HOW SAFE IS YOUR WALK IN?
INNOVATIVE CANADIAN TECHNOLOGY CHOSEN
TO KEEP ATHLETES SAFE AT 2010 WINTER OLYMPIC
Wireless Food Monitoring System Will Ensure Safe Food Preparation
for Athletes Residing in Vancouver, Whistler Olympic Villages
Newmarket, Ontario – Staying healthy is not only a top priority for athletes participating in the Vancouver 2010
Olympic Games. It’s also the number one concern of the people responsible for preparing their food, who will
be relying on an innovative Canadian technology to ensure food safety throughout the games.
“Holding and storing food at the proper temperatures is absolutely critical since most food borne illnesses are
caused by keeping food at improper temperatures, especially in refrigerators,” says Tim Osland, Director of
Sales for Food Service for Newmarket, Ontario-based Thermor Ltd., which is supplying a wireless temperature
monitoring system for use in the food pavilions located in the Vancouver and Whistler Olympic Villages.
Specifically, the automated BIOS Professional food monitoring system will be used to monitor walk-in fridges,
air curtain coolers and salad bar units. According to Vancouver Coastal Health, the local public health agency
in B.C. responsible for health protection and monitoring food safety at the Winter Games, potentially hazardous
food must be stored or displayed at a temperature of not more than 4° Celsius for cold items, and not less
than 60° Celsius for hot items. In the absence of an automated monitoring system, compliance can be timeconsuming
and inaccurate.
“We are taking every possible step to ensure the food prepared for athletes is absolutely safe to eat,” says
Domenic Losito, Regional Director of Health Protection, Vancouver Coastal Health. “Use of an automated
temperature monitoring system eliminates the time, expense and potential data gaps associated with manual
record keeping on behalf of the food service provider, while allowing for quick and easy verification of
temperature histories required by agencies like ours in order to ensure safe food handling.”
The BIOS Wireless HACCP Temperature Manager reflects more than two-and-a-half years of design,
development and testing, and can be used for both hot and cold food monitoring. For those in the food
services industry, it provides a means to stay proactive in the wake of extensive food borne illnesses related
to Listeria, Salmonella and E. coli, and can also help to reduce expenses associated with food spoilage.
In Toronto, the BIOS HACCP monitor is being used by Bridgepoint Hospital to monitor its service areas and
vaccine fridges. With heightened awareness on food safety, it is an excellent tool to protect individuals, says
Karen Foster, Manager, Food Services of Bridgepoint Hospital.
“With the BIOS system, owners and managers can be absolutely confident that temperature monitoring is
being done accurately and consistently,” Foster says. “The tamper proof records demonstrate the operation’s
due diligence and managers can focus their time on running the business.”
The unit installed at Bridgepoint Hospital has uncovered several operational problems, Foster explains,
including dry-labbing, walk-in freezers with defective thermostats, and leaving the cooler door open too long
while receiving new stock. “The data logging and diagnostic feature helps managers identify problems before
real dangers occur,” she emphasizes.
Thermor is a key player in the temperature side of the food service industry, and offers a full range of digital,
analog, thermocouple and infrared thermometers to ensure food is cooked and stored at the proper temperature.
The BIOS Wireless HACCP Temperature Manager builds on that expertise, offering a cost-effective, accurate
and reliable temperature logging system that gives food operators peace of mind. In addition to being used
at several venues throughout the Vancouver 2010 Olympic Games, the sophisticated wireless system is also
in use at Smitty’s restaurants, and is being tested by St. Hubert BBQ, IKEA, A&W, Boston Pizza, Delta Hotels,
M&M Meats, Disney Corp., Bob Evans, and Compass Canada.
Inukshuk Whistler
Olympic Park
The High Performance Centre will
be the epicenter of athlete training
and development in Whistler
long after the 2010 Olympic and
Paralympic Winter Games.
The Athlete’s Village Food
Marketplace had made-to-order,
fresh-food stations at the athletes’
villages in both Vancouver and
Whistler. These facilities provided
half a million meals to athletes and
Olympic-village workers over a
60-day period.
All the refrigeration, freezers and
food prep area temperatures were
wirelessly monitored at the Sudexo
Central Food and Beverage
office at each village. Staff were
immediately alerted if there were
instances of temperature issues.
What Are The Benefits Of Using The
Wireless HACCP Temperature Manager?
For more information on this product please contact us at 1.866.399.3599 or haccpinfo@thermor-ins.com

WHAT ARE THE BENEFITS OF USING THE
WIRELESS HACCP TEMPERATURE MONITOR?
COST SAVINGS
The BIOS Professional HACCP Temperature Manager eliminates the
time and expense of manual data collection and record keeping.
Temperature data is automatically retrieved every 15 minutes
around the clock, everyday.
Owners and managers can be confident that temperature
monitoring is being done accurately and consistently, leaving them
time to focus on “running the business.”
The time saved by managers and other personnel pays for the unit
in a matter of months!
CRITICAL CONTROL POINT TEMPERATURES
Maximum and minimum temperature control points are programmed
into the monitor for each sensor.
If a temperature falls outside the “safe range” the sensor goes into
“alarm mode” by flashing a red light and sounding a 90 dB beeper
alarm. On the monitor, the data line from that particular sensor
flashes, the red alert light comes on, and the beeper alarm sounds.
All outside safe range data is highlighted in red in the Excel storage
document.
TAMPER PROOF RECORD KEEPING
The monitor collects temperature data from external temperature
sensors every 15 minutes and stores the information for 10 days
(when using 6 sensors). The data collected is easily uploaded to
a PC in an Excel document for storage. This software has been
designed so that all temperature data is completely “tamper proof”.
The data cannot be deleted, or altered in any way.
Tamper proof log sheets are created in Excel for storage, graphing,
and email.
These records will demonstrate “due diligence” with respect to all
temperature monitoring protocols.
HACCP CHECK THERMOCOUPLE KIT
HACCP CHECK THERMOCOUPLE KIT | 312SC
This new thermocouple has more than just a price advantage. It has three icons which instantly show you when you are in the safe
cold holding, safe hot holding or danger zones for food safety.
The “HACCP CHECK” feature is incorporated in our thermometer temperature to graphically indicate critical temperature zones.
The icons and LED indicators located above the display indicate whether a food product stays in a safe or unsafe HACCP “Danger
Zone” temperature. A Green LED appears with indicating a safe cool or frozen condition below 40°F (4°C) or appears with
indicating a safe holding temperature above 140°F (60°C). When temperature is between 40°F to 140°F (4°C to 60°C), the Red
LED with will appear and indicate that the temperature is within the HACCP “Danger Zone” from 40°F to 140°F (4°C to 60°C).
270 OIL TESTER
TESTO OIL TESTER | 0563.2702
Easy to operate
Repeatable results
User adjustable alarm limits
Protective shroud
Dishwasher safe “TopSafe” cover
Unique temperature compensated sensors allow sequential samples
Temperature range:
104°F to 410°F / 40°C to 210°C
0554.2650
(sold separately)
Easy to use: within 15 seconds a bright LED display tells you if its time
to change the oil or to filter. That’s it! No more guessing, no more
relying on odour, taste, colour... all subjective and hard to repeat
measures. The 270 helps you “standardize” your oil change routine
so everyone knows when it’s time to change the oil.
COOKING OIL TESTER
With the Testo 270 you can always make every drop of shortening
count! The oil tester helps you:
Save money...improve food quality...protect your brand.
HOW IT WORKS:
• Save money by not changing oil too soon and being certain
when the right time is to change the oil
• Ensure product quality and protect your brand - what is the
cost of losing a customer?
The Optimal Frying Point: All cooking oil
needs to season some time before it performs
optimally in the frying process. Between 14%
and 22% TPM (Total Polar Materials), cooking
oil is at its optimal “fry range.” The 270 shows
you when the optimal fry range is reached,
so you don’t waste oil or use it beyond its
useful life.

HEAT RESISTANT GLOVES
According to the National Institute of Occupational Safety and Health (NIOSH), burns are the second most costly occupational injury per incident
after motor vehicle crashes. The loop structure of the 100% terry cloth provides excellent heat and cut protection. An insulating layer of air
forms beneath each loop, allowing the glove to dissipate heat quickly. Terry cloth is a natural insulator, offering the most effective protection
from 200°F to 450°F / 93.3°C to 204.4°C and stands up to repeated laundering with minimal shrinkage while staying flexible and durable.
