- Micro-Malting:<br />

(6) Steep cabinets, (8) Germination cabinets, (2) Kiln cabinets. Each cabinet consisting of (5) cans with 2.2-kg nominal<br />

barley load capacity, total barley loading 11.0-kg per cabinet nominal. Utilizing all cans within a cabinet will yield<br />

malt required for one all-malt brew from pilot brewhouse.<br />

Micromalting key parameters in steep, germination and kiln controlled by PLC, allowing replication of process.<br />

- Pilot Brewery:<br />

(5) vessel brewhouse: Cereal cooker, mash-mixer, lauter tun, brew-kettle and whirlpool. Brewery standard aeration, wort<br />

cooling and yeast pitching. (8) Fermentation vessels. Above brewery equipment PLC controlled key parameters for<br />

replication of process. System is capable of producing most major beer styles and formulations, including various<br />

cereal and syrup adjuncts.<br />

System is nominally designed for 13.5 gallons all malt brew at 12.0 plato. Typically produce 10 gallons in fermentation, five<br />

gallons available for packaging as needed.<br />

Filtration accomplished by beverage sheet filtration, packaging by single head PLC controlled beverage bottle filler.<br />

- Brewery Lab:<br />

Wort analysis of FAN, Bradford method (Coomassie blue binding) foam proteins, extract. Fermentation lab capabilities<br />

include daily FAN, yeast count by hemocytometer and ATP bioluminescence (EasyCount (TM)), Physical analysis by<br />

SCABA: OG, AE, RE, RDF, Alc (w/w), Alc (v/v), Calories, color. Finished beer analyses include all wort and<br />

fermentation data, and Nibem-T foam and haze analyses. Non-standard analysis are performed as needed by other<br />

<strong>Cargill</strong> malt labs, other <strong>Cargill</strong> BU labs, or external labs.

‣The brewery is fully automated with a<br />

Steinecker controlling system. Flexibility for<br />

optimisation of different processes.<br />

‣ Infusion and decoction processes are possible with the<br />

system. The cooker has a capacity of 80 L, The mash tun kettle takes<br />

100 L. Mash separation is done with a classical lautertun having a<br />

max. load of 300 kg/m². The height and speed of raking are<br />

automatically controlled. Wort boiling is possible with an internal or<br />

external boiling system. Hot break is removed in the whirlpool.
