other day, discussing the current<br />

with taxable income: the higher it is,<br />

Several types of income are taxed at<br />

gains and qualifying dividends.<br />
“Ordinary income is the income<br />
that can be taxed anywhere from<br />
10% to 35%. This includes wages,<br />
interest income, pension, alimony,<br />
business and many other forms of<br />
income. Those with self-employment<br />
income from a partnership or<br />
sole proprietorship not only have to<br />
pay income tax, but also selfemployment<br />
tax.<br />
“Capital gains are generated by<br />
selling or exchanging certain assets<br />
held for more than one year. Stocks,<br />
bonds, real estate and other ‘capital’<br />
assets held greater than one year are<br />
taxed at 15% if your ordinary tax rate<br />
is 25% or more. If it’s 15% or below,<br />
the capital gains tax rate is 0%.<br />

Catering has always been the cornerstone<br />
of Boss Hawg’s, and the<br />
entire company began, simply<br />
enough as a home-based catering<br />
service. The tiny business grew as<br />
demand did, and the catering (as<br />
well as the restaurant it inspired)<br />
thrived unabated until the unexpected<br />
death of owner Hank Lumpkin in<br />
<strong>20</strong>03, leaving his widow Elizabeth<br />
struggling to run the business alone.<br />
“Catering hasn’t gotten the attention<br />
it deserved since Hank died and my<br />
focus was drawn to the running of the<br />
overall company,” says Elizabeth. “It<br />
has been wonderful to have Janelle<br />
roll up her sleeves and and return our<br />
catering department to the level of<br />
service and professionalism that put<br />
us on the map originally.”<br />
While Elizabeth and Hank shared<br />
the running of the company for<br />
years, and worked together taking<br />
catering calls and insuring the timeliness<br />
of delivery and professional<br />
handling of clients’ needs, the death<br />
of her husband and business partner<br />
meant that Elizabeth was no longer<br />
on the front lines of the catering<br />
department.<br />
“It was a terrible shock when Hank<br />
died, and I didn’t cope very well.<br />
Without an owner detailing every<br />
aspect of catering, clients had to<br />
have felt the loss as well,” says<br />
Elizabeth. “Having Janelle running<br />
catering has brought that owner<br />
mentality back to the catering<br />
department.”<br />
Watching Janelle on a busy day as<br />
the catering calls come in unabated<br />
is truly educational. She juggles<br />
multiple phone lines and numerous<br />
client calls with the expertise of an<br />
experienced executive secretary;<br />
runs last minute changes to Chef Bill<br />
Fuscino in the kitchen to make sure<br />
the clients’ orders are conveyed<br />
accurately; checks in with the staff<br />
packing the order and loading it into<br />
one of the signature pink vans; and<br />
often goes out on caterings herself,<br />
checking in with clients in person to<br />
be sure they are delighted with the<br />
food and service they are getting.<br />
“Without Elizabeth and Hank here,<br />
I knew timeliness of delivery and<br />
accuracy of catering orders had to<br />

have suffered,” notes Janelle.<br />
“Since I had been here since the<br />
beginning of the company, I<br />

catering clients were what made<br />
Boss Hawg’s. She used to say,<br />
‘dance with the one that brung<br />

very existence of Boss<br />
Hawg’s, and Janelle was here<br />
when it all started. That makes<br />
it apropos, somehow, that she would<br />
eventually lead our most critical<br />
department and serve our most<br />
deserving constituency.”<br />

initiated is direct management of inhouse<br />
banquets at Boss Hawg’s.<br />
“We have a great private loft for<br />
banquets and parties,” says Janelle,<br />
“but the restaurant managers who<br />
were handling banquets were being<br />
pulled in so many directions. I felt it<br />
was important to give each banquet<br />
client the same attention as the<br />
catering clients. So I made banquets<br />
my job too!”<br />
