<strong>Erin</strong> <strong>Adame</strong> & <strong>Quincey</strong> <strong>Oncken</strong><br />

Not many people expect to meet their true<br />

love during a hard days work, but that is exactly<br />

what happened to <strong>Erin</strong> <strong>Adame</strong> and <strong>Quincey</strong><br />

<strong>Oncken</strong>. <strong>Erin</strong>, 23, works at Gold’s Gym where<br />

she challenges and inspires her clients in her role<br />

as a personal trainer. She initially met her soonto-be<br />

husband, <strong>Quincey</strong>, 25, when she worked<br />

as the gym’s receptionist. <strong>Quincey</strong>, a custom<br />

cabinetry carpenter and a daily gym visitor, soon<br />

found himself building up the courage to ask <strong>Erin</strong><br />

out on their first date. After many attempts on<br />

<strong>Quincey</strong>’s part, and many date cancellations from<br />

<strong>Erin</strong>, the two finally enjoyed dinner together at<br />

the Gristmill in Gruene. As their relationship<br />

progressed, it became clear to the couple that they<br />

would spend their lives together.<br />

On Valentine’s Day, <strong>Quincey</strong> prepared for a<br />

memorable proposal. After a romantic dinner on<br />

the Riverwalk, <strong>Quincey</strong> led <strong>Erin</strong> into a rose petal<br />

and balloon adorned ballroom, where he dropped<br />

to one knee and asked <strong>Erin</strong> to be his wife. >><br />

The bride and groom chose to say their vows<br />

at a chapel on Randolph Air Force Base, <strong>Erin</strong>’s<br />

family is military and the Randolph Chapel<br />

proved to be the perfect location for their<br />

ceremony. The reception and dinner followed at<br />

Rio Cibolo Ranch.<br />

From start to finish, each detail or the wedding<br />

and reception was successfully performed due to<br />

the diligent planning of the bride and her mother,<br />

Beth CariBari-Craig. One special detail the<br />

guests enjoyed was a unique guest book created by<br />

Goen South Photography which featured various<br />

pictures of the couple. In fact, book was so nicely<br />

arranged that guests were hesitant to write on it!<br />

Another distinctive detail was the bride’s<br />

unusual gift to her groom; <strong>Erin</strong> gave <strong>Quincey</strong> a<br />

baseball cap with their wedding date embroidered<br />

on it. While a baseball cap is an unexpected<br />

accessory for a wedding, it emphasized the funloving<br />

personalities of the couple.<br />

Highlighting her special relationship with her<br />

mother, <strong>Erin</strong> chose to be escorted into the church<br />

by her mom. As they descended the aisle, <strong>Erin</strong>’s<br />

exquisite taste was reflected in her gown and shoes<br />

each of which featured shimmering crystals and<br />

ornate detail. <strong>Erin</strong>’s dress was also adorned with a<br />

ladybug pendant that served as a reminder of her<br />

beloved grandmother. >><br />

Surrounded by 200 of their closest friends,<br />

<strong>Erin</strong> and <strong>Quincey</strong> were joined as husband and<br />

wife, but also wanted to do something special<br />

for <strong>Erin</strong>’s new son-to-be, Cody (7). Emphasizing<br />

their unity, <strong>Erin</strong> and <strong>Quincey</strong> clasped a replica<br />

of necklaces they had previously given each other<br />

around the neck of their son. Excited and proud,<br />

Cody was later heard announcing, “We are a<br />

family now!”<br />

Following the ceremony, guests departed for<br />

Rio Cibolo Ranch which provided a genuine<br />

Texas-feel for the reception. Guests were greeted<br />

with the view of beautifully arranged gladiola<br />

centerpieces designed by the bride and her<br />

mom. “<strong>Erin</strong> and I designed the centerpieces,”<br />

said the mother of the bride, “but it was really<br />

Katherine with Rio Cibolo Ranch that made sure<br />

all the centerpieces were created and placed on<br />

each table. Katherine was wonderful and made<br />

the experience at Rio Cibolo that much more<br />

enjoyable.”<br />

Guests found themselves enjoying good food,<br />

hand-selected music, and even a slideshow<br />

presentation of <strong>Erin</strong> and <strong>Quincey</strong> as they were<br />

growing up. At the end of the evening, guests<br />

held sparklers in the air as a way to light the<br />

future for the new couple. The bride and groom<br />

departed in a 1970 Chevy which was the same<br />

truck the groom’s parents had departed in from<br />

their wedding. The couple left knowing that<br />

their wedding was a special reflection of their<br />

<strong>com</strong>mitment to each other and a memorable<br />

event for those closest to them.<br />
