FASHION - PROJECT RUNWAY<br />

Anya Ayoung-Chee not only emerged the winner<br />

of the ninth season of Project Runway but<br />

she won the most challenges during the fourmonth,<br />

14 episodes, run of the show.<br />

She won US$20,000 and an editorial shoot in<br />

Marie Claire magazine for designing an outfit<br />

inspired by a raven.<br />

She also had two of her designs featured<br />

and sold on online retail companies Amazon<br />

and Piperlime.<br />

For the finale, Ayoung-Chee presented ten<br />

designs which she called “Tobago Love” at<br />

Mercedez Benz Fashion Week in September at<br />

the Lincoln Centre, New York, competing with<br />

three other designers.<br />

She subsequently told fans that on the day<br />

of the fashion show, she was exhausted as<br />

she had only slept for an hour.<br />

“I was very tired but I was in a zone, being<br />

backstage, it was amazing...I think walking to<br />

Lincoln Centre was surreal, we literally walked<br />

from our hotel to there, it was 2 am, it was<br />

dead silent.<br />

Ayoung-Chee said she was inspired by the<br />

“general vibe of the island,” and the ease of<br />

living in Tobago.<br />

MODELS - ELITE<br />

Three young models will represent the<br />

Caribbean in Shanghai, China on December<br />

6 at the Elite Model Look World competition.<br />

The trio will have an opportunity to vie for<br />

over US$2 million in modelling contracts.<br />

The models, 18-year-old Shenika<br />

Fernandez from Trinidad, 19-year-old Krystal<br />

Benjamin from Antigua and 20-year-old<br />

Amanda King from Guyana were chosen<br />

from a slate of 18 other finalists from the<br />

region.<br />

They were selected last September by a<br />

jury panel which included Iris Minier, Elite<br />

Paris International Scout; Caridad<br />

Fernandez, president, Fashion Week Puerto<br />

Rico and Official Representative of Elite<br />

Model Look Pureto Rico; Sofia Krawczyk,<br />

Elite Paris Model; and Jean-Pierre Begon,<br />

vice-president Elite International, at the<br />

regional final at Hyatt Regency Trinidad.<br />

The young women would no doubt experience<br />

a major life adjustment should they<br />

win any of the modelling contracts up for<br />

grabs at the finals in Shanghai.<br />

Crystal Noriega, last year’s representative<br />

from Trinidad and Tobago, Crystal’s success<br />

has landed her modelling contracts<br />

with Elite Latin and South America, DNA<br />

Models New York and Elite Model<br />

Management Paris. She is now based in<br />

New York.<br />

On her debut at the Mercedez Benz New<br />

York Fashion Week this year, she walked for<br />

Mark Jacobs, one of the top design labels in<br />

the world along with other high profile<br />

designers.<br />

Her “mother agency” is Coco Velvet international<br />

in Trinidad and Tobago<br />

Shenika, Krystal and Amanda are looking<br />

to follow in Crystal’s footsteps, however,<br />

they know that there is hard work ahead<br />

along the road to success.

House Hospice.<br />

Meltproof makeup ideas for hot weather<br />

“Women don’t sweat, they glisten,” the saying goes. Yeah, right. To<br />

keep your makeup from melting into your mojito when out in the sun,<br />

get into these 11 easy tricks from the pros.<br />

1. Take Time to Prime.<br />

The key to long-lasting foundation and colour is the most commonly<br />

skipped step: primer. Seriously — the stuff works. All you need is a peasize<br />

dot of a lightweight, oil-free formula; apply it to moisturised skin<br />

before your concealer and foundation. We like L’Oréal Paris Studio<br />

Secrets Professional Primers (they have three oil-free formulas for different<br />

skin types).<br />

2. Be Dense.<br />

Blemishes and blotchy skin don’t vanish in the hot weather, but the<br />

wrong concealer definitely can. What you want is a densely pigmented<br />

(but not liquidy) cream formula. Use your ring finger to dab the concealer<br />

on dark circles; apply to red spots with a small brush, and then pat<br />

with your finger to blend the cover-up into the skin.<br />

3. Switch to Silicone.<br />

Wear a full face of foundation and you’re asking for trouble. Still, we get<br />

it — sometimes you want the coverage. The solution? A lightweight silicone-based<br />

formula. The silicone acts as a film between your skin and<br />

the humidity, preventing foundation from seeping into your pores or<br />

dribbling down your chin.<br />

4. Lighten Up.<br />

Think of foundation this way: The less you put on, the less there is to<br />

slide off. A dampened makeup sponge is the ideal tool for applying it so<br />

that it goes on light and sheer. Put a few drops on a damp foam-latex<br />

sponge, and swipe it from the middle of your face outward in short<br />

strokes. Give it a minute or so to set before you apply other makeup.<br />

5. Choose Creamy Shadows.<br />

When sweat and powders mix, the result isn’t pretty. Sheer cream<br />

shadows tend to cake less in hot weather (plus, they glisten in the sun).<br />

Some eye colours contain silicone that locks the colour in place.<br />

6. Look to Liquid.<br />

Liquid liner may take patience and practice, but once on, a good formula<br />

won’t budge or smudge in the heat like a kohl pencil can.<br />

7. Sweatproof Your Lashes.<br />

Waterproof mascara is a no-brainer in the heat. It can withstand the<br />

office, the gym, the pool, and the bar without smudging. But some can<br />

fade to gray in a few hours.<br />

8. Flush With Greatness.<br />

As with powder shadow, powder blush and perspiration don’t mix.<br />

Instead, rub a bright pink or coral cream or gel blush on the apples of<br />

your cheeks, and blend.<br />

9. Tint Your Lips.<br />

Lip gloss just looks right come summer: It’s fun. It’s easy...But it can<br />

also get runny and sticky in the sun. A tinted lip balm with a high wax<br />

content won’t turn to mush in your bag or on your mouth. We like Aveda<br />

Lip Tints SPF 15.<br />

10. Stop Shine.<br />

To reduce shine and set your makeup, take a large fluffy brush and dust<br />

a translucent loose powder across your T-zone. Because it’s colourless,<br />

there’s less of a chance it will cause problems in the heat, but use a<br />

light hand to be sure.<br />

11. Blot It Out.<br />

Instead of re-powdering throughout the day — extra layers can cause<br />

cakey product build-up in warm weather — keep plasticky oil-blotting<br />

sheets at your desk and in your purse. Dabbed over your face, they<br />

soak up excess oil without messing up your makeup. We love Clean<br />

and Clear Oil-Absorbing Sheets.


RECIPES 11<br />

COR SOUP<br />

Ingredients:<br />

10 ears corn, cut into rounds<br />

2 cups split peas, picked and washed<br />

1 lb pigtail, boiled for about 30 mins and cut into small pieces<br />

2 leaves thyme, chopped<br />

6 leaves chadon beni, chopped<br />

6 pimentos, de-seeded and chopped<br />

5 cloves garlic, cracked<br />

2 cups pumpkin, cubed<br />

2 carrots, cut into 2 inch strips or rounds<br />

3 med carrots, cubed<br />

6 cups fresh coconut milk, or equivalent<br />

using coconut milk powder<br />

½ tbsp oil<br />

Salt, cayenne pepper and all purpose seasoning<br />

to taste.<br />

BANANA MILKSHAKE<br />

Ingredients 1/2 banana, sliced<br />

6 oz skim milk<br />

1 tsp vanilla extract<br />

1 tsp cinnamon<br />

1/3 cup ice, crushed<br />

Chop half a banana into slices, place<br />

in plastic baggy and freeze overnight.<br />

(Do the same with the other half and<br />

save for future shake. Gather ingredients.<br />

Place half banana (now<br />

chopped and frozen) into blender.<br />

Add 1/3 cup ice, 6 ounces of skim<br />

milk and 1 teaspoon of vanilla<br />

OCHRO RICE<br />

Ingredients:<br />

12 ochroes, sliced<br />

2 - 3 medium-sized tomatoes. chopped<br />

1/2 cup pumpkin, chopped<br />

1 small onion, chopped<br />

3 cups water<br />

1 cup coconut milk<br />

2 cloves garlic, chopped<br />

2 sprigs chive, chopped<br />

2 sprigs celery, chopped<br />

1 sprig thyme, chopped<br />

2 tbsp. oil<br />

saltfish, pigtail or smoked bones (meat is optional)<br />

2 cups rice<br />

2 sprig chive<br />

1 sprig celery<br />

pepper to taste<br />

salt to taste<br />

If you are using saltfish boil and remove the bones before adding it to the<br />

pot. If you are using pig tail or smoked bone boil or pressure cook it until it<br />

is tender before adding to the pot.<br />

Saute the onion and garlic then add the tomatoes and ochroes. Add the<br />

vegetables, the seasonings, meat, water and coconut milk. Cover the pot<br />

and allow to simmer. Cook over a medium flame. When the ochro and the<br />

vegetables are a bit tender (in about 20 minutes) add the rice. Stir the rice<br />

to make sure it is well mixed in with the vegetables and the liquid. Add<br />

some more water, turn the ingredients in the pot and cover to simmer.<br />

Every now and then turn the rice to ensure it does not stick. Lower the<br />

flame and allow the liquid to evaporate. Remove from flame when all of the<br />

liquid is absorb and rice is tender. Serve.<br />

MILK SHAKES<br />

extract. Blend until smooth. Add one<br />

packet of Splenda for extra sweetness<br />

(optional) Pour mix into tall<br />

glass. Sprinkle about one teaspoon<br />

of ground cinnamon on shake.<br />

FRUIT MILKSHAKE<br />

4 oz of orange juice<br />

4 oz of grapefruit juice<br />

4 oz of milk<br />

1/2 oz of sugar<br />

2 drops of vanilla extract<br />

Put all the ingredients in a blender<br />

and blend it gently until it is all<br />

Method:<br />

Heat a pressure cooker pot; add oil. When<br />

hot, sauté garlic and pigtail for about two<br />

minutes, stirring occasionally. Add peas,<br />

corn, pumpkin, carrots, coconut milk, thyme<br />

and chadon beni. Add a little salt, pepper<br />

and all purpose seasoning. Bring to a boil,<br />

cover and pressure cook for eight to ten<br />

minutes. While this is cooking, peel and dice<br />

potatoes and knead the dough for the<br />

dumplings (see below). Take the pressure<br />

cooker off the fire and place under the<br />

kitchen faucet, running water over the lid<br />

until cool enough to open. Check to make<br />

sure the peas are “melted.” Place pot back<br />

on the fire, add potatoes and bring back to a<br />

boil. Prepare dumplings, and when potatoes<br />

are half cooked, add dumplings to the pot.<br />

Taste and adjust seasoning as needed.<br />

When the dumpling rise to the top, your<br />

corn soup is ready.<br />

Serves: You, the friend, the cousin, the<br />

uncle, the neighbour, the mother, two grown<br />

men, and if you’re lucky, you might get seconds.<br />

Dumplings:<br />

3 cups plain flour<br />

Or<br />

1 ½ cups plain flour<br />

1 ½ cups cornmeal<br />

1 tsp salt (optional)<br />

1 cup water<br />

Method:<br />

Place flour (or flour and corn meal mixture) and salt, if using, to a medium sized<br />

bowl. Slowly add water and knead into a smooth, stiff ball. Add less or more<br />

water as needed. Rest for about ten minutes. Divide the dough into about six<br />

pieces. Roll each piece into a thickish “rope” then cut into two-inch pieces, on<br />

the diagonal.<br />

LIME MILKSHAKE<br />

one lime<br />

4 scoops low fat vanilla ice cream<br />

10 tablespoons milk<br />

2 1/2 teaspoons sugar<br />

Put all ingredients in a blender or<br />

drink mixer and blend until smooth<br />

Add sugar to taste. Add or decrease<br />

milk for thickness.

Anya unveils ‘The Runway’<br />

Two local brands that presently enjoy international<br />

appeal — Tribe and Anya Ayoung-Chee — have<br />

merged for Carnival 2012.<br />

The alliance was announced at an exclusive welcome<br />

home party for the 2011 Project Runway winner,<br />

held at Scott Street, St Clair in Trinidad on Friday,<br />

November 25, 2011. The immediate result of this union<br />

was Ayoung-Chee’s presentation of a section called<br />

"The Runway" in Tribe’s Carnival 2012 potrayal titled<br />

"Take Me To" that she displayed at the party.

Why it’s good to be dumped<br />

When most people hear the dreaded words,<br />

'it's not you, it's me', or, 'we need to talk', their<br />

stomach drops through the floor and dark<br />

thoughts about their inevitable future as an<br />

eccentric old woman with hundreds of cats<br />

instantly flash through their mind. But,<br />

although nobody's saying that it's much fun<br />

to be dumped — and yes, we're all allowed a<br />

period of watching Bridget Jones on repeat<br />

while eating our own body weight in ice<br />

cream — there's no law that says your whole<br />

life has to fall apart at the seams, according<br />

to Alexandra Heminsley, author of Ex And The<br />

City:<br />

You're Nobody 'Til Somebody Dumps You.<br />

In fact, Heminsley admits that she's been<br />

dumped in a restaurant, in a stairwell and in a<br />

graveyard, to name but a few choice locations,<br />

but still maintains that being given the<br />

push shouldn't be a source of shame but a<br />

badge of honour — because unless you're<br />

ready to risk it all, you'll never find love. "A<br />

break-up is rarely one person's fault more<br />

than the other," she says. "And even if it was,<br />

can you seriously name a dumpee who has<br />

emerged anything other than happier than she<br />

was beforehand? Of course not. The unique<br />

nature of any dumpee's agony means that you<br />

will almost always resurface wiser and have<br />

more fun."<br />

Battle tactics for the first 24 hours: "It's war<br />

— not you versus him, but you versus your<br />

hurt," advises Heminsley. "So, approach that<br />

first day like war, and you may find yourself<br />

stronger than you ever imagined you could<br />

be."<br />

Camouflage: "Maybe you can't be bothered<br />

to put on a full face of make-up, but you<br />

absolutely cannot give in completely,"<br />

Heminsley says.<br />

A safe place: In the battle for survival it is of<br />

paramount importance to get home and create<br />

a safe area for retreat — so turn your bedroom<br />

into a sanctuary. "Wash your sheets.<br />

This is essential, because human smell is<br />

extremely evocative — if he's been in your<br />

bed recently, you'll be able to tell," Heminsley<br />

warns.<br />

Lines of communication: Very simply, DO.<br />

NOT. CALL. HIM. "The harsh truth is that in<br />

most cases, you're not going to get back<br />

together, and this is a good thing, so you<br />

need to just summon all of your energy and<br />

confidence and hug it towards you instead of<br />

him, because you need it and you deserve it,"<br />

Heminsley says. In fact, delete his numbers<br />

and email address to avoid post-dumping<br />

phone calls, texts or emails.<br />

Hormones and rebounds: It's all very well<br />

telling yourself that having "modern and liberated<br />

non-committal sex" will make you feel<br />

loads better after being dumped but, as<br />

Heminsley rightly points out, there's a slight<br />

glitch in the design of female hormones,<br />

which makes it almost inevitable that we<br />

become kind of clingy in the end. And being<br />

needy is obviously the kiss of death for any<br />

rebound flings or post-dumped break-up sex.<br />

“Oxytoxin is the Wizard of Oz of our bodies<br />

— it is responsible for dispensing the good<br />

stuff, the emotions and reactions that most of<br />

us enjoy experiencing most," explains<br />

Heminsley. "But like the good wizard himself,<br />

it also has elements that are a little bit unreliable."<br />

Indeed, when both men and women<br />

have sex, a certain type of oxytoxin is<br />

released along with dopamine and endorphins,<br />

which makes sex with "that particular<br />

person" rewarding. But here's the, erm, rub.<br />

"It's absolutely, and quite literally, maddening,<br />

because in your body, oestrogen, the female<br />

hormone, prolongs and intensifies the effects<br />

of oxytoxin and the way it bonds with other<br />

hormones. "Meanwhile, only inches away,<br />

testosterone, the male hormone, decreases<br />

these effects significantly in your man, meaning<br />

that a woman will tend to feel more bonded<br />

to a man after sex than a man will to her."<br />

Of course, this is not to say that men don't or<br />

can't feel bonded to women, but it definitely<br />

doesn't become such an addictive urge at<br />

such a precarious time for them. Girls, you<br />

have been warned!<br />

Dumping with decency:<br />

It's very likely that there will be times when<br />

you find yourself on the other end of the<br />

messy business of dumping, so Heminsley<br />

recommends the following tips to ensure that<br />

you treat your soon-to-be ex as you'd like to<br />

be treated yourself.<br />

DON'T AVOID IT FOR TOO LONG<br />

"Give it a couple of weeks to be sure of<br />

your decision, but anything over a month is<br />

too long and you enter the risky territory of<br />

Potentially Blurting It Out At Any Minute."<br />

DON'T LIE OR PATRONISE THEM<br />

"What you say as your excuse will be spun<br />

in your dumpee's mind over many days and<br />

nights to come — there can be no defending<br />

planting the seed of anxiety that needn't be<br />

there at all," Heminsley warns.<br />

For example, don't say he's too clingy if<br />

you've simply got your eye on someone else.<br />

Likewise, don't try to be too nice — dumping<br />

someone is never a pleasant business so<br />

don't expect a pat on the back and a lollipop<br />

for good behaviour.<br />

DO IT IN PERSON<br />

Texts, emails, letters, cakes with messages<br />

iced on to them, personalised blimps and<br />

Post-its are not allowed!<br />

DON'T SAY IT WAS DOWN TO BAD SEX<br />

"Just because his skills no longer get you<br />

frisky it doesn't mean they won't work for his<br />

next lady, so don't let him think his way is the<br />

wrong way — unless of course he indulged in<br />

anything illegal, unhygienic or accompanied<br />

by the sounds of Kenny G — in which case,<br />

consider it your civic duty," Heminsley<br />

laughs.<br />

THE LAST WORD<br />

"It turns out that you do need to know what<br />

pain feels like in order to feel happy at other<br />

times," says Heminsley. "After all, if you don't<br />

feel any anguish at the inexplicable refusal of<br />

a hot guy to give you that fifth date, then how<br />

are you expected to feel the inexplicable delirium<br />

next time, when you realise that someone<br />

fabulous has fallen in love with you?<br />

"You can't stop yourself from getting<br />

dumped — all you can do is stop yourself<br />

from living your life in the shadow of the fear<br />

of getting dumped."

Angola, Lopes is a business management student<br />

in Great Britain, where she was crowned Miss<br />

Angola UK on October 8, 2010, the official representative<br />

of the Angolan community in the United<br />

Kingdom to the 2011 Miss Angola pageant.<br />

Leila Lopes from Angola was crowned<br />

Miss Universe 2011 in São Paulo, Brazil.<br />

She became Africa’s 4th Miss Universe,<br />

and the 1st black woman to win the<br />

crown since 1999.<br />

Lopes beat out 88 other competitors<br />

to win the title during the 60th anniversary<br />

of Miss Universe. She replaces last<br />

year’s winner, Ximena Navarrete of<br />

Mexico.<br />

Lopes, who stands 1.79 m (5 ft 10 1⁄2 in) tall, competed<br />

as one of 21 finalists in her country's national<br />

beauty pageant, Miss Angola, held in Luanda on<br />

December 18, 2010, where she obtained the<br />

Photogenic Award and became the eventual winner<br />

of the title, gaining the right to represent Angola in<br />

the 2011 Miss Universe pageant, in São Paulo,<br />

Brazil which she won the title.<br />

“Thank God I’m very satisfied with the<br />

way God created me and I wouldn’t<br />

change a thing,” Lopes said when<br />

asked her interview question. “I consider<br />

myself a woman endowed with inner<br />

beauty. I have acquired many wonderful<br />

principals from my family and I intend<br />

to follow these for the rest of my life.”<br />

The first runner-up was 23-year-old<br />

Olesia Stefanko of Ukraine and the second<br />

runner-up was Priscila Machado of<br />

Brazil. The third was Miss Philippines,<br />

and the fourth Miss China.<br />

In the top 10, were the representatives<br />

of Australia, France, Costa Rica,<br />

Panama, and Portugal.

Ingredients:<br />

2 cups cornmeal<br />

4 oz margarine<br />

3 tbsp oil<br />

2 tsp salt<br />

2 tsp granulated sugar<br />

6 cups boiling water<br />

2 to 3 lg banana leaves<br />

(Aluminum foil may be used as a<br />

substitute but the flavour will not<br />

be as rich)<br />

Filling:<br />

2 lb. lean minced beef<br />

6 red and green chilli peppers,<br />

cut into small pieces<br />

1 clove grated garlic<br />

3 onions, minced<br />

2 tsp. Worcestershire sauce<br />

3 tbsp. raisins<br />

1 tbsp. capers<br />

2 tbsp. fresh thyme, stems<br />

removed leaves crushed or 2<br />

tbsp. dried thyme<br />

1 tbsp. basil<br />

12 olives, finely chopped<br />

1 cup stock<br />

Method:<br />

Put corn into a mixing bowl, add<br />

chopped margarine, oil, salt and<br />

sugar. Pour boiling water over<br />

and quickly blend, using a round<br />

edge knife. As soon as mixture is<br />

cool enough knead with hands.<br />

Test between fingers mixture<br />

must be smooth not sticky. Roll<br />

into 12 small balls. Cover with a<br />

very damp kitchen towel.<br />

Method For Filling:<br />

Heat oil, add garlic. When pale<br />

brown remove garlic. Add meat<br />

and saute until light brown. Add<br />

minced onions, Worcestershire<br />

sauce. Simmer on low heat for<br />

five minutes. Add herbs olives,<br />

capers, raisins, chilli peppers<br />

and simmer on low heat until<br />

meat is tender and flavour is<br />

developed. Filling should be tender<br />

and moist. Add salt to taste if<br />

needed.<br />

Assembly:<br />

Prepare the banana leaves the<br />

day before. Wash them dry them<br />

and wilt over an open flame or<br />

boiling water. Cut into squares<br />

about 12x12-inches. Oil leaf or<br />

foil before putting on the corn.<br />

Spread a ball of corn on the leaf,<br />

pat down. Place a square of wet<br />

muslin, another oiled leaf or thin<br />

sheet of plastic over corn and<br />

roll out very thinly using a rolling<br />

pin or pastelle press. Put a table<br />

spoon of meat filling in the centre.<br />

Fold half the leaf over, bring<br />

in with it the corn spread. Bring<br />

in the other half of corn to cover.<br />

Now fold leaf to make a rectangular<br />

parcel. Tie with string and<br />

steam for 45 minutes or boil for<br />

30 minutes. Drain and place on a<br />

flat surface. Serve immediately<br />

or store in freezer. (When<br />

pastelles are cold they remain in<br />

whatever shape they were put.)<br />

Ingredients:<br />

1 pound currants<br />

1 pound raisins<br />

1 pound prunes<br />

1 pound dried figs<br />

1 (16 ounce) jar maraschino cherries,<br />

drained<br />

½ pound mixed peel<br />

1/4 pound almonds, chopped<br />

1 tablespoon angostura bitters<br />

2 ½ cups dark rum<br />

Caramelizing Sugar:<br />

3/4 pound brown sugar<br />

½ cup boiling water<br />

Final Cooking :<br />

2 teaspoons grated lime peel<br />

2 teaspoons vanilla<br />

4 cups flour<br />

4 teaspoons baking powder<br />

1 teaspoon ground cloves<br />

1 pound butter (4 sticks) softened<br />

2 1/4 cups sugar<br />

9 large eggs<br />

Equipment: Two 9x5x3 inch loaf<br />

pans or 1 10 inch tube pan.<br />

Preparation Day:<br />

• Chop currants, raisins, prunes,<br />

figs and cherries. Put in large bowl<br />

with mixed peel and almonds. Stir<br />

to combine. Sprinkle on bitters and<br />

pour rum over mixture. Soak for a<br />

minimum of 24 hours, extending to<br />

one month. Dream about this cake<br />

for whatever period of time you<br />

have chosen.<br />

• Put brown sugar in heavy pot.<br />

Stir, letting sugar liquefy. Cook<br />

over low heat until dark, stirring<br />

constantly, so sugar does not burn.<br />

When almost burnt, remove from<br />

heat and stir in hot water gradually.<br />

Mix well, let cool, and pour into<br />

container for use in final cooking.<br />

Final Cooking:<br />

Preheat oven to 250F.<br />

Bring fruit from its resting place.<br />

Stir lime peel, vanilla and<br />

caramelized sugar into fruit. Mix<br />

well. Set aside.<br />

Sift together flour, baking powder<br />

and cloves. Set aside.<br />

Cream together butter and sugar<br />

until mixture is light. Add the eggs,<br />

one at a time until blended.<br />

Stir in dry ingredients gradually.<br />

When mixed, stir in fruit mixture.<br />

Pour into tins lined with buttered<br />

parchment paper or waxed paper.<br />

Place pan (or pans) in large shallow<br />

pan of hot water. Cook in preheated<br />

250F oven for 2 ½ - 3 hours<br />

or until a tester inserted in centre<br />

of cake comes out clean. Cake<br />

should have shrunk from sides of<br />

pan. Cool for 24 hours in tins.<br />

When cool, moisten with rum,<br />

remove from tins, and wrap in aluminum<br />

foil or a rum drenched<br />

cloth. Cakes may be stored to<br />

ripen. If keeping for any length of<br />

time, check occasionally to add<br />

more rum.

Ponche De Creme -<br />

6 eggs, beaten<br />

2 teaspoons grated lime zest<br />

3 (14 ounce) cans sweetened condensed milk<br />

3/4 cup canned evaporated milk<br />

1 1/2 cups rum<br />

1 tablespoon aromatic bitters<br />

1 pinch freshly grated nutmeg<br />

In a large bowl, beat eggs and lime zest using an<br />

electric mixer until light and fluffy. Gradually pour in<br />

the condensed milk while continuing to mix, and<br />

then pour in the evaporated milk. Stir in the rum and<br />

bitters, and sprinkle with nutmeg. Transfer to a bottle<br />

and chill for at least 1 hour before serving. Serve<br />

over crushed ice.<br />

Sorrel Mojito -<br />

White Oak rum 2 ½ oz<br />

Mint leaves 8 leaves<br />

Sugar Syrup ½ oz<br />

Sorrel Juice 1 ¾ oz<br />

Top of with soda<br />

Place rum and mint leaves into tall glass, bruise<br />

leaves using muddling stick, add other ingredients<br />

then top off with soda.<br />

Red Head -<br />

1 ½ White Oak Rum<br />

2 ½ oz grapefruit juice<br />

1/4 oz Grenadine Syrup<br />

2 dashes of Angostura aromatic bitters<br />

Pour all ingredients into cocktail shaker with ice,<br />

shake then pour over into chilled Margarita glass.<br />

Great White -<br />

3/4 oz White Oak Rum<br />

1 ½ oz Mokatika Coffee Liqueur<br />

3 oz evaporated milk<br />

Nutmeg<br />

2 Dashes Angostura aromatic bitters<br />

Pour all ingredients into a cocktail shaker with ice,<br />

shake then pour over into chilled cocktail glass.<br />

Garnish with cherry and grated nutmeg.<br />

Under the Mistletoe -<br />

1 ½ oz White Oak rum<br />

¾ oz Mokatika coffee liqueur<br />

1 oz Strawberry mix<br />

½ oz Angostura lime juice<br />

2 oz Pineapple juice<br />

1 dash Angostura aromatic bitters<br />

Place all ingredients into cocktail shaker. Shake<br />

then strain over ice into rocks glass.<br />

Royal Frost -<br />

1 ½ oz Royal Oak rum<br />

½ oz Ammaretto<br />

½ oz Mokatika<br />

2 oz Full cream milk<br />

Place all ingredients into cocktail shaker. Shake<br />

then strain over into chilled martini glass.

Top Hangover Cures<br />

Drink Lots of Water<br />

You might not be facing a hangover if<br />

you’d paid more attention to your best<br />

friend, water, the night before and<br />

alternated a glass of H20 in between<br />

every alcoholic beverage. But you didn’t<br />

and now you’re in massive, stomach-writhing,<br />

head-pounding pain.<br />

Alcohol dehydrates your body, so the<br />

more water you drink, the more fluids<br />

you replace and the better you will feel.<br />

While nursing a bottle of water the next<br />

morning will certainly help your hangover,<br />

this method is best used preventively.<br />

Down a tall glass of water (or<br />

several) before falling asleep and wake<br />

up feeling at least a bit better.<br />

Gatorade<br />

We definitely don’t feel like competing<br />

in sports events when we’re hung over,<br />

but many of us will consume sports<br />

drinks in our alcohol-induced states of<br />

dehydration. Desperate for electrolytes<br />

(though you may not be consciously<br />

aware of it at the time) you<br />

might turn to the neon-colored<br />

Gatorade, whether you like the flavors<br />

or not. But another supposedly-super<br />

beverage may prove more effective for<br />

some – coconut water.<br />

Greasy Food<br />

That craving for greasy, salty food<br />

always seems like a brilliant idea late<br />

at night when slumping back from the<br />

bar or in the morning, when morosely<br />

staring into the bathroom mirror.<br />

Research may not support the utility of<br />

piling on carbs and fats on top of all<br />

that liquor, but one’s gut certainly<br />

does.<br />

Go For A Run<br />

It seems the conventional “sweat it<br />

out” wisdom may not be accurate. It<br />

only takes an hour for your body to<br />

metabolise an alcoholic beverage, so<br />

most of it is long gone before you hit<br />

the gym the next day. But exercise can<br />

still be helpful. A good, healthy release<br />

of endorphins, combined with fresh air,<br />

could boost your mood and help your<br />

body rid itself of the toxins you shot<br />

into it the night before.<br />

Take Headache Pills<br />

If you’re strictly a headache hangover<br />

kind of person, then good for you! But<br />

chances are that your hangover<br />

includes not only head pain, but also<br />

nausea, fatigue, dehydration and<br />

maybe even some dizziness. In that<br />

case, drugs like acetaminophen and<br />

aspirin will not get you very far.<br />

Acetaminophen has been known to<br />

cause liver damage, which you may<br />

already have enough of if you’re trying<br />

to cure a hangover. And aspirin? Well<br />

it could potentially increase the chance<br />

of bleeding in your stomach and gastrointestinal<br />

tract. So unless you’ve got<br />

just a killer headache, you’re probably<br />

better off drinking lots of water and<br />

getting some rest.<br />

Take Your Vitamins<br />

Because alcohol is a diuretic, you lose<br />

a lot of vitamins and nutrients during a<br />

night on the town. The most important<br />

of which are vitamins B and C. Those<br />

people that use a vitamin B complex —<br />

a pill that includes B1 (thiamine), B2<br />

(riboflavin), folic acid, B6 and B12,<br />

among others — to combat hangovers<br />

swear by their effectiveness. The most<br />

heralded is B12 (also called cobalamin),<br />

which performs a key role in the<br />

functioning of the brain and nervous<br />

system.<br />

Coffee<br />

Day after day, habit alone leads countless<br />

souls to reach for a cup of joe<br />

when their bodies are ill-prepared to<br />

face the world, hangover or no. Alas,<br />

it’s not an all-powerful lifesaver. It’ll<br />

wake you up — at least temporarily —<br />

and may even soothe that insufferable<br />

headache (if it doesn’t give you one).<br />

But there’s some disagreement over<br />

the appropriateness of downing caffeine<br />

— an eye-opening stimulant and<br />

a diuretic — when you’re trying to<br />

recover from too much alcohol. Some<br />

say coffee could further dehydrate you,<br />

while others argue that’s an overblown<br />

concern. Of course, it’s not actually a<br />

good idea to mix alcohol and caffeine.<br />

Self-Pity<br />

Your head hurts, your stomach is sour,<br />

and you feel like an idiot for having<br />

had too much to drink last night. You<br />

may have said something really stupid<br />

to that girl/guy from wherever. You may<br />

have danced on the table. You probably<br />

shouldn’t have kissed that person<br />

the way you did. You woke up in the<br />

doghouse. Might as well just own it.<br />

You did stupid things, you feel like<br />

crap, life isn’t fair. Wah-wah! Well, look<br />

at that — hangover’s disappearing<br />

already.

before or you have heard about our<br />

annual "Carnival — the greatest show<br />

on Earth" and is coming to have some<br />

fun. Here are some DO'S and DON'TS<br />

to ensure you have a safe and wonderful<br />

time, during the Carnival season in<br />

the months of January and February<br />

2012.<br />

DO’S AND DON’TS OF PARTYING OR<br />

LIMING:<br />

DO use common sense, and enjoy<br />

yourself, it's better to be safe than<br />

sorry...<br />

DO have your tickets or entrance<br />

money with you, but ensure that they<br />

are safely tucked away.<br />

DO walk with extra money – for a taxi<br />

to get back to your hotel.<br />

DO have a cell phone with you at all<br />

times, or a local phone card in case of<br />

emergency.<br />

DO carry a condom just in case.<br />

DO make firm transportation arrangements<br />

prior to going to the fete.<br />

DO wear light, comfortable clothes.<br />

Swimsuits are not usual city wear, only<br />

on Carnival Monday and Tuesday when<br />

almost anything goes.<br />

DO wear comfortable shoes, eg sneakers.<br />

Trekking sandals also work well<br />

since Carnival involves a lot of walking.<br />

DO carry ID with you at all times.<br />

DO try the local cuisine from the roadside<br />

vendors, just remember to look<br />

for the food handler’s license.<br />

DO carry and use lots of sunscreen.<br />

You don’t want to miss out on anything<br />

due to sunburn.<br />

DO drink lots of fluids. Carnival falls<br />

right in the middle of the “dry season”<br />

so you can get easily dehydrated without<br />

recognising it.<br />

DO ask for assistance if you need it.<br />

There are many uniformed police,<br />

guards, tourism officers etc available<br />

to direct and help you.<br />

DO check the newspapers daily for<br />

things to do that day.<br />

DO follow your instincts. If it feels<br />

right, do it. If it feels wrong, don’t do it.<br />

DO bring (and wear) a shady hat (baseball<br />

caps will work) and sunglasses.<br />

The sun will be bright.<br />

DRIVING SAFETY TIPS:<br />

Public transportation is handled by private<br />
