When Operat<strong>in</strong>g Partner’s Paul Fratella and Anthony Guerriero<br />

opened <strong>Caballero</strong>, <strong>the</strong>ir concept was <strong>to</strong> offer a “cul<strong>in</strong>ary experience<br />

at casual d<strong>in</strong><strong>in</strong>g prices.” Br<strong>in</strong>g<strong>in</strong>g dozens of years of experience <strong>in</strong><br />

restaurant management, <strong>the</strong> have struck out on <strong>the</strong>ir most recent<br />

venture <strong>in</strong> Goodyear at 1800 N. Litchfield Road. Located just north<br />

of <strong>the</strong> I-10, it is conveniently 20-30 m<strong>in</strong>utes from down<strong>to</strong>wn or <strong>the</strong><br />

north Phoenix suburbs.<br />

A newly remodeled and redecorated eatery formerly known <strong>to</strong> west<br />

valley residents as McGraths Fish House, <strong>Caballero</strong> sports warm<br />

new colors and an open yet <strong>in</strong>timate d<strong>in</strong><strong>in</strong>g environment for patrons<br />

<strong>to</strong> enjoy.<br />

One of few valley restaurants accept<strong>in</strong>g reservations,<br />

<strong>Caballero</strong> offers generous seat<strong>in</strong>g for large parties of up<br />

<strong>to</strong> 150, a private d<strong>in</strong><strong>in</strong>g room for smaller groups of 35 or a<br />

curta<strong>in</strong> table for that special personal d<strong>in</strong><strong>in</strong>g moment. Offproperty<br />

cater<strong>in</strong>g events can be scheduled for up <strong>to</strong> 400 with<br />

Some of <strong>the</strong> features unique <strong>to</strong> this recently opened<br />

establishment <strong>in</strong>clude a “Ceviche Bar” where one can sit<br />

counter-side and order hand-crafted portions of fish or shrimp<br />

ceviche with a variety of sides <strong>to</strong> taste. Made fresh <strong>to</strong> each<br />

cus<strong>to</strong>mer’s personal design, this is not <strong>to</strong> be missed.<br />

February 19th will mark <strong>the</strong> rollout of <strong>the</strong> “Parts-of-<strong>the</strong>-World”<br />

The menu is simple fare, but not lack<strong>in</strong>g <strong>in</strong> love from Executive<br />

Chef Amanda Miller’s talented cul<strong>in</strong>ary staff. Starters <strong>in</strong>clude<br />

chicken, shrimp and rib-eye quesadilla’s, DeValle Guacamole,<br />

Fried Calamari, Avocado Chimi’s, Fish Taco’s and <strong>the</strong> ever<br />

famous “Manny’s Empanada’s. Salads are generously portioned<br />

and available <strong>in</strong> half sizes for <strong>the</strong> more conservative appetite. Do<br />

not miss <strong>the</strong> <strong>Caballero</strong> Chicken Salad with its superb mix of spicy<br />

ranch dress<strong>in</strong>g, avocado and queso fresco. Sandwiches <strong>in</strong>clude<br />

Burgers, French Dip, Club Sliders and a Cuban with Chipotle<br />

mayo on Sourdough. All are served with a generous portion of<br />

fries add<strong>in</strong>g value <strong>to</strong> your meal experience. The menu truly<br />

sh<strong>in</strong>es <strong>in</strong> <strong>the</strong> available entrée’s. Your choices of Carne Adovada,<br />

Pork Enchiladas, Top Sirlo<strong>in</strong>, Rib Eye, Steelhead Trout, Ahi Tuna<br />

and a host of o<strong>the</strong>rs <strong>in</strong>clud<strong>in</strong>g a vegetarian option will have you<br />

com<strong>in</strong>g back time anytimeaga<strong>in</strong>. A specially designed Kid’s menu<br />

is available <strong>to</strong> satisfy those younger palettes.<br />

The bar service is exceptionally unique, as well. Jason, <strong>the</strong> Chief<br />

Mixologist, has a collection of 6 “hand-crafted” beers and a w<strong>in</strong>e<br />

and cocktail menu that you will not f<strong>in</strong>d <strong>in</strong> most restaurants. The<br />

beer connoisseur can enjoy p<strong>in</strong>t drafts of Dog Fish Seasonal,<br />

Mission IPA, Ludwig Hefeweizen, Full Sail Pale Ale and Coronado<br />

Orange, <strong>in</strong> addition <strong>to</strong> a long list of bottled choices. Hand crafted<br />

cocktails are reasonably priced and <strong>in</strong>clude Pomegranate Lemon<br />

Moji<strong>to</strong>’s, Raspberry Cosmopolitan’s, Long Island Limon,<br />

Strawberry Basil Lemonade, Caballera (House version of a<br />

Hurricane) and Key Lime Pie Mart<strong>in</strong>i’s. The w<strong>in</strong>e list is not your<br />

run-of-<strong>the</strong>-mill selection ei<strong>the</strong>r. Genu<strong>in</strong>ely unique choices make<br />

<strong>Caballero</strong> a rare treat for <strong>the</strong> cus<strong>to</strong>mer who wants <strong>to</strong> enjoy a<br />

special glass or bottle of out of <strong>the</strong> ord<strong>in</strong>ary w<strong>in</strong>es. Selections<br />

<strong>in</strong>clude Californian, Italian, German, New Zealand and<br />

Argent<strong>in</strong>ean choices.<br />
