Phil’s BBQ in Point Loma will again team with the Big Brothers, Big Sisters program to host a tailgate barbecue and
Padres game event on May 17 to raise money for the “Operation Bigs” project. COURTESY PHOTO
For an hour every Tuesday, 22-year-old UCSD student Chad Black hangs out with 8-year-old
Jaden at the Point Loma Gateway Youth Recreation Center. They shoot hoops, throw the
football around and skateboard. They’re not family, though. Black is Jaden’s volunteer Big

Brother.
On Monday, May 17, Big Brothers, Big Sisters and families of all kinds are invited to a tailgate
barbecue and Padre’s game fundraiser in support of Big Brothers, Big Sisters of San Diego
County’s “Operation Bigs.” The program matches adult mentors like Black with children of
deployed military parents like Jaden, whose father is in the Navy.
While other children might be occupied watching television or playing video games, Black said he
gets a chance for brotherly time with his Little Brother.
“I’ve always been the younger brother, so I’ve never been an older brother. I’m very conscious of
the fact that I’ve been given more than other people and I’ve always been taught that it’s
important to give back,” Black said.
By partnering with Phil’s BBQ, event coordinators hope to raise $50,000 for “Operation Bigs”
during the second annual BBQ at the Ballpark campaign. Last year, Phil’s (3750 Sports Arena
Blvd.) helped raise about $40,000 for the program, said Chad Glidewell, sales director for Phil’s
BBQ.
“We’re hoping for the same [turnout] this year,” Glidewell said. “We give about 1,000 tickets to
the Big Brother’s and Big Sisters and Little Sisters ... we buy them all tickets to the game.”
For $25, participating Padres fans can dine on Phil’s barbecued ribs, chicken and side dishes
during the May 17 tailgate party at Qualcomm Stadium from 5 to 7 p.m. before watching the
Padres battle the San Francisco Giants. Glidewell said 100 percent of the proceeds will flow to
the Big Brothers, Big Sisters Operation Bigs program in support of Military Appreciation Month,
which falls during May.
Since the program to support military families was started in 2004, “Operation Bigs” has provided
350 children with a one-on-one adult mentor. Mentors spend up to an hour and a half a week at
various schools or facilities like the Point Loma Gateway Youth Recreation Center. Tickets for
the May 17 event can be purchased at Phil’s BBQ or through the Big Brothers, Big Sisters
website at www.bbbs.org.

The following is a story about a Filipino Big Brother Sonny and his little David:
David was not a person who was wild about venturing toward the deep-end of a pool until he
met his Big Brother, Sonny, an active Navy reservist. When David, now 15, was younger, he
jumped in the pool and sank straight to the bottom. It was a traumatic experience that kept
him away from the water. David wanted to face his fears and bravely asked his Big Brother
for help. They went to a community pool and Sonny asked the lifeguard for a corner of the
pool that they could have to themselves. Sonny gradually led David into the water, starting on
the ladder and once he was able to let go, he realized he wasn't sinking. Sonny coaxed David
into jumping into the water, by diving in himself, and waiting patiently for David to give it a
try.
"First I panicked, then the second time I jumped it worked. Sonny was right there to catch
me, so I knew I wouldn't drown," David said.
Sonny watched and cheered as David's confidence slowly increased.
"After a couple hours of practice, I said I'd buy him a set of fins if he swam 25 feet to the
rope, it didn't take long and he had earned them," said Sonny.
Now these two can be found at a Sports Bigs wakeboarding clinic on the weekends, jumping
in the deep blue bay!
"The best part about being a Big Brother is seeing his progress and the influence I'm able to
have in his life,” Sonny said. “Before he would barely talk and only gave one word answers,
now he opens up, tells a whole story and won't stop talking. He used to sit at home a lot, but
now he is going out with his friends more and his social skills have really improved."
David said, "Sonny always tells me not to give up, 'cause if you give up now, then you will
end up giving up in life. Before I met Sonny, I had lots of problems. I know life can be tough,
but Sonny has taught me how to still have fun while growing up. I want to follow in his
footsteps."
Operation Bigs is more important than ever with nearly 900,000 troops with children have
deployed to war since 2001. Operation Bigs is the first program of its kind in the nation and
has received public approval by California’s First Lady Maria Shriver. Volunteers spend time
with a child, one hour a week, playing sports or computer games, reading, crafts, etc, and
give that individual attention that can enhance the children’s academic and social
development. Currently, Operation Bigs runs at five elementary schools on or near Camp
Pendleton in Oceanside, CA. There is a 2010 expansion which includes service to Coronado,
Point Loma, Linda Vista and MCAS Miramar.

Big Brothers Big Sisters of San Diego County has been providing trusted mentors to San
Diego’s children since 1961. Big Brothers Big Sisters helps vulnerable children beat the
odds. The organization depends on donations to help recruit and screen volunteers and reach
more children. Funding is used to ensure child safety and provide ongoing support for
children, families and volunteers to build and sustain long-lasting relationships. Big Brothers
Big Sisters is proven to increase children’s odds of succeeding in school, behaving
nonviolently, avoiding drugs and alcohol, and breaking negative cycles.
The organization serves children ages 7-18 through six distinct programs: Amachi (a program
for children with an incarcerated parent), Bigs in Schools & High School Bigs (after school
1:1 mentoring at school sites), Community Mentoring (the traditional 1:1 mentoring
program), Operation Bigs (a program serving children whose active military parents are
deployed), and Sports Bigs (a sports and active lifestyle focused mentoring program). For
Costco test-markets barbecue icon's sauce
BY LORI WEISBERG, UNION-TRIBUNE STAFF W RITER
When Costco came calling a year ago to see if barbecue meister Phil Pace might be interested in selling his
restaurant’s already well-known sauce in local stores, the timing couldn’t have been better.
Pace, whose eponymous restaurant, Phil’s BBQ, was already in the midst of trying to mass-produce gallons of
the stuff to satisfy the ravenous appetites of his more than 20,000 weekly customers, decided to give the big-boxretailing
venture a try.
Two-bottle packages of the tangy-sweet, slightly spicy condiment hit the shelves last weekend at six of the 12
local Costcos in a test to see how well they sell. While Costco representatives wouldn’t comment on the
partnership, Pace reported that sales were especially brisk in at least one of the stores, and he’s hoping his
restaurant will be able to deliver additional truckloads throughout the year.
“Costco had this initiative to get more local products on their floor, and a lot of the people who work at Costco
were big fans of our sauce,” said Pace, who co-owns Phil’s with partner Jeff Loya. “We had talked about (bottling)
it ourselves even before Costco gave us a call.”
Six days a week, it’s not uncommon to see hungry diners lining up outside the Point Loma restaurant to get their
barbecue fix. Formerly located in Mission Hills, Phil’s has been operating in San Diego since 1998.
While the restaurant goes through about 250 to 300 gallons of sauce a day, it used to have only one machine
capable of producing 200 gallons over a two-hour period. Given its plans to open a second store later this year in
San Marcos, Phil’s two years ago initiated the complex process of replicating the barbecue sauce in mass
quantities off site. The original Phil’s recipe was first refined at a research facility in Chicago to tailor it for much
larger batches. The sauce was then made in Texas and bottled at a plant in Wisconsin.

Rest assured that the sauce contained in the 29.5-ounce bottles customers buy at Costco is identical to what’s
slathered on all those baby-back ribs and pulled-pork sandwiches served at Phil’s, Pace said.
“This is a great opportunity, and we were flattered they called us,” he added. “But it’s taken a year to accomplish
this. It’s a truckload at a time.”
The initial delivery to Costco was 4,320 two-bottle packages for all six stores. Twice that quantity, however, was
manufactured for Costco in case brisk sales translate into increased demand, said Fred Glick, vice president of
operations for Phil’s. The bottled sauce is also sold at the restaurant, but at a slightly higher price than at Costco.
“The test is for this summer, and based on the success of the first few stores, they’d roll it out in their remaining
locations in San Diego County,” Glick added. “It will be a year-round item, but we thought summertime would be
a good time to test it.”
While Costco wouldn’t comment on what other locally sourced products it’s trying to put on store shelves, it has
offered various San Diego-made food items over the years. Among them are sausages from Tarantino, a
wholesale food distributor, and hummus from Oasis Naturals.
Although mass retailing of a restaurant’s specialties can raise its profile, it’s not necessarily a huge moneymaker,
said restaurant consultant John Gordon of San Diego-based Pacific Management Consulting Group.
“It’s providing Phil’s additional visibility in hopes that maybe he could do more products, like coleslaw or
barbecued ribs,” Gordon said. “It’s the hope for product extension. We already all know what Phil’s is.”
Big Brother Steve Sikorski and his little buddy Brant, 9.
Last fall, 8-year-old Draven, who suffers from low self-esteem, gave up easily when playing
on his soccer team.
After hanging out with Will Downing, his 25-year-old volunteer Big Brother for an hour
every Wednesday, Draven is eager to join a football team this summer.
On Monday, Big Brothers Big Sisters of San Diego County, Phil’s BBQ and the San Diego
Padres will host the second annual “BIG BBQ at the Ballpark.” The tailgate barbecue and
baseball game event will help raise funds for Operations Bigs, the military mentoring arm of
Big Brothers Big Sisters, which serves children with a deployable parent like Draven, whose
father is in the Navy.
Draven’s mother Liz May said her son’s counselor recommended that he join the Operation
Bigs program. His father returned from his deployment last September, but is leaving for
Virginia for military schooling on Tuesday.
“I have seen a big difference in Draven since he’s done the program,” said May, who was
also in the Navy for 12 years. “He’s more optimistic about a lot of things. He tries harder.”
Downing agrees with Draven’s progress.
“He’s more outgoing now,” Downing said. “He’s not scared to do new things.”
Operation Bigs is a site-based mentoring program located at five elementary schools on base
at Camp Pendleton. Since 2004, the program has served almost 500 children ages 7 to 12.
Once an adult mentor is matched with a child, the pair meets for one hour each week for
outdoor activities, indoor games, homework or sharing.
“These one-to-one friendships make a positive impact, which is seen in the increase in a
child’s self-confidence and in the improvement in their relationships with family, teachers
and peers,” said Amy Benson, the program director at Big Brothers Big Sisters of San Diego
County. “They stop acting out in school and they are less emotional at home. Their outlook
on life changes, and they begin seeing themselves and their lives in a more positive way.”
Brant Parrott-Carriker, who is turning 9 years old on Saturday, wanted to join the program so
he could play outdoor sports with others while his father was deployed to Afghanistan.

“It’s fun, because when I get to play with Steve it’s like I have a big friend to watch over me
when I’m hurt or when I’m sad,” he said.
Brant’s Big Brother Steve Sikorski has worked with three children since signing up for the
program four years ago. As the son of a Marine and a former Marine himself, Sikorski said
he knows what the children of deployed parents go through.
“I got involved with these kids because I saw a need,” said Sikorski, who is 62 years old. “I
remember when my dad was deployed, how hard it was on my mom. I know that when
Marines go off to war and troops are deployed, behind they leave families and kids and a lot
of times we just forget about those families and kids.”
The rest of the San Diego community has an opportunity to give to military families, too.
Last year, the fundraiser garnered $39,000 for the program. Organizer are hoping to match, if
not exceed, last year’s funds.
“A large portion of our customer base is military,” said Chad Glidewell, sales director for
Phil’s BBQ. “We felt it necessary to give back. Since they support us, we would like to
support them.”
Tickets are $25 per person, and all proceeds will directly benefit Operation Bigs. Event
tickets can be purchased at Phil’s BBQ or on the Big Brothers Big Sisters website at
