RYLAND HEIGHTS - Steve Price plunged his hand into a plastic laundry basket flo<strong>at</strong>ing in a large<br />

tank of bluish w<strong>at</strong>er Friday. From it he pulled a pincer-wielding delicacy, reared a stone's throw<br />

from the Licking River.<br />

A summer of not enough rain and scorching temper<strong>at</strong>ures has stressed lawns and taxed backyard<br />

gardens, but the conditions have been ideal for the <strong>f<strong>at</strong></strong>tening of freshw<strong>at</strong>er prawns <strong>at</strong> Bluegrass<br />

<strong>Shrimp</strong> Farm.<br />

"We're looking for a good harvest this year," said Price, a former president of the <strong>Kentucky</strong><br />

<strong>Aquaculture</strong> Associ<strong>at</strong>ion. "The hot we<strong>at</strong>her really makes these things grow because it makes<br />

them want to e<strong>at</strong>. They're just e<strong>at</strong>ing machines."<br />

"As soon as they're born, all they do is e<strong>at</strong> and e<strong>at</strong> and e<strong>at</strong> and e<strong>at</strong>, " said Price.<br />

Until harvest time, th<strong>at</strong> is, when the Price family - with help from friends and rel<strong>at</strong>ives - drain the<br />

three farm ponds, wade into the mud, scoop up the Malaysian prawns and start selling the savory<br />

crustaceans for $10 per pound <strong>at</strong> 11 a.m. on S<strong>at</strong>urday.<br />

"It's fun. It's a family thing," said Lucas Price, Stephen's son. "Not very many families have an<br />

opportunity to do something like this. I think it's good for the children and even everybody else's<br />

children to come out and just experience the wildlife and get out away from the town."<br />

The average American gobbled up 4.4 pounds of shrimp last year, according to the N<strong>at</strong>ional<br />

Marine Fisheries Service, and an overwhelming percentage of th<strong>at</strong> shrimp came from other<br />

countries, like Thailand, India, China and Indonesia.<br />

The Price family was among the first in <strong>Kentucky</strong> to try shrimp farming. The upcoming harvest,<br />

which is open to the public, will be the 13th <strong>at</strong> Bluegrass <strong>Shrimp</strong> Farm. The <strong>Kentucky</strong> Department<br />

of Agriculture lists 28 other <strong>Kentucky</strong> shrimp farms, including Terry Metcalf's in Campbell County<br />

and Dave Moreland's in Pendleton County, with planned freshw<strong>at</strong>er prawn harvests this year.<br />

"The <strong>Kentucky</strong> farmer is kind of based on, 'Raise tobacco, take it to the warehouse, drop it off and<br />

send me the check in a few weeks,' " said Dr. Jim Tidwell, coordin<strong>at</strong>or of the aquaculture program<br />

<strong>at</strong> <strong>Kentucky</strong> St<strong>at</strong>e <strong>University</strong>. "This doesn't fit th<strong>at</strong> model. I would describe it as having somewh<strong>at</strong><br />

settled into the serious people and the people th<strong>at</strong> have the skills to make it work. And the Prices<br />

are some of those."<br />

Each pond <strong>at</strong> Bluegrass <strong>Shrimp</strong> Farm was stocked in early June with several thousand juvenile<br />

prawns purchased from Thoroughbred <strong>Shrimp</strong> in Frankfort, with a projected yield of 1,000 pounds<br />

<strong>at</strong> harvest. Although a freshw<strong>at</strong>er prawn can grow to as much as a quarter-pound, Tidwell said,<br />

one pound typically equals about 10 head-on prawns.<br />

"We'll have people waiting in line to buy them," Lucas Price said.<br />

The prawns are raised on a feed mixture th<strong>at</strong> contains some of the corn-based mash used by<br />

distilleries, and w<strong>at</strong>er quality is checked daily. <strong>Kentucky</strong> is considered accommod<strong>at</strong>ing for<br />

freshw<strong>at</strong>er prawns because of its moder<strong>at</strong>e clim<strong>at</strong>e and limestone w<strong>at</strong>er.<br />

"Some of the very same factors and reasons we have the world's best racehorses and the world's<br />

best bourbon whiskey," Tidwell said. "The limestone w<strong>at</strong>er seems to have just the right chemistry<br />

for these guys to grow."<br />

And in this global supermarket age, there is a growing number of "ethicureans" who prefer locally<br />

grown foods. The Prices sell under the <strong>Kentucky</strong> Proud label.<br />

<strong>Kentucky</strong>-raised, freshw<strong>at</strong>er shrimp sells for $10 a pound.<br />

"You've got some pretty cosmopolitan folks for a rural st<strong>at</strong>e like <strong>Kentucky</strong> th<strong>at</strong> care about where<br />

the food came from," Tidwell said. "The kind of folks th<strong>at</strong> shop <strong>at</strong> Whole Foods and Wild O<strong>at</strong>s and<br />

want to know not only how it was raised but maybe even know the people th<strong>at</strong> raised it and how it<br />

was done, and maybe even be willing to pay a little extra for th<strong>at</strong>."<br />

"I like 'em any way," he said. "As Bubba Gump would say, 'There's 221 different ways to fix<br />
