Not many people expect to meet their true
love during a hard days work, but that is exactly
what happened to Erin Adame and Quincey
Oncken. Erin, 23, works at Gold’s Gym where
she challenges and inspires her clients in her role
as a personal trainer. She initially met her soonto-be
husband, Quincey, 25, when she worked
as the gym’s receptionist. Quincey, a custom
cabinetry carpenter and a daily gym visitor, soon
found himself building up the courage to ask Erin
out on their first date. After many attempts on
Quincey’s part, and many date cancellations from
Erin, the two finally enjoyed dinner together at
the Gristmill in Gruene. As their relationship
progressed, it became clear to the couple that they
would spend their lives together.
On Valentine’s Day, Quincey prepared for a
memorable proposal. After a romantic dinner on
the Riverwalk, Quincey led Erin into a rose petal
and balloon adorned ballroom, where he dropped
to one knee and asked Erin to be his wife. >>
The bride and groom chose to say their vows
at a chapel on Randolph Air Force Base, Erin’s
family is military and the Randolph Chapel
proved to be the perfect location for their
ceremony. The reception and dinner followed at
Rio Cibolo Ranch.
From start to finish, each detail or the wedding
and reception was successfully performed due to
the diligent planning of the bride and her mother,
Beth CariBari-Craig. One special detail the
guests enjoyed was a unique guest book created by
Goen South Photography which featured various
pictures of the couple. In fact, book was so nicely
arranged that guests were hesitant to write on it!
Another distinctive detail was the bride’s
unusual gift to her groom; Erin gave Quincey a
baseball cap with their wedding date embroidered
on it. While a baseball cap is an unexpected
accessory for a wedding, it emphasized the funloving
personalities of the couple.
Highlighting her special relationship with her
mother, Erin chose to be escorted into the church
by her mom. As they descended the aisle, Erin’s
exquisite taste was reflected in her gown and shoes
each of which featured shimmering crystals and
ornate detail. Erin’s dress was also adorned with a
ladybug pendant that served as a reminder of her
beloved grandmother. >>
Surrounded by 200 of their closest friends,
Erin and Quincey were joined as husband and
wife, but also wanted to do something special
for Erin’s new son-to-be, Cody (7). Emphasizing
their unity, Erin and Quincey clasped a replica
of necklaces they had previously given each other
around the neck of their son. Excited and proud,
Cody was later heard announcing, “We are a
family now!”
Following the ceremony, guests departed for
Rio Cibolo Ranch which provided a genuine
Texas-feel for the reception. Guests were greeted
with the view of beautifully arranged gladiola
centerpieces designed by the bride and her
mom. “Erin and I designed the centerpieces,”
said the mother of the bride, “but it was really
Katherine with Rio Cibolo Ranch that made sure
all the centerpieces were created and placed on
each table. Katherine was wonderful and made
the experience at Rio Cibolo that much more
enjoyable.”
Guests found themselves enjoying good food,
hand-selected music, and even a slideshow
presentation of Erin and Quincey as they were
growing up. At the end of the evening, guests
held sparklers in the air as a way to light the
future for the new couple. The bride and groom
departed in a 1970 Chevy which was the same
truck the groom’s parents had departed in from
their wedding. The couple left knowing that
their wedding was a special reflection of their
commitment to each other and a memorable
event for those closest to them.
