Don't Trade Your Lunch Box<br />

ID you ever trade lunch boxes at<br />

school and then wish that you<br />

hadn't? I have, because I went<br />

to the country school and carried my<br />

lunch basket. However, I soon<br />

learned that my mother knew how to<br />

put np very good lunches and I<br />

wouldn't trade, especially if it was<br />

"sight unseen."<br />

The school lunch box is sometimes<br />

a difficult problem for those who live<br />

in the rural districts. Each child<br />

should be provided with a lunch<br />

basket large enough to carry a ther-<br />

mos hottle to hold milk. We must<br />

remember that these youths attending<br />

school want to grow to be healthy<br />

men and women and each one needs<br />

a quart of milk daily. The older girIs<br />

in my country schooI used to take our<br />

milk and make cocoa on an oil stove<br />

vhich we had. That was good for<br />

us because we had something warm to<br />

supplement the cold sandwiches. It<br />

is wise to have something warm at<br />

noon-time so that the stomach won't<br />

have to warm up all of the food eaten.<br />

Sometimes it is possible to have<br />

creamed vegetable soups, especially<br />

if the Home Economics classes serve<br />

hot lunches.<br />

There are lots of good sandwiches<br />

for the lunch pail. The best ones are<br />

made from bran bread or graham<br />

bread. The whole grain of wheat is<br />

so much better for children, because<br />

the outer coverings of the wheat<br />

grain, known as bran, is rich in fiber<br />

and is an aid in preventing constipa-<br />

tion.<br />

Some children may like just plain<br />

bran bread sandwiches but most of<br />

them like a filling between the slices of<br />

bread, which shonld be cut one-fourth<br />

inch thick. One which proves to be<br />

a favorite is made from grated carrots<br />

moistened with honey or cottage<br />

cheese. Chopped dates and nuts<br />

mixed with lemon juice and honey<br />

are also tempting. If meat is served<br />

at home for other meals of the day,<br />

it is not necessary to include it In the<br />

lunch. A chopped hard boiled egg<br />

mixed with pickle and a little mayon-<br />

A bran muffin occasionally will lend<br />

variety to the breads which are put<br />

in the lunch pail. Dates, raisins. figs<br />

or nuts may be added to the muffin<br />

This fall there are all kinds of fresh<br />

fruits and a few vegetables which<br />

may be included in the Iunch. Tomatoes,<br />

celery, and raw carrots pack .<br />

easily and taste good with a little<br />

salt. Small cantaloupes can be carried.<br />

Let the children have the fun<br />

of cutting the melon. A bunch OK<br />

grapes would always be good at this<br />

time of the year. Then there are<br />

always bananas, oranges, and apples.<br />

The canned fruits and tomatoes can<br />

he carried later in the season in a<br />

little jar with a screw top. Baked<br />

ium size muffins. If sweet milk<br />

used instead of sour milk, omit ti<br />

14 teaspoon of soda and use 3 t+<br />

spoons baking powder. Raisins 8<br />

dates may be added to muffins if h<br />

CORN FLAKE MACAROONS<br />

2 egg whites<br />

1 cup sugar<br />

M teaspoon vanilla<br />

1 cup cocoanut<br />

2 cups corn flakes<br />

% cup nut meats (chopped)<br />
