It’s some distance from Australia’s island<br />
capital Hobart to an opulent resort in<br />
Dubai, but graduate Caroline Hardman has<br />
embraced every move along the way. Paul<br />
Town’s career in Macau has shifted up a<br />
notch. And rising star Bodelle Francis can<br />
look to a stellar future.<br />
These are just three <strong>of</strong> ICHM’s trailblazers<br />
paving the way for ICHM students,<br />
including those pictured with Daljit Rao.<br />
‘With me are students from Australia,<br />
the Seychelles, Thailand, Korea, Mexico,<br />
Rwanda, Kenya and India, and this year we<br />
welcomed our fi rst from Mongolia and last<br />
year from Mozambique, so it is with some<br />
justifi cation ICHM is regarded as a mini-<br />
United Nations’, says Daljit.<br />
In her role, Daljit travels the world<br />
searching out young people with that<br />
special something, which she says is<br />
founded on the desire to succeed, and<br />
inspiring what she describes as ‘startling<br />
individuals’ to come to ICHM and reach for<br />
the global opportunities that are available.<br />
Daljit, who has been at the helm in the<br />
hospitality industry for a quarter<strong>of</strong>a<br />
quarter <strong>of</strong> a<br />
century, says there is nothing like ‘been<br />
there, done that’ to help recruit students,<br />
and transfer information to students,<br />
parents and hotel executives. And in<br />
coming from a different background, the<br />
Fijian-born Indian says she understands<br />
the challenges, not only in succeeding as a<br />
student in a place other than home, but also<br />
taking those fi rst important steps into the<br />
industry.<br />
Daljit started out with the Oberoi <strong>Hotel</strong><br />
Group in Australia and moved with the<br />
group to India, before joining Corus<br />
<strong>International</strong> for stints in Kuala Lumpur,<br />
the United Kingdom and, fi nally, back in<br />
Australia—and Adelaide. She was part <strong>of</strong><br />
the pre-opening team for Australia’s fi rst<br />
convention centre (1988) and General<br />
Manager <strong>of</strong> a major city corporate hotel (in<br />
1991). Before making the jump to education<br />
and ICHM, she was Regional General<br />
Manager for the opening <strong>of</strong> a $57 million<br />
all-suites hotel in Adelaide. She has also<br />
served on a number <strong>of</strong> signifi cant tourism<br />
and hospitality and curriculum advisory<br />
boards.<br />
It was while in the industry that Daljit fi rst<br />
came into contact with ICHM, employing<br />
students as interns who, today, are in senior<br />
positions in Dubai, Singapore and Korea.<br />
‘The rigour <strong>of</strong> ICHM’s business<br />
management and practical skills training<br />
combined with internships means that<br />
students are equipped with appropriate<br />
operational skills, ensuring they are<br />
credible in the work environment.<br />
Further they develop modern business<br />
competencies so critical to effective<br />
supervisors and managers.<br />
‘Thus prepared for the expectations and<br />
demands <strong>of</strong> the global market they hit the<br />
ground running, with rapid promotion<br />
more <strong>of</strong>ten than not the rewarding result’,<br />
she says.<br />

Careers that allow young people to<br />
work around the world have never been<br />
easier! With the hotel and tourism<br />
industry booming, ICHM is fi nding that<br />
employers from around the world are<br />
beating a path to its door.<br />

Formed 15 years ago, ICHM is the only<br />
hotel school outside Europe that can<br />
issue the world-famous Swiss <strong>Hotel</strong><br />
Association Diploma, and it provides<br />
a bachelor degree as well. The Swiss<br />
Diploma course is renowned for its<br />
hands-on training as well as the rigour<br />
<strong>of</strong> its business training. Each year<br />
students spend six months studying<br />
on the Regency Park campus, and<br />

six months working in industry—in<br />
Australia or around the world.<br />
ICHM has had a generous scholarship<br />
program for Australian and New<br />
Zealand school leavers for many years.<br />
Four $25,000 scholarships will be<br />
provided for 2009 entrants. In 2007 the<br />
Australian Government’s ‘FEE-HELP<br />
for VET’ passed into law, and when<br />
implemented it will allow students<br />
to borrow to fund their studies, as<br />
university students do. Further, we<br />
are actively promoting the Australian<br />
Government’s Endeavour scholarships;<br />
open to students from more than 40<br />
countries in the Asia Pacifi c area.<br />
Given their diverse background, and<br />
the fact that we are fortunate to have<br />
our own on-campus accommodation<br />
so students really can live together and<br />
experience cultural diversity, it is not<br />
surprising that students aspire to live<br />
and work around the world. In the past<br />
year we have had students undertaking<br />
internships in more than 20 countries<br />
outside Australia, from Malta to<br />
Cypress, Ghana to Germany, which<br />
means they get a ‘taste’ <strong>of</strong> the exotic<br />
even before they graduate.<br />
But it is the career opportunities that<br />
really set ICHM apart. For many years<br />
we have seen our graduates living<br />
and working in places like London,<br />
Singapore and Hong Kong and, <strong>of</strong><br />
course, all over Australia. But in the<br />
past two or three years an increasing<br />
number have taken up senior positions<br />
in new locations like Dubai, Macau,<br />
Shanghai and in numerous cities<br />
across the United States. We fi nd<br />
ourselves reaching for an atlas just to<br />
keep up with their progress!<br />
As the stories in this <strong>On</strong> <strong>Course</strong> report,<br />
more and more graduates are getting<br />
senior positions in global hotel chains<br />
and, in addition, a signifi cant number<br />
are taking management jobs outside<br />
the hospitality industry, or starting<br />
their own businesses. And again, it is<br />
the global nature <strong>of</strong> these outcomes<br />
that is noteworthy. From consultants<br />
in London to property in Shanghai,<br />
from Human Resource Management<br />
in Beijing to garment design and<br />
manufacture in Europe, the range is<br />
breathtaking.<br />
For a young person aspiring to an<br />
international business career, studying<br />
at ICHM makes a lot <strong>of</strong> sense!<br />

Despite strong competition from other<br />
young industry stars, ICHM graduate<br />
Bodelle Francis took out the Young <strong>Hotel</strong><br />
Manager <strong>of</strong> the Year award in the 2007<br />
Australian <strong>Hotel</strong>s Association (AHA)<br />
Industry Awards for Excellence.<br />
At The Como in Melbourne for the past<br />
four years, Bodelle worked her way up<br />
through the ranks to Duty Manager<br />
and has recently been promoted to<br />
Reservations Manager. Before that she<br />
worked at the Hyatt Regency Sanctuary<br />
Cove.<br />
She says she’s known from a young age<br />
that she wanted to be involved in the<br />
hospitality industry. ‘You could say it’s in<br />
my blood.’ Her parents, Jenny and Wayne<br />
Francis are well known in the Adelaide<br />
hotel scene, having been involved in the<br />
industry in South Australia for around 40<br />
years.<br />
Awarded for the fi rst time in 2007, the<br />
Young <strong>Hotel</strong> Manager <strong>of</strong> the Year award<br />
is restricted to people aged 26 or younger,<br />
who are employed in a management<br />
position in an AHA member hotel.<br />
Entrants are judged on their knowledge,<br />
expertise, interest, involvement and<br />
ambitions in the hotel industry.<br />

for the competition, which came down to<br />
a shortlist <strong>of</strong> fi ve other graduates <strong>of</strong> hotel<br />
schools around Australia. Bodelle was<br />
formally presented with her award at a<br />
dinner in Adelaide late last year.<br />
National award<br />
to rising star<br />
‘We’re hugely<br />

achievements’,<br />
says Principal Dan<br />
Edmonds, who was<br />
at the dinner. ‘Such<br />
recognition may<br />
be an incentive for<br />
other young people<br />
to choose a career in<br />
hospitality.’<br />
She came away with several honours<br />
during her time at ICHM—she won a<br />
$20,000 entry scholarship in 2002, was<br />
dux in her second year and a gold-medal<br />
winner in 2004. She also won the AHA<br />
scholarship in 2003.<br />
‘We’re hugely proud <strong>of</strong> her achievements’,<br />
says Principal Dan Edmonds, who was at<br />
the dinner. ‘Such recognition may be an<br />
incentive for other young people to choose<br />
a career in hospitality.’
Caroline Hardman took up the position as<br />
Director Business Excellence with Madinat<br />
Jumairah last November. It’s a step up from<br />
her previous role as Quality Manager at<br />
Jumaireh Beach <strong>Hotel</strong>, and one the 31 year-old<br />
regards as a rewarding opportunity.<br />
Madinat Jumeirah, with its two grand hotels,<br />
courtyard summerhouses, traditional souk,<br />
spa and conference and banqueting and<br />
unlimited recreational facilities, resembles<br />
an ancient Arabian citadel, paying tribute to<br />
Dubai’s heritage.<br />
Caroline says although the resort’s ambience<br />
might be steeped in the past, everything to<br />
do with its quality is up-to-the-minute. It<br />
operates within the European Foundation<br />
for Quality Management (EFQM) Excellence<br />
Model, which is used by organisations<br />
worldwide looking to excel in their market<br />
and in every aspect <strong>of</strong> business performance.<br />
Part strategy and part operational, her<br />
role—leading a current team <strong>of</strong> eight—is to<br />
articulate the business excellence agenda <strong>of</strong><br />
the executive committee and cascade it down<br />
to line staff so there’s a common sense <strong>of</strong><br />
purpose across the resort.<br />
‘Communicating effectively to more than<br />
3500 management and staff <strong>of</strong> more than<br />
60 different nationalities is perhaps our<br />
biggest challenge, and one that I’m enjoying<br />
immensely’, she says.<br />
Caroline excelled at ICHM coming in dux<br />
every year, topped by a gold medal fi nale for<br />
exceeding 90% across all subjects. She also<br />
took out a Southcorp Wine Prize in second<br />
year for outstanding wine knowledge.<br />
She made the shift to hotel management<br />
partway through an arts degree at the<br />
University <strong>of</strong> Tasmania and, after looking at<br />
other hotel management schools, decided<br />
on ICHM because <strong>of</strong> its international<br />
connections so close to home. She says she<br />
would have no hesitation in making the same<br />
decision again.<br />
‘A balance between practical and theory kept<br />
us in the real world and above all else there<br />
is the networking between graduates that<br />
propels career opportunities’, she says.<br />
Hostec, the human resources company <strong>of</strong><br />
ICHM graduates Ian Wilson and Ramon<br />
Nambiar, has been behind Caroline’s moves,<br />
which took her to the Olympics in Sydney,<br />
and to Singapore and London and then on to<br />
Dubai.<br />
Stepping up<br />

rewarding opportunity.<br />
She was home in Hobart in January for a<br />
10-day break before gearing up to prepare<br />
the resort’s submission for the EFQM Quality<br />
Awards on her return to Dubai, which<br />
she describes as heavily work oriented in<br />
comparison to other countries.<br />
‘It’s and exciting and rapidly progressive city<br />
with a strong sense <strong>of</strong> productivity’, she said.<br />
Hard Rock cool<br />
Paul Town, previously General Manager <strong>of</strong> the Crown Macau (<strong>On</strong> <strong>Course</strong> cover, <strong>Semester</strong> 2,<br />
2006), has recently been promoted to Vice President <strong>Hotel</strong> Operations. In his new and broader<br />
role he’s looking after three properties—a Crown Towers (300 rooms), a Hard Rock <strong>Hotel</strong> (360<br />
rooms) and an all-suite property.<br />
The trio is part <strong>of</strong> Melco PBL Entertainment’s City <strong>of</strong> Dreams Casino and Entertainment<br />
Resort Complex, the fi rst stage <strong>of</strong> which is scheduled for completion late 2008. There is also a<br />
grand Hyatt on the site, which the Hyatt will operate on Melco PBL’s behalf.<br />
‘Delivering on three brands is the biggest challenge. I am pretty comfortable with the Crown<br />
Towers brand, but Hard Rock and the third property, which we’re still bedding down, are new<br />
to us. We will need to interpret how we deliver these brands to our market here’, he says.<br />
Just as for the Crown Macau, Paul is involved in design, procurement and fi nalising property<br />
confi guration. ‘Being a bigger project, these aspects are more advanced than at the same<br />
time for the Crown Macau so I’m really coming in at the closing stages’, he says.<br />
A trip to the United States and a crash course in the Hard Rock brand came into lead-up<br />
work. High-energy Hard Rock is one <strong>of</strong> the world’s most globally recognised brands, with<br />
cafes, hotel and casinos in 45 countries.<br />
‘Hard Rock general managers are known for their cool, so it should make for an interesting<br />
ride’, says Paul.<br />
ICHM’s founder<br />
recognised in<br />
honours list<br />
Dr Rex Lipman has been made an Offi cer in the Order <strong>of</strong> Australia (AO) in the<br />
Australia Day Honours List, for his service to the tourism and hospitality industry<br />
and for education through support <strong>of</strong> learning opportunities for young people.<br />
This follows his Member <strong>of</strong> the Order <strong>of</strong> Australia, which he received in 1989.<br />
Dr Lipman, 85, who continues to work full time, is Chief Executive Offi cer at Angas<br />
Travel and Pr<strong>of</strong>essional Conference <strong>International</strong> and is the author <strong>of</strong> several<br />
books. He says he has changed careers every 10 years and has been many things: a<br />
merchant banker, dentist and wartime commander.<br />
Since the late 1980s, Dr Lipman has organised European language and cultural<br />
tours for secondary school students, as well as concert tours to Italy, France and<br />
England for school orchestras and choirs.<br />
Dr Lipman’s son Gerald took up the reigns at ICHM in 1998.<br />

The <strong>Course</strong> Commencement Ceremony marks academic achievement and the<br />
occasion at which new students are welcomed to, and second and third years back<br />
to, campus after their internships. At the 2008 ceremony and to spontaneous<br />
applause, Gerald Lipman acknowledged Jill Edmonds (wife <strong>of</strong> Principal Dan<br />
Edmonds), for her extraordinary efforts over the years in conducting the induction<br />
Adventure Day at the couple’s property in the Adelaide Hills.<br />

Kiwis set for star turns<br />
There have been school leavers from New<br />
Zealand’s Kristin school at ICHM in the past,<br />
but 2008 is the fi rst year with four in one year.<br />
Nick Van der Werff says before coming to<br />
ICHM he made comparisons with other hotel<br />
schools, including Switzerland, but ICHM,<br />
which honed in on the business management<br />
aspects, had a better ‘story’ to tell.<br />
And after a month on campus he’s thrilled to<br />
report that the story is a reality.<br />
‘Get here soon!’ is his advice to Kiwi up-andcomings<br />
with a hospitality bent. ‘It’s the best<br />
decision I could have made; I love it—the<br />
lecturers work hard to push you along and<br />
I’m really motivated. I’m also enjoying the<br />
excitement <strong>of</strong> the international environment<br />
and people from all nationalities on campus<br />
together.’<br />
Nick’s ambition is to be a general manager in<br />
an international hotel chain.<br />
Jeremy, his best friend from Kristin, is heading<br />
in quite a different direction, following a<br />
passion for cooking and food. ‘The food and<br />
beverage side <strong>of</strong> the industry fascinates me<br />
and I’ll go wherever that takes me’, he says.<br />
ICHM had been in the back <strong>of</strong> his mind, but he<br />
decided only a week or so before the course<br />
started to join Nick and he, too, is pleased he<br />
did. ‘It’s really exciting’, he says.<br />

learning a lot from them,<br />
apart from the study.<br />

Davina Sheard’s intention is to head into<br />
event management, but she acknowledges<br />
it’s early days. ‘I know ICHM can lead me in<br />
so many directions, so I too might head for a<br />
general manager role.’<br />
She too had looked into studying in<br />
Switzerland, but says she hates the cold.<br />
A $25,000 entry scholarship was an added<br />
incentive.<br />
Davina has worked in hospitality helping her<br />
parents in their restaurant near Auckland<br />
for the past six years. She was sold on ICHM’s<br />
balance <strong>of</strong> academic work jam-packed into<br />
six months, followed by six months as an<br />
intern in industry.<br />
Laura, who loves to travel, is pursuing a<br />
dream to work and travel internationally.<br />
She says she glimpsed the world <strong>of</strong> hotel<br />
management while still at school when she<br />
went to Europe with her parents.<br />
‘I love the industry; it’s always different.<br />
And I love ICHM; it’s really different. There<br />
are students here from everywhere and I’m<br />
learning a lot from them, apart from the<br />
study.<br />
Laura, like Davina, is looking to a career in<br />
either event or hotel management.<br />

on the Park Melbourne.<br />
Peter addressed all students in a General<br />
Assembly, outlining his career to date and<br />
the recent changes to the Hilton structure<br />
worldwide. He went on to reveal his personal<br />
thoughts about what it takes to be successful<br />
as a general manager in a modern, globally<br />
competitive environment.<br />
A MasterClass for senior students followed,<br />
centred on human and physical structures and<br />
relationships required to successfully achieve<br />
outcomes, with a $40 million refurbishment<br />
project he was piloting providing an excellent<br />
case study.<br />

Job <strong>of</strong>fers<br />
on the spot<br />
Australian Association <strong>of</strong> <strong>Hotel</strong> Schools Careers Fair<br />
For the fi rst time, an excursion to Sydney was organised for third and<br />
Degree year students to attend the annual Australian Association <strong>of</strong> <strong>Hotel</strong><br />
Schools (AAHS) Careers Fair at Technology Park, Redfern, Sydney.<br />
Twenty-two students funded their own travel to meet with representatives<br />
<strong>of</strong> 35 hotels and chains exhibiting at the event, which this year attracted<br />
more than 600 students <strong>of</strong> member hotel schools. Their initiative was<br />
immediately rewarded with fi rm job <strong>of</strong>fers extended to many on the spot.<br />
Afterwards, the students enjoyed the very generous hospitality <strong>of</strong> the Four<br />
Seasons <strong>Hotel</strong> Sydney and the Hilton Sydney, with each provided extensive<br />
public and behind the scenes tours <strong>of</strong> the facilities and access to the senior<br />
management team in a lavish reception and question and answer session.<br />

ICHM’s Manager—Industry Training & Development, Darren Camilleri, sent greetings from<br />
chilly Beijing in February 2008, after catching up with students in China—a relatively new<br />
and popular destination for ICHM interns and graduates.<br />
Both Darren and lecturer Derek Milligan caught up with the interns last year and Darren<br />
is pleased to report that Martin Camp has already been promoted. After completing a<br />
12-month internship at Le Royal Meridien Shanghai (a Starwood property), the <strong>of</strong>fer was<br />
made for him to stay on at the hotel, which he did for six months before winning a position<br />
as Guest Services Manager <strong>of</strong> the new W <strong>Hotel</strong> in Hong Kong (also under the Starwood<br />
banner). The property is scheduled to open at the end <strong>of</strong> July, and Martin will leave Shanghai<br />
in early March and take a short break before starting his new job at W Hong Kong.<br />
Real-life rewards<br />
ICHM’s program <strong>of</strong> six months on<br />
campus followed by a six-month<br />
internship is modelled on that <strong>of</strong><br />
the Swiss <strong>Hotel</strong> Association which,<br />
for the past 125 years, has been<br />
regarded as the global benchmark in<br />
hotel management training. ICHM<br />
has always recognised academic<br />
achievement in its ceremonies and,<br />
fl agging the signifi cance <strong>of</strong> highachieving<br />
interns, recognises them<br />
formally too.<br />

The awards are dedicated to the<br />
memory <strong>of</strong> James Anggang, an ICHM<br />
student who was passionate about<br />
food and wine and who also excelled in<br />
industry as an intern in Adelaide, Uluru<br />
at Ayers Rock in central Australia and in<br />
Malaysia. James’ sister Jayne Anggang<br />
presented the awards.<br />
‘It was the most beautiful setting in the<br />
sand, with a dance fl oor, a live 10-piece<br />
Latin band and huge sand sculptures. Light<br />
clothes and bare feet were the order <strong>of</strong> the<br />
day, which also added to the charm <strong>of</strong> the<br />
evening.<br />
‘The food was spectacular, with suckling<br />
pig, Lapu Lapu (local fi sh) and an array <strong>of</strong><br />
other local and national dishes. A lot <strong>of</strong><br />
local San Miguel beer and Polish vodka were<br />
consumed leading ultimately to a lot more<br />
dancing into the wee small hours.<br />
‘It was a pleasure and a privilege to be there<br />
and enjoy the celebration’, says Richard.<br />
As well as the Philippines, Richard’s study<br />
tour took him to Dubai, Holland and<br />
Malaysia, where he variously visited hotels<br />
and ICHM affi liated colleges and met with<br />
interns, graduates and industry contacts.<br />

<strong>On</strong> ya Matthew<br />
Matthew Kenny has been appointed Assistant Manager Housekeeping at the Four Seasons<br />
Jackson Hole, Wyoming, in the United States. Previously Communications Supervisor with<br />
the property, his promotion came in just four months. Before that he was at the Amangani<br />
for 18 months, and prior to that the United States Food and Drug Administration, Asia Pacifi c<br />
Offi ce <strong>of</strong> Leading <strong>Hotel</strong>s <strong>of</strong> the World and the Observatory in Sydney. The Four Seasons<br />
Director <strong>of</strong> Rooms Division, John Greene says: ‘Matthew came in and overnight brought<br />
stability to our PBX department. A quick wit, a sharp eye and exemplary communication<br />
skills, he will be a great addition to the Housekeeping team that is in the process <strong>of</strong><br />
rebuilding and preparing for a new season. He even has a good working knowledge <strong>of</strong><br />
Spanish. Please congratulate him the next time you see him and raise a can <strong>of</strong> Fosters<br />
(Australian for beer) in salute <strong>of</strong> this great achievement and promotion.’<br />
Loose lips<br />
It has been said they sink ships, but<br />
under ICHM’s ‘spread the word’ incentive<br />
scheme talking about ICHM could mean<br />
a healthy reward. Under the scheme,<br />
students and graduates who refer a<br />
friend or family member to ICHM can<br />
make $1000 (for entry in fi rst year) or<br />
$500 (for entry in year two or subsequent<br />

Mountain, Celine Park is positioned<br />
as the fi rst ICHM graduate to work<br />
in North Korea. To open in May,<br />
the fi ve-star property itself is a<br />
fi rst—the only international hotel<br />
in the Mount Kumgang tourist<br />
district, one <strong>of</strong> the most beautiful<br />
areas in Korea overlooking Dong<br />

in North East Asia in 2008, is for two<br />
weeks in Australia in April visiting<br />
key wine regions and wineries, plus<br />
a week’s placement with a peak<br />
wine organisation or company. In<br />
