Wine Review Comme un voyage,<br />
au centre de la terre<br />
Read the soil and<br />
taste the difference<br />
Welcome to the hamlet of La Liquière in the Faugères Appellati<strong>on</strong><br />
vineyards. The Mediterranean sea is nearby and the<br />
landscape comprises hillsides and wild slopes - the start of<br />
the Cevennes mountain ranges. Off the main road is an amazing<br />
domain, Clos Fantine, run by sisters, Corinne and Carole,<br />
and their brother Olivier. Their father, was born there<br />
and created the domain from nothing. Today, the family has<br />
24 ha, all in the area of the appellati<strong>on</strong> and they work their<br />
land like few others. They have a belief that growers should<br />
treate the land with respect and not impose their ideas <strong>on</strong> the<br />
land. They watch the subtle changes in the soil, and its natural<br />
fauna, and learn from it - not in a way that goes back to<br />
the dark ages but with a forward looking perspective. They<br />
never abuse the land with chemicals, pesticides, or fertilizers,<br />
or even with copper, which is unusual in the vineyards as copper<br />
treatments are used to rid vines of mildew.<br />
As the seas<strong>on</strong>s change the family watch the ground and note<br />
changes in the colours of what they call the 'plant carpet'. For<br />
example, if, in spring, the 'carpet' between the rows is green,<br />
it means there will be a lot of fungus in the vineyard, if its violet<br />
it indicates bacteria! This knowledge helps them work out<br />
what problems to expect and how to deal with them. They say<br />
there is an 'invisible world' underground and it's this hidden<br />
world, or life, that gives birth to their wine. It's what the French<br />
call 'terroir' - soil character. With these core beliefs and by not<br />
using any pesticides whatsoever, they are looking for a wild,<br />
natural vine. Of course, this means taking risks like having<br />
less producti<strong>on</strong> when there is a lot of mildew as there was last<br />
year, and then taking a lot l<strong>on</strong>ger to finish the fermentati<strong>on</strong> -<br />
as l<strong>on</strong>g as two years sometimes. Clos Fantine produce a<br />
range of four red wines - two in AOC and two in Vin de table,<br />
between €8-20. The wine should be decanted for a minimum<br />
20 minutes before tasting but it's even better if opened several<br />
hours before. There is very little, if any, sulphur added.<br />
However, the natural carb<strong>on</strong> dioxide in the product does produce<br />
a hidden fizzyness to the taste!<br />

Dans le fameux vignoble de Faugères, entre Cévennes et Méditerranée,<br />
l’hiver perdure, et jusqu’en mars certaines vignes, toutes<br />
ébouriffées dans le vent, n’<strong>on</strong>t pas encore perdu de leur chevelure. Au<br />
Clos Fantine, au lieu-dit La Liquière, le père, postier de s<strong>on</strong> état, avait<br />
démarré l’aventure en investissant dans les vignes de sa terre natale.<br />
Aujourd’hui, sur 24 ha, ses trois enfants, Carole, Corinne et Olivier,<br />
éprouvent le métier comme un artiste travaille l’expressi<strong>on</strong> de s<strong>on</strong> talent<br />
: par intuiti<strong>on</strong>. “C’est la nature qui commande et c’est à l’homme<br />
de savoir s’y adapter et de comprendre qu’il forme un tout avec elle,<br />
sans se prendre pour un prédateur”. À chaque sais<strong>on</strong>, ils se remettent<br />
à l’épreuve, avec leurs vignes, et pratiquent le vin au naturel. Ce n’est<br />
pas un retour au passé. Ce n’est pas seulement refuser l’usage de pesticides<br />
et d’engrais. C’est bien une vol<strong>on</strong>té farouche d’aller de l’avant<br />
et d’expérimenter des procédés naturels pour la culture de la vigne.<br />
Au printemps, ils <strong>on</strong>t pu observer que le tapis végétal, c'est-à-dire<br />
l’herbe, les fleurs, en émergeant, d<strong>on</strong>ne une couleur particulière au sol<br />
qui sera différente en f<strong>on</strong>cti<strong>on</strong> du climat de l’année. Violette ce sera<br />
le signe de bactéries. Vert celui des champign<strong>on</strong>s etc.… Ils c<strong>on</strong>sidèrent<br />
les parcelles comme le sous-bois d’une forêt, aut<strong>on</strong>ome, et le raisin<br />
comme un fruit sauvage, en équilibre dans la nature depuis des<br />
millénaires. Dans le m<strong>on</strong>de du Clos Fantine, c’est le vers de terre qui<br />
d<strong>on</strong>ne s<strong>on</strong> authenticité au vin, ce s<strong>on</strong>t les champign<strong>on</strong>s qui naissent<br />
dans le sol qui v<strong>on</strong>t permettre la vinificati<strong>on</strong> en cave. Mais quel travail,<br />
ils se d<strong>on</strong>nent là, ces trois-là, à écouter et observer les vignes :<br />
“On coupe le raisin à la main, <strong>on</strong> le sent, <strong>on</strong> le touche, <strong>on</strong> voit quand<br />
le raisin doit être vendangé ou pas. On veut garder la fermeté de la<br />
nuit, la fraîcheur du fruit, s<strong>on</strong> acidité naturelle, ce qui va relever le<br />
vin, en bouche, le faire s’éterniser sur le palais”. La gamme du domaine<br />
se répartit en 4 vins rouges, entre 8€ et 20€, d<strong>on</strong>t 2 AOC et<br />
2 vins de table. À l’ouverture des bouteilles, pensez à carafer le vin.<br />
Le naturel, sans soufre ajouté ou en très petite quantité, exige en<br />
c<strong>on</strong>trepartie de garder le gaz carb<strong>on</strong>ique qui se dégage à la fermentati<strong>on</strong><br />
pour une meilleure c<strong>on</strong>servati<strong>on</strong>. Le carafer, c’est l’aérer.<br />
C'est-à-dire ôter le gaz qui d<strong>on</strong>nera toujours en bouche ce “frisant “,<br />
plaisant pour certains et surprenant pour ceux qui le goûtent pour la<br />
première fois. Mais le carafer, c’est aussi lui d<strong>on</strong>ner de l’oxygène, le<br />
placer dans l’ambiance du repas et le faire vivre avec vous. Boire c’est<br />
partager une énergie !<br />

This m<strong>on</strong>th we welcome Spring! Warmer,<br />
lighter, l<strong>on</strong>ger days and time to put <strong>on</strong> those gardening<br />
gloves and get your patch into shape.<br />
We’ve got some tips <strong>on</strong> how to do it.<br />
We’ve also had a chat with an entrepreneurial<br />
young man who’s travelled the world and decided<br />
to put down his roots in the Languedoc. His<br />
story is sure to bring a smile to your face!<br />
We’ve also taken a look at bread - French bread<br />
- and you’ll be amazed at the laws c<strong>on</strong>trolling<br />
it’s producti<strong>on</strong> and take your hats off to the bakers<br />
who stick by them. Even Marie Antoinette<br />
would have a twinkle in her eye if she could see<br />
the outcome of her notorious pr<strong>on</strong>ouncement ’let<br />
them eat cake’!<br />
If you’re a rugby fan then you’re certain to be<br />
glued to the TV watching the six nati<strong>on</strong>s rugby<br />
tournament. If you like a bit of company while<br />
you watch then check out your local bar or restaurant.<br />
This is a dedicated rugby area and<br />
many eateries screen the games providing a<br />
friendly envir<strong>on</strong>ment in which to keep up with the<br />
tournament’s progress. The word recycling has<br />
become very trendy in recent years, although<br />
those people born during or just after WW2, recycle<br />
just about everything as a matter of course.<br />
Vegetable peelings and waste go into the compost<br />
bin al<strong>on</strong>g with shredded paper. Out of date<br />
clothes get jazzed up or given to charity and the<br />
old sofa is given a new cover and kept in service.<br />
But what happens to the waste we put in<br />
our bins every week? This m<strong>on</strong>th we’ve quizzed<br />
Sictom <strong>on</strong> where it goes so that you can be assured<br />
your efforts are not a waste of time. We’re<br />
also giving Sictom our ‘bouquet’ of the m<strong>on</strong>th for<br />
presenting their excellent free calendar in English<br />
and French so that we have no excuse for not<br />
doing the right thing properly. They’re also updating<br />
their website in English and French and<br />
provide speakers in both languages at the end<br />
of the ph<strong>on</strong>e.<br />
This m<strong>on</strong>th we launch our BBB Tuesday Club<br />
where you can enjoy a morning with fellow BBB<br />
readers and be entertained by our guest speakers.<br />

Un peu de ball<strong>on</strong> ovale, ça va nous défouler<br />
et puis ça nous fera oublier les autres mêlées des<br />
manifestati<strong>on</strong>s où il y a beaucoup plus d’arbitres<br />
qui s<strong>on</strong>t déguisés en CRS. Heureusement qu’il<br />
n’y a pas de grève des rugbymen, ce serait le<br />
pomp<strong>on</strong> ! Au fait comme il paraît que les<br />
hommes viennent de Mars il faut fêter ça, et oui,<br />
désolé mesdames mais il n’y a pas de mois de<br />
Vénus.<br />
C’est une b<strong>on</strong>ne occasi<strong>on</strong> de goûter une de ces<br />
bouteilles dans les col<strong>on</strong>nes de notre ami Olivier<br />
Lebar<strong>on</strong>, et même si nous ne sommes pas sortis<br />
de la cuisse de Jupiter comme Di<strong>on</strong>ysos (Dieu du<br />
vin), ça ne nous empêche pas d’apprécier cette<br />
expressi<strong>on</strong> bien française : “elle a de la cuisse”.<br />

we try and visit every couple of m<strong>on</strong>ths.<br />
Unfortunately, due to family illness, we’ve<br />
been unable to come down since last<br />
May. But it’s been an absolute pleasure to<br />
read BBB through the internet. It’s kept us<br />
up to date with some of the events and let<br />
us feel the lovely ambience of Pézenas<br />
and its surroundings.<br />

The slave who became a Saint<br />
In 385 AD the man who was to become the Apostle of Ireland, St Patrick, was born<br />
to a Christian family in England, possibly near the Severn or in Pembroke. At age 16, he<br />
was captured by Irish marauders, enslaved and forced to work as a herdsman near Ballymena,<br />
Co Antrim and/or Croaghpatrick.<br />
After six years, in resp<strong>on</strong>se to a ‘voice’ the young man escaped<br />
and fled to Gaul. He spent several years wandering<br />
the c<strong>on</strong>tinent before entering the M<strong>on</strong>astery at<br />
Lerins where he received the t<strong>on</strong>sure - the shaving<br />
of the head that marks admissi<strong>on</strong> to priesthood.<br />
In 413 Patrick returned to the UK, living for<br />
some years with relatives, until he had a ‘visi<strong>on</strong>’<br />
calling him to return to Ireland to<br />
c<strong>on</strong>vert it to Christianity. In preparati<strong>on</strong> he<br />
returned to Europe and studied for 12 years<br />
at Auxerre before returning to Ireland.<br />
In winter 432 the brave Patrick defied the pagan<br />
priests of Tara by kindling the Easter fire, creating<br />
indignati<strong>on</strong> at first, but later, respect, in the Court of<br />
the High King. Tara became Patrick’s headquarters and with<br />
a band of followers he w<strong>on</strong> c<strong>on</strong>verts in Meath, Leitrim, Cavan and Western Ireland.<br />
With the approval of Pope St Leo 1st, he established his archiepiscopal see at Armagh and<br />
by the time of his death in 461, Ireland was almost entirely Christian.<br />
Patrick’s success is credited to his understanding of, and respect for, the social structure of<br />
Ireland, a country he c<strong>on</strong>verted tribe by tribe, while modifying the harsher laws of the<br />
land that dealt with slaves and taxati<strong>on</strong> of the poor.<br />
Before his retirement to Saul in 457 AD, he introduced the Roman alphabet to Ireland. Patrick<br />
died in Saul and was buried in Downpatrick which was a great European shrine until<br />
its destructi<strong>on</strong> by the English Government in 1539. St Patrick was <strong>on</strong>e of the most successful<br />
missi<strong>on</strong>aries in history and his life is traditi<strong>on</strong>ally celebrated <strong>on</strong> <str<strong>on</strong>g>March</str<strong>on</strong>g> 17th.

Le Ban des Gourmands<br />
There’s no ban <strong>on</strong> food lovers here!<br />
'Ban' in French has many meanings - the best known is 'an official publicati<strong>on</strong>' usually<br />
used for a wedding. 'Gourmands' means 'food lovers'. But when we visited this restaurant<br />
we quickly discovered that far from being banned, food lovers were most welcome!<br />
This typical bistro, hidden near the modern St Francois Church <strong>on</strong> the other side of the train<br />
stati<strong>on</strong>, is in a popular, old neighbourhood which still has an authentic feeling. For the past<br />
13 years, this restaurant has operated with the same owners and an assiduous clientele -<br />
it definitely deserved a visit!<br />
Warm, friendly, welcoming, totally laidback, old heavy fabric behind the door to keep<br />
the cold out, beautiful st<strong>on</strong>e wall <strong>on</strong> <strong>on</strong>e side, a huge st<strong>on</strong>e fireplace, unfortunately not<br />
working anymore, in the middle, just the right ingredients to put you in a perfect mood to<br />
enjoy the evening.<br />
The menu at €28 showing 'land side' or 'sea side' made it clear what to expect but my<br />
friend, being an extreme vegetarian (no meat, no fish, no seafood), set the owners an immediate<br />
test by asking if a dish could be arranged for him.<br />
No problem, my friend was treated to a gorgeous plate filled with vegetable mousse and<br />
other crusty 'feuilletés which was absolutely delicious. As for me, I was delighted with Corsican<br />
pig meat that let you imagine and feel the smell of the wild 'garrigue' over there!<br />
The cheese plate (five varieties) for me, and dessert plate (also five varieties), for my friend<br />
provided plenty for both of us. They were tailor made for greedy 'gourmands' like us, especially<br />
me - I almost fought to finish both plates by my own!<br />
I completely forgot to check the wine list and followed the advice of my host, a white Corsican<br />
wine for aperitif and a red <strong>on</strong>e for the meal (produce by the family <strong>on</strong> the island).<br />
But before leaving, while we had a chat with the chef, I realised that many bottles, from<br />
the best Languedoc wines, were resting next to the kitchen. While we were talking I also<br />
understood through their words that Jacques and Catherine love their job and the card<br />
from the restaurant 'made with fresh products' or 'cuisine du marché' said it all!<br />
A marvellous place to go with a perfect name! The price, €76,50 for two all included. deserved<br />
a real big tip. We were well pleased. Eric<br />

Depuis plus de 13 ans, cet estaminet,<br />
face à l’église St-François, à deux pas de<br />
la gare SNCF, d<strong>on</strong>ne l’impressi<strong>on</strong> de faire<br />
partie du décor d’origine dans ce quartier<br />
populaire de M<strong>on</strong>tpellier qui a c<strong>on</strong>servé<br />
une atmosphère authentique. En effet, un<br />
restaurant familial toujours en activité depuis<br />
tant d’années, avec les mêmes propriétaires<br />
et une clientèle assidue ne peut<br />
que susciter la curiosité !<br />
Accueil chaleureux, c<strong>on</strong>vivial et parfaitement<br />
déc<strong>on</strong>tracté ; le cadre avec tentures<br />
à l’entrée, le grand mur en pierre de taille<br />
à gauche et une énorme cheminée au<br />
centre (malheureusement plus en f<strong>on</strong>cti<strong>on</strong>nement)<br />
vous d<strong>on</strong>nent envie de commander<br />
sans plus attendre. M<strong>on</strong> ami,<br />
étant végétarien aggravé et ne c<strong>on</strong>sommant<br />
ni poiss<strong>on</strong> ni fruit de mer, je m’enquiers<br />
immédiatement auprès de la<br />
patr<strong>on</strong>ne : s<strong>on</strong> cas est-il désespéré ? (le<br />
menu à 28€ “côté mer” et “côté terre”<br />
étant explicite). Aucun problème, il lui<br />
sera servi une assiette d’assortiment de<br />
mousses de légumes et autres croustillants<br />
feuilletés absolument succulents. Moi, je<br />
salive déjà avec une coch<strong>on</strong>naille corse<br />
d<strong>on</strong>t je vous laisse imaginer la saveur et<br />
les odeurs de garrigue. Assiette de fromages<br />
(cinq) pour moi et assiette de desserts<br />
(cinq) pour lui, copieuses et vraiment<br />
faites pour des gourmands (je me suis<br />
battu pour finir l’assiette de m<strong>on</strong> ami !). Il<br />
n’y a que la carte des vins que j’ai oublié<br />
de c<strong>on</strong>sulter tellement j’étais disposé à<br />
suivre les suggesti<strong>on</strong>s de notre hôtesse,<br />
Catherine : nous sommes restés sur un<br />
blanc Corse, cépage Vermentino en apéritif,<br />
et un rouge Corse également en vin<br />
de table très correct. Mais avant de partir<br />
et après avoir l<strong>on</strong>guement discuté avec<br />
le couple, j’ai pu c<strong>on</strong>stater que les bouteilles<br />
présentes près du bar f<strong>on</strong>t h<strong>on</strong>neur<br />
aux très b<strong>on</strong>s vignobles Languedociens.<br />
Quant à notre c<strong>on</strong>versati<strong>on</strong> avec Jacques,<br />
je me suis très vite aperçu que c’est le<br />
plaisir qui parle et que leur carte de visite<br />
avec “cuisine du marché” résume à merveille<br />
leur travail. Ah oui, le prix, 76,50€<br />
pour deux, un rapport qualité/prix excepti<strong>on</strong>nel<br />

Making a meal of it<br />
in the South of France!<br />
From the day he was born, Kent Terry led a nomadic life, moving more often than most<br />
people have a roast dinner! But in 2005 he found himself in d’Herault and says he’s finally<br />
found his ‘little patch of paradise’. This is his story.<br />
Kent was born in Herne Bay 41 years ago. He says his mother must have had Romany<br />
blood in her because she loved moving from place to place and his childhood was spent<br />
in numerous homes in the South of England, L<strong>on</strong>d<strong>on</strong>, Sussex and even Ireland. He must<br />
have inherited an overdose of her genes because at age 16 he quit the UK for Finland<br />
where his teenage love lived. For six m<strong>on</strong>ths Kent worked as a dishwasher in a restaurant<br />
until the police turned up, escorted him to the nearest port, put him <strong>on</strong> a boat and sent him<br />
<strong>on</strong> his way. The naïve, lovelorn Kent didn’t have a visa to live in Finland!<br />
Not <strong>on</strong>e to be deterred by bureaucratic technicalities, Kent applied for a visa and booked<br />
a flight back. A day before he was due to fly he received a letter refusing his visa. He went<br />
anyway. Four m<strong>on</strong>ths later he was again deported and his teenage romance came to an<br />
end. Back in the UK Kent went to college to study electr<strong>on</strong>ic engineering but again his<br />
heart intervened and he left for Sweden to be with his new girlfriend. The spirited youngster<br />
enjoyed quite a life in Sweden, fathering two children, now aged 15 and 19, and working<br />
as a piano player <strong>on</strong> cruise ships and in piano bars all round Europe. He played in<br />
his own band, taught English and even worked at putting up posters <strong>on</strong> billboards!<br />
‘I wasn’t brilliant at the piano but I got by and my band, Lights of Wishes, got recorded<br />
and appeared <strong>on</strong> TV but never made any real m<strong>on</strong>ey. I stayed in Sweden to be near my<br />
children, but in the end, when they were older, I went back to England. ‘I studied IT and<br />
got a job with Hewlett Packard which offered me the chance to frequently fly back to Sweden.<br />
After three years my job changed so I left and started up my own business, Japcity,<br />
a company that sources performance Japanese cars, mainly for Sweden, but we do serve<br />
people from all over the world.<br />
‘In 2005 I came here to have a look round. I’d seen the place <strong>on</strong> TV and in magazines<br />
and liked the look of it. When I arrived I immediately fell in love with Pézenas. It was<br />
quaint, full of life and was a typical French town. I moved to Pézenas and stayed for a year<br />
then spent two years in Roujan, before moving to Usclas d’Hérault with my girlfriend, Stéphanie,<br />
a French fashi<strong>on</strong> designer. ‘I can’t say I’ve encountered any problems. I just love<br />
the culture, the wine, the climate, the fact you can go skiing <strong>on</strong>e minute and be <strong>on</strong> the<br />
beach the next. And I’m hooked <strong>on</strong> French cuisine. The phrase ‘make a meal of it’ must<br />
be French because every meal is lots of little experiences. I’ve finally found my little patch<br />
of paradise. I’ve travelled the world - Vietnam, Japan, America, South America, Africa,<br />
Australia, most of Europe and still go frequently to Sweden and to Vietnam for a m<strong>on</strong>th<br />
or so, two or three times a year.’ But in the end, ‘away’ is nice but ‘home’ is best. I can’t<br />
see myself ever moving again.’
When the may<strong>on</strong>naise clicks!<br />
Have you ever been introduced to some<strong>on</strong>e and it just clicks? Everything just falls into<br />
place. A gentle, easy banter gives way to a knowing exchange. An innate ability to read<br />
between each other’s lines and you start to feel like members of the same club. An understated<br />
humour paves the way toward the inevitable, deepening b<strong>on</strong>d… In other words<br />
- the chemistry is just right.<br />
The French have an expressi<strong>on</strong> for this: la may<strong>on</strong>naise prend.<br />
The may<strong>on</strong>naise 'takes', it gels, it materializes before your very eyes and this can take<br />
place just as well at a cocktail party as in the kitchen. Most French people know that making<br />
may<strong>on</strong>naise is an unpredictable undertaking at best. If it 'takes' it’s because the mustard,<br />
egg yolk and oil have turned into a creamy, thick emulsi<strong>on</strong> under your c<strong>on</strong>stant<br />
stirring and supervisi<strong>on</strong>. Just like a thoughtful host or hostess, when la may<strong>on</strong>naise prend,<br />
you have succeeded where others have failed.<br />
I took my first, hesitant may<strong>on</strong>naise-making steps under the watchful, but magnanimous,<br />
eye of my French mother-in-law. Under her tutelage, I tenderly plopped the egg yolk into<br />
a breakfast cup al<strong>on</strong>g with a dollop of mustard. Everso slowly, I added the oil with <strong>on</strong>e<br />
hand, pouring it in a measured, c<strong>on</strong>trolled flow, while the other hand, energetically whisked<br />
the mixture into submissi<strong>on</strong>. Either it took or it didn’t, just like that combinati<strong>on</strong> of<br />
guests I invited to my last dinner party.<br />
Let’s see…there’s Annie and Paul, Colette and Christian, Brigitte, Hélène, Lucienne, oops,<br />
d<strong>on</strong>’t forget Marie-France….<br />
'Marie-France is coming?' my friend Brigitte said, wincing.<br />
'Why? Is there some problem?'<br />
'Well, it’s just that, last time we didn’t really click.'<br />
Comment? They didn’t click? They didn’t hit it off for some reas<strong>on</strong>? Horrors, la may<strong>on</strong>naise<br />
ne prend pas?<br />
An image of a failed may<strong>on</strong>naise surfaced in my mind. It was soupy, thin, drippy. Try as<br />
I might, I could not make it work despite my best wrist acti<strong>on</strong>. Flat and lifeless, my may<strong>on</strong>naise<br />
was irretrievable. Brigitte and Marie-France were not to be. I should have<br />
known….something about that vacant gaze, how they avoided each other…. Well, you<br />
can’t win ‘em all. Sometimes you have to call it a day, refresh your guest list, toss the<br />
would-be may<strong>on</strong>naise down the sink and start again with a new yolk, a new egg, a new<br />
hen if necessary. When may<strong>on</strong>naise does take, it can be a beautiful thing: flowing, full of<br />
flavour, smooth as silk. It may be hard to define and even harder to deliver given the many<br />
variables involved, but when la may<strong>on</strong>naise prend, you’ll know it when you see it.<br />

Recipe<br />
Banana loaf<br />
If you have a couple of over-ripe bananas<br />
in the fruit bowl d<strong>on</strong>’t throw them<br />
away, turn them into this delicious, easyto-make<br />
banana loaf.<br />
• 2 mashed bananas<br />
• 4 oz wholemeal flour<br />
• 5 oz self raising flour<br />
• 2 level tspns baking powder<br />
• 4 oz soft margarine<br />
• 6 oz dark brown sugar<br />
• 2 large eggs • ¼ pint natural yoghurt<br />
• 6 oz currants • 2 tbspns milk<br />
Beat all ingredients. Pour mixture into<br />
greased loaf tin and bake for 1 ½ hours<br />
at 180 c.<br />
The law abiding bread of life!<br />
Few things symbolise the French lifestyle better than its bread - how its cooked, how<br />
its eaten, how its revered. No w<strong>on</strong>der the comment, 'let them eat cake', caused furious<br />
moral outrage and was said to have sparked the French revoluti<strong>on</strong>!<br />
On average, every<strong>on</strong>e living in France eats 160 g of bread each day and, at the last<br />
count, there were approximately 34,000 boulangeries around the country - <strong>on</strong>e for every<br />
18,000 people - 70% of which are independent enterprises. Although there's been a huge<br />
drop in bread c<strong>on</strong>sumpti<strong>on</strong> in the past 100 years, it's now stabilised.<br />
The ascendancy of the baguette, said to be 'the vertical symbol of France', over the growing<br />
variety of other types of bread, dates from 1920 when a new law was introduced<br />
which prevented bakeries from starting work before 4.00 am. This didn't allow enough<br />
time for more substantial loaves to be baked in time for breakfast, but the slimmer baguette,<br />
originating from Vienna, proved ideal and its popularity grew. The fact that the<br />
quality and integrity of bread in France is taken very seriously indeed, is reflected in the<br />
legislati<strong>on</strong> which surrounds commercial bread producti<strong>on</strong>. By law basic bread must have<br />
<strong>on</strong>ly four ingredients - water, flour, yeast and salt. If a baker wants to include other ingredients<br />
then the name given to such bread must clearly reflect that other things have been<br />
added. The limited list of 'official' ingredients in bread doesn't include any which extend<br />
its shelf life so it becomes stale after <strong>on</strong>ly a few hours - as we’ve all discovered - and it<br />
needs to be sold freshly baked, at least twice a day. It's for this reas<strong>on</strong> that French law dictates<br />
that every village should have either 'a boulangerie' or 'a shop which sells bread'.<br />
The distincti<strong>on</strong> between the two is a clear <strong>on</strong>e which is carefully guarded.<br />
In 1997 a law was passed to maintain standards of bread making. It laid down strict standards<br />
for shops calling themselves a boulangerie and for the baker to be called a boulanger.<br />
As the Minister of Commerce at the time said, 'It is humiliating for real bakers to<br />
see people who sell bread manufactured elsewhere, passing themselves off as bakers'.<br />
These regulati<strong>on</strong>s state that a baker has to select his,or her, own flour, make the dough<br />
through all its processes and sell the bread <strong>on</strong> the premises <strong>on</strong> which it was made. N<strong>on</strong>e<br />
of the ingredients should have been previously frozen at any stage. If these tight standards<br />
cannot be adhered to, the title boulangerie cannot be used!<br />
Bread which is not made according to the regulati<strong>on</strong>s, while still perfectly palatable, often<br />
has a cott<strong>on</strong>-wool texture, while the genuine article will have some larger pockets of air<br />
and a slightly more chewy texture. If you turn a baguette over and the base is covered in<br />
regularly spaced dots, this is an indicati<strong>on</strong> it's been made using frozen dough in a rotating<br />
oven and is not 'real' bread. Interesting to note how few supermarkets call their bakery<br />
department a boulangerie - most are called something like ray<strong>on</strong> chaud or simply<br />
pains.<br />
When traditi<strong>on</strong>ally made, French bread is irresistible - we all savour the moment when the<br />
basket of bread (not to menti<strong>on</strong> the wine, of course) is brought to the table and the meal<br />
begins. There's an urban myth that there's a law which says that it's forbidden to walk<br />
more than seven paces from the boulangerie without breaking off a delicious outside morsel<br />
for a quick sample. The penalty for not adhering to this is unknown, because the law<br />
has never been broken! Or, as a French saying goes, 'Tis a l<strong>on</strong>g day, a day without<br />

Trash by the t<strong>on</strong>ne!<br />
If you’ve ever thought it a hassle sorting rubbish for your green and yellow bins, imagine<br />
sifting your way through: 40,500 t<strong>on</strong>nes of household waste, 4191 t<strong>on</strong>nes of glass<br />
and 6323 t<strong>on</strong>nes of paper and cardboard! That’s the daunting task undertaken each<br />
year by Sictom who, since 1976, have been resp<strong>on</strong>sible for getting rid of our rubbish. In<br />
the beginning they serviced just 12 towns and villages in this area. Now, with 240 employees<br />
and 40 trucks, they collect from 46 communities. Sictom also takes away an annual<br />
553 t<strong>on</strong>nes of plastic, 1132 t<strong>on</strong>nes of small cardboard boxes, 139 t<strong>on</strong>nes of ir<strong>on</strong><br />
cans, 13 t<strong>on</strong>nes of aluminium cans and 47 t<strong>on</strong>nes of ‘lined’ cardboard cart<strong>on</strong>s that, when<br />
they arrive in our kitchens, c<strong>on</strong>tain liquids like fruit juice and soup. Sictom looks after the<br />
dozens of large community bins for<br />
bottles and cardboard, found in<br />
every town and village, and 18 déchetteries,<br />
or tips.<br />
The cost<br />
of waste<br />
Last year it cost €26 milli<strong>on</strong> for<br />
Sictom to collect and dispose of our<br />
rubbish! This government service is<br />
funded by taxes from the taxe f<strong>on</strong>cière and sp<strong>on</strong>sorship m<strong>on</strong>ey from Eco Emballages,<br />
Ademe - the Agence de l’Envir<strong>on</strong>nement et de la Maitrise de l’Energie and the Départment<br />
Hérault, C<strong>on</strong>seil Général. A milli<strong>on</strong> euros was raised by selling 3649 t<strong>on</strong>nes of recyclable<br />
paper to Spanish companies and other recyclable materials to French companies.<br />
This figure could have been higher but for the 610 t<strong>on</strong>nes of rubbish that couldn’t be recycled<br />
because the wr<strong>on</strong>g rubbish had been put in the wr<strong>on</strong>g bins. Plastic bags, yoghurt<br />
pots and polystyrene d<strong>on</strong>’t go in the yellow bin. The good news is that Sictom say they’ve<br />
got no problems selling recyclable waste despite the ec<strong>on</strong>omic downturn. And it’s worth<br />
getting it right because Sictom gives €3. 05 for every t<strong>on</strong>ne of ir<strong>on</strong>, wood and other recyclables<br />
it sells, to the League of Cancer. Last year a cheque for €13,000 was handed<br />

present Sictom with their greatest challenge. The populati<strong>on</strong> they service sky-rockets from<br />
102,000 to 250,000. Many are people who have sec<strong>on</strong>d homes here but many more are<br />
tourists. Lots of those tourists are unaware of the guidelines c<strong>on</strong>cerning rubbish disposal<br />
here and excellent, saleable, recyclable, waste ends up in the wr<strong>on</strong>g bins. If you rent out<br />
a property it’s well worth leaving guests a note advising them of the protocol. Or you<br />
could point them in the directi<strong>on</strong> of the Sictom website which they might find helpfull.<br />

unable to get to a déchetterie and want to<br />
dispose of large items - an old mattress or<br />

Where does all<br />
your rubbish go?<br />
All rubbish collected in this area goes<br />
first to Sictom premises in Pézenas. The<br />
yellow bin c<strong>on</strong>tents are lifted by machine<br />
<strong>on</strong>to a c<strong>on</strong>veyor belt where a team of<br />
women separate them into categories -<br />
plastic, paper, aluminum etc. These separated<br />
products are then crushed into<br />
large, solid, obl<strong>on</strong>g blocks before being<br />
sold and transported to recycling companies.<br />
General household waste in green bins is<br />
deposited in a massive receptive area at<br />
Sictom HQ before being crushed, loaded<br />
into trucks and taken to be buried or incinerated<br />
at sites outside of Départment 34.<br />

Il y a 5 jours envir<strong>on</strong>, m<strong>on</strong> fils de 26<br />
ans décidait de prendre une tasse de café<br />
instantané. Il posait alors une tasse d'eau<br />
dans le four à micro-<strong>on</strong>des pour la réchauffer<br />
(ce qu'il fait régulièrement) et<br />
mettait la minuterie (je ne suis pas certain<br />
de la durée mais il m'a dit qu'il voulait<br />
obtenir l’ébulliti<strong>on</strong>). La minuterie s'arrêtant,<br />
il enlèvait la tasse et remarquait que<br />
l'eau ne bouillait pas. Soudain, le liquide<br />
dans la tasse lui a “explosé” à la figure à<br />
cause d'une accumulati<strong>on</strong> d'énergie.<br />
Il a des cloques partout sur le visage, des<br />
brûlures au premier et deuxième degré et,<br />
de plus, a perdu partiellement la vue de<br />
s<strong>on</strong> œil gauche. Lors de s<strong>on</strong> arrivée à<br />
l'hôpital, le médecin qui le suit a menti<strong>on</strong>né<br />
que c'est un fait courant et que<br />
l'eau (seule) ne devrait jamais être réchauffée<br />
au micro-<strong>on</strong>de. Si <strong>on</strong> doit le<br />
faire de cette manière, quelque chose doit<br />
être introduit dans la tasse (bât<strong>on</strong> de bois,<br />
sachet de thé sans agrafe) afin de diffuser<br />
l'énergie.<br />
Ce phénomène, c<strong>on</strong>nu sous le nom de<br />
“sur réchauffement”, se produit particulièrement<br />
lorsque le c<strong>on</strong>tenant est neuf.<br />
L'eau se réchauffe plus rapidement que<br />
les bulles de vapeur se produisent. Cellesci<br />
ne peuvent d<strong>on</strong>c pas se former et dégager<br />
la chaleur accumulée; le liquide ne<br />
boue pas mais chauffe de plus en plus et<br />
dépasse s<strong>on</strong> point d'ébulliti<strong>on</strong>. Lorsque<br />
l'eau est déplacée soudainement, le choc<br />
est suffisant pour causer la créati<strong>on</strong> rapide<br />
de bulles, créati<strong>on</strong> qui expulse l'eau<br />
chaude.<br />
Pour éviter de telles “aventures” n’utilisez<br />
plus le micro-<strong>on</strong>de !<br />

Les Français veulent manger bio et l’augmentati<strong>on</strong> de la demande grimpe de 10 %<br />
par an, seulement voilà, la producti<strong>on</strong> ne suit pas ! En Europe, le premier de la classe est<br />
le Liechtenstein, avec 29 % des terres cultivées en bio, puis l’Autriche (+ de 13 %), la<br />
Suisse (12 %), l’Italie et l’Est<strong>on</strong>ie presque à égalité avec près de 9 %. La moyenne Européenne<br />
(des 27 pays membres) se situe à 4 % et la France réalise un score sans appel de<br />
2 %. (remarque : le règlement de l’agriculture biologique varie grandement d’un pays à<br />
l’autre !)<br />
Nous import<strong>on</strong>s d<strong>on</strong>c à l’heure actuelle plus de 50 % de notre c<strong>on</strong>sommati<strong>on</strong>, mais heureusement<br />
certains groupes de pressi<strong>on</strong>s jaloux de ce juteux marché en perspective <strong>on</strong>t<br />
trouvé une parade toute simple : <strong>on</strong> baisse le niveau, comme pour le baccalauréat !<br />
Depuis le 1 er janvier 2009, les réglementati<strong>on</strong>s européenne et nati<strong>on</strong>ale s<strong>on</strong>t abrogées et<br />
remplacées par le règlement Européen du 20 juillet 2007. La France ayant une des législati<strong>on</strong>s<br />
les plus c<strong>on</strong>traignantes en la matière (alors que beaucoup pensent qu’elle est<br />
bien trop laxiste !), les normes pour la producti<strong>on</strong> biologique v<strong>on</strong>t subir une forte cure<br />
d’amaigrissement.<br />
Quelques exemples :<br />
1 - Pour les volailles, vaches ou coch<strong>on</strong>s, 50 % de leur alimentati<strong>on</strong> devait être produite<br />
sur place, dorénavant, 10 % ser<strong>on</strong>t suffisants !<br />
2 - Lorsqu’un agriculteur se c<strong>on</strong>vertissait à la Bio, il devait, dans un délai de huit ans, passer<br />
toute sa producti<strong>on</strong> en agriculture biologique. Aujourd’hui, ce n’est plus nécessaire,<br />
il peut faire du poulet de batterie nourri aux OGM avec des carottes bio à côté<br />
s’il le souhaite !<br />
3 - Pour le coch<strong>on</strong> bio, il (le coch<strong>on</strong>) avait le droit de vivre auparavant 182 jours minimum<br />
avant d’être exécuté, maintenant, la garde à vue est supprimée et le coch<strong>on</strong><br />
peut serrer les fesses, il n’y a plus de durée légale de détenti<strong>on</strong> !<br />
4 - Le poulet bio lui, voit ses jours comptés et passer de 80 à 70 jours (il est vrai que le<br />
poulet de batterie n’a que 45 jours !)<br />
5 - Dorénavant, antiparasitaires à vol<strong>on</strong>té pour les poules, les poulets, (limités précédemment<br />
à un par an !) les ovins les porcs et les vaches laitières. Les antibiotiques<br />
passent de 0 pour les poules à 1 par an, les ovins de 2 à 3 par an ainsi que pour les<br />
vaches.<br />
6 - Les OGM interdits jusqu’à présent en bio pourr<strong>on</strong>t être présents à hauteur de 0,9 %!?<br />
(Un peu comme la CSG, tout doux au début et puis ça m<strong>on</strong>te doucement après !)<br />
En ce qui c<strong>on</strong>cerne les c<strong>on</strong>sommateurs qui commençaient à se soucier de leur santé en<br />
achetant un produit labellisé AB, ils aur<strong>on</strong>t d<strong>on</strong>c toujours le même « packaging » mais<br />
avec un c<strong>on</strong>tenant différent !<br />
Pour les paysans soucieux et respectueux de la nature, ils se retrouver<strong>on</strong>t en c<strong>on</strong>currence<br />
avec un label AB kidnappé, aseptisé et standardisé par les industriels. Logo AB qui ir<strong>on</strong>iquement,<br />
à l’origine, avait été mis en place par ces fameux paysans soixante-huitards<br />
c<strong>on</strong>sidérés comme de doux dingues marginaux et qui se s<strong>on</strong>t fait déposséder de leur<br />
marque par l’État dès qu’ils <strong>on</strong>t voulu qu’elle soit rec<strong>on</strong>nue par celui-ci !<br />
Quelle soluti<strong>on</strong> ? Cultiver soi-même s<strong>on</strong> potager ! (attenti<strong>on</strong>, le purin d’ortie n’est toujours<br />

Ça va faire un tabac !<br />
La ville de Belm<strong>on</strong>t en Californie aux USA vient de passer une des lois les plus restrictives<br />
qui existe en matière de tabagisme. (le texte devrait passer en vigueur ces joursci).<br />
Fumer sera interdit absolument partout à l’unique excepti<strong>on</strong> des mais<strong>on</strong>s particulières<br />
indépendantes (n<strong>on</strong> mitoyennes) ! Dans la rue, interdit, dans les parcs, interdit, dans les<br />
airs, interdit, dans la voiture, interdit, sous l’eau, interdit! Dans un immeuble collectif également,<br />
interdit d’en griller une, sous risque de se faire allumer par les flics !<br />
Heureusement le port d’arme étant toujours autorisé (dans certain États, il n’existe même<br />
pas d’âge minimum) il restera toujours un moyen de passer ses nerfs sur celui qui vient<br />
vous prendre la tête ou la cigarette !<br />
Mais pourquoi tant de haine envers ces pauvres multinati<strong>on</strong>ales du tabac ? JFM<br />
Le Moringa<br />
Définiti<strong>on</strong> : arbre des régi<strong>on</strong>s tropicales de l’Asie et de l’Afrique d<strong>on</strong>t les graines<br />
fournissent une huile appelée “macassai” employée en parfumerie et en horlogerie. Mais<br />
au Burkina Faso, le Moringa pourrait vaincre la crise alimentaire. Les Burkinabés savent<br />
que cet arbre peut tout simplement sauver les enfants de la malnutriti<strong>on</strong>. Il c<strong>on</strong>tient 2 fois<br />
plus de protéines que le yaourt, 3 fois plus de potassium que les bananes, 4 fois plus de<br />
calcium que le lait, 7 fois plus de vitamine C que les oranges et 4 fois plus de vitamine A<br />
que les carottes. Le Moringa c<strong>on</strong>tient aussi tous les acides aminés essentiels à l’homme.<br />
Il pousse très facilement dans tous les pays d’Afrique. Il suffit d’en cueillir les feuilles , une<br />
fois séchées et broyées, de les incorporer à la bouillie des enfants pour améliorer leur<br />
santé. Depuis Juin 2008, HSF France (Homéopathes sans Fr<strong>on</strong>tières) a engagé un programme<br />
de plantati<strong>on</strong> de Moringa dans la ville de Réo. Il y aurait d’autres applicati<strong>on</strong>s<br />

Think Flamenco! Think Spanish!<br />
Romantic movements; broody facial expressi<strong>on</strong>s; vibrant, extravagant dresses; immaculately<br />
groomed men! It has to be the flamenco.<br />
If you're tempted to have a stab at mastering this famous dance then Bedarieux is the<br />
place to go.<br />
Raices flamencas (flamenco roots) was founded there in June 2005 by Magda Maquedano,<br />
<strong>on</strong>e of many Bédariciens of Spanish descent who came to Languedoc after the Civil<br />
War or later. He wanted to bring various aspects of Spanish culture to all people in the<br />
area, through dance - flamenco in its different styles and techniques, sevillana and rumba.<br />
Its activities are two-fold; classses and a performance group. There are 3 classes <strong>on</strong> M<strong>on</strong>days,<br />
for children, adolescents, and adults, all taken by Lorenzo Ruiz, a professi<strong>on</strong>al flamenco<br />
teacher, with guitarist David Tobena. The M<strong>on</strong>day classes focus more <strong>on</strong> technique<br />
for different flamenco styles.<br />
For beginners, the Tuesday sevillana classes, for adolescents and adults, are taught by<br />
Alexis Chabbert. Sevillanas, and promote a joyful, celebratory, upbeat style of flamenco<br />
for all ages with dancing in pairs, or in a line, or as a circle.<br />
A new group of beginners for Tuesdays is planned to start so<strong>on</strong>.<br />

Comme s<strong>on</strong> emprunt au nom du Dieu<br />
de la guerre le suggère, Mars est un mois<br />
passi<strong>on</strong>né, exalté, parfois tourmenté. La<br />
dépressi<strong>on</strong> hivernale s’éteint peu à peu, il<br />
est temps de récupérer s<strong>on</strong> énergie. D’entamer<br />
un nouveau départ… Cette dépressi<strong>on</strong>,<br />
avec s<strong>on</strong> préfixe “dé” indiquant<br />
une relâche, une baisse de tensi<strong>on</strong>, n’est<br />
pas à voir uniquement sous un prisme négatif.<br />
Dans cette société du b<strong>on</strong>heur obligatoire<br />
et du “tout peps” à souhait, une<br />
déprime peut être envisagée comme un<br />
salutaire nettoyage, un mode de questi<strong>on</strong>nement<br />
sur sa vie et s<strong>on</strong> être tout entier.<br />
Une parenthèse tranquille, mortifère ou<br />
angoissante, sel<strong>on</strong> l’éclairage qu’<strong>on</strong> voudra<br />
bien lui porter. À l’image de ces<br />
arbres qui se dénudent à l’approche de<br />
l’hiver et refleurissent au printemps, nos<br />
individualités suivent une chorégraphie<br />

Salut les Martiens !<br />
Ce mois, qui était le premier de l'année, pour les Romains, est placé sous le signe du<br />
dieu de la guerre, l'équivalent latin du Ares grec. Ce dieu guerrier a aussi d<strong>on</strong>né s<strong>on</strong> nom<br />
à la planète rouge. La célèbre planète est entourée de deux satellites naturels à qui <strong>on</strong> a<br />
d<strong>on</strong>né des noms tout aussi redoutables : Phobos, la Peur et Deimos, la Terreur, qui étaient<br />
les enfants du dieu grec. Quelle paternité !<br />
Le nom du dieu romain a engendré des prénoms comme Martial, qu'il vaut mieux ne pas<br />
affr<strong>on</strong>ter en Cour et le nom de famille le plus répandu en France : Martin.<br />
Après s'être m<strong>on</strong>té fatal à César (c'est au cours des Ides de Mars qu'il<br />
a été assassiné), Mars est le mois des giboulées mais aussi celui<br />
de l'équinoxe, qui, en fin de mois, ann<strong>on</strong>ce l'arrivée du Printemps.<br />
Il était temps de trouver une fin positive à ce mois!<br />
Deux phénomènes égayent ce mois redoutable : Le<br />
Lièvre de Mars et la Bière de Mars.<br />
Commenç<strong>on</strong>s par nos amis Anglo-Sax<strong>on</strong>s qui<br />
c<strong>on</strong>naissent tous ce fameux Lièvre, compagn<strong>on</strong> du<br />
Chapelier fou, censé avoir tué le temps, et qui dit devoir<br />
toujours participer à une “partie de thé “. Tout le<br />
m<strong>on</strong>de aura rec<strong>on</strong>nu un épisode du célèbre “Alice au<br />
Pays des Merveilles” (Alice in W<strong>on</strong>derland) de Lewis<br />
Carroll. Alice dit à propos du Lièvre :<br />
“The <str<strong>on</strong>g>March</str<strong>on</strong>g> Hare will be much the most interesting, and perhaps<br />
as this is May it w<strong>on</strong>'t be raving mad, at least not so mad<br />
as it was in <str<strong>on</strong>g>March</str<strong>on</strong>g>.” (“Le Lièvre de Mars sera le plus intéressant, et<br />
peut-être qu'en mai il ne serait pas fou à lier, pas aussi fou qu'en mars, tout au moins.”)<br />
La Bière de Mars, également nommée “Bière de Printemps”, est produite à partir d'orge<br />
semée au printemps précédent et récoltée au début de l'hiver. Elle est généralement commercialisée<br />
entre le 1er et le 31 mars. Elle est née à Arras à la fin du XIVe siècle, mais avait,<br />
peu à peu, disparue jusque dans les années 80. Peut-être la mode des “primeurs” lui at-elle<br />
rendu sa popularité. Popularité qui reste vivace dans certains pays comme la Suisse<br />
qui propose une “Bière des Rameaux” et en Belgique avec la “Kriek Primeur”.<br />

As rugby uni<strong>on</strong> fans focus <strong>on</strong> the fierce rivalries of the 6 Nati<strong>on</strong>s competiti<strong>on</strong> local<br />
rugby also enters a vital time of the seas<strong>on</strong>. The biggest disappointment seems to be the<br />
near certain relegati<strong>on</strong> of Beziers from the professi<strong>on</strong>al 2nd Divisi<strong>on</strong>. Many times champi<strong>on</strong>s<br />
of France, ASBH may drop into the Federal One level which has 48 clubs in six<br />
pools. M<strong>on</strong>tpellier in the Top 14 have become a str<strong>on</strong>g mid-table side playing at the magificent<br />
Stade Yves du Manoir. However, they are still short of taking over Perpignan's<br />
role as the top regi<strong>on</strong>al club and there are worries about the €600,000 budget shortfall.<br />
Agde have surprised pundits with a solid seas<strong>on</strong> in the Federal 2 and Pézenas are again<br />
pressing for promoti<strong>on</strong> from Federal 3. They have a key match against rival promoti<strong>on</strong><br />
challengers Cote Vermeille <strong>on</strong> <str<strong>on</strong>g>March</str<strong>on</strong>g> 22nd. Why not give the Stade Piscenois your support?<br />
Sport is a great way to integrate with the local community.<br />
M<strong>on</strong>tpellier football club has hit good form lately and could well go up into Ligue 1. Every<br />
point will be eagerly sought after in <str<strong>on</strong>g>March</str<strong>on</strong>g>. Surprisingly, FC Sète, with its makeshift squad,<br />
are <strong>on</strong>ly just out of the top 3 places in the Nati<strong>on</strong>al Divisi<strong>on</strong> (3rd level). The three points<br />
deducted by the Federati<strong>on</strong> de Foot for financial problems last year have not helped the<br />
green and whites.<br />
Go up the Hérault valley a few kilometres and you find yourself in a hotbed of local soccer!<br />
Clerm<strong>on</strong>t H (a town better known for its good handball team) are doing well in the<br />
divisi<strong>on</strong> h<strong>on</strong>neur - the top level of amateur football in Languedoc. More remarkably, neighbours<br />
Canet, quite a small village, are also playing str<strong>on</strong>gly in that league. It looks like<br />
Paulhan, just a l<strong>on</strong>g goal kick away from Canet, will win the DH regi<strong>on</strong>al and join their<br />
local rivals next seas<strong>on</strong>. Some intensely c<strong>on</strong>tested derby matches are in store.<br />

Wine making in this area started 600<br />
years before Bordeaux produced its first<br />
barrel! Asia Minor traders introduced<br />
vines into the Midi in 500 BC - founding<br />
an activity that, centuries later, has resulted<br />
in the Languedoc becoming the largest<br />
wine making area in France.<br />
In the early days a proliferati<strong>on</strong> of grapes<br />
threatened more important crops like wheat<br />
and in 95 BC the Roman Emperor Domitian<br />
forbade further planting and ordered<br />
half the area’s vines to be grubbed up.<br />
Languedoc wines were drunk at the cor<strong>on</strong>ati<strong>on</strong><br />
of Pope Clement V1, Louis XIV<br />
ordered that they be served at his court<br />
and Thomas Jeffers<strong>on</strong> imported them into<br />
the USA.<br />
The wine’s fame was spread by a medieval<br />
versi<strong>on</strong> of the internet - minstrels and<br />
troubadours who were gatherers and disseminators<br />
of news until the end of the<br />
Middle Ages.<br />

La Retirada<br />
This year the flight to France of half a<br />
milli<strong>on</strong> Spanish republicans, known as La<br />
Retirada, commemmorates it’s 70th anniversary.<br />
The French were unprepared for this number<br />
of exiles who arrived early in 1939.<br />
Although some were taken in by French<br />
families and given work, most women and<br />
children were sent to shelters. Their menfolk<br />
were kept <strong>on</strong> the beaches at Roussill<strong>on</strong>,<br />
where they faced cold, hunger and<br />
sickness before being sent as internees to<br />
various camps.<br />
Some of these exiles emigrated to America<br />
and some were sent back to Spain,<br />
but most stayed here as ‘Foreign Workers’.<br />
They were given the status of political<br />
refugee <strong>on</strong> <str<strong>on</strong>g>March</str<strong>on</strong>g> 15th 1945.<br />
A programme of events has been organised<br />
in Languedoc-Roussill<strong>on</strong> to commemmorate<br />
this anniversary. Included are<br />
exhibiti<strong>on</strong>s of paintings and sculptures,<br />
films and c<strong>on</strong>ferences. A booklet, ‘La Retirada<br />

Pagnolades !<br />
Marcel Pagnol est un auteur de grand talent et ses citati<strong>on</strong>s s<strong>on</strong>t célèbres. Une d'elles,<br />
c<strong>on</strong>cernant Molière: “Jean-Baptiste Poquelin est né à Paris, Molière est né à Pézenas” a<br />
le mérite d'être sympathique pour notre riante cité. Elle est, hélas, inexacte si l'<strong>on</strong> c<strong>on</strong>sidère<br />
que Molière est né à Paris (aussi!). S<strong>on</strong> nom figure déjà parmi les signatures de l'acte<br />
f<strong>on</strong>dateur de la compagnie “L'Illustre Théâtre”. Comme le suggérait récemment une lectrice<br />
occasi<strong>on</strong>nelle mais grande admiratrice de l'écrivain provençal, Pagnol a peut-être<br />
voulu dire, par cette forte phrase, qu'il c<strong>on</strong>sidérait que Molière s'était épanoui à Pézenas.<br />
De toute faç<strong>on</strong> c'est bien lui qui a dit: “Je n'exagère jamais, je magnifie.” Voilà en tout cas<br />
une excellente occasi<strong>on</strong> d'évoquer cet homme passi<strong>on</strong>nant qui a d'abord écrit des pièces<br />
qui <strong>on</strong>t été d'énormes succès, comme Topaze et la Trilogie Marseillaise (Marius, Fanny et<br />
César). Même les jeunes générati<strong>on</strong>s les c<strong>on</strong>naissent. Certaines répliques s<strong>on</strong>t célébrissimes.<br />
Essayez de dire à quelqu'un “Tu me fends le cœur”, vous verrez le résultat! Il est<br />
aussi l'auteur de romans comme Jean de Florette et Man<strong>on</strong> des Sources, sans oublier ses<br />
souvenirs d'enfance (“La Gloire de m<strong>on</strong> Père”, “Le Château de ma Mère”…). Enfin, comme<br />
cinéaste, il a mis en scène de très grandes vedettes comme Raimu et Fernandel. La plupart<br />
des citati<strong>on</strong>s qui suivent s<strong>on</strong>t extraites de ses pièces et de ses romans. Alain Curta<br />

Why cuckoos have magpie mums!<br />
Every<strong>on</strong>e knows the Comm<strong>on</strong> Cuckoo (pictured), or, at least, recognizes it’s call. It occurs<br />
widely throughout Europe and is a fairly widespread summer visitor to the Languedoc.<br />
But, we also have a sec<strong>on</strong>d cuckoo species , the Great Spotted Cuckoo, which <strong>on</strong>ly<br />
reaches the Mediterranean coast of France, its main populati<strong>on</strong> is in Spain.<br />
It's an early summer visitor arriving at the beginning of spring, although I’ve seen them as<br />
early as the sec<strong>on</strong>d week of <str<strong>on</strong>g>March</str<strong>on</strong>g>. It's quite a striking species, bigger than the Comm<strong>on</strong><br />
Cuckoo, with grey spotted wings, a grey head with a short crest, which it raises when excited,<br />
and creamy white underparts. It's very noisy - with a call that's a loud, rattling<br />
cackle, quite unlike that of it’s comm<strong>on</strong> cousin.<br />
It, too, is a parasitic species - the unfortunate host species here is almost always the Magpie<br />
- and it times it’s spring arrival from Africa to coincide with the Magpies’ breeding<br />
cycle. Because Magpies frequent the borders of local villages, Great Spotted Cuckoos,<br />
too, are often seen flying around and into villages. Magpies hate them and try to chase<br />
them away as the Cuckoos protest noisily.<br />
But, the Cuckoos sneakily choose their moment to siddle up to a Magpie nest which has<br />
eggs in it. Once there they lay an egg of their own and steal a Magpie egg to eat at their<br />
leisure! Given the chance, they'll repeat this <strong>on</strong>ce or twice more, leaving the Magpies to<br />
hatch both the Cuckoo’s and their own eggs and raise the mixed brood. Unlike their comm<strong>on</strong><br />
relatives, baby Great Spotted Cuckoos d<strong>on</strong>'t have the strength to eject the larger<br />
Magpie eggs or babies from the nest.<br />

and most are g<strong>on</strong>e by the end of May. But the young stay for another couple of m<strong>on</strong>ths,<br />
being fed by their surrogate Magpie parents for several weeks after leaving the nest. I’ve<br />
seen Magpies feeding two young Cuckoos <strong>on</strong> several occasi<strong>on</strong>s and, <strong>on</strong>ce, an unlucky<br />
pair had three to cope with!<br />
Other early spring migrants to look for this m<strong>on</strong>th are Short-toed Eagles and Black Kites<br />
heading north and the first Hoopoes and Scops Owls arriving.<br />

Minty Lavender<br />
No-<strong>on</strong>e with an acute sense of smell<br />
will believe this but lavender is a plant of<br />
the mint family, Labiatae. Most of these<br />
herby, shrubby plants are native to the<br />
Mediterranean.<br />
True lavender (L officinalis) has greyish foliage<br />
with small blue or purple flowers -<br />
even white in <strong>on</strong>e variety. They’re great in<br />
herb gardens, especially as a border<br />
plant.<br />
Lavender’s cultivated commercially mostly<br />
in France and England because its flowers<br />
are valued for scenting linens and clothes<br />
in pretty little lavender bags. They’re also<br />
the source of lavender oil which is distilled<br />
for use in perfumes and toiletries like lavender<br />
water and in medicines. It’s sometimes<br />
used as a flavouring. It’s aroma is<br />
said to be relaxing and can help you to<br />
sleep and lavender tea claims to have a<br />
restorative effect if you’re tired.<br />
Spike lavender (L latifolia) is a broader,<br />
less fragrant variety which yields spikes.<br />
Its oils are used in perfumes and also in<br />
varnishes and porcelain painting.<br />
When you plant lavender it needs a well<br />
drained site. It grows 1-3 ft high and<br />
plants should be at least 1ft apart. Prune<br />
when flowers die but d<strong>on</strong>’t cut back to the<br />
old wood. After a few years lavender<br />
plants tend to become a bit leggy and<br />
need replanting every few years or so.<br />
Another well-loved Mediterranean plant<br />
that’s a member of the mint family is rosemary!<br />
The word comes from the Latin - Dew of<br />
the Sea. This hardy plant has small, light<br />
blue flowers and aromatic leaves which<br />
are brilliant as a seas<strong>on</strong>ing in the kitchen.<br />
Rosemary oil is also used in perfumes and<br />
medicine. From ancient times rosemary<br />
has been regarded as a token for<br />
c<strong>on</strong>stancy and remembrance. In Hamlet,<br />
Ophelia says, ‘There’s rosemary, that’s for<br />
remembrance.’<br />
The plant grows about 2 ft high and also<br />
needs well drained soil. The more you cut<br />
and use rosemary, the more it will flourish!<br />
Matinées historiques<br />
“L'Histoire a toujours été écrite par les vainqueurs” dit-<strong>on</strong> fréquemment. C'est vrai<br />
pour une large part, et l'exemple vient de loin, avec César et sa “Guerre des Gaules”. Il<br />
y a des excepti<strong>on</strong>s, pourtant. On se réfère plus couramment au chr<strong>on</strong>iqueur Guillaume<br />
de Tudèle et à sa “Chans<strong>on</strong> de la croisade albigeoise” (Canç<strong>on</strong> de la Crosada), qui est<br />
une chr<strong>on</strong>ique en langue d'Oc, écrite dans le premier quart du XIIIe siècle, qu'à “l' Historia<br />
Albigensis” rédigée par Pierre des Vaux-de-Cernay, moine cistercien qui a accompagné<br />
s<strong>on</strong> <strong>on</strong>cle dans le midi, et participé à la croisade de 1212 à 1218 c<strong>on</strong>tre les<br />
Cathares. Il est vrai que cette dernière est d'une grande partialité. Mais que dire des<br />
autres récits ?<br />
“L'Histoire est une leç<strong>on</strong> pour le présent et pour l'avenir” dit-<strong>on</strong> également. Mais les leç<strong>on</strong>s<br />
qu'<strong>on</strong> peut en tirer s<strong>on</strong>t f<strong>on</strong>cti<strong>on</strong> de l'interprétati<strong>on</strong> des événements. Et les événements<br />
ne s<strong>on</strong>t pas toujours relatés avec la plus parfaite objectivité. Ils fluctuent sel<strong>on</strong> les témoignages<br />
et la manière d<strong>on</strong>t <strong>on</strong> les a c<strong>on</strong>signés et c<strong>on</strong>servés. Les preuves historiques ne f<strong>on</strong>t<br />
pas toujours l'unanimité. Aujourd'hui, pourtant, les outils de la science s<strong>on</strong>t mis à la dispositi<strong>on</strong><br />
des historiens. Toutefois si l'<strong>on</strong> a en tête la polémique autour du fameux “Suaire<br />
de Turin”, <strong>on</strong> verra que même avec ces techniques de pointe (d<strong>on</strong>t le célèbre Carb<strong>on</strong>ne<br />
14) la vérité historique est très c<strong>on</strong>testable, surtout si le sujet est, comme <strong>on</strong> dit, “sensible”.<br />
Au début du siècle dernier, un professeur d'histoire a été agressé par quelques étudiants<br />
pour avoir c<strong>on</strong>testé les “Voix” de Jeanne d'Arc. Aujourd'hui, ce ne s<strong>on</strong>t pas seulement ses<br />
voix qu'<strong>on</strong> c<strong>on</strong>teste, mais sa pers<strong>on</strong>nalité, s<strong>on</strong> origine et les motivati<strong>on</strong>s de s<strong>on</strong> “épopée”.<br />
Quelques-unes <strong>on</strong>t vu, et voient encore, dans la Révoluti<strong>on</strong> Française, l'œuvre des<br />
Francs-Maç<strong>on</strong>s. Les historiens actuels reviennent sur la prise de la Bastille pour en souligner<br />
certains aspects moins symboliques que ceux que les historiens précédents avaient<br />
mis en avant.<br />
On pourrait multiplier ainsi les exemples de cette remise en cause des faits historiques<br />
marquants. Cette remise en cause est-elle un effet de mode ? Ou marque-t-elle les prémices<br />
d'une nouvelle manière d'aborder les événements du passé, avec une visi<strong>on</strong> dégagée<br />
des œillères de la lecture partisane ?<br />
Ce s<strong>on</strong>t quelques-unes de ces grands moments historiques qui <strong>on</strong>t marqué l'histoire de<br />
notre pays, mais aussi l'histoire de notre régi<strong>on</strong>, que nous voul<strong>on</strong>s vous faire découvrir,<br />
ou redécouvrir au cours de ce que nous appeller<strong>on</strong>s des “Matinées Historiques” qui se<br />
tiendr<strong>on</strong>t chaque lundi matin, de 9 heures à midi dans le cadre des “Lavender Rooms”<br />
au-dessus du Café Cardam<strong>on</strong>e derrière le bureau de poste de Pézenas. Ces “matinées”<br />
comporter<strong>on</strong>t une présentati<strong>on</strong> des faits et une discussi<strong>on</strong> (en français). Elles s'adressent<br />
autant aux Français habitant dans la régi<strong>on</strong> qu'à nos amis étrangers (pourvu qu'ils parlent<br />
et comprennent notre langue (la perfecti<strong>on</strong> n'est pas exigée). Participati<strong>on</strong> de<br />

The dramatic weakening of the pound against<br />
the euro has left most Brit<strong>on</strong>s living in France very<br />
worried. Their income has taken a nose-dive.<br />
Most severely affected are those <strong>on</strong> limited incomes<br />
at the best of times, like people managing<br />
<strong>on</strong> state pensi<strong>on</strong>s al<strong>on</strong>e. The poor exchange rate<br />
has meant that for many such people their income<br />
has fallen below the French minimum income. The<br />
French state has recognised this very real problem<br />
for those who have settled permanently in France<br />
and made help available in cases where it is genuinely<br />
needed.<br />
There is a fund known as the 'F<strong>on</strong>d de Solidarité'<br />
and anybody can investigate their eligibility for it<br />
by enquiring at their local city hall office. Those<br />
deemed eligible could have their income made up<br />
to the level of the French minimum, although all<br />
cases would be judged <strong>on</strong> merit. It's important to<br />
apply to the local mairie since applicants will need<br />
to certify that they are permanent residents in<br />
France.<br />
This is <strong>on</strong>ly an interim arrangement and if the<br />
pound strengthens to a certain level the allowance<br />
would be withdrawn.<br />
If you wish to pursue this please seek professi<strong>on</strong>al<br />
advice or c<strong>on</strong>sult your mairie's office as Blablablah<br />

although we've heard that the procedure for<br />

Food is Fun<br />
This is a good food game to play with your<br />
friends or when you are <strong>on</strong> a car journey. The<br />
first pers<strong>on</strong> says a food beginning with the<br />
letter A, like apple or asparagus. The next pers<strong>on</strong><br />
says a food beginning with B like bananas<br />
or beans. You go <strong>on</strong> through the alphabet with<br />
each pers<strong>on</strong> taking a turn. If any<strong>on</strong>e can’t<br />
name a food they drop out. The last <strong>on</strong>e left in<br />
is the winner. Leave out the letter X because<br />
no food begins with X!<br />
