• The Audelo Family's experience
in the world of coffee dates
back to 1874 at the time of
Don Florentino Audelo Jijón,
one of the first four coffee
plantation owners, began the
sowing of coffee in the Coffee
Plantations of Providencia, San
Pablo, Dolores and San Andres
from Oaxaca State's Pluma
Region, and to date they
continue producing organic
specialty coffees highly sought
after at an international level.

We find many varieties
within Arabica coffee, the
most common being:
Bourbon, Mondo Novo
and Pluma hybrid species
born of mixed breed of
Bourbon and Mondo
Novo varieties.
The variety Pluma is a
grain of good size with
very intense smell
between floral and
caramel, good body and
accentuated acidity with
fruit like nuances, very
acceptable to the palate
