Introduction<br />
It is with pleasure that I introduce our <strong>2013</strong> <strong>Berkeley</strong> <strong>Scott</strong> salary survey, a unique guide to the salaries within the hospitality<br />
and leisure sectors.<br />
This salary survey helps clients to work with us to optimise attraction and retention strategies. It includes in-depth analysis of<br />
market conditions to help undertake the increasingly difficult task of recruiting great candidates and benchmarking existing<br />
employees. With unrivalled local knowledge, <strong>Berkeley</strong> <strong>Scott</strong> can deliver a salary survey like no other, serving as an excellent<br />
point of reference.<br />
The survey is also a good tool for candidates as they look to understand their market worth in an ever changing environment.<br />
To collect the data, we have analysed our own database of placed and active candidates and cross referenced with local<br />
published vacancies, both online and printed media. We continually monitor the local economy and we use our expertise<br />
gained over 27 years to verify the results to produce an accurate snapshot of the industry.<br />
The report covers salaries being paid to staff within the hospitality and leisure sectors throughout the first quarter of <strong>2013</strong>. The<br />
figures quoted are basic salaries, and do not include benefit entitlement or bonuses.<br />

Hotels<br />
General Managers command the highest average salary. London leads with the highest average of £85,000 for this role, with the<br />
South East and South West regions offering an average of £60,000. The Midlands and the North both offer the lowest average pay<br />
of £58,000 for this role.<br />
The highest noted maximum salary in this section was offered for the position of General Manager, £200,000 in London. This role in<br />
London, also offers the widest range of earnings from £50,000 to £200,000.<br />
Operations Managers in London are offered the highest average salary of £50,000. The minimum pay for this job in London is<br />
£30,000, whereas all other regions have minimum salaries that start in the £20,000s. The highest maximum wage noted for this role<br />
is £85,000 and is also located in London.<br />
London unsurprisingly offers the highest average salary for nineteen of the twenty-one roles. The exceptions being the positions of<br />
Events & Sales Co-ordinators (£20,000) and Commis Chef (£15,000) which have the highest average earnings in the North.<br />
The South West offers the lowest minimum pay across the regions for the following roles; HR/Training manager £20,000, Leisure<br />
Club/Spa Manager £17,000, Duty Manager £14,000 and Commis Chef £11,000. The South West, Midlands and the North share a<br />
number of the lowest earnings offered.<br />
The lowest minimum salary noted was for a Commis Chef, £11,000 in the South West. The highest maximum for this junior role is<br />
£16,000 and offered in London. This role has the smallest difference between minimum and maximum pay across all the regions,<br />
with London and the South West offering the largest difference, of just £3,000.<br />
It is worth noting that the salaries are based on all types of hotels therefore the higher salaries are usually given for five star luxury<br />
hotels and large occupancy, with smaller independents and lower star rating hotels offering lower salary levels. All salaries are basic<br />
salaries and do not include additional benefits which are usually given to senior roles, benefits may include, profit related bonus,<br />
share scheme, private pension & medical and car etc.<br />

Restaurants The<br />
role of an Area / Operations Manager have the highest average salaries in London (£50,000), the South East (£42,000) ,the<br />
Midlands (£40,000) and the North (£40,000). This is to be expected of these experienced roles. The highest noted maximum salaries<br />
occur in London, where a Area / Operations Manager receives £100,000 and an Executive Chef receives £70,000.<br />
Area / Operations Managers in London experience the widest range of salaries from a minimum of £38,000 to a maximum of<br />
£100,000, a difference of £62,000. This reflects the wide range of establishments in London, from branded restaurants through to<br />
luxury fine dining.<br />
Unsurprisingly overall, London offer the highest average salary for all of the twelve roles featured, with the South East offering the<br />
next highest average salaries. This is to be expected from these affluent regions.<br />
The lowest paid position is the apprentice role of Commis Chef, which pays £12,000 as a minimum in the Midlands and the South<br />
West, with slightly more in London (£15,000), the South East (£14,000) and the North (£13,000). The salary difference between the<br />
most junior Chef (Commis) to most experienced (Executive) is typically over £20,000 in most regions.<br />
The lowest average salaries for each role are split across the North, South East and South West regions, with each area offering a<br />
mixture of the worst pay for roles.<br />
In the North the following roles offer the lowest salaries across the survey; Area / Operations Manager (£30,000), Pastry Chef (£15,000)<br />
and Supervisor/Head Waiter (£13,000). The lowest average salary for a HR/Training Manager is £28,000, and it is offered in the South<br />
West and the North.<br />
It is worth noting that across the survey branded restaurants tended to offer salaries at the lower end of the scale.<br />

£40,000 in the South East. The maximum offered for this role is £65,000 in London, which is £20,000 more than the lowest maximum<br />
wage noted as £45,000 in the South East. The lowest minimum wage offered for this role is £25,000 in the North. London also has<br />
the widest range between the lowest noted minimum salary for this role of £33,000 and the highest maximum of £65,000, a span<br />
of £32,000.<br />
The next highest paid role is Executive Chef, the highest average is £40,000 which is offered in London. The highest maximum for this<br />
role is also recorded in London; £65,000. The lowest minimum wage for this role is £28,000 which is offered both in the North and the<br />
South West. Unsurprisingly London offers the highest average salary for all the roles in this section.<br />
The North and the South West offer the same lowest average wages for six of the nine roles; Catering Manager (£24,000), Executive<br />
Chef (£35,000), Head Chef (£27,000), Sous Chef (£18,00), Chef De Partie (£16,000) and Commis Chef (£15,000). The North offers the<br />
lowest average salary for the Area/Operations Manager (£32,000) and General Manager (£25,000). And the Midlands and the North<br />
provide the lowest paid average for the role of Chef Manager (£24,000).<br />
The North and the Midlands also offers the lowest minimum wages for six out of the nine roles; Catering Manager (£20,000),<br />
Executive Chef (£28,000), Head Chef (£21,000), Sous Chef (£17,000), Chef De Partie (£14,000) and Commis Chef (£14,000). With the<br />
North offering the lowest minimum salary for Area/Operations Manager (£25,000).<br />
The lowest paid role in this section is for Commis Chef, which offers an average of £16,000 in London and £15,000 in all other regions.<br />

sees the highest maximum paid for this role, £75,000. It also has the largest range between minimum and maximum earnings<br />
(£35,000 - £75,000), a range of £40,000. The next highest average wage for this role is offered in the South East (£45,000). The<br />
minimum salary for this role is offered in the South West, the Midlands and the North at £30,000 per year.<br />
The highest average earnings for a Pub Manager are offered in the London, £31,000. With the South East a little behind, with £28,000.<br />
The lowest average pub manager salary is in the South West, the Midlands and the North at £27,000. The highest maximum salary<br />
noted for this role is £50,000 and based in London, with the South East following with £46,000. The lowest minimum pay offered for<br />
the Pub Manager role is £22,000 in the North followed by £23,000 in the South West & Midlands.<br />
The highest average salary for an Assistant Pub Manager across the regions is £21,000 in London. The highest maximum salary<br />
offered for this role is £25,000 in London. With £8,000 difference between this highest maximum salary which is £25,000 and the<br />
lowest maximum recorded pay, which is £17,000 and is recorded in the South West, The Midlands and the North<br />
The smallest range of salary between minimum recorded salary and maximum noted earning is £7,000. This figure applies to both<br />
the South West, Midlands and the North for the Assistant Pub Manager role; from £16,000 to £23,000.<br />
The North has the lowest minimum salaries, with two roles having the lowest minimum pay of this section; Pub Manager £22,000<br />
and Assistant Pub Manager £16,000. Although the Midlands, the North and the South West also share £30,000, as the minimum<br />

The lowest minimum salary included for the Assistant Store Manager is £14,000, which is the case in the South West and the<br />
Midlands, with the South East a little ahead with £15,500 as the lowest wages for this role.<br />
