Rise in Whole Milk Powder prices WHOLE MILK POWDER auction prices rose for the first time in two months amid expectations of a modest increase in New Zealand production in the second half of the year. The average winning price rose to $4,668 per metric ton. Fonterra expects about 2 percent growth in New Zealand milk collection in the 2013-14 season. Prices surged to a record in April as a drought was declared in New Zealand. Fonterra, which accounts for about a third of the global trade in dairy products, sells whole, skim and butter-milk powder, dried-milk fat, lactose, butter, cheese and casein at its Global Dairy Trade auctions. health Updates What’s New in the Cheese Bazaar Low Cholesterol cheese for hypertension patients A LOW CHOLESTEROL, reduced salt, fatty acid-enriched cheese has been developed by Spanish researchers at AZTI-Tecnalia which is highly suited to the elderly and those suffering from hypertension. This cheese has been created by substituting the animal fats found in milk with cholesterol-free vegetable fats with omega-3 and omega-6 fatty acids The new functional dairy product is low in cholesterol, and rich in omega- 3 and omega-6 fatty acids. Therefore, the total amount of fat is similar to normal cheese, but the difference lies in the quality of fat - being vegetable fat it is healthier for consumers. Furthermore, this prototype can be used as a carrier for incorporating other bioactive compounds such as fatty acids or peptides that would allow product diversification under the category of healthy dairy products. 54 bulletin Reduced Sodium cheese developed CHR-HANSEN HAS DEVELOPED a salt-reducing concept that enables cheese manufactures to cut sodium levels by up to 50% with no difference to taste or texture. The SaltLife concept can cut sodium levels by up to half while ensuring exceptional product quality. The cultures help to maintain the taste forfeited when cutting salt levels. The cheese coagulants improve texture and reduce bitterness. Reducing sodium levels in cheese is technically challenging as it can have an adverse impact on taste, texture and shelf life, according to Chr. Hansen. Indian research on Probiotic and aloe benefits ACCORDING TO A new study published in Nutrition, combining probiotic Lactobacillus rhamnosus GG supplements with aloe vera may slash cholesterol levels by over 40%. The combination also showed significant reductions in triacylgycerol levels, and a 12% increase in HDL cholesterol levels. “An optimized blend of the probiotic LGG and aloe vera gel could be exploited as a potential biotherapeutic remedy to decrease cholesterol levels and lower the risk of CVD, although the field is open for futher studies”, wrote researchers led by Manoj Kumar, Ph.D. from India’s National Institute of Nutrition. High cholesterol levels, hypercholesterolemia, have a long association with many diseases, particularly cardiovascular disease Milk Products for Dietary Protein A STUDY published in the Journal of Nutrition has found that dietary protein helps build bone mass in teenage girls when they consume higher intakes of calcium. The study included 133 young Canadian adults. Assessments were taken of total body bone mineral content and total body bone mineral density along with dietary intake. Results showed that protein intake had a beneficial effect on the bone mass of girls who at peri-adolescence or early (CVD). The Indian researchers divided lab rats into four groups: The first group acted as the control and was fed a normal diet; the other three groups were fed a hypercholesterolemic diet with supplemental LLG, Aloe vera gel, or a combination of both for 45 days. adulthood consumed 1000 mg or more of calcium per day. The authors suggest that protein intake has a beneficial effect on bone development during females’ bone-building years and that adequate calcium intake is necessary for this. They report that milk products are the main source of dietary calcium and are also the second main food source of protein.
