Parallel to the global changes in food<br />

consumption habits occurring as a result<br />

of the increase in the number of working<br />

women, the extension of freezing technologies<br />

to households and having a considerable<br />

advantage in preparation time when compared<br />

with fresh foods; frozen food consumption<br />

continues to increase.<br />

Today many people who consider the nutritional<br />

content of food prefer frozen foods, as the<br />

losses in nutritional content are minimized<br />

with the use of the freezing methods and no<br />

additives are used. It also offers advantages<br />

such as four-season food diversity and long<br />

storage. Taking into account its economical,<br />

time-saving and healthy characteristics frozen<br />

food consumption will continue to increase<br />

around the world.<br />

Accounting for 10% of the frozen food market’s<br />

revenue, frozen fruit and vegetables sector has<br />

gained importance in recent years. In addition<br />

to the tourism industry, the catering sector is<br />

among the most important buyers in this sector.<br />

The market is dominated by Europe, Asia-<br />

Pacific and Americas.<br />

When compared with the world leaders, Turkish<br />

frozen fruit and vegetables industry is a young<br />

and dynamic sector. It assures high quality<br />

standards by careful selection of raw materials,<br />

and is supported by modern processing<br />

techniques and a continuous cold chain.<br />

Production<br />

Turkey is a rich country for fresh fruits and<br />

vegetables. Having the advantage of different<br />

seasonal conditions in her seven different<br />

climatic regions, she benefits by producing a<br />

large variety of fruits and vegetables throughout<br />

the year. In addition to all temperate fruits<br />

and vegetables, most sub–tropical and some<br />

tropical fruits and vegetables are grown in the<br />

country. In the year 2009, Turkey’s total fruit<br />

and vegetable production was realised as 43.4<br />

million tons. Taking advantage of this huge<br />

production volume, the fruits and vegetable<br />

processing industry is very well developed in<br />

Turkey.<br />

The first frozen fruit and vegetable factory<br />

in Turkey was established in 1970, and<br />

up to 1980 most of the frozen production<br />

was realized by the canning industry. After<br />

1980 frozen production was carried out by<br />

specialized production units, and investments<br />

in this sector have continued to grow since<br />

then. At the beginning, production was only for<br />

export markets as local consumption was very<br />

limited in Turkey.<br />

Quality standards are maintained by careful<br />

selection of raw materials, supported by high<br />

processing techniques, R&D activities and a<br />

carefully planned cold chain. The majority of the<br />

plants are established in the Marmara Region<br />

in Turkey for to be close to the production area.<br />

Contract farming is being practiced in<br />

this sector due to the quality and quantity<br />

considirations. In particular, red and green<br />

peppers, broccoli, brussel sprouts, tomatoes,<br />

sweet corns, strawberries, sour cherries, plums<br />

are processed in this way. On the other hand,<br />

products like broccoli, brussels sprouts, sweet<br />

corn have become known to Turkish consumers<br />

by means of the frozen vegetable industry.<br />

The frozen fruit and vegetable production<br />

system in Turkey is based on high technology<br />

and most of the companies use modern<br />

freezing methods. These firms prefer to use the<br />

IQF (Individually Quick <strong>Frozen</strong>) line, while the<br />

rest use shock freezing method. For to be close<br />

to the production area of the raw materials, the<br />

majority of the production plants are located in<br />

the Marmara region.<br />

As quality considerations and consumer<br />

satisfaction are important points for the frozen<br />

fruit and vegetable industry, most of the<br />

producer firms have ISO 9000, HACCP quality<br />

assurance systems that are certified by the Turkish<br />

Standards Institute, as well as internationally<br />

approved organisations. In addition, most of<br />

these firms have R&D departments in order to<br />

produce more competitive products.<br />

The Turkish frozen fruit and vegetable industry<br />

was established as an export-oriented sector.<br />

The majority of the production growth<br />

registered in this sector could be attributed to<br />

increasing foreign demand. However domestic<br />

consumption has been gaining a growing share<br />

due to the changing conditions in modern life.<br />

There has been a gradual decline in export/<br />

production ratio in the early 1990s and the<br />

share fell to below 60 % by the year 2005.<br />

In 1988 the total production of this sector was<br />

only 37,000 tons. In the following years this<br />

amount increased steadily and reached its<br />

highest level in 2006 by nearly 202,000 tons.<br />

In 2008 it was realised as 171,000 tons.<br />

Recognizing the future importance of this sector<br />

and due to the rich natural fruit and vegetable<br />

resources in Turkey, domestic as well as foreign<br />

investments in this sector have been made in the<br />

past few years. It is expected that both domestic<br />

and foreign investments will continue due to<br />

the increasing popularity of these products.<br />

Furthermore, due to the recognition of the<br />

quality of Turkish frozen fruit and vegetable<br />

products in world markets, several firms have<br />

started to use their own brand names.<br />

For the period 1990-1998, export revenues<br />

gained from this sector were almost doubled:<br />

from 37 million dollars to 62 million dollars.<br />

Between the years 1999 and 2009, exports grew<br />

by 75 % and recorded a value of 91 million<br />

dollars in 2009.<br />

Turkey is accepted as an important producer<br />

and exporter in this sector. Turkish frozen fruit<br />

and vegetable exports are destined mainly to<br />

the European markets. EU countries take the first<br />

rank among our export markets due to their high<br />

consumption pattern, geographic proximity, and<br />

have been considered as traditional markets for<br />

frozen fruits and vegetables of Turkish origin. On<br />

the other hand Turkish producers/exporters are<br />

trying to gain stable shares in the U.S., Japan<br />

and Canada as well as in the CIS, the Balkans,<br />

Turkic Countries, Middle and Far East.<br />

Sweet peppers, mushrooms and tomatoes take<br />

the lion’s share in exports of frozen vegetables.<br />

Among frozen fruits, strawberries are the leading<br />

product followed by cherries and apricots.<br />

A brilliant future is expecting the frozen fruit and<br />

vegetable sector when we take into account the<br />

product variety, quality and dynamic structure<br />

of the sector by means of producers and<br />

exporters’ willingness for a better future.<br />
