Thursday 25th August 2011 - TASSILI WINE DINNER 'Biodynamic Wines'<br />
Shaun will present a selection of six wines made by 'Biodynamic' methods and explain the complex system of vineyard management and<br />
winemaking styles.<br />

Biodynamic winemaking is a philosophy of agricultural practices, first developed by an Austrian scientist, Rudolf Steiner in 1924. Steiner's<br />
philosophy was to bridge the gap between the material and spiritual worlds. To this end, he created the 'spiritual science' of winemaking,<br />
which he used as a basis of the system that persists today.<br />
The key to biodynamics is to consider the vineyard as a living entity, using the lunar phases and cosmic rhythms. In this holistic view the soil is<br />
not seen as simply a substrate for plant growth, but as an organism in its own right. The use of synthetic chemical additions is thus an<br />
anathema; instead they use a series of special preparations to enhance the vineyard life. And disease is not seen as a problem, but rather as a<br />
symptom of a deeper malaise with the farm 'organism'; 'correct the problem in the system and the disease will right itself'.<br />
