CARISMA
3
Target

4
TARGET
Ad-hoc product for the entering the Semi-professional (low-selling HORECA
locations) and Home Barista market segments. These segments offer interesting
business opportunities although they do not currently include the range of models.
In fact, models such as FAEMA “E98” and La Cimbali “M21 Junior” are partially
dated and the quality/price ratio is not appropriate for the market.
Home Barista: The final client is typically an espresso coffee
connoisseur/enthusiast (coffee lover), with technical (alleged or real) competences
and expectations of high quality both for the coffee delivered in the cup and for the
components the machine consists of. The main installation is therefore in private
homes (typically in the kitchen).
Semi-professional: it is usually installed in low-consuming public concerns (pubs,
small community, delicatessen shop, etc.) where coffee is not the primary offer but
an equipment of a certain level and prestige is required.

5
TARGET
The product's prerogatives are similar to those of a traditional machine:
- stainless steel body;
- visible delivery group for “nostalgic” people (derived from E61);
- standard thermal system of the professional machines adapted for medium-low
consumption: an exchanger for water-coffee (no thermo-blocks) goes through the
boiler for services;
- steam wand and water supplier.
Distributive approach: world-wide sale through the official FAEMA network and through
new specialised dealers (among which also e-commerce and shop on-line sites, which are
dedicated to this type of equipment and rely on an assistance network on the territory).
It is mandatory that this model picks up the current sales of some of our distributors who
already operate in such scenarios, although with competitors' products, as they were not
able until now to offer similar-range products of our production.

Technology

32
RUVECO TECK
To prevent the water from coming into contact with heavy metals, Gruppo Cimbali has
signed an exclusive contract with a chemical company for the development of the RUVECO
TECK treatment on some detail features which are used during production.
The treatment consists in the de-leading of brass by means of chemical soaking and the
subsequent coating with an anti-corrosion protective layer.
The RUVECO TECK treatment meets the food specification of the EC 1935 / 2004 directive
and it was approved and therefore listed in the NSF 51 Food Equipment Regulations.
In particular on “Carisma”, the parts with brass are treated and therefore protected (the
boiler's bottom parts, the passing exchanger, the water and steam water taps, as well as the
non-return valve).
The RUVECO TECK treatment is exclusive: it cannot be used by other companies without
prior consent of Gruppo Cimbali.

33
The Smart Boiler technology increases significantly productivity for hot water and steam, by
optimising the filling/topping up of the water in the boiler and the thermal balance. The result is a
quality in the cup without compromises also during peak times.
Standard Boiler
The boiler is filled with fresh
water until the water level
comes into contact with the
level probe.
Smart Boiler
The boiler is filled with small
jets of fresh water every time
the machine is used.
Steam wand to automatically froth the milk, adopted for
the low-consuming segment.
Temperature read by NTC probe.
The frothing time is equal to approximately 30” for 100ml
of milk.
It is possible to program the heating temperature and the
emulsion level (milk cream quantity).
On the terminal part, the air and steam flow output nozzle is made of inert plastic
(which prevents the aggressiveness of the milk crust) and it's easy to replace (by
means of a key). It has 3 holes x Ø0.8mm.
An alternative for the above-mentioned nozzle (for frothing the milk in a jug), a
dedicated nozzle is provided (4 holes x Ø0.6mm) to forth the milk directly inside a
cup.

Product certifications / safety
Regulations: legend
The D marking is a safety trademark which is registered and provided by UL-Demko.
With the EC marking, which is compulsory in the member countries of the EU, the
manufacturer declares that the single product complies with the general regulations regarding
safety included in the EC marking directive.
The UL-EU marking is a voluntary safety marking on products to be used in the European
market. The presence of this brand on a product shows that the representative samples
checked by UL appeared to be compliant with the UL-EU brand requirements. Such
requirements are mainly based on the compliance with the European standards (EN). All
products with UL-EU marking are covered by UL factory inspection program, which verifies
that the finished products and components with the UL-EU marking are constantly produced
in compliance with the service requirements of the UL-EU marking.

44
In Germany, the Ministry of Health and the Consumer Association
have commissioned to DIN (Deutsches Institut für Normung),
which is the German national body for standards, the
development of a voluntary standard whose aim is the
alimentary satisfactoriness of hot drinks supplied by coffee
machines.
DIN
Such standard (DIN10531-2010) came into force from June 2011.
It is unique in Europe, although voluntary, which legislate concretely on the migration of
materials (with very precise and restrictive limits on the transfer of nickel and lead) in
domestic and professional equipment.
Considering the singularity of such law, it is very likely that it will be also taken into
consideration on the occasion of commercial contracts with partners who manage
particularly sensitive markets (chains, hotel structures, etc.) for which it is required, if
available, stricter standards even if they are not harmonised or if they aren't legally valid
yet.

45
“Carisma” complies with DIN10531
Gruppo Cimbali is, among the producers of traditional coffee machines, the
only company in the world whose products comply with the DIN10531
standard, and therefore anticipates the future regulations in terms of limits
in the transfer of materials to food.
Gruppo Cimbali has voluntarily decided to subject "Carisma" to a strict control process
carried out by an external and independent analysis body (Eurofins) in order to verify the
compliance of the machine with the regulation DIN 10531-2010.
At the end of the analysis tests carried out on all (hydraulic) utilities of the machine,
Eurofins has certified that the sampled values with regard to the transfer of lead and nickel
are all below the limits expected by the regulation.
Gruppo Cimbali can produce at any time such results, which were released by Eurofins,
upon specific request.

46
TIFQ (Istituto per la Qualità Igienica delle Tecnologie
alimentari - Institute for Hygienic Quality of Food
Technologies) is a third-party body which certifies the hygienic
quality of machinery that produces food and drinks for human
and consumption according to the European legislation in
force.
TIFQ
Gruppo Cimbali, in order to safeguard its consumers, has
decided to certify its own products with TIFQ . To date, Cimbali
is the only company producing coffee making equipment
with such certification.
Type-approval pending. The type-approval will be obtained after the inspection
visit by the certifying body at the production site of the “Carisma” model.

CARISMA
47
Maintenance

48
Easy maintenance
The display shows important information, such
as the machine's real-time status (cold boiler,
water empty, resistance activation,
instantaneous value of pressure/temperature,
etc.). It also allows the operator to intercept
possible anomalous situations. Unique
characteristics of our machine vs
competitors.
Guaranteed rather rapid accessibility to those
parts needing inspection/checks with regard to
the unavoidable "density" of hydraulic and
electrical parts in a compact cabinet with
reduced dimensions.
These are general considerations, for further details, please refer to ATC Gruppo Cimbali.

49
Replacement water softener filter
The operation can be performed by
the operator without tools.

50
Safety thermostat
Reset boiler safety thermostat (if it goes off to prevent the boiler from operating
without water and the heating resistance from burning).
It can be accessed by extracting the liquids collection bowl and removing the
protection cap; it should be brought back in position (inward).
This operation can also be carried out by the operator
without the use of tools (unique characteristic of our
machine vs competitors).
These are general considerations, for further details, please refer to ATC Gruppo Cimbali.

51
Boiler resistance
Access to the boiler's resistance through the machine's base by removing the
plate, which is fastened with 4 screws, with the data tag.
These are general considerations, for further details, please refer to ATC Gruppo Cimbali.

52
Body removal
Disassembly of body of the machine in 5 minutes:
- move the tank's access cover;
- remove the 2 upper screws that fasten the cups holder shelf;
- remove the 2 rear screws towards the end of the machine (at the sides of the
switch);
- lift vertically the rear gate;
- loosen the 2 screws on the roof;
- loosen (with a key) the 4 bolts on the base;
- at this point, after removing the shell of the machine from the front, it is possible
to fully access the inside (hydraulic and electrical components).
These are general considerations, for further details, please refer to ATC Gruppo Cimbali.

53
Pump
The vibration pump supplies both the coffee circuit (exchanger) and the boiler.
It is fitted with a suitable thermal protection which is activated to prevent possible
burning of the component following operation without water (due to air suction
rather than water).
These are general considerations, for further details, please refer to ATC Gruppo Cimbali.

54
CPU electronic card
The CPU card is installed in a position,
which is immediately behind the display.
To access the card, remove the protection
plastic cover (which is fastened by means of
a screw).
These are general considerations, for further details, please refer to ATC Gruppo Cimbali.

55
Power electronic card
The Power card is installed on the
tank holder element (on the side
towards the inside of the machine).
64
Selling points
+ Boiler response and thermal stability
The boiler temperature sensor, with PID control and electronic
management (acronym of Proportional Integral Derivative, a retro-active
control system that is very common in the industry and very much
appreciated in the Home Barista sector), guarantees maximum reactivity
and instantaneous correspondence between the set temperature and
the actual temperature; whereas the competitors' products have
mechanical pressure gauges installed (with related hysteresis).

65
Selling points
+ Services productivity
The electronic Smart Boiler function (Gruppo Cimbali patent)
minimises the boiler pressure restoration times following repeated
collection of water or steam. The function also makes it possible to
have a top-of-the-range performance despite a more contained boiler
volume (= lower thermal dispersion).

+ Aspects end-user friendly
The LCD display makes it possible to display the machine's parameters
and to modify them through programming.
The LCD alerts if the water in the tank needs to be topped up.
The LEDs associated to the buttons indicate the operating condition of
the machine and the status of the single selection.
The “full bowl” warning visual system alerts in real time if the bowl
needs emptying.

Selling points
+ Automatic milk frothing
The Quicksteam wand (Gruppo Cimbali patent) makes it
possible to froth the milk automatically in the jug or directly
in the cup (by applying an alternative nozzle which comes
already with the machine). The result is a thick and fine
cream at the simple touch of a button.
[available only on the model A1]
