Jerk Chicken Skewers<br />

Spicy jerk sauce is a bedrock of Jamaican cuisine, and as with any barbecue sauce, local kitchens battle over whose<br />

reigns supreme. Traditional ingredients include Scotch Bonnet peppers, allspice, scallions, tomato paste, thyme, black<br />

pepper, cider or cane vinegar, raw cane sugar, salt, garlic, sugar, ginger, nutmeg, and cinnamon. A majority of these<br />

ingredients offer antioxidant benefits. Regardless of which version lights up your taste buds most, a meal with jerk sauce<br />

does a body more good than the same meal served without it.<br />

Sandals Montego Bay shared their recipe <strong>for</strong> Jerk Chicken<br />

Skewers. Make this the centerpiece of your next barbecue.<br />

Sandals Montego Bay<br />

Jerk Chicken Skewers<br />

Ingredients<br />

1 lb. Boneless Chicken Breast<br />

1 Scotch Bonnet Pepper (cubed)<br />

1 Green Pepper (cubed)<br />

1 Onion (cubed)<br />

1 Pineapple (cubed)<br />

3 oz. One Love Jerk Sauce<br />

4 8-in. Wooden Skewers<br />

Directions<br />

Soak skewers in water be<strong>for</strong>e using. Prepare skewers<br />

alternating chicken, onions, peppers, and pineapple.<br />

Brush with One Love Jerk Sauce and place on grill.<br />

Continue brushing with One Love until cooked.<br />

For best results, grill over charcoal, or ideally,<br />

pimento wood.<br />
