Q: When did you become a member of The Tarpon<br />

Club?<br />

A: We became members of The Tarpon Club on<br />

June 1, 2010.<br />

Q: Why did you join The Tarpon Club?<br />

A: My wife and I joined because of the bre<strong>at</strong>htaking<br />

beach and facilities offered <strong>at</strong> the Beach Pavilion.<br />

Q: Why did you choose Naples/Fiddler’s <strong>Creek</strong>?<br />

A: We chose Fiddler’s <strong>Creek</strong> because we liked the open<br />

spaces. The community offers such a beautiful setting for<br />

walking, biking and n<strong>at</strong>ure w<strong>at</strong>ching.<br />

Q: In which Fiddler’s <strong>Creek</strong> village do you live?<br />

A: Rosemary and I live in Cascada.<br />

Q: Wh<strong>at</strong> Tarpon Club events and activities do you enjoy<br />

the most?<br />

A: We enjoy <strong>at</strong>tending the Sunset Dinners, love the beach<br />

Q: How much time do you spend <strong>at</strong> Fiddler’s <strong>Creek</strong>?<br />

A: We currently only manage to spend about 8-10 weeks<br />

in Florida. We wish we could be here a little longer.<br />

Q: If seasonal, where else do you spend the year?<br />

A: When we are not here, we are in Chicago, where our<br />

family lives.<br />

Q: Wh<strong>at</strong> are your other hobbies and interests?<br />

A: Both of us enjoy playing golf, tennis and swimming.<br />

Q: Where do you like to go outside of Fiddler’s <strong>Creek</strong>?<br />

A: We enjoy visiting different restaurants in Marco Island<br />

and Naples, and sometimes we venture even further north<br />

to have a good meal. We have also been known to hit the<br />

casino every now and then.<br />

Q: Describe your favorite vac<strong>at</strong>ion destin<strong>at</strong>ion and why?<br />

A: Too many to choose from. It is hard to say, since<br />

we travel so much, but we do love visiting Europe,<br />

especially Italy.<br />

COTOLETTA DI VITELLO ALLA MILANESE<br />

Serves: 4<br />

Ingredients:<br />

4 veal cutlets<br />

3 large eggs<br />

1½ cups fine plain breadcrumbs<br />

½ cup flour<br />

PREPARATION INSTRUCTIONS:<br />

In a large shallow bowl, spread the flour. In a second large shallow<br />

bowl, be<strong>at</strong> together eggs and pinch of salt and pepper. In a third<br />

large shallow bowl spread breadcrumbs.<br />

Line a large pl<strong>at</strong>ter with paper towels. Take 1/4-inch-thick veal<br />

cutlet. Dip veal, one piece <strong>at</strong> a time, in flour and then dip it in the<br />

egg mixture, letting excess drip. Next, dredge the veal in<br />

½ cup (1 stick) unsalted butter<br />

1 cup extra virgin olive oil<br />

fine sea salt to taste<br />

freshly ground black pepper to taste<br />

2 minutes per side. Transfer to paper towels to drain, season both<br />

sides with salt. Serve immedi<strong>at</strong>ely topped with arugula and cherry<br />

tom<strong>at</strong>oes and garnish with lemon wedges.

offshore activities<br />

From the Marina<br />

This summer, Tarpon Club Marina has<br />

been quite productive with cleaning,<br />

painting, pressure washing, waxing<br />

and many other projects focused on<br />

enhancing the environment <strong>at</strong> the Marina.<br />

Staff, Capt. Joe Smith, Mike Mente, Austin McDonald,<br />

K<strong>at</strong>hleen Gidius and I are looking forward to another<br />

fabulous season and serving every member.<br />

Capt. Jeff Smith from Dark 30 Charters, remarked th<strong>at</strong><br />

fishing has been gre<strong>at</strong> over the summer months, as he and<br />

his fellow fishermen have been c<strong>at</strong>ching sheephead, snapper,<br />

permit, pompano, flounder and many other species of fish.<br />

Capt. Jeff looks forward to taking many of the Tarpon Club<br />

members on fishing excursions during the 2012-2013 season.<br />

From the Angler<br />

When in doubt, cast it out!<br />

November is such a gre<strong>at</strong> month for<br />

fishing. Winter species start moving<br />

inshore, the snook start migr<strong>at</strong>ing to<br />

the back country and redfish harbor<br />

outside and back country islands.<br />

Assuming it’s a warm November, many<br />

snook will be out front and near shore wrecks. Redfish will be equally<br />

split between the front islands and back country, while big schools<br />

of Spanish mackerel, jacks and ladyfish will be all over the Gulf fl<strong>at</strong>s<br />

from the islands to miles offshore.<br />

Whiting may be slow to come inside until the w<strong>at</strong>er drops below<br />

70°(F) for a week or more. If the w<strong>at</strong>er remains in the low 70s, the<br />

pompano fishing should be good from Cape Romano out to nine<br />

miles near structure over hard or sandy bottom.<br />

Most of my month will be spent in the back country. Shorelines with<br />

oysters and lots of blown-down wood will produce good numbers<br />

of redfish and snook. I prefer a low incoming or a low falling tide.<br />

This is when the fish I will be targeting will be out of the mangrove<br />

roots and susceptible to sight casting. Stealth is a must. If you have<br />

a favorite point where the fish hold on a particular tide or use as a<br />

highway, you can set up on anchor and wait for them to come by. If<br />

you have not discovered such a loc<strong>at</strong>ion, pick a shoreline th<strong>at</strong> fits my<br />

aforementioned characteristics and then pole or quietly troll along<br />

looking for fish or signs of fish. Even if the w<strong>at</strong>er is not clear, sight<br />

fishing is still possible. W<strong>at</strong>ch for signs of fish, such as busting bait<br />

or pushing subtle wakes. Even slight changes in the w<strong>at</strong>er could be a<br />

fish, so when in doubt, cast it out!<br />

Fish in shallow w<strong>at</strong>er are typically very alert and can be spooked<br />

easily; therefore, I like to use light jigs or small plugs for a gentle<br />

landing in the w<strong>at</strong>er. If you have live bait, free line present<strong>at</strong>ion is<br />

the only way to go. I prefer a 1/8th red jig head with a white 4”<br />

Gulp swimming mullet. I find this bait to be very effective. Using<br />

an artificial lure will allow for more coverage without having to<br />

constantly change live baits. Don’t overlook the success of a wellplaced,<br />

free lined shrimp. It lands softly in the w<strong>at</strong>er and holds up<br />

well, all fish e<strong>at</strong> it and the fish’s diet becomes more shrimp and crab<br />

orient<strong>at</strong>ed as the w<strong>at</strong>ers cool down.<br />

Overall, November offers good shots <strong>at</strong> c<strong>at</strong>ching quantity and<br />

quality fish.<br />
