o<strong>the</strong>r African countries.<br />
Two major investment services rank <strong>Botswana</strong> as <strong>the</strong> best<br />
credit risk in Africa. Diam<strong>on</strong>d mining has fuelled much <strong>of</strong> <strong>the</strong><br />
expansi<strong>on</strong> and currently accounts for more than <strong>on</strong>e-third <strong>of</strong> GDP,<br />
70%-80% <strong>of</strong> export earnings, and about half <strong>of</strong> <strong>the</strong> government’s<br />
revenues. As a result, several internati<strong>on</strong>al mining corporati<strong>on</strong>s<br />
have established regi<strong>on</strong>al headquarters in <strong>Botswana</strong> in search<br />
for diam<strong>on</strong>ds, gold, uranium, copper, and even oil. Tourism,<br />
financial services, subsistence farming, and cattle raising are<br />
o<strong>the</strong>r key sectors in <strong>Botswana</strong>. Tourism however is fast becoming<br />
<strong>the</strong> country’s ec<strong>on</strong>omic focus as <strong>the</strong> government acknowledges<br />
<strong>the</strong> tremendous potential <strong>of</strong> this ever-growing sector.<br />
<strong>Botswana</strong> tourism revamp<br />
Due to numerous changes in <strong>the</strong> travel and tourism industry over<br />
<strong>the</strong> years, <strong>the</strong> government <strong>of</strong> <strong>Botswana</strong> has recently revamped its<br />
tourism law in an effort to formalise systems and validate those<br />
within <strong>the</strong> industry. A major transformati<strong>on</strong> in 2010 saw <strong>the</strong> name<br />
<strong>of</strong> <strong>the</strong> country’s <strong>of</strong>ficial tourism body change from <strong>the</strong> <strong>Botswana</strong><br />

Situated slightly fur<strong>the</strong>r east <strong>of</strong> old Palapye are <strong>the</strong> impressive<br />
Tswap<strong>on</strong>g Hills that rise almost four hundred metres above <strong>the</strong><br />
surrounding plains. These <strong>on</strong>e-billi<strong>on</strong> year old titans extend<br />
sixty kilometres west <strong>of</strong> <strong>the</strong> village <strong>of</strong> Moremi and measure a<br />
full twenty kilometres in breadth. Comprised <strong>of</strong> sandst<strong>on</strong>e,<br />

archaeological and historical sites. The hills are home to mammals<br />
such as rock dassies, babo<strong>on</strong>s, brown hyena and leopard. Over<br />
350 species <strong>of</strong> birds have been recorded in <strong>the</strong> area, including<br />
<strong>the</strong> endangered Cape Vulture, <strong>the</strong> Black Eagle, <strong>the</strong> Black Stork<br />
and <strong>the</strong> beautiful Meyer’s Parrot, as well as over a hundred<br />
butterfly species. One <strong>of</strong> <strong>the</strong> biggest draws <strong>of</strong> <strong>the</strong> Tswap<strong>on</strong>g<br />
Hills is <strong>the</strong> lush, wet vegetati<strong>on</strong> and series <strong>of</strong> waterfalls, which<br />

The Chief Operating Officer <strong>of</strong> <strong>Cresta</strong> <strong>Hotels</strong>, Mr. Glenn<br />
Stutchbury, believes str<strong>on</strong>gly in <strong>the</strong> importance <strong>of</strong> a fresh<br />
and natural herb garden for all <strong>Cresta</strong> hotels. <strong>Cresta</strong> is<br />
a big prop<strong>on</strong>ent <strong>of</strong> growing organically and encourages green<br />
policies whenever possible.<br />
One encouraging example is <strong>the</strong> development <strong>of</strong> <strong>the</strong> organic<br />
herb garden at <strong>Cresta</strong> Mowana Safari Resort & Spa located <strong>on</strong> <strong>the</strong><br />
banks <strong>of</strong> <strong>the</strong> Chobe River in Kasane, <strong>Botswana</strong>.<br />
Dominic Mazarura is <strong>the</strong> Executive Chef at Mowana who<br />
started his career in 1985 in <strong>the</strong> hotel industry. He joined <strong>Cresta</strong><br />
Marakanelo in 1993 as an executive sous chef at Mowana. After<br />
two years, he was promoted to Executive Chef at <strong>Cresta</strong> Thapama<br />

cooking. When he was posted back to Mowana in 2001, he<br />

him to team up with <strong>the</strong> general manager, John Gray, as well<br />
as his kitchen staff, to clear st<strong>on</strong>es from a plot and cultivate <strong>the</strong><br />
soil with nutrients and grow a successful herb garden. He now<br />
boasts twenty-<strong>on</strong>e varieties <strong>of</strong> fresh herbs that include <strong>the</strong> following:<br />

INGREDIENTS<br />
• 1 block firm or extra firm t<strong>of</strong>u<br />
• 1½ tbsp + ½ tsp olive oil, separated<br />
• 1 tbsp soy sauce<br />
• 1 tsp liquid smoke<br />
• ½ medium yellow <strong>on</strong>i<strong>on</strong>, thinly sliced<br />
• Bread for 4-6 sandwiches (any kind will do)<br />
• Vegenaise<br />
• Hamburger dill chip pickles (approx. 2-3 per<br />
sandwich)<br />
• Daiya mozzarella style cheese (approx. 1/3 cup)<br />
• Black pepper<br />
DIRECTIONS<br />
1. Press t<strong>of</strong>u to remove all excess water. We<br />
recommend pressing it for at least an hour<br />
(I typically place t<strong>of</strong>u in our T<strong>of</strong>uXpress in <strong>the</strong><br />
morning). Make sure it is well-baked.<br />
2. Heat oven to 400ºC. Slice t<strong>of</strong>u into thin slices,<br />
less than 7mm thick (<strong>the</strong> number <strong>of</strong> slices you<br />
get will depend <strong>on</strong> how thick you slice <strong>the</strong><br />
t<strong>of</strong>u). In a glass baking dish, add 1½ tbsp olive<br />
oil, soy sauce and liquid smoke, and mix. Dip<br />
each slice <strong>of</strong> t<strong>of</strong>u into <strong>the</strong> mixture, coating well,<br />
and <strong>the</strong>n flip to coat <strong>the</strong> o<strong>the</strong>r side. Arrange<br />
all pieces in <strong>the</strong> pan so that <strong>the</strong>y are not<br />
overlapping. Place in oven and bake for 25-<br />
30 minutes, flipping half way through. The<br />
t<strong>of</strong>u is ready when <strong>the</strong> edges have started<br />
to brown and firm up, but <strong>the</strong> middle is still<br />
tender. Once d<strong>on</strong>e, remove from oven and<br />
<strong>on</strong>ce cool enough to handle, soak up any<br />
excess oil with a small cloth.<br />

3. Meanwhile, heat remaining olive oil in a pan<br />
over medium-high heat. Add <strong>on</strong>i<strong>on</strong> slices and<br />
cook, stirring occasi<strong>on</strong>ally to ensure <strong>the</strong> <strong>on</strong>i<strong>on</strong>s<br />
d<strong>on</strong>’t stick or burn, until <strong>the</strong>y have begun to<br />
caramelize and are browned all <strong>the</strong> way through.<br />
If <strong>the</strong> slices are thin and <strong>the</strong> heat is high enough,<br />
this can be d<strong>on</strong>e in less than 10 minutes.<br />
4. Prepare <strong>the</strong> sandwiches by applying Vegenaise<br />
to <strong>the</strong> inside pieces <strong>of</strong> <strong>the</strong> bread, adding three to<br />
four slices <strong>of</strong> t<strong>of</strong>u, <strong>on</strong>i<strong>on</strong>s, pickles, a bit <strong>of</strong> Daiya<br />
cheese and sprinkle it with a generous amount<br />
<strong>of</strong> black pepper. Bake, open-faced, in preheated<br />
oven for two to three minutes, until bread is<br />
slightly toasted and <strong>the</strong> cheese has melted. Close<br />
<strong>the</strong> sandwich and enjoy.<br />
INGREDIENTS<br />
• 1 lem<strong>on</strong>s, juiced<br />
• 2 cloves garlic, peeled and crushed<br />
• 1 sprig fresh parsley, chopped<br />
• salt and pepper to taste<br />
• 360 g squid, cleaned and sliced into rounds<br />
• 4 g pitted black olives<br />
• 2 stalks celery, chopped<br />
DIRECTIONS<br />
1. In a medium bowl, mix lem<strong>on</strong> juice, garlic, and parsley.<br />
Seas<strong>on</strong> with salt and pepper.<br />
2. Bring a medium pot <strong>of</strong> water to a boil. Stir in squid, and cook<br />
about 3 minutes, or until tender; drain.<br />
3. Toss squid, olives, and celery with <strong>the</strong> lem<strong>on</strong> juice mixture.<br />

• 1 clove garlic, crushed<br />
• 90 ml olive oil<br />
• 0.9 g dried basil<br />
• 6 g salt<br />
• 2 g ground black pepper<br />
• 15 ml fresh lem<strong>on</strong> juice<br />
• 4 g chopped fresh parsley<br />
• 400g Salm<strong>on</strong> fillets<br />
DIRECTIONS<br />
1. In a stainless steel or glass bowl, combine garlic, olive oil,<br />
basil, salt, pepper, lem<strong>on</strong> juice, and parsley.<br />
2. Place <strong>the</strong> salm<strong>on</strong> filets in a shallow glass dish or a reseal<br />
able plastic bag, and pour <strong>the</strong> marinade over <strong>the</strong> fish.<br />
Cover or seal and place in <strong>the</strong> refrigerator for 1 hour,<br />
turning occasi<strong>on</strong>ally.<br />
3. Preheat <strong>the</strong> grill for high heat and lightly oil grate. Set grate<br />
102 mm from <strong>the</strong> heat.<br />
4. Remove salm<strong>on</strong> filets from marinade and drain <strong>of</strong>f <strong>the</strong><br />
excess. Grill filets 5 minutes per side or until fish is d<strong>on</strong>e<br />

• 517g yellow cake mix<br />
• 95.2 g instant lem<strong>on</strong> pudding mix<br />
• 415 ml water<br />
• 3 egg whites<br />
• 180 ml low-fat milk<br />
• 3 ml lem<strong>on</strong> extract<br />
• 10g package instant sugar-free vanilla<br />
pudding mix<br />
• 224 g frozen light whipped topping, thawed<br />
DIRECTIONS<br />
1. Preheat oven to 175° C. Spray a 254mm x<br />
381mm pan with n<strong>on</strong>-stick cooking spray.<br />
2. In a large bowl, mix toge<strong>the</strong>r cake mix and<br />
pudding mix. Pour in water and egg whites.<br />
Beat <strong>on</strong> low speed for 1 minute. Increase speed<br />
to high and beat for 4 minutes. Pour batter into<br />
prepared 254mm x 381mm pan.<br />
3. Bake in <strong>the</strong> preheated oven for 25 to 30<br />
minutes, or until a toothpick inserted into <strong>the</strong><br />

spokesmen claim extends <strong>the</strong> SUV fr<strong>on</strong>tier.<br />

Mercedes-Benz’s new M-Class is a high-tech beast – some<br />
<strong>of</strong> its best virtues epitomised, perhaps, in <strong>the</strong> screening at<br />
<strong>the</strong> vehicle’s launch in South Africa <strong>of</strong> a promoti<strong>on</strong>al video<br />
<strong>on</strong>to a sheet <strong>of</strong> water to extol <strong>the</strong> qualities <strong>of</strong> <strong>the</strong> brand.<br />
While <strong>on</strong>e <strong>of</strong> <strong>the</strong> by-products <strong>of</strong> <strong>the</strong> unique display helps to<br />
dem<strong>on</strong>strate how images can be easily and successfully extended<br />
into ano<strong>the</strong>r dimensi<strong>on</strong>, <strong>the</strong> screening c<strong>on</strong>cept tends to underline<br />
Mercedes-Benz’s marketing c<strong>on</strong>tenti<strong>on</strong> that similar characteristics can<br />
be applied to <strong>the</strong> new ML.<br />
According to Selvin Govender, Divisi<strong>on</strong>al Manager <strong>of</strong> Marketing<br />
for Passenger Cars, examples <strong>of</strong> <strong>the</strong> vehicle’s extensive prowess are<br />
found in factors like <strong>on</strong>-road ride refinement that isn’t compromised<br />
by genuine bundu-bashing ability; in high-performance drivetrains<br />
that are able to return low fuel c<strong>on</strong>sumpti<strong>on</strong> and CO2 emissi<strong>on</strong><br />
figures; in luxuriously cosseting comfort that doesn’t take a back<br />
seat to load-lugging capability; in higher levels <strong>of</strong> safety that result<br />
in lower levels <strong>of</strong> stress... In that way, he says, Mercedes-Benz is<br />
extending <strong>the</strong> SUV fr<strong>on</strong>tier.<br />
While <strong>the</strong>re are styling differences in <strong>the</strong> exterior look <strong>of</strong> <strong>the</strong><br />
new model compared with <strong>the</strong> old, <strong>the</strong> basic outline remains<br />
similar. L<strong>on</strong>ger, wider and lower than <strong>the</strong> predecessor, <strong>the</strong><br />
M-Class retains <strong>the</strong> trademark forward slant <strong>of</strong> its distinctive<br />
C-pillar, while <strong>the</strong> D-pillar is, <strong>on</strong>ce more, hidden behind <strong>the</strong><br />
smoked rear glass.<br />
The nose has been reworked to include restyled grille, bumper,<br />
headlights and a higher b<strong>on</strong>net, while <strong>the</strong> flanks are characterised
y rearward sweeping lines scalloped to add muscle. The high<br />
waistline remains, though <strong>the</strong> vehicle’s ro<strong>of</strong> is pitched slightly lower,<br />
aiding aerodynamics. A pert tail secti<strong>on</strong> includes redesigned tail<br />
lamps and a revised bumper that incorporates.<br />
As <strong>on</strong>e would expect, <strong>the</strong> interior <strong>of</strong> <strong>the</strong> M-Class has been<br />
designed to make passengers feel ultra comfortable. There’s more<br />
space in <strong>the</strong> interior – with plenty <strong>of</strong> leg-, head- and elbow-room in<br />
<strong>the</strong> rear – while load capability exceeds 2 000 litres when <strong>the</strong> back<br />
seats are folded flat.<br />
One <strong>of</strong> <strong>the</strong> significant upgrades to <strong>the</strong> line-up is <strong>the</strong> introducti<strong>on</strong> <strong>of</strong><br />
a four-cylinder, diesel powered, ML250 BlueTEC 4MATIC – which<br />
Mercedes-Benz spokesmen say uses just 6,5 litres <strong>of</strong> fuel to cover<br />
100km, allowing for a range <strong>of</strong> up to 1 500km, while emitting a<br />
commendably low 165g/km <strong>of</strong> CO2.<br />
The engine produces 150kW and 500Nm and, <strong>on</strong> <strong>the</strong> road,<br />
resp<strong>on</strong>ds well to most demands from <strong>the</strong> throttle. For overtaking<br />
manoeuvres at highway speed, however, <strong>the</strong> seven-speed,<br />
7G-TRONIC auto gearbox to which <strong>the</strong> unit is mated may need to<br />
be encouraged to drop a couple <strong>of</strong> cogs to increase accelerati<strong>on</strong><br />
– <strong>the</strong> prompts made easy by <strong>the</strong> inclusi<strong>on</strong> <strong>of</strong> paddle shifts <strong>on</strong> <strong>the</strong><br />
steering wheel.<br />

Not surprisingly, <strong>the</strong> derivative is billed as <strong>the</strong> ec<strong>on</strong>omy star in <strong>the</strong><br />
line-up, though c<strong>on</strong>sumpti<strong>on</strong> claims for <strong>the</strong> more familiar, six-cylinder<br />
ML350 – now also wearing BlueTEC and 4MATIC badges – are<br />
not far behind: 7,4 litres/100km thanks to a significantly upgraded<br />
versi<strong>on</strong> <strong>of</strong> Mercedes-Benz’s 3,0-litre, turbocharged, V6 diesel engine.<br />
The unit, which produces 190kW and 620Nm, is smoothly<br />
resp<strong>on</strong>sive and, thanks to its additi<strong>on</strong>al power and torque, <strong>of</strong>fers<br />
more immediacy in meeting demands from <strong>the</strong> throttle – making<br />
overtaking at speed a breeze.<br />
Petrol-engined models include <strong>the</strong> V6 driven ML350 4MATIC,<br />
which produces 225kW and 370Nm (and which returns a<br />
claimed 8,8-litres/100km), <strong>the</strong> ML500 with a direct injecti<strong>on</strong> V8<br />
that produces 300kW, 600Nm and 287g/km <strong>of</strong> CO2, and <strong>the</strong><br />
range-topping ML63 AMG – a s<strong>on</strong>orous-sounding derivative that<br />
was available for inspecti<strong>on</strong> at <strong>the</strong> launch but not for driving.<br />
Powered by a twin-turbocharged, hand assembled, 5,5-litre V8 rated<br />
at 386kW and 700Nm – with CO2 emissi<strong>on</strong>s said to be 276g/km –<br />
<strong>the</strong> flagship looks far more muscular than its siblings do thanks to special,<br />
21-inch wheels, a lower <strong>on</strong>-road stance and AMG body kit.<br />
Overall, <strong>the</strong> new M-Class <strong>of</strong>fers a good dose <strong>of</strong> practicality<br />
coupled with refinement. State-<strong>of</strong>-<strong>the</strong>-art chassis technology –<br />
which includes adaptive damping and active anti-roll bars – has<br />
helped to enhance <strong>on</strong>-road and <strong>of</strong>f-road dynamic performance,<br />
<strong>the</strong> latter dem<strong>on</strong>strated <strong>on</strong> a game trail during <strong>the</strong> launch in<br />
which traversing high middle-mannetjies, ditches and thick sand<br />
was made easy thanks to height-adjustable air suspensi<strong>on</strong> and<br />
lockable inter-axle differentials.<br />
Inside, too, <strong>the</strong>re are elements <strong>of</strong> refinement which previous<br />
M-Class derivatives lacked – though <strong>the</strong> architecture remains<br />
solemnly sober in terms <strong>of</strong> colour schemes. Column stalks have<br />
been repositi<strong>on</strong>ed for better erg<strong>on</strong>omics and <strong>the</strong> dashboard<br />
bulges with easy-to-read dials and attractive trim stitching.<br />
Besides being equipped with optimised 7G-tr<strong>on</strong>ic seven-speed<br />
transmissi<strong>on</strong> to improve fuel efficiency, o<strong>the</strong>r eco-friendly features<br />
in <strong>the</strong> line-up include start-stop systems; electric power steering;<br />
start-<strong>of</strong>f assist for hill climbing and downhill speed regulati<strong>on</strong>, as<br />
well as safety features such as Attenti<strong>on</strong> Assist – which warns<br />
drivers <strong>of</strong> drowsiness – adaptive brake lights to supplement <strong>the</strong><br />
Brake Assist BAS, Active Lane Keeping Assist and Active Blind<br />
