Xanthan, popularly known as xanthan gum, a polysaccharide synthesized <strong>and</strong> secreted by a<br />

bacterium, Xanthomonas campestris, is commonly used as a rheology modifier <strong>and</strong> food<br />

additive. It performs the function of a thickening agent in food such as, salad dressings, <strong>and</strong><br />

a stabilizing agent in cosmetics <strong>and</strong> personal care products It s also used in oil <strong>and</strong> drilling<br />

operations for lubricating, fracking <strong>and</strong> viscosity modifying applications.<br />

Xanthan gum consists of repeating units of five carbon ring structures (Pentasaccharides),<br />

containing glucuronic acid, mannose, <strong>and</strong> glucose (in molar ratio 2:2:1). Xanthan gum is<br />

manufactured by fermentation of sugars such as lac<strong>to</strong>se, sucrose or glucose. After<br />

fermentation, the polysaccharide formed is extracted through precipitation from a


nutrition/growth medium by adding isopropyl alcohol, drying <strong>and</strong> then grounding the extract<br />

in<strong>to</strong> fine powder. Xanthan gum is formed by adding the powdered polysaccharide in<strong>to</strong> a<br />

Zinc is a bluish-white metal which has an extremely shinny surface. Zinc is abundantly found<br />

in the earth’s crust. The process of extracting zinc from its ore was invented in India. Zinc<br />

does not occur as a free metal in the earth’s crust. Some of the most important zinc ores are<br />

others. Zinc is neither malleable nor ductile at room temperature. However, at temperature<br />

metal is approximately 7.14 grams per cubic centimeter. Zinc metal being a soft metal has a<br />

hardness of only 2.5 on the Mohs scale. Zinc is an active metal <strong>and</strong> is thus, soluble in both<br />

alkalis <strong>and</strong> acids. Zinc does not react with oxygen in dry air. However, in moist air it forms<br />

zinc carbonate. Zinc burns in air with a bluish flame. The major zinc chemicals having huge<br />
