CHORIZO CRIOLLO & CHIMICHURRI<br />

Creole sausage cut down the middle and served with chimichurri<br />

marinade (olive oil, vinegar, fresh local parsley, fresh garlic, oregano, red<br />

pepper flakes, salt and white pepper) on a French baguette.<br />

Our sausage is made with all natural 100% pork, local BODEGA<br />

BOGATI white wine seasoned with fresh garlic, and spices. This is an<br />

authentic recipe from the Province of Córdoba’s countryside. We learned<br />

to make this chorizo from our family in the outskirts of Ucacha, a small<br />

town about 60 miles east of Rio Cuarto, in the heart of the Humid Pampas.<br />

with a topping made of sweetened quince, and<br />

adorned with thin strips of the same pastry,<br />

forming a squared pattern. This delicious filled<br />

We are a small, family owned company with a passion for traditional gourmet foods.<br />

Our products are made to order and in small batches every week. We use recipes that have been<br />

handed down by our grandparents and that will be enjoyed by our grandchildren.<br />

We invite you to stop by the Argentine <strong>Festival</strong> 2012 to sample them.<br />

Our handcrafted sausages are made with local<br />

Virginia BODEGA BOGATI wine, fresh herbs, and<br />

are stuffed into natural hog casings from fine<br />

cuts of beef chuck and pork shoulder. We believe<br />

in using local ingredients whenever possible<br />

and never sacrificing quality over quantity.<br />

The meats used in our sausages come from<br />

animals that were born and raised humanely<br />

in the U.S.A., are free of anti-biotics or growth<br />

hormones, and were not fed any animalby-products.<br />

We use free-range grass-fed<br />

beef and %100 vegetable diet fed pork.<br />
