Deviations:<br />
The Rational SCC WE 202G combination oven was only able to maintain an average steam mode temperature<br />
of 207°F in the geometric center of the cooking cavity. Any attempts at thermostatic adjustment would<br />
initiate the burners and result in a substantially higher temperature well outside the 212 ± 2°F specification in<br />
section 10.4 of ASTM F2861-10. Preheat, idle, and cooking tests were thus performed at the default steam<br />
mode temperature of 207°F.<br />
Exclusions:<br />
The combi mode ice load cooking uniformity test, as specified in section 10.8 of ASTM F2861-10, was not<br />
performed on the Rational SCC WE 62G combination oven.<br />
