1. Introducti<strong>on</strong><br />

1.1.lndia<br />

India has a total coastline of about 8129 km al<strong>on</strong>g <strong>the</strong> East <strong>and</strong> West Coasts.<br />

The c<strong>on</strong>tinental shelf area is 0.512 milli<strong>on</strong> Sq k.m. with an exclusive ec<strong>on</strong>omic z<strong>on</strong>e of<br />

20.2 lakh sq. km (An<strong>on</strong> 1993a). India ranks seventh in <strong>the</strong> marine fish producti<strong>on</strong> <strong>and</strong> 2 nd<br />

in <strong>the</strong> inl<strong>and</strong> fish producti<strong>on</strong> in <strong>the</strong> world. The total active fisherman populati<strong>on</strong> is 5.5<br />

milli<strong>on</strong> <strong>and</strong> about 6.8 milli<strong>on</strong> people are employed in fishing <strong>and</strong> related activities. The<br />

fishing activities are carried out in <strong>the</strong> West <strong>and</strong> East Coasts. According to Diwan (2000)<br />

harvestable marine resource in EEZ was estimated as 3.93 t<strong>on</strong>nes <strong>and</strong> c<strong>on</strong>sists of 2.02<br />

milli<strong>on</strong> t<strong>on</strong>nes of demersal, 1.67 milli<strong>on</strong> of pelagic fishes <strong>and</strong> 0.24 milli<strong>on</strong> of oceanic<br />

resources. M<strong>on</strong>so<strong>on</strong> seas<strong>on</strong> from June to August l<strong>and</strong>s pelagic <strong>and</strong> crustacean fishes.<br />

The general catch compositi<strong>on</strong> is predominated by pelagic fishes (45%) followed by<br />

demersal fishes (41%) crustaceans (12%) <strong>and</strong> cephalopods (2%) (An<strong>on</strong>, 1997).<br />

1.1.2. Fish utilisati<strong>on</strong><br />

The utilisati<strong>on</strong> of fish depends <strong>on</strong> <strong>the</strong> type of fish l<strong>and</strong>ed. The fish l<strong>and</strong>ing during<br />

1997, 1998 <strong>and</strong> 1999 2001 <strong>and</strong> 2002 in India was mackerel 8.2, 6.64, 8.62, 3.87 <strong>and</strong><br />

3.62 % ribb<strong>on</strong>fish; 6.41, 4.26, 5.12, 7.56 <strong>and</strong> 7.41 % <strong>and</strong> shark 1.64, 1.78, 1.71, 1.49<br />

<strong>and</strong> 1.40 % in <strong>the</strong> respective years of <strong>the</strong> total catch (An<strong>on</strong>., 1999, 2000b, 2003a). Most<br />

of <strong>the</strong> fishes l<strong>and</strong>ed (66 %) are c<strong>on</strong>sumed in fresh c<strong>on</strong>diti<strong>on</strong>, 16 % is used for drying or<br />

curing, <strong>on</strong>ly 7 % is used for freezing <strong>and</strong> 1 % is used for canning. The per capita<br />

c<strong>on</strong>sumpti<strong>on</strong> of fish is 3.3 kg in 1997 (An<strong>on</strong>., 1997). The current per capita c<strong>on</strong>sumpti<strong>on</strong><br />

is 10 kg / annum <strong>and</strong> 56 % of <strong>the</strong> Indian populati<strong>on</strong> is fish c<strong>on</strong>sumers (Diwan, 2000).<br />

The total quantity of dried items exported during 2000 - 01 was 7532.21 t<strong>on</strong>nes <strong>and</strong><br />

value was 7022.15 Rs in lakh, of which 4.91 % was dried shark <strong>and</strong> 52.64% was dried<br />

fish. The total quantity of dried items exported during 2001 - 02 was 8306.69 t<strong>on</strong>nes <strong>and</strong><br />

value was 6795.54 Rs in lakh, of which 1.69% was dried shark <strong>and</strong> 39.89% was dried
