OnCourse
A sharp eye
Selecting for
success her focus
It’s some distance from Australia’s island
capital Hobart to an opulent resort in
Dubai, but graduate Caroline Hardman has
embraced every move along the way. Paul
Town’s career in Macau has shifted up a
notch. And rising star Bodelle Francis can
look to a stellar future.
These are just three of ICHM’s trailblazers
paving the way for ICHM students,
including those pictured with Daljit Rao.
‘With me are students from Australia,
the Seychelles, Thailand, Korea, Mexico,
Rwanda, Kenya and India, and this year we
welcomed our fi rst from Mongolia and last
year from Mozambique, so it is with some
justifi cation ICHM is regarded as a mini-
United Nations’, says Daljit.
In her role, Daljit travels the world
searching out young people with that
special something, which she says is
founded on the desire to succeed, and
inspiring what she describes as ‘startling
individuals’ to come to ICHM and reach for
the global opportunities that are available.
Daljit, who has been at the helm in the
hospitality industry for a quarterofa
quarter of a
century, says there is nothing like ‘been
there, done that’ to help recruit students,
and transfer information to students,
parents and hotel executives. And in
coming from a different background, the
Fijian-born Indian says she understands
the challenges, not only in succeeding as a
student in a place other than home, but also
taking those fi rst important steps into the
industry.
Daljit started out with the Oberoi Hotel
Group in Australia and moved with the
group to India, before joining Corus
International for stints in Kuala Lumpur,
the United Kingdom and, fi nally, back in
Australia—and Adelaide. She was part of
the pre-opening team for Australia’s fi rst
convention centre (1988) and General
Manager of a major city corporate hotel (in
1991). Before making the jump to education
and ICHM, she was Regional General
Manager for the opening of a $57 million
all-suites hotel in Adelaide. She has also
served on a number of signifi cant tourism
and hospitality and curriculum advisory
boards.
It was while in the industry that Daljit fi rst
came into contact with ICHM, employing
students as interns who, today, are in senior
positions in Dubai, Singapore and Korea.
‘The rigour of ICHM’s business
management and practical skills training
combined with internships means that
students are equipped with appropriate
operational skills, ensuring they are
credible in the work environment.
Further they develop modern business
competencies so critical to effective
supervisors and managers.
‘Thus prepared for the expectations and
demands of the global market they hit the
ground running, with rapid promotion
more often than not the rewarding result’,
she says.
01

Careers that allow young people to
work around the world have never been
easier! With the hotel and tourism
industry booming, ICHM is fi nding that
employers from around the world are
beating a path to its door.
“... more and more
graduates are getting
senior positions in
global hotel chains
and, in addition, a
signifi cant number are
taking management
jobs outside the
hospitality industry,
or starting their own
businesses.”
Formed 15 years ago, ICHM is the only
hotel school outside Europe that can
issue the world-famous Swiss Hotel
Association Diploma, and it provides
a bachelor degree as well. The Swiss
Diploma course is renowned for its
hands-on training as well as the rigour
of its business training. Each year
students spend six months studying
on the Regency Park campus, and
Chief Executive’s
comments
six months working in industry—in
Australia or around the world.
ICHM has had a generous scholarship
program for Australian and New
Zealand school leavers for many years.
Four $25,000 scholarships will be
provided for 2009 entrants. In 2007 the
Australian Government’s ‘FEE-HELP
for VET’ passed into law, and when
implemented it will allow students
to borrow to fund their studies, as
university students do. Further, we
are actively promoting the Australian
Government’s Endeavour scholarships;
open to students from more than 40
countries in the Asia Pacifi c area.
Given their diverse background, and
the fact that we are fortunate to have
our own on-campus accommodation
so students really can live together and
experience cultural diversity, it is not
surprising that students aspire to live
and work around the world. In the past
year we have had students undertaking
internships in more than 20 countries
outside Australia, from Malta to
Cypress, Ghana to Germany, which
means they get a ‘taste’ of the exotic
even before they graduate.
But it is the career opportunities that
really set ICHM apart. For many years
we have seen our graduates living
and working in places like London,
Singapore and Hong Kong and, of
course, all over Australia. But in the
past two or three years an increasing
number have taken up senior positions
in new locations like Dubai, Macau,
Shanghai and in numerous cities
across the United States. We fi nd
ourselves reaching for an atlas just to
keep up with their progress!
As the stories in this On Course report,
more and more graduates are getting
senior positions in global hotel chains
and, in addition, a signifi cant number
are taking management jobs outside
the hospitality industry, or starting
their own businesses. And again, it is
the global nature of these outcomes
that is noteworthy. From consultants
in London to property in Shanghai,
from Human Resource Management
in Beijing to garment design and
manufacture in Europe, the range is
breathtaking.
For a young person aspiring to an
international business career, studying
at ICHM makes a lot of sense!
Y Bodelle (right) being
presented with the award
by Isabella Conde, Chair,
Association of Australian
Hotel Schools
Despite strong competition from other
young industry stars, ICHM graduate
Bodelle Francis took out the Young Hotel
Manager of the Year award in the 2007
Australian Hotels Association (AHA)
Industry Awards for Excellence.
At The Como in Melbourne for the past
four years, Bodelle worked her way up
through the ranks to Duty Manager
and has recently been promoted to
Reservations Manager. Before that she
worked at the Hyatt Regency Sanctuary
Cove.
She says she’s known from a young age
that she wanted to be involved in the
hospitality industry. ‘You could say it’s in
my blood.’ Her parents, Jenny and Wayne
Francis are well known in the Adelaide
hotel scene, having been involved in the
industry in South Australia for around 40
years.
Awarded for the fi rst time in 2007, the
Young Hotel Manager of the Year award
is restricted to people aged 26 or younger,
who are employed in a management
position in an AHA member hotel.
Entrants are judged on their knowledge,
expertise, interest, involvement and
ambitions in the hotel industry.
A panel from ICHM nominated Bodelle
for the competition, which came down to
a shortlist of fi ve other graduates of hotel
schools around Australia. Bodelle was
formally presented with her award at a
dinner in Adelaide late last year.
National award
to rising star
‘We’re hugely
proud of her
achievements’,
says Principal Dan
Edmonds, who was
at the dinner. ‘Such
recognition may
be an incentive for
other young people
to choose a career in
hospitality.’
She came away with several honours
during her time at ICHM—she won a
$20,000 entry scholarship in 2002, was
dux in her second year and a gold-medal
winner in 2004. She also won the AHA
scholarship in 2003.
‘We’re hugely proud of her achievements’,
says Principal Dan Edmonds, who was at
the dinner. ‘Such recognition may be an
incentive for other young people to choose
a career in hospitality.’

Caroline Hardman took up the position as
Director Business Excellence with Madinat
Jumairah last November. It’s a step up from
her previous role as Quality Manager at
Jumaireh Beach Hotel, and one the 31 year-old
regards as a rewarding opportunity.
Madinat Jumeirah, with its two grand hotels,
courtyard summerhouses, traditional souk,
spa and conference and banqueting and
unlimited recreational facilities, resembles
an ancient Arabian citadel, paying tribute to
Dubai’s heritage.
Caroline says although the resort’s ambience
might be steeped in the past, everything to
do with its quality is up-to-the-minute. It
operates within the European Foundation
for Quality Management (EFQM) Excellence
Model, which is used by organisations
worldwide looking to excel in their market
and in every aspect of business performance.
Part strategy and part operational, her
role—leading a current team of eight—is to
articulate the business excellence agenda of
the executive committee and cascade it down
to line staff so there’s a common sense of
purpose across the resort.
‘Communicating effectively to more than
3500 management and staff of more than
60 different nationalities is perhaps our
biggest challenge, and one that I’m enjoying
immensely’, she says.
Caroline excelled at ICHM coming in dux
every year, topped by a gold medal fi nale for
exceeding 90% across all subjects. She also
took out a Southcorp Wine Prize in second
year for outstanding wine knowledge.
She made the shift to hotel management
partway through an arts degree at the
University of Tasmania and, after looking at
other hotel management schools, decided
on ICHM because of its international
connections so close to home. She says she
would have no hesitation in making the same
decision again.
‘A balance between practical and theory kept
us in the real world and above all else there
is the networking between graduates that
propels career opportunities’, she says.
Hostec, the human resources company of
ICHM graduates Ian Wilson and Ramon
Nambiar, has been behind Caroline’s moves,
which took her to the Olympics in Sydney,
and to Singapore and London and then on to
Dubai.
Stepping up
Caroline Hardman took up the
position as Director Business
Excellence with Madinat
Jumairah last November. It’s
a step up from her previous
role as Quality Manager at
Jumaireh Beach Hotel, and
one the 31 year-old regards as a
rewarding opportunity.
She was home in Hobart in January for a
10-day break before gearing up to prepare
the resort’s submission for the EFQM Quality
Awards on her return to Dubai, which
she describes as heavily work oriented in
comparison to other countries.
‘It’s and exciting and rapidly progressive city
with a strong sense of productivity’, she said.
Hard Rock cool
Paul Town, previously General Manager of the Crown Macau (On Course cover, Semester 2,
2006), has recently been promoted to Vice President Hotel Operations. In his new and broader
role he’s looking after three properties—a Crown Towers (300 rooms), a Hard Rock Hotel (360
rooms) and an all-suite property.
The trio is part of Melco PBL Entertainment’s City of Dreams Casino and Entertainment
Resort Complex, the fi rst stage of which is scheduled for completion late 2008. There is also a
grand Hyatt on the site, which the Hyatt will operate on Melco PBL’s behalf.
‘Delivering on three brands is the biggest challenge. I am pretty comfortable with the Crown
Towers brand, but Hard Rock and the third property, which we’re still bedding down, are new
to us. We will need to interpret how we deliver these brands to our market here’, he says.
Just as for the Crown Macau, Paul is involved in design, procurement and fi nalising property
confi guration. ‘Being a bigger project, these aspects are more advanced than at the same
time for the Crown Macau so I’m really coming in at the closing stages’, he says.
A trip to the United States and a crash course in the Hard Rock brand came into lead-up
work. High-energy Hard Rock is one of the world’s most globally recognised brands, with
cafes, hotel and casinos in 45 countries.
‘Hard Rock general managers are known for their cool, so it should make for an interesting
ride’, says Paul.
ICHM’s founder
recognised in
honours list
Dr Rex Lipman has been made an Offi cer in the Order of Australia (AO) in the
Australia Day Honours List, for his service to the tourism and hospitality industry
and for education through support of learning opportunities for young people.
This follows his Member of the Order of Australia, which he received in 1989.
Dr Lipman, 85, who continues to work full time, is Chief Executive Offi cer at Angas
Travel and Professional Conference International and is the author of several
books. He says he has changed careers every 10 years and has been many things: a
merchant banker, dentist and wartime commander.
Since the late 1980s, Dr Lipman has organised European language and cultural
tours for secondary school students, as well as concert tours to Italy, France and
England for school orchestras and choirs.
Dr Lipman’s son Gerald took up the reigns at ICHM in 1998.
schools, including Switzerland, but ICHM,
which honed in on the business management
aspects, had a better ‘story’ to tell.
And after a month on campus he’s thrilled to
report that the story is a reality.
‘Get here soon!’ is his advice to Kiwi up-andcomings
with a hospitality bent. ‘It’s the best
decision I could have made; I love it—the
lecturers work hard to push you along and
I’m really motivated. I’m also enjoying the
excitement of the international environment
and people from all nationalities on campus
together.’
Nick’s ambition is to be a general manager in
an international hotel chain.
Jeremy, his best friend from Kristin, is heading
in quite a different direction, following a
passion for cooking and food. ‘The food and
beverage side of the industry fascinates me
and I’ll go wherever that takes me’, he says.
ICHM had been in the back of his mind, but he
decided only a week or so before the course
started to join Nick and he, too, is pleased he
did. ‘It’s really exciting’, he says.
‘I love the industry; it’s always
different. And I love
ICHM; it’s really different.
There are students here
from everywhere and I’m
learning a lot from them,
apart from the study.
Davina Sheard’s intention is to head into
event management, but she acknowledges
it’s early days. ‘I know ICHM can lead me in
so many directions, so I too might head for a
general manager role.’
She too had looked into studying in
Switzerland, but says she hates the cold.
A $25,000 entry scholarship was an added
incentive.
Davina has worked in hospitality helping her
parents in their restaurant near Auckland
for the past six years. She was sold on ICHM’s
balance of academic work jam-packed into
six months, followed by six months as an
intern in industry.
Laura, who loves to travel, is pursuing a
dream to work and travel internationally.
She says she glimpsed the world of hotel
management while still at school when she
went to Europe with her parents.
‘I love the industry; it’s always different.
And I love ICHM; it’s really different. There
are students here from everywhere and I’m
learning a lot from them, apart from the
study.
Laura, like Davina, is looking to a career in
either event or hotel management.
Australian Association of Hotel Schools Careers Fair
For the fi rst time, an excursion to Sydney was organised for third and
Degree year students to attend the annual Australian Association of Hotel
Schools (AAHS) Careers Fair at Technology Park, Redfern, Sydney.
Twenty-two students funded their own travel to meet with representatives
of 35 hotels and chains exhibiting at the event, which this year attracted
more than 600 students of member hotel schools. Their initiative was
immediately rewarded with fi rm job offers extended to many on the spot.
Afterwards, the students enjoyed the very generous hospitality of the Four
Seasons Hotel Sydney and the Hilton Sydney, with each provided extensive
public and behind the scenes tours of the facilities and access to the senior
management team in a lavish reception and question and answer session.
Shanghai, China
ICHM’s Manager—Industry Training & Development, Darren Camilleri, sent greetings from
chilly Beijing in February 2008, after catching up with students in China—a relatively new
and popular destination for ICHM interns and graduates.
Both Darren and lecturer Derek Milligan caught up with the interns last year and Darren
is pleased to report that Martin Camp has already been promoted. After completing a
12-month internship at Le Royal Meridien Shanghai (a Starwood property), the offer was
made for him to stay on at the hotel, which he did for six months before winning a position
as Guest Services Manager of the new W Hotel in Hong Kong (also under the Starwood
banner). The property is scheduled to open at the end of July, and Martin will leave Shanghai
in early March and take a short break before starting his new job at W Hong Kong.
Real-life rewards
ICHM’s program of six months on
campus followed by a six-month
internship is modelled on that of
the Swiss Hotel Association which,
for the past 125 years, has been
regarded as the global benchmark in
hotel management training. ICHM
has always recognised academic
achievement in its ceremonies and,
fl agging the signifi cance of highachieving
interns, recognises them
formally too.
Richard says there was a lot of reminiscing,
along with eating, drinking, swimming,
sailing, beach massages and sight seeing.
‘Oh yes, and the wedding and the reception!
The awards are dedicated to the
memory of James Anggang, an ICHM
student who was passionate about
food and wine and who also excelled in
industry as an intern in Adelaide, Uluru
at Ayers Rock in central Australia and in
Malaysia. James’ sister Jayne Anggang
presented the awards.
‘It was the most beautiful setting in the
sand, with a dance fl oor, a live 10-piece
Latin band and huge sand sculptures. Light
clothes and bare feet were the order of the
day, which also added to the charm of the
evening.
‘The food was spectacular, with suckling
pig, Lapu Lapu (local fi sh) and an array of
other local and national dishes. A lot of
local San Miguel beer and Polish vodka were
consumed leading ultimately to a lot more
dancing into the wee small hours.
‘It was a pleasure and a privilege to be there
and enjoy the celebration’, says Richard.
As well as the Philippines, Richard’s study
tour took him to Dubai, Holland and
Malaysia, where he variously visited hotels
and ICHM affi liated colleges and met with
interns, graduates and industry contacts.
the property, his promotion came in just four months. Before that he was at the Amangani
for 18 months, and prior to that the United States Food and Drug Administration, Asia Pacifi c
Offi ce of Leading Hotels of the World and the Observatory in Sydney. The Four Seasons
Director of Rooms Division, John Greene says: ‘Matthew came in and overnight brought
stability to our PBX department. A quick wit, a sharp eye and exemplary communication
skills, he will be a great addition to the Housekeeping team that is in the process of
rebuilding and preparing for a new season. He even has a good working knowledge of
It has been said they sink ships, but
under ICHM’s ‘spread the word’ incentive
scheme talking about ICHM could mean
a healthy reward. Under the scheme,
students and graduates who refer a
friend or family member to ICHM can
make $1000 (for entry in fi rst year) or
$500 (for entry in year two or subsequent
referral must accompany the new the
student application, and can be an email,
letter or on the application form itself.
