The $252 millionjob of widening <strong>the</strong> twolane to a fourlane all <strong>the</strong> wayfrom Cabo San Lucas to LaPaz will be finished by <strong>the</strong> endof April, he said. The wine wasn't cheap-- <strong>the</strong> chardonnay from <strong>the</strong> Russian River in Sonoma was $39per bottle -- but it compares favorably to <strong>the</strong> very best Californiachardonnays, which sell for considerably more. No,but for many years <strong>the</strong> CatholicChurch and some who followed<strong>the</strong> church had insistedJuarez did indeed betrayMéxico. We now know thisis a myth, not <strong>the</strong> facts.in December 1857, civilwar broke out when attemptswere made to modify <strong>the</strong> Constitutionto limit privileges of<strong>the</strong> clergy. Juarez, who wasPresident of <strong>the</strong> SupremeCourt at that time, stronglydefended <strong>the</strong> Constitution andrefused to go along so he wasclapped in jail. The strife becamebloodier, dividing <strong>the</strong>people of <strong>the</strong> nation. Manymoderates joined in, wantingto limit <strong>the</strong> great economic andpolitical power of <strong>the</strong> CatholicChurch in México. Marina officials came tearing out to <strong>the</strong> siteand deployed an oil containment boom and material thatsops up spills.It was not a gas dock leak. Pemex’s tanks are up onshore, not in <strong>the</strong> water, and <strong>the</strong>re is an emergency shutoff valve that will keep any gasoline or diesel from spillinginto <strong>the</strong> marina in <strong>the</strong> event of an earthquake or ahurricane. It takes sevenyears for <strong>the</strong> plant to mature.Maguey was one of <strong>the</strong> most sacredplants in pre-HispanicMexico and played a role in religiousrituals, <strong>the</strong> economy andeven in mythology. It was said thata lightning bolt struck an agaveplant, cooking and opening it, releasingits juice. For this reason,<strong>the</strong> liquid is called <strong>the</strong> “elixir of <strong>the</strong>gods.” Today, mescal is still madefrom <strong>the</strong> heart of <strong>the</strong> maguey plantmuch <strong>the</strong> same way it was 200years ago. In Mexico, mescal isgenerally drunk straight and has astrong smoky flavor. Though notas popular as tequila (a mescalmade specifically from <strong>the</strong> blueagave), Mexico does exportmescal, mostly to Japan and <strong>the</strong>United States, and <strong>the</strong> exportbusiness is growing.Mescal does not contain mescalineor o<strong>the</strong>r psychedelic substances.Traditionally, mescal is producedby small-scale producers.Many mescal producers usemethods that have been passeddown from generation to generation.The process begins by harvesting<strong>the</strong> plants, cutting off <strong>the</strong>leaves and roots and extracting<strong>the</strong> heart, and <strong>the</strong>n cooking it forabout three days, often in pit ovens.The hearts are mashed andleft to ferment in barrels with water.Gradually, <strong>the</strong> liquid begins toseparate out.
