Several paths are followed to rein<strong>for</strong>ce <strong>the</strong> immune<br />

system. Directly with <strong>the</strong> use of protein fractions or<br />

micro nutrients which increase immunity or<br />

indirectly through actions that improve <strong>the</strong> body’s<br />

function such as digestion.<br />

Rein<strong>for</strong>ce brain and eye development<br />

There is today a general recognition of <strong>the</strong><br />

importance of DHA in visual and neural<br />

development as <strong>the</strong>re is a diminished absorption of<br />

long chain fatty acids in pre-term <strong>infant</strong>s who are<br />

not able to stretch <strong>the</strong>ir fatty acid chains. The<br />

recommended ω6/ω3 ratio being between 5:1 and<br />

DHA and ArA. A secondary benefit of LCPufas<br />

supplementation is to lower blood pressure in later<br />

INTRODUCTION<br />

For eye protection some <strong>for</strong>mula are supplemented<br />

with lutein and zeaxanthin present in mo<strong>the</strong>r’s milk.<br />

Infant digestion improvement<br />

The colons of breast-fed <strong>infant</strong>s tend to be<br />

dominated by bifidobacteria and lactobacilli, whereas<br />

those of <strong>for</strong>mula-fed <strong>infant</strong>s tend to have more<br />

diverse and adult-like microflora. Prebiotics are<br />

employed since <strong>the</strong>y modulate <strong>the</strong> natural ecosystem<br />

by stimulating growth of indigenous microorganisms.<br />

The trend is to target species found in<br />

breast-fed <strong>infant</strong>s as well as <strong>the</strong> prevention of<br />

specific diseases. They may also contain bifidus<br />

bacteria to improve digestion mainly by <strong>the</strong> action of<br />

volatile fatty acids. The most frequent combination is<br />

a mix of 90% GOS and 10% FOS.<br />

Formulae are also thickened with starch in order to<br />

limit <strong>infant</strong> «regurgitation». Maize starch is included<br />

because it is rich in amylopectine, which facilitates<br />

both a speedy and stable thickening of <strong>the</strong> products<br />

during <strong>the</strong>ir presence in <strong>the</strong> acid medium of <strong>the</strong><br />

stomach and a good digestibility. In com<strong>for</strong>t <strong>for</strong>mula<br />

it also improves satiety.<br />

Reduce <strong>the</strong> risk of obesity<br />

Wyeth group has recently decided to reduce <strong>the</strong> level<br />

of protein on <strong>the</strong> recommendations of some<br />

nutritionists, concerned about <strong>the</strong> progression of<br />

obesity during infancy. This move has been<br />

followed by some major companies, thus according to<br />

some research bodies, <strong>the</strong> link between protein and<br />

obesity is not proved and claim that <strong>infant</strong>s from 4-6<br />

months begin to consume protein from sources o<strong>the</strong>r<br />

than milk. Neurotransmitters present in mo<strong>the</strong>r’s milk<br />

could also play a role. Never<strong>the</strong>less, a long term effect<br />

of high protein level on kidney is unknown. It also<br />

creates an unnecessary stress on immature organs.<br />

The trend is to improve <strong>the</strong> amino acid balance. Both,<br />

<strong>infant</strong> and follow-on <strong>for</strong>mulae must contain <strong>the</strong> equal<br />

quantity of essential and semi-essential amino acids<br />

as breastmilk. What is researched is to balance <strong>the</strong><br />

blood amino acid pattern possibly relevant to <strong>the</strong> early<br />

stages of brain development <strong>for</strong> <strong>the</strong> neurotransmitter<br />

function. In that sense, <strong>for</strong>mula can be supplemented<br />

with alpha-lactalbumin which rise <strong>the</strong> level of<br />

tryptophan precursor of serotonine and melatonin and<br />

achieve a plama amino acid profile closer to mo<strong>the</strong>r’s<br />

α-lactalbumin<br />

FUTURE OF HIGH VALUE ADDED INGREDIENTS<br />

Infant <strong>for</strong>mulae, which are derived from bovine milk or whey,<br />

can be supplemented with pure α-lactalbumin to more closely<br />

match mo<strong>the</strong>r’s milk in protein composition.<br />

α-lactalbumin is a main source of tryptophan (5g/100g) and a<br />

good source of branched chained amino acids. It brings<br />

cystein which is not syn<strong>the</strong>tized by newborns and premature.<br />

The major users of α-lactalbumin are Asiatic producers<br />

especially Japanese <strong>for</strong> <strong>the</strong>ir starter and follow-on <strong>for</strong>mulae.<br />

There are very few users of this protein in Europe. Star,<br />

subsidiary of Danone in Italy, adds alfa-lactalbumin in preterm<br />

and starter <strong>for</strong>mula to obtain an amino acids replication<br />

closer to mo<strong>the</strong>rs’ milk.<br />

Lactoferrin<br />

Lactoferrin is most commonly used in Asia and particularly by<br />

Japanese companies, but now extending rapidly to o<strong>the</strong>r<br />

countries.<br />

For some companies, its efficacy has not been established.<br />

Use of lactoferrin seems also to be limited due to its cost.<br />

Many producers feel that <strong>the</strong> resulting increases in ingredient<br />

cost and in retail prices will lessen acceptance among<br />

mo<strong>the</strong>rs. The companies are waiting <strong>for</strong> authorisations and<br />

competitors to make <strong>the</strong> first move.<br />

Nucleotides<br />

Nuclotides are involved in nearly every facet of cellular life.<br />

Specially, <strong>the</strong>y participate in oxidation-reduction reactions,<br />

energy transfer, intracellular signalling and biosyn<strong>the</strong>tic<br />

reactions. Their polymers, <strong>the</strong> nucleic acids DNA and RNA are<br />

<strong>the</strong> primary players in <strong>the</strong> storage and decoding of genetic<br />

in<strong>for</strong>mation. Nucleotides and nucleic acids also per<strong>for</strong>m<br />

structural and catalytic roles in cells. No o<strong>the</strong>r classes of<br />

molecules participate in such varied functions or in so many<br />

functions that are essential <strong>for</strong> life. Wyeth and Abbott were<br />

<strong>the</strong> pioneers in nucleotide supplementation. Today, this use is<br />

extending. Nucleotides <strong>for</strong>m <strong>the</strong> basis of DNA and RNA, are<br />

important in tissues with rapid turnover (<strong>for</strong> example, gut and<br />

immune system) and are metabolic regulators. They promote<br />

<strong>the</strong> immune response.<br />

In Europe, 5 nucleotides are authorized <strong>for</strong> supplementation<br />

in <strong>for</strong>mulae. The major challenge <strong>for</strong> a supplier is its ability to<br />

<strong>for</strong>mulate <strong>the</strong> different nucleotides at <strong>the</strong> required level.<br />

cGMP<br />

Casein glycomacropeptide offers many advantages such as an<br />

enrichment of <strong>the</strong> sialic acid, a growth factor <strong>for</strong> prebiotic, it is<br />

rich in threonine, increases zinc absoption and release <strong>the</strong><br />

satiety hormone; It also allows to reduce <strong>the</strong> protein level<br />

while keeping a same AA profile. Thus, it lacks studies<br />

demonstrating <strong>the</strong> efficiency of <strong>the</strong> isolated molecule vs <strong>the</strong><br />

molecule included in <strong>the</strong> whey matrix.<br />

Pre-term <strong>for</strong>mulae<br />

It's containing DHA use as <strong>the</strong> protein supply WPC60 or up to<br />

83% of concentration <strong>for</strong> some products.<br />

Formula with hydrolysed milk proteins<br />

The Company manufactures its own protein hydrolysates<br />

because it is cheaper and it also facilitates <strong>the</strong> increase of<br />

its own experience in this field. The company also buys<br />

small quantities of protein hydrolysates from external<br />

suppliers, but this ingredient is <strong>the</strong>n more expensive and<br />

can exhibit off-taste.<br />

Soy <strong>for</strong>mula<br />

The protein used is soy isolate. The use of soy concentrates<br />

is not permitted in <strong>the</strong> EU. Several protein fractions such as<br />

alpha-lactalbumin, lactoferrin and caseinoglycomacropeptide<br />

(CGMP) are under investigation in<br />

research programs ‘X’ and ‘X’.<br />

Lactose<br />
