There’s nothing else like it on earth! It’s been attempted by several other breeds but the Herefords are the 

only ones who have successfully “staged” their animals for sale on a real-live casino stage. For 35 years the 

Western Nugget National Show and Sale has been held in Reno, NV with the sale held at John Ascuaga’s 

Nugget Hotel & Casino. Just an hour after the Herefords left this stage, it was cleaned up and ready for a Mel 

Tillis concert!

Black Hills Stock Show Award Recipients 

This year’s Black Hills Stock Show Award 

Recipients have been chosen and one of the 

Hereford industry’s own, Art Handel from Rapid 

City, SD, is one of those selected. He was chosen 

as the BHSS Agri-Business Person of the Year. 

Also receiving awards are Jon Harrington, 

Stockman of the Year and Mae and Marvin Maude 

as the Hall of Fame “Silver Spur” recipients. 

The Black Hills Stock Show will be held in Rapid 

City, SD, January 25 through February 5. The 

Hereford Show is on February 1 with the awards 

banquet that evening. 

Award winners are chosen on the following 

criteria: 

Agri-Business Person of the Year: The 

selection for the Agri-Business Person of the Year 

is based on that business or person who has 

demonstrated long term commitment to the health 

and vitality of the agricultural market. They may 

participate in Stock Show activities beyond business 

sense in that they may be a sponsor or a volunteer 

serving to improve the Black Hills Stock Show.

sharing his photo of the icy mailbox. Eastern 

SD was hit with a winter storm in December 

that virtually shut down half the state for at 

least a week. Some people were without 

electricity for close to two weeks.

is that food can be imported cheaply so 

why look after our own producers. 

Insofar as the environment is concerned 

the fact that we cannot have a lovely 

green countryside without cattle and 

sheep grazing the grass is just beginning 

to strike home but so far nothing 

positive has appeared. 

Having said all that the Hereford breed 

is probably doing better than the other 

beef breeds. This can be attributed to 

1. the fact that a number of dairy 

farmers have sold out of dairy cows 

and want something easy to keep, easy 

to calve and that produces a saleable 

calf and 2. we have a Hereford Beef 

scheme with an upmarket supermaket 

which requires all animals to be sired 

by a registered pedigree Hereford bull 

to be eligible. As a result of this 

membership of the Hereford Cattle 

Society has increased and with the 

transfer of pedigrees and more calves 

being registered the Society is in good 

sound condition. Many of the new 

members are what we call hobby 

Farmers because they are not dependent 

on the cattle to keep them financially. 

As a result of advancing years I have 

more than halved my cow numbers and 

have had no difficulty selling surplus 

cows and in calf heifers. It is rather 

nice to get a good trade when you want 

one. Bull sale are keeping up pretty well 

at the same rate as previous years and 

if anything prices are slightly better.

We also continue to do almost all of our 

own production work on the newspaper 

which makes our days very long at times 

especially during the sale season. When 

other publication people return home from 

a sale they write up their report and they 

are done. For us it is quite a different 

scenario. We usually are met with not only 

a sale report to write, but photos to identify 

as well. After that it’s on to finishing ads, 

answering the phones, talking to 

customers and finishing the editorial 

layout. Yes, the majority of our year has 

very full days indeed but we wouldn’t do 

it if we didn’t love the Hereford business. 

We have received some really nice 

letters and comments from our readers and 

advertisers the last few months. We thank 

those of you who have sent these 

comments to us. It is very humbling. We 

hope we are making a difference in the 

Hereford industry. That is one of the

I had the pleasure of attending the 

Hereford events in Reno this year. It is 

quite an event. I don’t know of any other 

sale in the world like it. The show is 

extremely well run and the quality of cattle 

this year was excellent. Many of these 

cattle will go on to show in Denver and 

I’m sure they will do well there with a high 

probability some of the champions will 

repeat there. The Reno Show and Sale is 

organized and operated by Hereford 

breeders in the Western States and 

Northwest. They do a fantastic job with 

these events. The shows are held at the 

Livestock Events Center which is away 

from the main headquarters, John 

Ascuaga’s Nugget Hotel & Casino. This 

is such a unique show and sale. If you’ve 

never been you should plan on it some 

time. If you stay at the Nugget, it is really 

a first class place and that’s certainly not 

an accident. John Ascuaga, whose roots 

are in Herefords, started the casino 50 

years ago and has always been super to 

Hereford breeders and the Western States 

Hereford breeders. Where else in the world 

can you see a Hereford sale on the stage 

of a casino? Many Hereford breeders 

attending the show stay at The Nugget 

which makes it fun to start with. Then a 

shuttle takes people out to the shows each 

day. When you get to the show, it’s just 

“regular” people, really good cattle and 

not a lot of hype and politics. In my opinion 

this makes a show much more enjoyable 

to watch and participate in.

Hereford get-together. Denver is always a 

great place for visiting with fellow 

Hereford breeders and I’m sure there will 

be lots of issues discussed while there. 

We should have lots to report on in the 

next issue. 

With the coming of a new year I have 

great hope for the two Hereford branded 

beef programs. Yes, two. I think a lot of 

you aren’t paying attention to this and 

you need to be. The term CHB, which 

stands for Certified Hereford Beef, has 

become somewhat generic when talking 

about Hereford branded programs. Not 

only is there the CHB program which is 

connected to the American Hereford 

Association, there is also the Ridgefield 

Farms Premium Hereford Beef (PHB) 

program based in South Dakota. PHB is 

an investor-owned South Dakota 

company. 

Both of these are national programs 

utilizing Hereford and Hereford-British 

cross cattle. CHB is also now shipping 

beef to Japan. PHB used to ship to the 

Pacific Rim countries prior to the cut-off 

of beef exports. Hopefully when PHB gets 

their cattle numbers up, they will resume 

exports. Those of us in the Hereford 

industry need to support both programs 

as much as possible. After all it helps our 

industry. In the near future we will all reap 

the benefits. 

In South Dakota and several 

surrounding states we are seeing better 

demand for Herefords and I believe it is 

due, in large part, to both programs but 

especially PHB since it is based here and 

processes cattle in Minnesota.

Reed M. Elkington, longtime Hereford 

breeder, celebrated his 95 th birthday on 

November 19, 2005. Reed enjoyed lunch 

with all of his children and their spouses. 

Reed was born to William Henry Jr. and 

Elzie McLaws Elkington on November 19, 

1910, in Tooele, Utah. When he was 13 

years old, the family moved to Idaho Falls, 

Idaho. He graduated from Idaho Falls High 

School where he played basketball and all 

state football. On September 23, 1932 he 

married Cora Judy in a double ceremony 

with his brother (his partner in the farming 

corporation) and Cora’s sister, Nellie. 

They farmed and ranched together near 

Bone, Idaho. Cora passed away Oct. 12, 

2000. They were blessed with six children: 

Karen (Derrill) Sparks, Glenna (Byrle) 

Walker, Edwin (the late Betty) Elkington, 

Elaine (Dennis) Hall, Keith (Cheryl) 

Elkington and Brent (Sandy) Elkington. 

He has 28 grandchildren, 84 greatgrandchildren, 

and 9 great-great 

grandchildren. Reed served on the 

Bonneville County Fair Board for 32 years. 

He is well-known for his outstanding 

garden. 

Reed started in the Hereford business 

with his brother Dean and sons, Keith and 

Brent in 1962. In 1964 they purchased 50 

head of heifers from several different 

breeders, including some from the 

Blanchard and Lindgren herd from 

Nebraska. A herd sire was also purchased 

from Montana. The herd increased in size 

and quality until 1980 when Reed sold his 

share of the cattle to his sons. Elkington 

Polled Herefords continues to be a family 

operation.

After much thought we have decided as an attraction to our 60th year in business to offer 

an interest in 417P. One could write a book on his heritage starting with his sire 212, 

selling for $54,000 and his dam just recently topping the Cooper cow Sale at $36.000. Add 

into that Cooper’s 2nd high selling cow was 8104, the paternal dam at $25,000. 417P 

himself was Cooper’s top selling bull. 417P is chuck full of muscle, depth, spring of rib, 

pigment and style to go along with his heritage. Not only all of this, but 417P set the 

standard for both rib eye and IMF in the Cooper sale with a 119 REA ratio and 122 IMF

The 25 th GoPher The Purple Sale, 

Hutchinson, MN, has become a part of 

history as the Minnesota Hereford 

Breeders are looking forward to another 

25 years of excellence. 

The event was kicked off with the 

annual banquet and program focusing 

on the past 25 years through trivia 

questions and displays of pictures and 

Sale catalogues. The banquet gave 

people a chance to mingle and reminisce 

about the past 25 years and test their 

skills at recalling names and events over 

the years. 

There were two inductees into the 

Minnesota Hereford Breeders Hall of 

Fame, both of them have made 

contributions to the success of the 

GoPher Sale in some way over the years. 

Jim Birdwell, Fletcher, OK, who has 

been the auctioneer for the sale for all 

25 years, was inducted into the 

Minnesota Hereford Breeders Hall of 

Fame, along with Don Burt, Aitkin, MN. 

Don passed away in April from cancer. 

He was a steady influence on the 

Minnesota Hereford Breeders Junior 

program and set up the ticket method 

of selling the Jr. donation heifer at the 

GoPher Sale. We are honored to have 

both of these men as new inductees into 

the Hall of Fame.

by the outgoing queen Jessica Reed, 

Hampton, MN. Our new queen, Amber 

Schmidt of Pipestone, will reign over 

the states events for the upcoming year. 

Jessica Reed will be representing our 

state at the National Queen competition 

in Denver, Colorado in January. Good 

luck to both girls. 

New directors were elected at the 

Annual meeting that was held Friday 

afternoon prior to the banquet. The new 

directors to begin in 2006 are Bonnie 

Reed, Hampton, Dan Brown, Grand 

Rapids, Les Krogstad, Fertile, Kent 

Heins, Orono. Thank you to the directors 

going off the board. 

The 25 th GoPher the Purple Sale began 

at 12:00 noon on Saturday, December 

10, 2005 at the McLeod County 

Fairgrounds Sale barn. It began with an 

offering of 36 heifer calves bringing an 

average of $1,883 for the consignors. 

These calves were sold to buyers in 

Minnesota as well as Wisconsin, Iowa, 

South Dakota, Indiana and Pennsylvania. 

There were 6-1/2 herd bull prospects 

for sale averaging $3,185 and going into 

South Dakota, Minnesota and Iowa. 

Thirteen bred heifers averaged $2,523 

and 2 Cow/Calf pairs that averaged 

$6,250. Many thanks to Daryl Rupprecht for his 

dedication over the past 10 years as the sale manager 

for the Minnesota Hereford Breeders GoPher the 

Purple Select Sale. Daryl has resigned his position as 

sale manager after this 25 th anniversary sale, and will 

be replaced by Kent Heins of Orono, as the new sale 

manager.

Quality Grade has received more 

interest in the last five years than the 

10 years previously as a greater number 

of branded beef companies pay 

premiums for cattle that reach the 

Choice Grade. Quality Grade is an 

indication of the palatability or the eating 

quality of the meat. 

There are eight USDA Quality Grades 

for beef. For young beef, less than 42 

months of age, the grades are Prime,

Choice, Select, and Standard. Old beef 

receive the grades of Commercial, Utility, 

Cutter, and Canner. To assign a Quality 

Grade, an estimation of the physiological 

maturity of the carcass is done as well 

as an estimation of the amount of 

marbling or intermuscular fat in the 

Longissimus Dorsi muscle between the 

12 th and 13 th ribs. 

Maturity. The estimation of the 

physiological age of the animal is 

accomplished by estimating the amount 

of ossification of the three vertebrae 

sections in the sacral, lumbar, and 

thoracic vertebrae. The amount of 

ossification of the vertebral regions 

categorizes the carcass into 5 categories: 

A, B, C, D, and E. Carcasses are 

assigned to one of the five maturity 

scores. Young beef A & B, or old beef, 

C, D, or E based on the degree of 

ossification. 

Ossification of the cartilage is the 

hardening or changing of the cartilage 

into bone. Figure 1 shows the thoracic 

vertebrae just below the point where the 

carcass is ribbed (12 th & 13 th ribs). The 

ends of the vertebra are bright white 

cartilage when the animal is under 30 

months of age. As the animal matures, 

the cartilage on the end of the vertebra 

turns to bone. The degree of ossification 

of the thoracic vertebrae and its 

relationship to age is shown in Table 1. 

Early in a calf’s life, prior to 20 months 

of age, a greater amount of ossification 

occurs in the hindquarter or the sacral 

and lumbar regions. 

In addition to bone maturity, the 

USDA grades will also take into account 

the color and texture of the lean tissue. 

Carcasses from young beef will have 

tissue that is ideally, light, cherry red in 

color. As an animal matures, the lean 

tissue becomes darker while the fibers 

become coarser. 

Marbling. Also known as 

intramuscular fat is the small flecks of 

fat that are dispersed throughout the 

lean tissue. Marbling is evaluated 

visually by assigning one of 10 scores 

based on the quantity, fineness, and 

dispersement of the fat within the ribeye 

muscle between the 12 th and 13 th ribs 

Marbling has been shown by many 

researchers to affect the palatability both 

of juiciness and flavor, but it is not 

related to tenderness. Steak with high 

degrees of marbling may be tough and 

conversely, steaks with little marbling 

may be tender. 

Figure 2 depicts 7 of the 9 marbling 

scores utilized by the USDA Grading 

Service (lowest score practically devoid 

not shown as well as the highest, very 

abundant). The chart in Figure 3 

combines marbling scores with maturity 

scores to determine Quality Grade. Five 

of the seven grades are divided into 

thirds from low (-), average (0), to high 

(+), however, Select is only represented 

by two degrees, high and low. Each 

marbling score is recorded from 0 to 

99 with 99 being the closest to the next 

higher marbling score. Thus, if an 

animal has a maturity score of A and a 

marbling score of Modest 70 , the carcass 

Quality Grade would be Choice Average 

(Ch 0 ). You will notice in the Grading 

chart that as an animal ages/matures it 

takes an increasing amount of marbling 

to obtain the same Quality Grade. For 

example, a carcass with a maturity score 

of C 10 and a marbling score of (Small 50 ) 

would grade high Utility (Ut + ) because 

a greater amount of marbling is needed 

to insure a similar level of palatability. 

Quality Grade becomes an important 

factor in beef pricing.A general 

understanding of the USDA Quality 

Grading System helps when interpreting

Competing in Global Marketplace 

“With BSE and other animal health issues being 

resolved, livestock producers need to re-focus their efforts 

on the global marketplace, which will be the focus of this 

year’s National Western International AgriBusiness Center 

Round Table,” said Skylar Houston, Chair of the National 

Western International AgriBusiness Center Committee.

Final Farewell... 

Lloyd A. Rockeman 

Lloyd Rockeman, beloved father and 

friend, long-time North Dakota and 

Montana rancher and registered Polled 

Hereford breeder, died “with his boots 

on” while feeding his calves at his home 

near Grassy Butte on December 6, 

2005. His two loves were his family and 

his cattle. He was a member of the 

North Dakota Stockmen’s Association 

for 56 years, a member of the 50 Years 

in the Saddle Club, and recognized by 

the American Hereford Association as 

a Golden (50+ years) Breeder. 

Lloyd was born near Donnybrook, 

North Dakota on January 13, 1921. He 

attended Donnybrook High School, 

from which he graduated in 1938, and 

farmed with his father August until 

entering the U.S. Army in 1946. He 

served his country with pride for two 

years, including occupation duty in 

Japan, and after being discharged 

returned to Donnybrook where he and 

his brother Howard formed the 

Rockeman Brothers farm and ranch 

partnership. They raised durum wheat, 

other small grains, and cattle – buying 

their first registered Polled Hereford 

cattle in 1949 – and were founding 

members of the MonDak Polled 

Hereford Association. He married Eunice 

Dell Wheeler of Berg, North Dakota on 

March 11, 1951 in Minot, and they had 

four children; Kurt, Kenneth, Keith and 

Carolyn. After Eunice’s death in 1964, 

he married Betty Kay Chisholm on 

September 6, 1965 and they had one 

daughter, Kimberly. He was a Second 

Lieutenant in the Civil Air Patrol, served 

on the board of the Gooseneck Soil 

Conservation District in Ward County, 

and was an active member of the Aurelia 

Moravian Church. 

He and Betty purchased the 

Rockeman Pine Hollow Ranch near 

Stevensville, Montana in 1968, 

concentrating on raising and selling 

registered Polled Herefords. In 1976 

they provided 45 of the 100 registered 

Polled Hereford heifers exported from 

Western Montana to Taiwan as the basis 

of the then Republic of China foundation 

herd. In 1972 they purchased the 

Rockeman Ranch on the Little Missouri 

River in southern McKenzie County in 

partnership with his son Kenneth and 

Dr. James O. Foss of Minot, and later 

bought a home in Sidney, Montana. After 

selling the ranch in Stevensville, the 

Rockeman Ranch was sold to their sons 

in 1981 and purchased the Rockeman 

Silver Dollar Ranch near Columbus, 

Montana. They sold the Columbus ranch 

in 1984, and began a second career 

selling western art, rocks and antiques 

at the Moosehead Gallery, Campground 

and Store near Conner, Montana while 

maintaining the registered cattle herd 

through share arrangements. He moved 

back to McKenzie County, North 

Dakota in 2000 after he and Betty 

separated, staying active by operating 

the Fin and Feather Inn and enjoying 

his cattle, family and grandchildren. 

Lloyd was a committed and loving 

father, a kind and helpful friend, and a 

spirited North Dakota man deeply 

connected to the western lands of which 

he was so much a part. He touched 

many with his easy manner, amusing 

commentary, humor and loves. He will 

live forever in the hearts of all who loved 

him. 

He is survived by three sons, two 

daughters and their families: Kurt and

Jess Southard – a part of our Hereford History 


Jesse Michael Southard was born 

October 30, 1916, at Comiskey, 

Kansas, on a Hereford ranch, 

Southard’s Monarch Herefords, owned 

by his grandfather Jacob O. Southard, 

Sr. J.O. Southard, Sr. was a well-known 

Hereford breeder in his day. The 

“Mighty Monarch” was his main herd 

sire of English ancestry, which he 

purchased in 1914. Southard traveled 

abroad and once purchased a herd 

animal from King George of England.

The purchase was made in 1919 when 

he was president of the Kansas Hereford 

Association and went to England to visit 

the origin of the Hereford breed. 

Southard, Sr. was conducted on a tour 

of the royal herd by King George V 

himself! 

Grandson Jess was surrounded by 

Herefords since an early age. During 

high school Jess became a good baseball 

pitcher and upon graduating from 

Bushong High School in 1935 he was 

offered a chance to go pro. The Great 

Depression was in full swing and Jess 

decided he’d get a paying job instead. 

Professional baseball players just didn’t 

make much back then and he felt he 

would do better in another profession. 

In 1936 Jess went to work for 

Western Electric Company at forty cents 

an hour. Western Electric Co. was the 

manufacturer and installer for AT&T and 

all the Bell companies. While working 

in Chicago on a new cross-bar telephone 

exchange he met a young lady, Mary 

Chanoux, at the Trianon ball room 

featuring Lawrence Welk’s orchestra. 

Jess and Mary were married September 

13, 1940. 

Western Electric was building all the 

communications equipment at this time 

for the armed services and Jess was 

transferred to the Illinois Bell Telephone 

Company in Springfield, Illinois. He had 

worked there previously installing the 

new telephone exchange and worked 

there until World War II was over. Jess 

and Mary with their two girls, Marilyn 

and Janet, then moved to Topeka, 

Kansas. 

Jess worked for Western Electric 

Company and Southwestern Bell 

Telephone Co. for 39 years, installing 

and repairing telephone equipment, 

before retiring in 1976. 

Jess had Herefords in his blood and 

upon graduating from high school in 

1935, he purchased two Monarch 

heifers from his uncle J.O. Southard, 

Jr., for $25 each. Working overtime and 

58634.

managed to save $300 

which he sent to his dad 

Mike as payment on some 

Monarch heifers and 

cows. This was the 

beginning of his 

registered Hereford herd 

and was kept at his folks’ 

ranch near Comiskey, 

Kansas. 

While Jess and Mary 

and their family were 

living in Topeka, Jess 

paid for a lifetime 

membership in the 

American Hereford 

Association and a 

membership in the 

Northeast Kansas 

Hereford Association. 

Mary joined the Kansas 

Women’s Auxiliary. 

In 1958, their herd was 

still at Jess’s father’s 

place and continuing to 

grow. They decided to 

purchase a place of their 

own near Hoyt, north of 

Topeka in 1958. At the 

time, they had 50 head of 

cows. Mary’s brother, Ray Chanoux, 

wanted to buy half interest in the farm 

and cattle. He and his family liked to 

come to the farm to visit and also 

wanted to help his sister, Mary in she 

and Jess’ new venture. In honor of Ray, 

his wife Dorothy and their two 

daughters, Dorothy Mae and Mary Lou, 

the farm was named JessRay Hereford 

Farm. Ray passed away three years 

later. His wife Dorothy did not want to 

continue with the partnership so Jess 

and Mary bought her interest in the farm 

and cattle. They kept the name JessRay 

Hereford Farm. 

During this time the Southards started 

buying English-bred bulls, beginning 

with JR Eaton Drummer, sired by the 

Jesse Southard celebrating his 89th birthday in October 

with daughters Janet and Marilyn.

grandson of Vern Robert. 

Jess took two sons of Drummer to 

the Flint Hills Hereford Association sale 

at Cottonwood Falls, Kansas where he 

and Mary decided they would either be 

first or last in the show for sale order. 

They were last! “We were just ahead of 

our time,” Jess said. The Eaton 

Drummer bull was killed by lightning 

shortly after. 

Their next English bull was WR Graf 

97, purchased from Watson Ranch in 

Oklahoma. He was a son of Vern Graf 

out of a Hazlett Rupert 88 cow. 

The next English bulls they owned 

were in partnership with Douglas and 

Mildred Gill from Harper, Kansas, at the 

Kinnybrook Hereford dispersion sale 

September 8, 1975, in Kenwood, 

California. These bulls were big, thick 

and muscular with the best disposition 

you could ask for. These bulls were 

mated to Monarch cows, which were 

of English ancestors. The calves had 

size, thickness and width down the 

back. The herd was now increasing 

quite rapidly so they rented more grass 

and hay land. 

Jess and Mary went on the World 

Hereford Tour in 1988 to Spain and 

England and spoke of it as the highlight 

of their Hereford business. 

The weather in Kansas had turned 

very dry while they were in England.


On arriving home they started feeding weeks of the breeding season until he got 

the cattle in August through the next injured, getting ten cows bred to him. Reno Show 

Spring. There was no sign of any rain and Those ten calves were really good. When

For the third consecutive year, a Hereford bull has been named Supreme 

Champion in the RBC Supreme Challenge at Agribition. 

Top honors were awarded Saturday night in Regina to BCD 140L Dom Lad 

326N the entry of Adams Hirsche Herefords of High River, Alberta, Brad 

Dallas of Innisfail, AB, and Peter Herefords of Langley, British Columbia. 

Sired by BP Robin Hood 140L, 326N qualified for the RBC Challenge as 

Supreme Champion of the 2005 Calgary Stampede Stock Show. There were 45 

bulls in the competition from 10 of North America’s major livestock shows. 

The judges named the top ten bulls, which consisted of 2 Horned Herefords 

(Triple A Herefords - Moose Jaw, SK, & Adams Hirsche) and 1 Polled 

Hereford (K-Cow Ranch - Elk Point, AB), prior to selecting the champion. 

In the female division, a Polled Hereford pair (Remitall Cattle Company - 

Olds, AB) as well as a Horned Hereford heifer (Triple A Herefords - Moose 

Jaw, SK) were named to the top ten. A Black Angus pair took top female 

honours. 

Congratulations to these Hereford breeders for their accomplishments!! 

Thomas Elkington, son of Brent and Sandy Elkington earned 

Reserve Champion with EPHR Rangler 885P at the Bonneville 

County Fair on August 8, 2005. He competed against 28 other 

steers. The steer is a grandson of Elkington’s 4G bull. When 

placing him in Reserve Champion, the judge stated that this steer 

was a perfect steer for today’s needs. 1250lbs.
