Ingredients Needed:<br />

Boned chicken breast halves – 4 ounce (skinned), Seedless raspberry preserves – 1/3<br />

cup, <strong>Raspberry</strong> balsamic vinegar – 3 tablespoons, Vegetable oil – 1 tablespoon, Red<br />

onion – ½ cup (chopped), Dried thyme – ½ tablespoon, Pepper – ¼ teaspoon, Salt – ½<br />

teaspoon and Cooking spray.<br />

Preparation:<br />

Heat vegetable oil in a large skillet coated with cooking spray over a medium-high<br />

heat until hot. Add chopped onion and sauté for 5 minutes. After that, combine thyme<br />

and ¼ teaspoon salt; and sprinkle it over chicken. Add chicken to skillet and reduce<br />

the heat to medium-low. Then, add the remaining salt, preserves and raspberry<br />

balsamic vinegar and pepper. Stir it constantly until the preserves melt. Take a serving<br />

plate and put a chicken breast in it. Spoon the raspberry sauce over the chicken. Serve<br />

every plate with 1 chicken breast and 2 tablespoons of raspberry sauce.
