Bread evolution, bread resolution 

Bread has long been the staple of any home. But with health 

at the forefront of our minds, it’s time to evolve. Opt for grainy 

breads made with whole wheat flour to pack your diet full of 

fibre. For dinner, ditch the bowls and serve hearty soups in 

pumpernickel or sourdough bread bowls. This is a new year’s 

resolution you can stick to. 

Oh my grain! 

Gluten-free grain. It’s music to so many people’s ears. Few can 

pronounce it, but all can enjoy it. A super-seed free of gluten, 

full of protein and high in fibre, quinoa (KEEN WAH) is a wonder. 

Wake up to it with honey, almonds and berries, have it as a salad 

for lunch with apples, cranberries and feta or enjoy it for dinner 

as a vegetable pilaf with kale, tomatoes and corn.

A hearty meal made of noodles is always a family pleaser. 

Make it healthy with whole wheat pasta or couscous. In addition 

to the vitamin and fibre benefits, it’s inexpensive, easy and 

works great as leftovers. Pair penne with chorizo sausage, 

peppers, mushrooms, rich tomato sauce, fresh basil and 

Parmesan-Reggiano, or try couscous with chicken, almonds and 

squash. Let the kids choose the veggies; plates will be empty 

and bellies full.

Roasted Yam and Cranberry Salad 

By Sunterra Chef Julie Weir 

Serves 6 to 8 

1 ½ kg yams (approx. 2 to 3) 

2 tbsp canola or olive oil 

Salt and black pepper to taste 

1/2 cup green pepper, diced 

1/2 cup red pepper, diced 

1/4 cup green onion, chopped 

3/4 cup dried cranberries 

1/2 cup yellow onions, diced finely 

1/2 cup pumpkin seeds, toasted 

Dressing 

2 tbsp pure maple syrup 

2 tbsp white wine vinegar 

1 tsp Dijon 

2 tbsp orange juice 

1/2 tsp orange zest 

1/2 cup canola or olive oil 

Salt and black pepper to taste 

For a fresh twist 

• Instead of cooling yams after cooking, immediately toss with dressing and 

vegetables. Serve as a warm salad on cold winter days. 

• Top finished salad with blue cheese or goat cheese and pecans. 

• Add crispy bacon, 1/2 tsp of chopped garlic and a pinch of cayenne. 

Preheat oven to 175 C (350 F). 

Wash, peel and cut yams into 1-inch cubes. Toss with 2 tbsp of oil and season with salt and pepper. 

Roast for 15 to 20 minutes, until tender but not overcooked. Cool to room temperature. 

Whisk all dressing ingredients together and toss with cooked yams, chopped vegetables, cranberries 

and seeds. Check flavour and add salt and pepper if needed.
