A pplication: taste characterization<br />

Objective: compare 4 different tomato juices (TJ1 to TJ4) based on their taste<br />

attributes (sourness, saltiness, umami = tomato taste and sweetness)<br />

Equipment: Astree Electronic Tongue <strong>with</strong> taste screening sensor set<br />

Direct measurement of sourness, saltiness and umami<br />

<strong>For</strong> sweetness quantification, glucose (main sweet component in tomato) is used as a standard<br />

Analytical conditions<br />

Results<br />

Number of repeats : 3 replicates / sample Acquisition time: 2 min<br />

Sample volume: 25 g Cleaning time : 10 sec<br />

Time per analysis: 3 min Total analysis time : 90 min<br />

Standard addition method: 5 glucose concentrations (0.1, 0.25, 0.5, 1, 2 % w/w) added to TJ1<br />

Sample TJ1 is the most different; the other 3 samples are<br />

showing similar characteristics for saltiness and umami.<br />

Sample TJ1 presents the highest score in sourness,<br />

saltiness and umami but the lowest score in sweetness.<br />
