TGIS! The day has finally arrived when the weather has warmed just<br />

enough that we run to the patio and grab the spot we’ll call home<br />

for the next three months. When our only worries are the moments<br />

we’re not perched with freshly-cut grass beneath us and beams of<br />

sunshine above. For all that matters on these hot and hazy days are<br />

the eats enjoyed from that glorious patio seat.<br />

Like bees to honey, so are crowds to the charcoal. With so many<br />

days to get your fill of the grill, take this summer to master the art<br />

of the rib. Wow with tender pork ribs saturated in a sweet and sticky<br />

barbecue sauce, or prepare beef ribs with a dry rub of chili powder,<br />

brown sugar and coarse sea salt. Serve as a rack or break apart to<br />

have as an appetizer. Lip-smacking smiles guaranteed.<br />

Dolled up deli salads<br />

If the words ‘deli salad’ don’t drum up feelings of excitement, it’s<br />

Allspice-rubbed Steak with Mango Cucumber Salad<br />

Serves 4 to 6<br />

2 – 8 oz. <strong>Sunterra</strong> Rib-Eye Steak or<br />

Sirloin, about 1/2-inch thick<br />

1/2 tbsp allspice, ground<br />

1/4 tsp garlic purée<br />

1 tsp olive oil<br />

1/4 tsp freshly ground black pepper<br />

Sea salt to taste<br />

Mango Cucumber Salad<br />

1 mango, peeled and sliced<br />

1/2 cucumber, sliced<br />

1 cup cherry tomatoes, halved<br />

1/2 red onion, sliced<br />

1 red pepper, julienned<br />

1/4 cup carrot, peeled and sliced<br />

1 tbsp cilantro, chopped<br />

1 tsp mint, chopped<br />

1/2 head romaine or iceberg lettuce, chopped<br />

Dressing<br />

7 tbsp lemon juice<br />

5 tbsp olive oil<br />

1/2 tsp garlic purée<br />

1 tsp honey<br />

Salt and chili flakes to taste<br />

Combine the allspice, garlic, oil and black pepper in a bowl. Pat steak dry with a towel. Rub with spice mix<br />

and sprinkle sea salt. Let steak sit until it reaches room temperature.<br />

Prepare salad and dressing ingredients and set aside.<br />

Preheat grill to medium heat or slightly lower so spices do not burn. Grill for 2 to 3 minutes on each<br />

side or to your desired level of doneness. Take off grill and let rest for 5 to 6 minutes.<br />

Toss salad with dressing and spread on a platter. Cut steak across the grain into thin strips and lay on top of salad.<br />

For a<br />

fresh twist<br />

• Add 1 to 2 tbsp of crumbled goat cheese, feta or mango-ginger Stilton.<br />

• Substitute the allspice with curry powder for an Asian flare.<br />

• Substitute steak with pork or lamb satay. Or for a lighter option, use chicken breast,<br />

fresh sea bass or halibut.<br />
