Pumpkin and<br />
Coriander<br />
Soup<br />

Ingredients<br />
1kg butternut pumpkin<br />
3 brown onions<br />
1 bunch of coriander<br />
1 tbsp cracked black pepper<br />
1 litre water or vegetable stock<br />
50g butter or 1 tbsp oil<br />
optional 300ml cream<br />
Method<br />
1. Dice pumpkin and onions,<br />
<strong>the</strong>n brown with cracked<br />
pepper on high heat until<br />
onions are soft.<br />
2. Add water and bring to<br />
<strong>the</strong> boil. Simmer for 15<br />
minutes.<br />
3. Remove from heat, add<br />
coriander and blend.<br />
4. Garnish with coriander<br />
leaves and serve.<br />
5. Optional: add 300ml of<br />
cream, blend, <strong>the</strong>n garnish<br />
with coriander and serve.<br />
