<strong>BBQ</strong>-<strong>Scout</strong> <strong>GmbH</strong> was founded in the town of <strong>Lage</strong> in northern <strong>Germany</strong> in 2006 and<br />

specialises in marketing barbecue and outdoor products. The company is not<br />

only the official importer of Camp-Chef outdoor cooking products to <strong>Germany</strong>, Austria<br />

and Switzerland but also German importer of PRIMO ceramic grills, Made in USA.<br />

To satisfy their high quality standards, the <strong>BBQ</strong> specialists launched their own<br />

Grill’n Smoke brand at the start of 2011. The broad product portfolio for barbecues,<br />

grilling and outdoor cooking is rounded off by a wide range of accessories.<br />

In the German retail market <strong>BBQ</strong>-<strong>Scout</strong> products are on sale in specialist retail and<br />

online shops, at Amazon as well as in DIY and garden centres. In addition <strong>BBQ</strong>-<strong>Scout</strong><br />

supplies products to national distributors in countries that include Great Britain,<br />

Sweden, Austria and Benelux. <strong>BBQ</strong>-<strong>Scout</strong> also delivers to customers of various<br />

mail-order firms and online shops via drop shipping. Our own end-customers in<br />

<strong>Germany</strong>, Austria and the Benelux countries are served through <strong>BBQ</strong>-<strong>Scout</strong> subsidiary<br />

ORCA Handels-<strong>GmbH</strong> & Co. KG, with products delivered directly from the central<br />

logistics warehouse in eastern Westphalia.<br />

Carl Warrlich <strong>GmbH</strong> from Treffurt, a leading manufacturer of grill and fireplace lighters<br />

(incl. Flamax), acquired a holding in <strong>BBQ</strong>-<strong>Scout</strong> <strong>GmbH</strong> in mid-2009.<br />

Incidentally, the grilling team sponsored by <strong>BBQ</strong>-<strong>Scout</strong>, TB & The <strong>BBQ</strong> <strong>Scout</strong>s,<br />

led by managing director Thomas Brinkmann won not only the German professional<br />

<strong>BBQ</strong> championship in Osterholz-Scharmbeck in 2009 but also the Homeland Cooking<br />

competition in the 2010 Jack Daniels <strong>BBQ</strong> championship in Tennessee, the 2010 Berlin<br />

<strong>BBQ</strong> International, took 2nd place in the 2010 German <strong>BBQ</strong> championship in Gotha<br />

and were named best German <strong>BBQ</strong> team in 2011.<br />

What is Barbecue?<br />

Barbecue (or <strong>BBQ</strong> for short) means grilling the<br />

typically American way, and has a tradition<br />

that goes back hundreds of years in the USA.<br />

Barbecues are a favourite pastime for<br />

Americans, a good excuse for spending time<br />

outside in their gardens and partying. <strong>BBQ</strong><br />

will often mean that people spend a whole<br />

afternoon or even a whole day together with<br />

their family and friends. Today, <strong>BBQ</strong>s involve<br />

more than just grilling sausages and steaks.<br />

Other favourites include spare ribs, chicken,<br />

kebabs, seafood and fish. Side dishes could be<br />

vegetables, stuffed tomatoes or aubergines,<br />

baked potatoes and, of course, various salads.<br />

Even desserts can be prepared on the grill.<br />

With imagination and creative ideas there’s no<br />

limit to what you can produce: in fact, you can<br />

barbecue anything that tastes good cooked<br />

that way!<br />

Unlike conventional grilling (cooking food<br />

fast and directly over the heat), barbecue<br />

means cooking food gently at low temperatures<br />

with indirect heat – preferably in a big,<br />

closed <strong>BBQ</strong> Grill & Smoker. The food is juicier<br />

and more aromatic, and does not stick to the<br />

bottom of the grill. Barbecues are healthier,<br />

more versatile and far more relaxed than<br />

conventional ‘direct’ grilling.<br />

In line with the motto “Take your time and<br />

enjoy it to the full”, barbecues with family,<br />

friends, acquaintances and colleagues will<br />

always be an event to remember.<br />

Grilling methods<br />

Compared with conventional charcoal grills,<br />

Grill’n Smoke barbecue grills & smokers with<br />

the barrel design offer different cooking<br />

methods for greater variety and, above all,<br />

healthier ways of cooking meat, poultry,<br />

fish dishes, vegetables and much more<br />

besides.<br />

The direct grilling method<br />

In the case of direct grilling, food, e.g. steak<br />

or sausage, is grilled on the cooking grate<br />

directly over the glowing charcoal at high<br />

temperatures (approx. 270°C).<br />

The indirect grilling method<br />

In the case of indirect grilling, the food is<br />

cooked gently, not directly over the charcoal<br />

but beside the glowing charcoal at lower<br />

temperatures (approx. 140°C) with the hood<br />

closed – rather like the way food cooks in<br />

a fan oven. The food cannot stick to the<br />

bottom, stays juicier – in other words is<br />

healthier. To give it the typical “branding”<br />

the food can be seared over the glowing<br />

charcoal briefly before serving.<br />

Indirect grilling<br />

with the side fire box<br />

When grilling indirectly with the side fire box,<br />

the food is cooked gently on the cooking grate<br />

in the grill chamber at low temperatures (approx.<br />

90°C - 120°C) with the hood closed.<br />

The glowing charcoal is positioned on the fire<br />

grate in the side fire box. The chimney effect<br />

draws heat from the side fire box into the grill<br />

chamber and out through the smokestack (see<br />

diagram). Here again, to give it the typical<br />

“branding” the food can be seared directly over<br />

the glowing charcoal on the cooking grate in<br />

the side fire box briefly before serving.<br />

Smoking Texas style with<br />

the side fire box<br />

When smoking with the side fire box, special<br />

smoking chips are added to the charcoal or<br />

the briquettes in the side fire box or, alterna-<br />

tively, the side fire box is fired with logs. For<br />

example, try using cherry or hazel logs that<br />

were cut at least 1 year previously and left<br />

to dry. Remove the bark from the logs as this<br />

tends to give the food a bitter taste. The side<br />

fire box will hold logs up to 35 cm long.<br />

A basic rule for cooking meat is 1 hour per<br />

0.5 kg. Or smoke meat for 1 hour for each<br />

2.5 cm in thickness. With indirect grilling<br />

or smoking at lower temperatures, the meat<br />

retains its juices and does not need to be<br />

watched so closely. This makes your barbecue<br />

less hectic and gives you more time to attend<br />

to your family and guests.

SideFireBox<br />

The wood or charcoal is placed on the fire<br />

grate and, by pulling out the side drawer<br />

(drawer with fire grate and integrated dump<br />

ash pan), is easily refilled at any time during<br />

the smoking or grilling process. This is userfriendly,<br />

fast and safe.<br />

The charcoal ashes fall through the fire<br />

grate directly into the integrated dump ash<br />

pan and collect there during the smoking or<br />

grilling process. The dump ash pan prevents<br />

the glowing charcoal falling directly onto the<br />

bottom of the SideFireBox and damaging it<br />

as a result of overheating.<br />

The main advantage of this is that, once<br />

you have finished smoking and the ashes<br />

have cooled down, you can simply remove<br />

the side drawer with the entire fire grate<br />

and inte grated dump ash pan from the grill<br />

chamber. The dump ash pan can then be used<br />

to dispose of the ashes in a suitable rubbish<br />

container.<br />

If the available grill area in the Grill’n Smoke<br />

models Rookie Classic, Barbecue Classic and<br />

Outlander Classic is not sufficient, you can<br />

add the area in the SideFireBox.<br />

The grilling team<br />

The idea of setting up a new <strong>BBQ</strong> team arose<br />

in summer 2006, when <strong>BBQ</strong> <strong>Scout</strong> <strong>GmbH</strong><br />

managing director Thomas Brinkmann<br />

invited a group of barbecue fans to the <strong>BBQ</strong><br />

Day in <strong>Lage</strong>. Discussions naturally focused<br />

on the German barbecue championship,<br />

during which the initial idea for a company<br />

<strong>BBQ</strong> team was born. Finally, in January<br />

2007, the TB & The <strong>BBQ</strong>-<strong>Scout</strong>s team was<br />

officially founded with ten members at<br />

<strong>BBQ</strong>-<strong>Scout</strong> <strong>GmbH</strong> headquarters.<br />

The new team’s first goal was to take part<br />

in the German barbecue championship in<br />

Gronau in 2007. Many weeks of hard work<br />

– with financial backing from <strong>BBQ</strong>-<strong>Scout</strong><br />

<strong>GmbH</strong> – were required to prepare for<br />

participation. An exclusive five-course<br />

menu with side dishes was designed, tested<br />

and optimised. The team was well prepared<br />

but still nervous when it took to the field<br />

in Gronau. All went well, although the <strong>BBQ</strong>-<br />

<strong>Scout</strong>s had no time to watch what the other<br />

teams were doing. Consequently, it was<br />

a real surprise when they were named<br />

winners for the first course at the award<br />

ceremony. And, with high ratings for their<br />

chicken and dessert, the team went on to<br />

secure a fully unexpected overall victory.<br />

Things went in much the same way at<br />

the German barbecue championship in<br />

Monheim in 2008, which the young team<br />

again won. The next challenge was the<br />

international Belgian barbecue championship,<br />

which was declared the world<br />

championship at short notice. Without<br />

hesitation, TB & The <strong>BBQ</strong>-<strong>Scout</strong>s registered<br />

and, after a relatively short preparation<br />

period and with modest equipment,<br />

competed against 70 professional teams<br />

from all over the globe – and, to everyone’s<br />

surprise, were named World Barbecue<br />

Champions for 2008.<br />

Following these victories as amateurs, the<br />

team had to participate as professionals<br />

at the German barbecue championship in<br />

Osterholz-Scharmbeck in 2009 – and won<br />

yet again. This victory led to team leader<br />

Thomas “TB” Brinkmann being named<br />

<strong>Germany</strong>’s King of <strong>BBQ</strong> 2009.<br />

After this success, the team rewarded itself<br />

by participating in one of America’s most<br />

famous barbecue championships, the<br />

Invitation Jack Daniels Barbecue 2009,<br />

where it shot to 1st place in the Homeland<br />

Cooking category at its first attempt.<br />

Highly motivated, the <strong>BBQ</strong>-<strong>Scout</strong>s took<br />

part in the German barbecue championships<br />

in Gotha in 2010 and took 2nd place,<br />

winning the title of German Vice Barbecue<br />

Champions.<br />

Only a year later the team was again<br />

among the top grillers at the barbecue<br />

championship in Gronau. Competing<br />

against strong international rivals, TB &<br />

The <strong>BBQ</strong>-<strong>Scout</strong>s won the titles Vice World<br />

Barbecue Cham pion and Best German<br />

<strong>BBQ</strong> Team 2011.<br />
