Sticky Date Pu<strong>dding</strong><br />

A variation on this very popular winter dessert, pieces<br />

of date have been encased in a soft and buttery<br />

caramel centre, topped off with another piece of date<br />

then generously coated in our premium milk ch<strong>ocolate</strong>.<br />

Emma Barrie is our Quality Assurance Technician and it’s her job to make sure<br />

that every ch<strong>ocolate</strong> that leaves the factory is up to the exceptional standards and<br />

premium quality that our customers have come to know and expect.<br />

On a busy day, the Quality Assurance team of<br />

taste-testers at our Parkside factory may sample<br />

30-40 products. The team consists of Emma,<br />

one member of the Research and Development team<br />

plus a rostered staff member. Tasting starts at 9am<br />

to check the batches made the day before.<br />

Right now you could be thinking ‘Wow! Eating<br />

ch<strong>ocolate</strong>s all day? That sounds like my dream<br />

job!’ But while it might sound pretty easy,<br />

there’s quite a science to this job, as Emma<br />

explains.<br />

“We look at the tempering — making<br />

sure the product has a stable structure,<br />

to make sure it lasts. The ch<strong>ocolate</strong><br />

should be glossy and have a snap<br />

when you crack it, be cool on your<br />

tongue, nice and smooth if it’s meant<br />

to be smooth, crunchy if it’s meant<br />

to be crunchy. We check the colour of<br />

the centres, the hand marking, labels,<br />

ingredients list, packaging, everything. If, for example,<br />

the ch<strong>ocolate</strong> coated almonds aren’t shiny enough<br />

we’ll send them back for repolishing.”<br />

Emma holds a Diploma of Food Science and<br />

Technology, Certificate 4 in Frontline Management<br />

and is currently completing her Diploma of Quality<br />

Management. Her job is to ensure the premium<br />

quality of our products at all times — from the<br />

second we get the ingredients in, to the moment<br />

the finished products leave the factory for delivery<br />

to Haigh’s stores.<br />

The Quality Assurance team is also responsible for<br />

liaising with the stores and responding to customer<br />

queries, for example about ingredients. Part of<br />

Emma’s role involves writing up all the detailed work<br />

instructions for the manufacturing procedures and<br />

keeping a keen eye on production at all stages of<br />

the process.<br />

Since she joined Haigh’s 20 months ago, Emma’s also<br />

become very good at cutting ch<strong>ocolate</strong>s into 8 pieces<br />

so she doesn’t eat as much. And she’s joined a gym<br />

so she doesn’t feel so guilty!

There’s nothing better than enjoying a delicious piping<br />

hot ch<strong>ocolate</strong> on those chilly winter days especially<br />

with a marshmallow. Our Drinking Ch<strong>ocolate</strong> comes<br />

in 2 flavours:<br />

1 Premium Drinking Ch<strong>ocolate</strong><br />

Made from a special blend of cocoa beans, carefully<br />

roasted and refined to create a velvety-flavoured,<br />

rich beverage.<br />

2 Spiced Drinking Ch<strong>ocolate</strong><br />

Made with premium cocoa beans and blended<br />

with exotic spices from around the world including<br />

cinnamon, cloves, cardamom and star anise. Its rich<br />

Traditional butter shortbread biscuits enriched with<br />

They’re extremely popular with both locals<br />

and tourists — have you taken a tour yet?<br />

Haigh’s Visitor Centre is located on the edge of<br />

Adelaide’s parklands, just a couple of minutes’ drive<br />

from the city centre. Join us for a free 20 minute Viewing<br />

Tour where you’ll get to hear about Haigh’s, its 98 year<br />

history and making our ch<strong>ocolate</strong> from cocoa beans.<br />

See how we make some of our delicious ch<strong>ocolate</strong>s and<br />

watch the expert hand-dipping of our famous truffles.<br />

After your tour, you can enjoy special ch<strong>ocolate</strong><br />

tastings and complimentary coffee or tea. Choose from<br />

an extensive range of factory-fresh ch<strong>ocolate</strong>s and<br />

confectionery including our famous ch<strong>ocolate</strong> frogs,<br />

truffles, fruit centres, fudges, bars and more. Special<br />

lines and some ch<strong>ocolate</strong> seconds are also available.<br />

Tour bus groups, schools, families, sporting and social<br />

clubs are all welcome. We do get very busy so bookings<br />

are essential, especially during school holidays.<br />

Community<br />

This model<br />

suits us to a T<br />

Chances are, you may have seen a 1912 Model T Ford<br />

getting around on occasion, with signwriting on the side<br />

advertising Haigh’s Original Fruits. It’s a replica of the<br />

delivery van we used way back in the 1920s.<br />

The owner and restorer of this meticulous vehicle is Allan Bennett of Gawler,<br />

in South Australia’s Barossa Valley. And because he’s as proud of his car as<br />

we are of our ch<strong>ocolate</strong>s, ours is the perfect partnership.<br />

Se<strong>lf</strong> <strong>Saucing</strong><br />

Pu<strong>dding</strong><br />

This ch<strong>ocolate</strong> pu<strong>dding</strong> is classic winter comfort food.<br />

Rich and delicious, it's best enjoyed on a cold evening<br />

served with cream or ice cream. Quick and easy to prepare.<br />

Since 1995, Allan has given us the opportunity to advertise on his Ford. He’s<br />

won a swag of state, national and international awards for his excellent restoration<br />

and we get great exposure in the many veteran car events around the country<br />

including the Bay to Birdwood, the Kernewek Lowender Cavalcade of Cars,<br />

the National Model T Ford Rally and more.<br />

The ‘Haigh’s Ch<strong>ocolate</strong> Van’ has become well known in both Adelaide and<br />

Melbourne streets and outside our stores in particular, where it always draws<br />

a crowd. Everyone, from our customers and the general public, to motoring<br />

enthusiasts are keen to get a good look at this gem of a vehicle and to have<br />

a chat with Allan, who’s more than happy to show off his pride and joy.<br />

In the lead-up to Easter this year, Allan was very excited to finally bring his car<br />

to Sydney to drive through the streets and then feature inside the beautiful Queen<br />

Victoria Building specially for our new store. He then drove down to Melbourne<br />

to spend time at our Hawthorn and Rialto stores before heading back home.<br />

Ingredients:<br />

• 100g <strong>Haigh's</strong> Dark<br />

Ch<strong>ocolate</strong> Couverture<br />

• 50g butter, chopped<br />

• 1/2 cup of milk<br />

• 3/4 cup se<strong>lf</strong> raising flour<br />

• 1 cup brown sugar<br />

• 1/3 cup cocoa powder<br />

• 1 1 /2 cups boiling water<br />

Method:<br />

• Preheat oven to 180 degrees C.<br />

• Combine ch<strong>ocolate</strong>, butter and<br />

milk in a medium heatproof bowl<br />

and microwave on high for 1 to 2<br />

minutes, stirring occasionally until<br />

smooth.<br />

• Combine flour, 1 /4 cup brown<br />

sugar and ha<strong>lf</strong> of the cocoa<br />

powder in a medium bowl.<br />

• Stir in ch<strong>ocolate</strong> mixture then<br />

pour mixture into a 6 cup capacity<br />

heatproof bowl or dish.<br />

• Combine the remaining brown<br />

sugar and the remaining cocoa<br />

in a small bowl and sprinkle over<br />

pu<strong>dding</strong> mixture.<br />

• Carefully pour the boiling water<br />

(over the back of the spoon)<br />

over the topping.<br />

• Microwave uncovered on medium<br />

for 5 minutes.<br />

• Remove and bake in the oven for<br />

about 15 minutes.<br />

• Serve pu<strong>dding</strong> with cream or<br />

ice-cream and grated ch<strong>ocolate</strong><br />

on top.<br />
